- Chop parsley leaves to yield ½ cup.
- In a food processor, add avocado, parsley, olive oil, apple cider vinegar, water and salt.
- Blitz until well combined.

- Place dollops of avocado salad dressing on the perimeter of the platter. Using the back of a teaspoon, join the dollops to create a ring.
- Place dollops of Greek yogurt on top of the avocado salad dressing. Using the teaspoon, create swirls so that the white blends into the green.

- Add chicken and marinade; cook stirring occasionally until the chicken is slightly browned and almost cooked through.
- Add the bay leaf, remaining korma paste, and yoghurt (or coconut cream) and bring to a boil, then reduce to low. Cover and cook, stirring occasionally, for 10-15 minutes or until the chicken is tender. Rest, covered, 5-10 minutes, and the sauce will thicken. Serve with steamed Basmati rice, cauliflower rice, lime wedges, extra yoghurt, freshly sliced chilli, roasted macadamias, and fresh coriander leaves.

- Place 3 tablespoons korma paste and 2 tablespoons yogurt into mixer; mix 10 sec/speed 4.
- Add the thigh fillet to mixer; mix 12 sec/reverse/speed 2. Transfer to a glass bowl. Cover, and chill to marinate for 2 hours or overnight.
- Add olive oil and onion to clean mixer; chop 3 seconds/speed 6. Cook 4 min/110℃/speed 1.
- Add chicken and marinade; cook 12 min/100℃/reverse stir/MC off.
- Add the bay leaf, remaining korma paste, and yoghurt (or coconut cream); cook 10 min/100℃/reverse stir/MC off. Rest, covered, 5-10 minutes, and the sauce will thicken. - Then take one skewer and thread between 6 and 8 chicken pieces onto it. Set the kebabs aside until you are ready to grill.
- Brush the grill grates with non-stick oil. Heat a grill or cast iron skillet on the stove top over medium-high heat. Place all the chicken kabobs onto the hot grill. Cook for 4 minutes, flip and cook for 4 more minutes.
- Repeat the process 1 or 2 more times or until cooked completely and charred bits have formed around the outside.
- Once cooked through, remove the kebabs from the grill and serve immediately. Serve with a warm pita bread, a big fattoush salad and lebanese garlic sauce, tahini sauce or a creamy dill sauce.

- Wrap each thigh with bacon (it may take 2 slices to cover ea. thigh)

- Heat the olive oil in a large nonstick skillet over MEDIUM-HIGH heat. Add the chicken to the pan. Season with ½ teaspoon salt and the garlic pepper. Cook, stirring occasionally, until well browned, about 6 to 8 minutes. Transfer the chicken to a medium bowl. Add the remaining 2 teaspoons of oil to the pan and return it to the heat. Add the zucchini, bell pepper and garlic and cook, stirring occasionally, until the vegetables are just barely fork tender, about 4 minutes. Transfer the zucchini mixture to the bowl with the chicken and set aside.

- 2 tsp onion powder
- 2 tsp garlic powder

- 3 tbsp creamy peach vinaigrette (or your favorite sauce)
- 10-12 green beans (or asparagus or broccoli, see notes)
- 1/2 bell pepper (sliced strips (optional))

Instructions Step 1. Prepare the chicken breasts
- Preheat oven to 400 degrees F.
- Mix all those seasoning in a small bowl prior to cutting the chicken.
- Prepare chicken breasts by cutting them horizontally and slice through the breast almost to the end, being careful not to cut all the way through.
- Place a piece of plastic wrap over top, then use a meat mallet to pound it out to be about 1/4 inch thick. It’s easier to roll up a thin chicken cutlet, so pounding makes a huge difference.
- Season the chicken breasts on both sides with garlic powder, onion powder, smoked paprika, salt and pepper.
Step 2. Assemble chicken roll ups:
- Place the seasoned chicken flat, add 1 tablespoon of sauce, your favorite shredded cheese and veggies on each chicken slice. You can spread the stuffing all over the top or just place it on one side/middle.
- Roll them up starting from the side where the filling is the closest. Proceed with the rest of the chicken pieces.
Step 3. Sear:
- Heat a large skillet over medium high heat and add ghee or oil. Avocado or grape seed oil have a high smoking point and mild flavored, so they are my favorite oil for searing.
- Add stuffed chicken roll-ups to the hot pan, seam side down and sear chicken for 2-3 minutes on each side, until evenly browned. You can cook chicken roll ups in batches if needed.
Steps 4. Bake the rolled-up chicken breasts:
- Once chicken is seared, place chicken rolls seam side down on a lightly greased baking dish and bake the stuffed chicken breast in oven for 20-22 minutes. Best if you use the same skillet you used for searing. Just make sure the handle is not plastic and it’s an oven safe skillet.
- At the end broil for 2-3 minutes to make the tops golden brown.
