  1. Preheat your oven to 200°C/400°F (or 180°C/350°F if you’re using a fan or convection oven). Have a non-stick cookie sheet or two to hand, or line a large tray with baking paper.
  2. Mix the ground flax seeds with 1 tablespoon of water and set aside to thicken.
  3. In a large bowl, cream together the margarine, caster sugar and brown sugar. Add in the flax seed mixture along with the vanilla extract and mix well.
  4. Next, add in the flour and mix until it starts to stick together. Then use your hands to press it into a dough. If the dough is too sticky, you can add more flour.
  5. Gently knead the macadamia nuts and white chocolate chips into the dough.
  6. Divide the dough into 8 equal-sized pieces and roll each piece into a ball. Flatten the balls to around ½ an inch thick and place them onto the baking tray. Leave around 2-3 inches of space between each one to allow for spreading.
  7. Bake for 12 minutes and leave them to cool completely on the baking tray before removing them. They will look under-baked when they first come out of the oven but will firm up as they cool.

  1. Preheat the oven to 400°F. Remove the skin of the sweet potato (if desired), then use a vegetable chopper to dice the sweet potatoes in even sized cubes. Rinse and drain a can of garbanzo beans. Add the chickpeas and diced sweet potatoes onto a baking sheet.
  2. Combine the seasonings in a small bowl, then drizzle the olive oil and sprinkle the seasoning mixtures over the sweet potatoes and chickpeas.
  3. While the sweet potatoes and chickpeas are roasting, prepare the rice according to box/bag instructions. I used Success White Rice, Boil-in-Bag.
  4. Next, prepare the spicy mustard dressing. Add all of the ingredients into a mason jar, top with the lid, and shake for 20-30 seconds until combined.
  5. Use a vegetable chopper to finely dice the cucumbers. Slice the red pepper into long vertical strips, and slice the avocado.
  6. Once the roasted sweet potatoes and chickpeas are out of the oven, it’s time to assemble the bowls. Divide the rice between two bowls. Then top with each remaining bowl ingredient: the sweet potatoes & chickpeas, peppers, cucumbers, and avocado. Garnish with green onions, lime juice or lemon juice, and drizzle with homemade dressing. I like to keep components separate for visual purposes when serving, but just before enjoying, toss so you get a little bit of flavor from each ingredient in every bite. Dig in!

Ingredients

  • ½ large brocolli
  • 1 sweet potato (medium sized)
  • ½ zucchini (UK: courgette)
  • ½ sweet pepper
  • 5 baby tomatoes
  • 150g (1 cup) chickpea flour (gram flour/garbanzo bean flour)
  • 100ml (⅖ cup) passata (in USA: strained or seived tomatoes)
  • 150ml (⅔ cup) water
  • 1 teaspoon sea salt
  • 1 heaped teaspoon cumin seed
  • 1 teaspoon paprika (smoked or sweet)
  • 1 cm cubed (half inch approx) fresh ginger
  • 1 large clove garlic

Instructions

  1. Chop the broccoli into bite sized florets.
  2. Chop the sweet potato and zucchini (UK: courgette) into small pieces.
  3. Boil or steam the sweet potato and brocolli for about 15 minutes. Add the zucchini about 5 minutes before the end of cooking time.
  4. Slice the tomatoes and pepper, putting them to the side for now.
  5. Add all the batter ingredients to a blender. You will need to take the skin off the garlic first.
  6. If you have a powerful bullet blender, then blend for about 15 seconds. This will allow everything to evenly combine and for the garlic and ginger to breakdown throughly. If you have a less powerful blender, simply blend for a little longer.
  7. Alternatively, if you don’t have a blender, or prefer to mix by hand, then put the chickpea flour through a fine meshed sieve. Finely grate the ginger and garlic. Add the salt and spices. Add the liquid gradually and mix throroughly by hand with a metal spoon until there are no chickpea flour lumps in the batter.
  8. Once the vegetables have steamed or boiled, make sure they are drained of all water.
  9. Line an oven proof dish with parchment paper. I used a baking tin 21cm x 21cm (8.5 in x 8.5 inches) in size. You can use anything similar square, rectangular or circular.
  10. Put the vegetables into the parchment lined oven dish.
  11. Mix in the batter thoroughly. You need to make sure that all of the vegetables are properly covered. Do not skip this stage as it essential for holding eveything together.
  12. When you are happy that everything is evenly mixed, press down with the back of a spoon to make sure the pie is tightly packed.
  13. Decorate the top of your veggie pie with your sliced sweet pepper and tomatoes.
  14. Put your veggie pie into a pre heated fan oven at 180C (350F) and bake for about 40 minutes. You know it is ready when the batter starts to form a thin crust on top and looks tanned. It should be firm to touch.
  15. Slice immediately for a hot dinner, or serve cold later. This keeps for a few days in the fridge.

Ingredients

  • 16 oz. Mountain High Organics Penne Pasta
  • 1 tbsp sea salt
  • 24 oz. jar of marinara
  • 1 lb. ground italian sausage
  • 1 egg
  • 2 cups shredded parmesan (i used vegan)
  • 1 ½ cups shredded mozzarella (I used vegan)
  • 1 cup cashew cream or ricotta
  • ½ tsp sea salt
  • ½ tsp granulated garlic
  • ½ tsp dried parsley
  • ¼ tsp pepper
  • ¼ tsp dried basil
  • ¼ tsp oregano

Instructions

  1. Start by cooking the noodles. In a large pot add 2 quarts of water and 1 tbsp of sea salt. Bring the water to a boil and then add the pasta. Stir well and bring to a boil. The cook time of the noodles is 10-15 minutes, mine took 12 minutes.
  2. Preheat the oven to 350 degrees F.
  3. While the pasta is cooking, begin to brown your ground sausage. Set aside once cooked through.
  4. In a medium sized bowl combine the ricotta or cashew cream, ½ cup of mozzarella, ½ cup of parmesan, egg plus the salt, granulated garlic, parsley, pepper, basil and oregano. Stir well to combine. Set aside.
  5. When the noodles are al dente, drain and rinse with cold water. In a large pot (you can use the one you cooked the meat or pasta in) combine the sausage, penne, creamy cheese mixture and marinara sauce.
  6. Gently stir to combine and coat the pasta.
  7. Pour ½ of the pasta into a lightly grease large baking casserole, sprinkle with half of your remaining cheese. Add the rest of the pasta and sprinkle the remaining cheese on top of that.
  8. Bake uncovered on the middle rack for 25 minutes. If you are using vegan cheese and your cheese is not browned at this point, then turn the oven on high broil and broil for 2-3 minutes, or until the top has a nice golden crust. Keep an eye on it, broiling can be tricky!
  9. Serve with freshly chopped basil if desired and enjoy!

  5. Add the coffee and chopped chocolate and fill the pan. Gently stir in the hot coffee or espresso, and once it’s well incorporated, add the finely chopped chocolate and mix. Pour the batter into the prepared bundt pan and spread it evenly.
  6. Bake. Place the pan on a baking sheet (for easier transportation), and put it in the preheated 325°F oven. Bake only until it no longer jiggles, about 45 minutes. If you gently press on the top, it should feel like a soft sponge.
  7. Cool. Let the cake cool in the pan for at least 10 minutes, and then invert it onto a cake platter or large plate. (Use pot holders to do this!) Continue to let it cool to room temperature.
  8. Make the glaze. Add the finely chopped chocolate to a small mixing bowl. In a small saucepan, over low-medium heat, scald the cream with the vanilla and espresso powder. Tiny bubbles will appear on the edges of the pan and it should be very hot, but not boiling. Pour the cream over the chocolate. Do not stir it yet – wait a couple minutes and then stir to combine. It will take a few minutes of mixing before you’ll see it come together.

  5. Pour the oat mixture into the prepared baking dish and spread it into an even layer. Note: if you’re making the recipe ahead of time, wrap the baking dish with plastic wrap until you’re ready to bake.
  6. Bake on the center rack of the preheated oven for 40 to 50 minutes, or until the oatmeal is golden brown on top and tests clean.
  7. Allow the zucchini baked oats to cool for at least 20 minutes before slicing into 9 individual servings and serving.
  8. If you’d like, you can drizzle the baked oats with drippy almond butter. For a sweeter treat, make a powdered sugar glaze by mixing together 1 cup of powdered sugar and 2 tablespoons of water or lemon juice in a small bowl.

  6. Press down on each dough ball with the palm of your hand to flatten into hockey puck shaped discs.
  7. Bake for 10-12 minutes. The cookies will still look moist on top but the bottom edges will begin to brown.
  8. Immediately after removing from the oven, use a spatula to gently press down on each cookie to flatten slightly. Use the edge of the spatula to gently shape the edges of each cookie if any marshmallow or chocolate has melted out.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. When completely cooled, store the cookies in an airtight container at room temperature for up to five days.

  1. Keep a small bowl of water nearby for deglazing. Heat the oil in a 12-inch heavy-bottomed sauté pan or medium Dutch oven over medium-high heat. Once hot, add the cumin and coriander seeds for about 1 minute, tossing frequently, or until aromatic and darker by a few shades but don’t let them burn!Add the curry leaves: if using fresh leaves, cover the pan immediately and stand back to prevent oil splatter. Cook for just 20 seconds to prevent burning. For dry leaves, cook a little longer.
  2. Add the onions with a big pinch of salt and cook for 5 minutes, until starting to get some color. If the spices start to darken, lower the heat to medium.   4. Pour in chickpeas, coconut milk, water, tahini, and sugar. Stir well and bring to a simmer. Cover and simmer for 15 to 20 minutes, opening the pot to stir occasionally.
  5. Meanwhile, rinse Swiss chard (or kale) and cilantro and mint. For the greens, remove the center ribs and discard. Roll the leaves and up slice the leaves very thinly. Chop the cilantro and mint.
  6. After the simmer time, add the greens. Simmer until tender and wilted, 4 to 5 minutes. Stir in the garam masala to combine.
  7. Off the heat, squeeze in a little lemon or lime juice, cilantro, and mint. Season to taste with salt (about ½ teaspoon kosher salt). Rest for 5 to 15 minutes to allow flavors to meld. Serve with cooked rice or flatbread.

  4. Place dates in a medium pan along with the almond butter, coconut oil, vanilla, and the other tablespoon of water. Cook over low heat until just blended well.
  5. Add the dry ingredients to a large bowl.
  6. Add the wet ingredients to the dry ingredients and, using your hands, knead everything together. It should be like a thick cookie batter.
  7. Rub a little coconut oil over each of the 12 mini muffin pan cups.
  8. Divide the dough into the 12 cups.
  9. Press the dough up the side of each cup, being careful not to break through the bottom of the oatmeal cup.
  10. Bake the cups on the middle rack for about 18 minutes. My cups were not crunchy, but firm. If you would like crunchy cups, cook them a bit longer.
  11. Let cups cool in pan for 20 minutes.
  12. Add 1 tablespoon of yogurt to each cup.
  13. Top with strawberries, blueberries, and a piece of mint if desired.
  14. Serve immediately or refrigerate until time to serve.

An eggless alternative to the traditional French dessert!

  • Liquid from 2 x 400g cans of supermarket chickpeas
  • ¼ Teaspoon Cream of tartar
  • 100 g Caster sugar ((superfine sugar))
  • 100 g Ground almonds ((I use Tesco’s))
  • 100 g Icing sugar
  • 250 g Icing sugar
  • 75 g Vegan margarine
  • 1 Teaspoon Vanilla extract
  • Splash Plant-based milk ((to loosen the buttercream if needed))

Instructions

  1. Vegan macarons are very tricky to get right the first time. Please read the recipe notes beforehand for best results.

Reducing the aquafaba (do this at least 12 hours in advance):

  1. Weigh the liquid from the 2 cans of chickpeas and place it in a medium-sized pot. Place it over the heat and let it simmer. Weigh it periodically until it reaches half the weight you started with. You should start with roughly 250g of liquid and finish with roughly 125g.
  2. When you’ve reduced the chickpea liquid, let it cool and place it in the fridge in an airtight container overnight.

For the macaron shells:

  1. Preheat your oven to 150°C/300°F (130°C/275°F if using a fan or convection oven). I highly recommend using an oven thermometer for accuracy.
  2. Weigh out 100g of your reduced aquafaba and place it in a scrupulously clean, medium-sized bowl along with the cream of tartar. Using a very clean electric whisk or stand mixer, whisk on high speed until the mixture becomes frothy and goes pale in colour.
  3. With the mixer still going, start adding your caster sugar a little at a time. Keep whisking until the mixture becomes white and glossy and forms stiff peaks, until you can tip the bowl upside-down without it moving. This takes a bit longer than it would with egg whites so be patient and keep whisking!
  4. Sift the ground almonds and icing sugar into a separate bowl. Use the back of a spoon to push any lumps of almonds through the sieve.
  5. Add half of the icing sugar & ground almonds to your aquafaba mixture and gently fold it in using a spatula. Then fold in the other half.
  6. Keep folding gently until the mixture begins to get a little softer, but be careful not to over-mix. You’ll know you’re done mixing when you can place a spoonful of the mixture on a flat surface and it slowly flattens out without any lumps or bumps on top. Another way to test is by lifting up a bit of the mixture and drawing a figure of 8 with it. It’s ready when you can do this without it breaking.
  7. Place the mixture into a piping bag with a round nozzle and pipe 2-inch circles onto your cookie sheet*. You may need 2 trays to do this.
  8. Slam the tray(s) on a work surface to get rid of any air bubbles, then let them sit at room temperature for 20-30 minutes, or until you can touch them without getting any mixture on your fingers.
  9. Place your macarons on the middle shelf and bake for ~18 minutes. You can check they’re ready by wiggling the top of one with your finger. If it moves out of place, it needs to be baked a little longer. I recommend that you only bake one tray at a time unless you can fit the trays on the same shelf.
  10. Once baked, remove them from the oven. When they are fully cooled, gently pull them off of the tray and find matching pairs of similar shape and size. If they stick to the tray once cooled, they are probably underbaked and you can pop them back into a preheated oven for a few more minutes.

For the buttercream filling:

  1. Mix the icing sugar, vegan margarine and vanilla extract in a large bowl until smooth. If necessary, add the plant-based milk to help loosen it a little. Once mixed, use an electric whisk to mix until pale and fluffy.
  2. Pipe a small amount of buttercream onto the centre of a macaron. Sandwich it together with another macaron, using a gentle twisting motion to prevent it from overflowing.
  3. Repeat until all of the macarons have been paired.
  4. Store macarons in the fridge, in an airtight container, for up to 2 days after baking. When ready to eat, let them sit at room temperature for around 10 minutes (they taste better this way), then enjoy.

  • 1/3 cup gluten free and vegan shortening or butter substitute (room temp (I’ve used Spectrum shortening and Earth Balance sticks))
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1/2 cup prepared Vivian’s Live Again vegan Vanilla Pudding
  • 1 3/4 cup high quality gluten free flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Make Vivian’s Live Again Vanilla Pudding according to package directions. Cover with plastic wrap and keep in the fridge while you start the recipe.
  2. Cream shortening or vegan butter substitute with sugar for 1 minute.
  3. Add vanilla and 1/2 cup of prepared Vivian’s Live Again Pudding and mix another 30 seconds.
  4. Add remaining ingredients and mix for 1 minute. Dough should be slightly sticky. If it seems to dry, you can add additional pudding or dairy free milk 1/2 Tablespoon at a time until it is the right consistency.

At this point, you can refrigerate the dough up to 4 days, or continue:

  1. Preheat oven to 350 degrees F.
  2. On a lightly floured surface, roll dough out about 1/4″ thick and cut into desired shapes.
  3. Place cookies on a Silpat or parchment paper lined baking sheet about 2 inches apart and bake for 8-10 minutes. They are done when they appear set and are just beginning to turn a light golden brown on the bottom edges.

  3. In a medium bowl, whisk together lemon juice, olive oil, mustard, turmeric, paprika, onion powder, minced garlic, sea salt, pepper and dill.
  4. Pour the marinade over the chicken turn to coat the chicken.
  5. Marinate in the refrigerator overnight (or for at least 6 hours).

Assemble Kebabs

  1. (I suggest using plastic gloves to handle the marinated chicken, because it will stain your hands if you do not).
  2. Soak bamboo skewers in warm water for at least 1 hour.
  3. Assemble the kabobs alternating between chicken, bell peppers and onion until all the meat/veggies are used.

Grill

  1. Grill over medium heat for about 5 minutes on the first side, and 3-5 on the second side, until chicken reaches an internal temperature of 160 degrees F.

Serve

  1. Serve warm with tzatziki, pita, naan, hummus, a Greek salad, etc.

Instructions

  1. Grate the carrot and potato (buy organic and leave the skins on).
  2. Grate the ginger using a fine grater.
  3. Add all ingredients into a mixing bowl (except the chickpea flour)
  4. Sift the chickpea flour (to avoid lumps) on top of the ingredients in the bowl.
  5. Mix all ingredients together thoroughly. This is easiest using your hands. Once everything starts to combine then ‘squidge’ and compress with your hands (see video) until everything is wonderfully melded together.
  6. Line a baking tray with parchment paper.
  7. Spoon dessert sized spoon dollops onto the baking tray. Compress down slightly if you want them to be more like patties.
  8. Bake in a preheated oven (between 200C/240C or 400F/465F) for about 25 minutes. All ovens are not the same, so use the temperature that works best for your oven. Basically, you want them baking really hot in order to cook through and crisp a little on the edges (but not to burn).
  9. Enjoy with chutney right away as a starter, snack, or as part of a curry might medley.
  10. They work nicely cold the next day in a lunch box. Alternatively, reheat under a grill (broiler) for a few minutes.

Instructions

  1. Prep the tofu. Slice the tofu into 4 vertical slabs. For super firm tofu, gently squeeze each slab to remove excess water. For extra firm tofu, cover the slabs with a thin dish towel or a few paper towels; weigh down with a heavy cookbook; press for 10 minutes, or while you prep the aromatics and vegetables.
  2. Add the rice to a bowl under cool tap water. Rinse and drain in a sieve until the water turns clear. It’ll take a few rounds of rinsing.
  3. Preheat the oven to 375ºF/190ºC.
  4. Season the tofu. Tear the tofu into chunks, not too big or small. Transfer to a large bowl. In a small bowl, mix together the salt, five spice powder, and onion powder. Sprinkle this over the tofu, using your hands to gently coat the tofu.
  5. Cook the tofu. Heat the 2 TBSP oil in a 12-inch nonstick frying pan over medium-high heat. Once hot, add the tofu and spread out in a single packed layer. Cook for 2 to 3 minutes undisturbed. Flip and continue cooking for a total of 12 to 14 minutes, stirring only every 2 minutes, until most of the tofu is browned (see Note 7).
  6. While the tofu cooks, heat a Dutch oven or other oven-safe pot (at least 3-quart/3L) with the oil over medium-high heat. Add the scallion whites and light greens, garlic, ginger, chile pepper, and carrots. Cook, stirring frequently, for 2 to 3 minutes. Add the five spice powder, white pepper, coriander, turmeric, ¼ teaspoon kosher salt, and stir almost constantly for 30 seconds.
  7. Add the rice and stir to evenly coat each grain. Pour in the vegetable broth, coconut milk, tamari, agave, bell pepper, and peanuts. Increase the heat, cover the pan, and bring to a boil. Take off the heat, add in the cooked tofu, stir to combine, and cover the pan with its lid (or tightly cover with foil if you don’t have a lid).
  8. Transfer the pan to the oven and bake, covered, for 20 minutes, or until the rice is tender.
  9. Take out of the oven and stir in the cilantro, reserved scallion greens, lime zest, and 1 tablespoon lime juice. Season to taste with a few pinches of salt and pepper, adding more lime juice as needed.
