  3. Seal the lid. Set steam vent to SEALING. Press PRESSURE COOK + HIGH PRESSURE. Cook 90 minutes. Quick release remaining pressure: set steam vent to VENTING.
  4. Carefully open the lid of the pressure cooker. Lift up the metal tray that’s holding the meat. Transfer corned beef to a platter. Remove bay leaves, onions and solids. Strain the liquid. Reserve one cup in case it’s needed for sprinkling over the meat to keep it from drying out.

Instructions

  • 2 tablespoon Potato Starch
  • ¼ Cup Fresh Parsley
  • Salt
  • Ground Pepper

Instructions Meatballs

  1. Grate carrot, parsnip, and onion, place in a nonstick pan. Heat over medium, stirring frequently, until vegetables start to “sweat” out their moisture.
  2. Add garlic, continue to cook until liquid disappears.
  3. Remove from heat, transfer to a mixing bowl to cool slightly.
  4. Once vegetables are cool enough to handle, add beef, pork, parsley, eggs, cracker crumbs, potato starch, pepper, and salt.

  • 1 tablespoon all-purpose flour
  • 2 tablespoon dry vermouth (or white wine)
  • 3/4 cup milk
  • 1½ tablespoon coarse grain mustard
  • 2 tablespoon capers

Instructions Make the Filling

  1. In a large non-stick or cast iron skillet over medium heat, crisp the bacon. Remove the bacon to drain on a paper towel. Pour off the rendered fat leaving just a coating in the pan. Once cook, crumble the bacon but leave aside.
  2. Add the sausage to the pan. As it cooks, break the meat apart with a wooden spoon or spatula to resemble crumbles. Once cooked, remove the sausage to a dish with a slotted spoon.
  3. If needed, add the olive oil and leeks to the pan. Season with salt + pepper and cook for about 3 minutes to soften up, but without adding too much color.
  4. Add the diced potatoes and toss it all together. Add the broth, cover and cook for 5 minutes until the potatoes are tender, but not mushy.
  5. Add the sausage and bacon back to the pan along with the thyme and parsley. Give everything a good stir. Taste for seasoning and remove from the burner.

Assemble the Egg Rolls

  1. Fill a small bowl with water and set next to your work area. This will be used to glue the egg rolls shut.
  2. Place one wrapper on your work surface so it resembles a diamond shape. Measure out a scant ¼ cup of filling in to the center of the wrapper. Dip your finger into the water and wet the two edges the wrapper furtherst away from you (the top of the diamond).
  3. Fold the bottom of the diamond up and over the filling, tucking the wrapper around the filling as you pull it snug.

  • 2 eggs (chilled and beaten)
  • 1 1/2 cups buttermilk (chilled (plus more as necessary))

Instructions

  1. Preheat your oven to 375°F. Grease and line a 9-inch round baking pan or line a 9-inch or 10-inch cast iron skillet with parchment paper, and set it aside.
  2. In a large bowl, place the flour, xanthan gum, baking powder, baking soda, salt, cream of tartar, and granulated sugar, and whisk to combine well.
  3. Using a standard coarse grater, grate the cold butter into the dry ingredients, and mix gently to distribute the butter evenly through the mixture. You can also dice the cold butter, toss it in the dry ingredients to coat in flour, then flatten each piece of butter between floured fingers.
  4. Add the raisins or currants (or up to 1/2 cup more, as desired), and toss to coat the pieces in the dry ingredients.
  5. Place 1 1/2 cups of the chilled buttermilk in a large measuring cup or bowl with a pour spout, add the eggs, and whisk to combine well.
  6. Create a well in the center of the dry ingredients, add the buttermilk and egg mixture and mix gently to combine. The dough should come together.
  7. With clean hands, knead the dough gently. If there are any spots that are dry and crumbly, add more buttermilk sparingly by the tablespoon as necessary to bring the dough together.
  8. If using a baking pan, turn the dough out onto a lightly floured surface. If using a cast iron skillet, remove the parchment from the pan, sprinkle it lightly with flour, and turn the dough out onto that. Sprinkle the top lightly with more flour.
  9. Pat the dough into a round that is approximately 9-inches in diameter, piling it slightly higher toward the center. Sprinkle lightly with more flour as necessary to prevent sticking.
  10. If using a round baking pan, place the dough gently inside of it. If using a cast iron skillet, lift the paper with the dough on it and place back into the skillet.
  11. With a very sharp knife, slice a large “X” on the top about 1-inch deep (each slash should be about 6-inches long). If the dough seems to have warmed during handling, place the pan or skillet in the freezer to chill for 10 minutes or until the butter is once again firm.
  12. Place the baking pan in the center of the preheated oven and bake until lightly golden brown all over, a toothpick inserted in the center comes out with a few moist crumbs (not wet), and the bread is firm to the touch (about 45 minutes). If you’ve used a cast iron skillet, the bread may bake faster than if you’ve used a cast aluminum round baking pan.
  13. Remove from the oven and allow to cool in the baking pan for 10 minutes before turning out onto a wire rack to cool until stable (30 to 60 minutes). Remove any paper from below the bread.
  14. Slice and serve warm, with butter. It’s also excellent the next day, toasted.

  1. Preheat oven to 475ºF.

  3. Cut potatoes evenly into 1/8″-thick slices. (You can use a mandolin for this if you’d like, but I use a chef’s knife. Either way, the key is to cut them very uniformly so they bake evenly.)
  4. In a large bowl, toss potato slices with olive oil until evenly coated. Sprinkle potatoes with 3/4 teaspoon garlic powder, 3/4 teaspoon onion powder, 3/4 teaspoon kosher salt, and black pepper. Toss again to be sure spices are distributed very evenly. You may find that it’s easiest to do this with your hands, rather than a mixing spoon.
  5. Place potato slices onto two parchment-lined baking sheets, spreading them out and making sure they don’t touch or overlap (see note).
  6. Bake potato slices for 12-14 minutes. The exact baking times may vary if your potato slices aren’t cut to 1/8″ or if they aren’t uniform in thickness. Check them periodically: you’re looking for a warm, browned, toasty bit of color on the bottom of your slices, but you don’t want them to burn.
  7. Carefully flip all slices over and continue baking on the second side for about 5-8 minutes more, again checking periodically for doneness. If some of your slices are thinner than others, they may be ready sooner, and you may want to remove them to a plate while the other slices continue baking.
  8. When your potatoes are done baking, mound them into a pile in the center of one baking sheet, layering them as you do so with corned beef, cheese, and sauerkraut. Return the nachos to the oven for about 5 more minutes, to allow the toppings to warm and the cheese to melt.
  9. Garnish nachos with parsley, if desired, and serve with Thousand Island Dressing. (You can drizzle the dressing on top, serve it alongside, or both.)

  7. Bake in the pre-heated oven for 15 to 20 minutes. The appetizers are ready when the cheese is melted and turning a light golden brown color.

  5. Transfer the dough to a floured surface. Lightly flour your hands and work the dough into a ball. Knead the dough for about 30 seconds or until the flour is fully worked into the dough.
  6. Transfer the ball of a dough to your baking pan of choice. Score an X on the top of the ball using a sharp knife.
  7. Bake in preheated oven for about 45 minutes. Halfway through the cooking time at about 22 minutes, place an aluminum foil tent on top to avoid the top from burning. Allow bread to cool for 10 minutes in the baking pan. Transfer to a wire rack to cool completely.

  • 1 cup shredded Swiss cheese
  • 1 8 ounce can sauerkraut, drained
  • 1/4 cup Russian dressing
  • 15 egg roll wrappers
  • Canola oil
  • 1/3 cup Dijon mustard
  • 1/4 cup mayonnaise
  • 1-2 tablespoons dark Irish beer

Instructions

  1. In a large bowl add corned beef, cabbage, Swiss cheese, sauerkraut and Russian dressing. Stir to combine. The mixture should be slightly wet but not soaking in Russian dressing. The dressing should just hold together the mixture.
  2. Take out your egg roll wrappers and place one wrapper like a diamond in front of you.
  3. Add a little bit of the corned beef mixture across the egg roll wrapper just a little below the middle. Make sure to leave about an inch on each side so you can fold in your corners.
  4. Then fold up the bottom corner of the egg roll around the mixture and fold in the sides. Wet the edges of the showing egg roll wrapper (the top triangle part) and fold up tightly and set aside, seem side down. You want to roll the egg rolls so they are tight so they filling does not fall out while frying. This maybe take some time to get right but it’s ok. You get tons of egg roll wrappers so just start over if it doesn’t roll right.
  5. Continue until all the filling has been used.
  6. In high sided frying pan add about 1 inch of canola oil and set oven medium heat.
  7. Once the oil has reached about 375 degrees F add in an about 3 egg rolls at a time and fry until golden brown on one side, flip and continue cooking until fully browned on the other side.
  8. Note: The exact amount of egg rolls will depend on how much filling you stick into each egg roll. If you get more than 15 that is ok. Most egg roll packages come with a TON of wrappers!
  9. For the mustard whisk all the ingredients together and serve with hot egg rolls.

Instructions

  1. Peel, boil, and mash 1 pound of whole russet potatoes if needed. Otherwise, mash the canned potatoes or simply measure out the two cups needed from leftover mashed potatoes.
  2. Add the mashed potato to a large bowl with the melted vegan butter and salt before blending everything together with a fork.
  3. Add the gluten-free flour to the mashed potato and use your hands to work the dough until smooth and combined (add any other flavorings or add-ins during this step).
  4. Liberally flour a flat surface before placing about 1/4 of the dough on the surface and rolling it out to about 1/4 to 1/2 inch thickness.
  5. Use a medium-sized round soup bowl to cut out a circle of the rolled dough and remove the excess dough, setting it aside for re-rolling more portions.
  6. Use a sharp knife to cut the circle of potato dough into 4 triangles (farls). Repeat this process for 3-5 more portions depending on the size of your circles.
  7. Grease a large pan or griddle and heat it on the stove over medium-high heat before adding a batch of potato farls.
  8. Cook the potato farls on each side for 4-5 minutes until golden brown.
  9. Serve the potato farls right away with toppings of choice or allow them to cool and a wire rack to store for later.

Irish potatoes are a Philadelphia St Patrick’s Day tradition. They are basically little balls of cream cheese, butter, shredded coconut, and powdered sugar rolled in cinnamon to look like little taters. Our veganized Irish potatoes use unrefined coconut oil for the butter (works like a freakin’ charm!) and Tofutti cream cheese. They are SO easy to make and only need to chill in the fridge for about an hour – a great last-minute holiday treat.

  • 4 oz. vegan cream cheese
  • 1/4 cup coconut oil (measured solid*)
  • 1 16- oz bag organic powdered sugar
  • 1 tsp vanilla extract
  • 2.5 cups unsweetened shredded coconut
  • 2 Tbsp ground cinnamon

Instructions

  1. Place a large mixing bowl in the fridge or freezer to chill and get your hand mixer ready.
  2. Cream together the cream cheese, coconut oil, and vanilla extract until fully combined.
  3. Slowly add the powdered sugar in 3-4 batches and beat with the hand mixer in between each addition until a large ball forms. Stir in your shredded coconut until fully incorporated.
  4. Next, add your cinnamon to a shallow dish (like a pie dish or any plate, really). Use a small ice cream scoop (or your hands) to scoop out 1.5 – 2 Tbsp of the mixture and form it into a ball. Roll each ball in the cinnamon, coating it completely. The cinnamon coating and white insides are what make this beauties look like little potatoes!
  5. Line your Irish potatoes on a baking sheet and allow them to chill in the fridge for about an hour.

Instructions

  1. Peel thecucumber and cut in half down the center. Slice each half into 10 evenly sized pieces (yields 20 semi-circular shape slices.)
  2. Cut the smoked salmon slices into strips. Each slice should yield 4 to 5 strips. Twenty strips are required. Fold each strip over and back on itself to create a small concertina type stack.
  3. Mix the cream cheese and horseradish sauce. Add the freshly ground black pepper and mix thoroughly.
  4. Assemble the appetizer in layers. Lay a piece of cucumber at the base. Add a piece of folded smoked salmon. Add a small blob of cream cheese mixture. Top with a radish slice.
  5. Push a cocktail stick down through the top of the radish to the cucumber to secure the appetizer.  (Note: it is easier to thread the radish slice onto the cocktail stick first and then push the stickdown through the rest of the stack.)

Instructions

  1. Grind the spices, salt and pepper in a coffee grinder.
  2. Add the ground spices and minced garlic to the breadcrumbs in a large mixing bowl and mix together.
  3. Add the ground pork to the seasoned breadcrumbs and combine using your fingers. Add half of the beaten egg and mix thoroughly until the meat mixture begins to stick together. Discard the excess egg.
  4. Using your hands roll the sausage, forming 4 cylindrical shapes about 3/4 inches thick and 10 inches long. Set meat aside.
  5. Preheat the oven to 400 degrees F. Line a large baking tray with parchment paper.
  6. Open a thawed puff pastry sheet on a floured surface. Cut into 3 strips about 3 inches wide and 10 inches long.
  7. Place a 3 inch piece of the pre-formed sausage meat on the pastry close to the edge. Roll the pastry around the meat, overlapping underneath by one inch.
  8. Cut the pastry roll, then roll it back to brush the lower layer with egg wash. Re-roll and seal the lower seam.
  9. Using a sharp knife, cut two diagonal 1/2 inch slits in the top surface of the roll. Repeat the procedure to form 18 sausage rolls.
  10. Lay the prepared sausage rolls on the baking tray in rows and one inch apart. Brush the top of the pastry with egg wash.
  11. Bake in a 400 degree F oven for 20 minutes. Lower the heat to 350 degrees and bake for a further 5 minutes.
  12. Remove from the oven when golden brown on top. Cool the sausage rolls on a wire rack.
  13. Serve warm or cold as desired.
