- Once marinated, remove the skinless chicken pieces from the marinade. Pat dry on paper towels.
- Sprinkle salt on each side of the chicken.
- Heat oil in a pot, over medium-high heat.
- Brown the chicken in batches (about 2-3 minutes per side). Use tongs to remove the chicken and place them on a plate.
- Add the onions and green bell pepper to the pan and saute until translucent on medium heat.
- Then add in the garlic and cook for another 2 minutes.
- Add wine and deglaze the pan. Simmer for just about 1-2 minutes until most of the liquid has cooked out.
- Then add the tomato paste, water, cumin, packet of sazon seasoning, olives, and stir.
- Return the chicken to the pot, and arrange them in the sauce so they are not overlapping.
- Add salt and pepper to taste.
- When the sauce comes back to a simmer, lower the heat to medium-low. Cover and cook the chicken for 15 minutes.
- Stir the sauce occasionally to make sure the chicken isn’t sticking to the bottom.
- Add the potatoes. Cover the pan and cook for another 10-20 minutes till the potatoes are fork tender.
- Simmer the sauce but do not boil. Keep it on low heat if you need to and give the skillet a quick shake occasionally to move the ingredients around.
- The chicken is cooked when its internal temp reaches 165F.

- Unscrew the top part of the espresso maker with the handle from the bottom part of the espresso maker and remove the funnel that nests inside the base of the espresso maker.
- Fill base with water to the level of the safety valve. Replace the funnel into the base and fill it with ground coffee; do not press coffee down.
- Tighten the top to the base. Make sure the top is completely screwed on to the base before putting on the stovetop.
- Set your stove top to medium high to begin brewing
- Add your sugar to your creamer cup and carefully watch your moka pot as it brews.
- Once the moka pot begins brewing coffee, you’ll remove the moka pot off the stove for a moment and add about 1 teaspoon of the dark coffee to the creamer cup.
- Place the moka pot back on the stove so it can continue brewing.

Imperial rice is a Cuban recipe for chicken and rice. It gets layered in a baking dish similar to lasagna. Mayonnaise is an unusual but authentic ingredient for this recipe. The mayonnaise bakes into the rice layer and gives it a rich flavor. The mayonnaise is usually layered on even thicker than we did in this recipe but we opted for extra cheese instead. We simplified this recipe by using pre-cooked chicken. You can purchase a rotisserie chicken or bake and shred some chicken before you get started.

- 2 tablespoons olive oil
- 1 large onion (diced)
- 1 green bell pepper (diced)
- 4 to 5 garlic cloves (minced)
- ½ cup dry white wine
- 1 (15 ounce) can canned crushed tomatoes
- 1 bay leaf
- 3 cups cooked chicken (shredded, (see notes))
- 1 cup frozen green peas
- 4 ¾ cups chicken broth
- 2 ½ cups long-grain white rice (uncooked)
- 2 teaspoons ground cumin (or bijol seasoning)
- ¾ teaspoon salt
- ½ teaspoon ground black pepper
- ⅔ to 1 cup mayonnaise
- 2 ½ cups shredded Muenster or Mozzarella cheese

- Preheat the oven to 350°F.
The Chicken Mixture
- Heat the oil in a large skillet over medium heat. Add the onion and bell pepper. Sauté for 4 to 6 minutes until the onion is soft and translucent. Add the garlic and sauté for 30 seconds.
- Add the wine and cook for 1 to 2 minutes until the wine is reduced by half. Scrape the bottom of the saucepan to remove any cooked on onion bits.
- Add the crushed tomatoes, bay leaf and shredded chicken. Simmer for 5 minutes. Stir in the peas. Taste, and season with salt and pepper. Remove from heat and set aside.
The Yellow Rice
- In a separate pot, bring the chicken broth to a boil over high heat. Add the rice, bijol (or cumin), salt and pepper. Bring to a boil again then reduce the heat to low. Cover and cook for 18 to 20 minutes.
Assemble and Bake
- Grease a 13 x 9 inch baking dish. Spread ⅓ of the rice mixture into the bottom of the dish. Spread 3 to 4 heaping tablespoons of mayonnaise over the rice. Sprinkle a layer of cheese over the mayonnaise. Top with half of the chicken mixture. Spread ½ of the remaining rice over the chicken. Spread 3 more tablespoons of mayonnaise over the rice then sprinkle more cheese over that.
- Next, spread the rest of the chicken on top. Spread the rest of the rice over the chicken and top with 3 more tablespoons of mayonnaise.
- Top with more shredded cheese and bake for 25 to 30 minutes or until the edges are brown and the cheese looks bubbly.

- Cut the ends from both of the plantains
- Slice the skin lengthways (don’t slice into the flesh just the skin).
- Remove the skin with your hands. The skin on green plantain is quite thick so you will literally need to be firm and rip it off in pieces
- Slice each plantain about 1/2 inch in thickness
- Place the plantain slices in a medium sized bowl
- Drizzle 2tbsp of olive oil over the plantain
- Toss the bowl and use your hands to coat the plantain pieces evenly (make sure each slice is liberally coated, very important)
- Place each sliced plantain (spaced out) on the parchment paper
- Bake plantain for 15-20 minutes or until lightly golden and soft.
- Remove the tray of plantain from the oven
- Use a small bowl to flatten the plantain (like a pancake)

Instructions
- Step 1. Prepare and measure all ingredients; rinse the rice and chop the onion, garlic, bell pepper, and plantains.
- Step 2. In a medium pot, heat 1/2 tablespoon of oil over medium heat. Sauté the onion, garlic, and bell pepper until softened, about 3–4 minutes.
- Step 3. Add the rice to the pot and toast for 1–2 minutes, stirring to coat the grains with oil.
- Step 4. Stir in the tomato sauce, water, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer 18–20 minutes until the rice is tender and the liquid is absorbed.
- Step 5. While the rice cooks, heat the remaining 1/2 tablespoon oil in a skillet over medium heat. Fry the plantain slices until golden on both sides, about 2–3 minutes per side. If using sugar, sprinkle a pinch over the plantains to caramelize slightly. Transfer to paper towels to drain.
- Step 6. In a separate skillet, cook the eggs to your preferred doneness (traditional version is sunny-side up but you can scramble if you prefer).

- 1 cup of finely milled almond flour
- 1/2 cup of coconut flour
- 2 eggs, room temperature

- 1 teaspoon of water
- 1 cup of keto Cuban picadillo
Instructions
- Start by making a batch of our Keto Cuban Picadillo recipeand reserving one cup. You can do this a day or two in advance since the picadillo needs to be fully cool before using it in the recipe. If making it on the same day, simply place the cup of picadillo you will need in the refrigerator while you prepare the dough so that it cools quickly.
- Keto Pastry Dough: In a medium-sized bowl, combine the coconut flour, almond flour, and salt.
- Melt the unsalted butter and set it aside.
- To the dry ingredients, add the melted butter and combine quickly.
- Next, add the whole eggs and combine.
- In a separate bowl, melt the mozzarella cheese in the microwave for a total of 90 seconds, stirring halfway through. Once it comes out of the microwave, mix well until fully incorporated. You can also melt the mozzarella cheese in a double boiler.
- Add the melted mozzarella cheese to the mixture and knead the dough until all the cheese is blended well into the dough. I recommend you do so between two sheets of parchment paper so that the dough doesn’t stick to your hands.
- Flatten the dough into a disk and wrap the dough in parchment paper and place in the freezer for 15 minutes to chill.
- Preheat oven to 375 degrees.
- Once the dough has chilled, roll it out into a large rectangle about 1/4″ thick. Cut out your empanadas using a mason jar lid or a 3.5″ round circle cutter.
- Lightly press the circle of dough in the palm of your hands, moving from hand to hand like making tortillas. Add one small spoonful of picadillo in the center and gently fold in half. If the dough breaks, you can gently press it back together or take small pieces of softened dough and place them on any large cracks. This dough mends easily. Just be gentle.
- In a small bowl, whisk one egg and a teaspoon of water and set aside. This will be your egg wash.
- Place on your lined baking sheet, press the tines of a fork along the edge of the keto empanada and brush with the egg wash. Bake for 20 to 25 minutes until the crust is golden brown. Serve warm and enjoy!
- Store leftovers in the refrigerator for up to 3 days.

Instructions

Papas Rellenas are a traditional Cuban snack. The fried mashed potato balls are filled with ground beef and other fillings for a delicious appetizer or main dish.
Ingredients
- 4 large potatoes (about 2 pounds (or about 4 cups if already prepared))
- 4 Tablespoons unsalted butter
- 2 egg yolks (lightly beaten, (reserve whites))
- 1/4 cup whole milk ((add slowly as you might not use it all))
- Salt and pepper to taste.
- 1/4 cup all-purpose flour
- 1 cup bread crumbs
- 1 egg ( beaten)
- 2 egg whites
- 1 pound ground beef
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 2 Tablespoons olive oil
- 1/2 teaspoon smoked paprika (or more to taste)
- 1/2 teaspoon cumin (or more to taste)
- 1 pinch cayenne pepper
- 10 Spanish olives (finely chopped)
- 2 Tablespoons juice from olives
- kosher salt and pepper (to taste)
- oil (for frying)
Instructions Mashed Potatoes
- Boil potatoes in salted water until fork tender, then drain. Mash potatoes into a large bowl. Add butter and milk, mix. Season to taste with salt and pepper. Potatoes should be fairly stiff so they can hold their shape
- Stir in beaten yolks. Cool or refrigerate potatoes. These should be stiffer than regular mashed potatoes. They can be made a day before.
Picadillo
- Heat olive oil in large sauté pan over medium heat. Add onions and cook a few minutes until translucent. Next, add garlic, continuing to stir until garlic is fragrant, about 1 minute.
- Add ground beef stirring to break up meat.
- Add paprika, cumin, cayenne, salt and pepper. Cook until beef is brown throughout. Add chopped olives and juice. Stir and adjust seasoning to taste, adding more if necessary.
Breading
- Mix 1/4 cup all purpose flour and 1 cup bread crumbs in a shallow bowl.
- Beat the 2 egg whites and 1 egg and place in a bowl.
Assembling the Papas Rellenas
- Using about 1/4 cup stiff, cold mashed potatoes, form into a ball.
- Flatten ball and make a hollow.
- Put about 1 tablespoon picadillo inside indentation.
- Enclose meat in potatoes, forming into a ball. Place on baking sheet.
- Repeat with remaining potatoes and meat.
- Roll each ball in egg mixture then in breading. Place on baking sheet. Chill 2 to 4 hours.
- Heat oil in a deep-fat fryer or deep frying pan. I used a deep frying pan and about 1 1/2 inches of oil. When oil is hot, carefully place 2 or 3 balls in pan, using a slotted spoon and turn until golden brown on all sides, 2 or 3 minutes. Transfer to clean baking sheet lined with paper towels.
- Hold in warm oven until all papas are fried. Makes approximately 2 dozen, depending on the size.
