  1. Preheat oven to 275*.
  2. Put oats, then remaining dry ingredients into a large mixing bowl. Toss gently, but not too much or the nuts and seeds sink to the bottom.

Instructions

  1. Preheat the oven to 450F.
  2. Chop the onion. In an oven-proof pan, on medium-low on the stove, pour the olive oil and sauté the onion for 2-3 minutes or until transparent.
  3. With a wet paper towel, clean the top of the mushrooms and trim the stems. Slice them up and add them to the pan. Cook them for 4-5 minutes (see pictures in the post). If the mushrooms are large you may need to cut the slices in half to better fit in your pan.
  4. Wash and chop the kale. Set aside.
  5. In a large bowl, crack and pour only the egg whites into the bowl. Whisk until the whites are fluffy. Pour in the milk. Add salt and pepper to taste.
  6. Remove the pan from the stove. Spread kale in the pan.
  7. Pour your egg whites and milk combo on top.
  8. Place big chunks of goat cheese on top.
  9. Bake in the oven for 20 to 25 minutes or until your eggs are no longer runny.

Instructions Pie Crust

  1. I use my homemade flaky pie crust for this recipe. You can check out this blog post for all my pie crust tips and tricks! Prepare one half of my perfect pie crust recipe according to directions. Form a disk and place into the fridge for at least 30 minutes.
  2. Remove the pie dough from the fridge and on a lightly floured work surface, roll out dough to about ¼ inch thick and about 2 inches wider than your pie pan. Roll the pie crust into the pie pan and be sure to poke the bottom a few times with a fork to allow air to escape during baking. Cut away any undesired excess crust and crimp, curl, or decorate the edges however you like!
  3. Chill the pie crust in the freezer for at least 30 minutes before baking (if you skip this step, the pie crust will shrink). While the crust is chilling, preheat the oven to 425°F.
  4. Place a piece of parchment paper or heavy duty aluminum foil inside the pie crust and fill with pie weights (uncooked rice or dry beans also work great).
  5. Bake at 425°F for 15 minutes. Carefully lift the parchment paper and pie weights then return the pie crust to the oven to bake for another 5 minutes or until the bottom just starts to brown.
  6. Set aside and let cool while you make the filling.

Purple Sweet Potato Filling

  1. Preheat oven to 400˚F. Prick the purple sweet potatoes a few times with a fork and wrap in aluminum foil. Place on baking sheet and bake for 1 hour until cooked through and soft.
  2. Once cooked, scoop the flesh into a blender and blend until super smooth and creamy. You should have about 2 cups of mashed purple sweet potato.
  3. To a large bowl, add 2 cups of mashed sweet potato, brown sugar, eggs, evaporated milk, melted butter, vanilla, pumpkin pie spice, and salt. Mix until fully combined and smooth.
  4. Pour the purple sweet potato filling into the par baked pie crust.
  5. Bake at 400˚F for 15 minutes, then reduce the oven temperature to 350˚F and continue to bake for 25-35 minutes until the edges are set and the center of the pie jiggles slightly.
  6. Remove from oven and let cool to room temperature (about 1 hour). Then chill for at least 2 hours or until ready to serve.

Swiss Meringue

  1. Create a double boiler by bringing 1-2 inches of water to a simmer in a small saucepan.
  2. In the bowl of a stand mixer (make sure your bowl is heat safe – stainless steel is best), whisk the sugar and cream of tartar into the egg whites then set the bowl over your double boiler. Do not let the bottom of the egg whites bowl touch the water.
  3. Whisk the whites and sugar constantly until sugar is fully dissolved and mixture has thinned out (about 3-4 minutes). If using an instant thermometer, it should read 160°F.
  4. Place the bowl on the stand mixer and fit with the whisk attachment. On high speed, beat on until stiff peaks form and the meringue is no longer warm to the touch, at least 10-15 minutes. If it’s still not reaching stiff peaks, stop the mixer, place the bowl in the fridge for 10 minutes, then return to the mixer and continue beating until stiff peaks form.
  5. Spread the meringue on top of the chilled sweet potato pie and use a culinary torch to toast the top of the meringue.

  5. Stir the juice and the Limoncello into the syrup and churn in an ice cream maker. When the sorbet is beginning to hold it’s shape whisk the egg white until just beginning to firm up and pour into the mix. Continue to churn until firm

  1. Finely chop the dark chocolate and place into a large bowl.
  2. Place the heavy cream in a microwave safe bowl and microwave for 1-2 minutes or until hot to the touch but not boiling.
  3. Pour over the chopped chocolate and let sit for about two minutes.
  4. Using a spatula, gently mix until the chocolate is fully melted and the ganache is fully combined and smooth.
  5. Let sit at room temperature or in the fridge until is has thickened enough to hold its shape.
  6. If your ganache is too firm, microwave for 10 seconds to soften and then stir until ganache is the desired consistency.

Graham Cracker Cupcakes

  1. Preheat the oven to 350°F and line a cupcake pan with cupcake liners.
  2. Pulse the graham crackers in a food processor until you have a little more than 1/2 cup of crumbs.
  3. In a small bowl, whisk together the flour, 1/2 cup graham cracker crumbs, baking powder, and salt. Set aside.
  4. In a separate large bowl, whisk together the vegetable oil, sugar, and brown sugar.
  5. Then add in the eggs and vanilla and whisk until fully incorporated.
  6. Gently mix in half the dry ingredients. Then add in the milk and the remaining dry ingredients and mix until just combined. The batter will be thin.
  7. Pour about ¼ cup of batter into each cupcake liner (they should be about halfway full).
  8. Bake at 350°F for 18-22 minutes or until a cake tester comes out clean.
  9. Remove from pan and let cool on wire rack.
  10. Let the graham cracker cupcakes cool completely before filling and frosting.
  11. Use a cupcake corer to remove the center of each cupcake, then fill with 1-2 teaspoons of cooled chocolate ganache.

  1. I recommend making the meringue right before it’s time to serve the cupcakes for best results!
  2. In the bowl of a stand mixer (make sure your bowl is heat safe – stainless steel is best), whisk the sugar and cream of tartar into the egg whites then set the bowl over a saucepan filled with about two inches of simmering water over medium heat. Do not let the bottom of the egg whites bowl touch the water.
  3. Whisk the whites and sugar constantly until sugar is dissolved and mixture has thinned out (about 3-4 minutes). If using an instant thermometer, it should read about 160°F. You’ll notice the mixture is lighter in color and increased in volume.
  4. Place the bowl on the stand mixer fitted with the whisk attachment. Beat the egg whites on medium low speed for 2-3 minutes and gradually increase the speed until the mixture reaches soft peaks and the bowl is no longer warm to the touch. Then increase the speed to high and beat until stiff peaks form.
  5. Pipe the meringue over the filled cupcakes. Then use a culinary blowtorch to lightly toast the meringue.
  6. Garnish the s’mores cupcakes with squares of chocolate and graham cracker crumbs if desired!
  7. Bonus tip: Leftover meringue and ganache, make DELICOUS s’mores with no fire necessary!

  2. Prepare two baking trays by lining them with non-stick baking paper – see Note 5.
  3. Add the almond flour, sugar and sifted cocoa powder to a medium-size bowl. Use a whisk to thoroughly combine the ingredients.
  4. Add the egg whites to a separate medium-size bowl. Using a fork or small whisk, whisk the egg whites for about a minute or until they are frothy and foamy. Do not whisk too long, you are not looking for soft peaks.
  5. Add the vanilla to the whites and whisk to combine.
  6. Add the almond flour, sugar and cocoa and stir until they are well combined.
  7. Use a small ice cream scoop to evenly distribute the mixture on the trays. Mine is about 3 ½ cm (1 ¼ inch) in diameter. Alternatively, use a teaspoon. The volume of the ice cream scoop is about 2 ½ level teaspoons. Roll into small balls.
  8. Place the cookie mixture onto the prepared trays allowing a little room between each so the heat can properly circulate, and they cook evenly.  Top with a blanched almond half and gently flatten a little with flat fingertips.
  9. Bake the cookies for about 13–15 minutes, turning the trays around halfway to bake evenly.
  10. Remove from the oven and leave on the trays for a few minutes.Transfer the cookies to wire racks to cool completely. Store the cookies in an airtight container at room temperature.

Instructions

  1. Place egg whites in a small bowl (make sure there is no trace of egg yolk). Cover with plastic wrap and poke a few large holes in it. Leave out at room temperature for 8 hours or in the refrigerator overnight. Bring to room temperature before using.
  2. Place confectioners’ sugar and fine almond flour into a fine mesh sieve over a bowl. Sift and let the bowl catch the sifted ingredients. Discard any large clumps in the sieve. Repeat twice and set aside dry ingredients.
  3. Put egg whites in a very clean bowl of a stand mixer fitted with a whisk attachment. Whisk eggs on medium-low speed for a minute or two until frothy then add the cream of tartar and salt. With the mixer running, very slowly add the bakers sugar (either 2 teaspoons at a time or in a very slowly sprinkle into the bowl). Increase speed to medium-high and beat until stiff peaks form, about 5 minutes on KitchenAid Stand Mixer speed 6. Pro tip: The mixture will ball up in the whisk and the mixture will stay in the bowl if turned upside down.
  4. Add half of the dry ingredients to the mixing bowl. Use a silicone spatula to gently fold the dry ingredients into the wet ingredients. Once mostly incorporated, add the remaining dry ingredients. Continue folding by going around the sides of the bowl with the spatula, then cutting through the center. The batter is done when it has a lava-like consistency. Do not over-mix. Pro tip: Try lifting the spatula out of the bowl and forming figure 8 with the batter without it breaking.
  5. Transfer batter to a piping bag fitted with a round tip (about 1/2-inch in diameter). Pipe batter onto a silpat mat with macaron outlines or onto parchment paper. Pipe circles 1-inch wide and spaced 2 inches apart. Lift the baking sheet about 6 inches off the counter and drop it down. Repeat twice more, then rotate the pan 180° and bang the pans three more times (this releases air bubbles from the macarons).
  6. Let the macarons sit at room temperature for 40 to 45 minutes and up to an hour. The macarons are ready to bake when dry to the touch (you should be able to “pet” them without leaving a mark).
  7. Ten minutes before macarons are done drying, preheat the oven to 300° F. Bake macarons for 12 to 14 minutes, rotating the pan halfway through. Cool completely.
  8. Match up the cooled macarons according to size. Make your favorite filling, such as buttercream frosting, and pipe the filling between the cookies. Serve and enjoy!
