Note that the meat will continue to cook once it is removed from the air fryer and is resting. Meat is medium at 145°F and has a warm pink center.

Instructions Dough:
- In a food processor, pulse the almond flour and egg, until uniform.
- In a medium bowl in the microwave, or a double boiler on the stovetop, melt the mozzarella cheese, until smooth.
- Add the melted mozzarella to the food processor. Process until a uniform dough forms.
- Sprinkle the xanthan gum over the dough. Process until well incorporated.
- If the dough is sticky, form into a ball and refrigerate for at least 20 minutes, or until no longer sticky.
Filling:
- Heat oil in a large skillet over medium heat. Add the onions and bell peppers. Cook for 4-6 minutes, until soft and starting to brown.
- Increase heat to medium-high. Add the ground beef. Season with sea salt. Cook, breaking apart with a spatula, for 5-7 minutes, until browned.
- Add the chili powder, paprika, oregano, and cumin. Cook for 30 seconds, until fragrant.
- Allow the filling to cool for at least 10-15 minutes, until it’s warm but no longer hot. (It’s also fine if it cools to room temperature.)
Assembly:
- Place the ball of dough between 2 pieces of parchment paper. Flatten into a disc, then roll out to 1/8 inch (3.17 mm) thickness.
- Use a small bowl or round glass container (I used the inner rim of these containers, they are the perfect size!) to cut circles, about 4 inches (10.2 cm) in diameter. Place 1 1/2 tablespoons filling in the center of each circle, fold in half, and seal the edges. Crimp edges with a fork by pressing down with the tines, then pull slowly outward. (If the dough sits out too long it may get too sticky to crimp; if this happens, you can chill seal all the empanadas and then chill them for 15 minutes before crimping.)
- Repeat with the remaining pieces. When you’ve run out of dough to make circles out of, form a ball with what is left, roll out again, and repeat to make more circles.
Frying:
- Heat oil in a large skillet over medium-low heat for 2-3 minutes, until shimmering.
- Working in batches, add the empanadas in a single layer without touching. Cover and cook for 1-3 minutes, until golden on the bottom. Flip and repeat on the other side. Transfer to paper towels to drain. Repeat with the remaining pieces.

- Grind the pork rinds, parmesan cheese, almond flour and smoked paprika in a food processor or chopper until well combined and finely ground. Add to a small bowl and set aside. Add the 2 eggs to a separate bowl and beat together.
- Set up your breading station and taking your cleaned and well dried shrimp, dip into the egg, allowing an excess to drip off, then dip into the breading. Do not press the shrimp into the breading, but set the shrimp down in the breading and cover the top with more breading, then shake off any excess and set on a plate.
- Heat a large nonstick skillet to medium and add in your oil. Once the oil is hot (test with a spec of the breading), fry your shrimp for a few minutes, flipping halfway through. I use tongs to flip them by the tails, as to not disturb the breading.
- Once they have cooked, they’ll turn pink, so take them out and allow to drain and excess oil onto a plate lined with paper towels. I was able to do all my shrimp in 3 batches. The number of batches will of course depend on the size of your skillet and shrimp.
- While your shrimp are frying you can mix all the ingredients for the cocktail sauce. If you like it very mild, you might first try using 2 teaspoons of the horseradish sauce and taste it before adding any more. If you like a little more zing, like I do, you can add in 3 teaspoons total. The nice thing about this sauce is if you make it too strong, you can always add in a little more ketchup to tame it down some.
- Serve with some lemon wedges on the side. Store leftovers in the fridge for 1-2 days or freeze.

- Put 2-4 boneless pork chops into the air fryer basket.
- Set the temperature setting to 400F with a total cooking time of 12 minutes.
- Cook the air fryer pork chops for 7 minutes on one side.
- Flip them over and continue cooking for 5 more minutes, or until the internal temperature reaches 145F.
- If you’re baking 4 pork chops in an air fryer, make sure to flip and ROTATE the pan to ensure an even cooking time. Meaning, the pork chops that were in the front for the first 7 minutes, don’t just flip them, but also put them in the back of the pan for when they finish cooking.
