  5. Julienne or shred the carrots. To cut the carrots into matchsticks, use a mandolin, julienne peeler, or a sharp knife. Add the carrots to the kale and apple.
  6. To the bowl of kale, apple, and carrots, add the thinly sliced red cabbage, chopped parsley, sliced green onions, diced red onion, cranberries, and pepitas.
  7. Make the slaw dressing. In a small bowl, whisk yogurt, olive oil, Dijon mustard, honey, and apple cider vinegar.

  • ½ cup half & half
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon parsley flakes
  • ⅔ cup shredded cheddar cheese
  • ½ cup bacon bits
  • Additional parsley flakes, salted or unsalted butter, sour cream, Greek yoghurt

Instructions

  1. Preheat your oven to 400°F.
  2. Wash potatoes well using warm water and dry with a clean kitchen towel. Use the prongs of a fork to poke small holes in the skin of each potato so that steam can escape while potatoes bake.
  3. Bake potatoes on one side for 30 minutes. Remove baking sheet from the oven and use a pastry brush to apply a thin layer of olive oil to each potato skin and sprinkle with salt. Flip potatoes over and bake for approximately 30 more minutes.
  4. After 30 minutes have passed, check to see if your potatoes are done. You should be able to easily pierce through the potato with a fork or knife. It’s important that potatoes are fully baked so that they are easy to scoop and mash.
  5. Turn your oven off and allow potatoes to cool enough that you can handle them.
  6. Scoop baked flesh out of each potato skin into a large mixing bowl. Add milk, half & half, salt, pepper, garlic and parsley flakes to the bowl. Use an electric mixer to blend until smooth.
  7. Preheat oven to 350°F.
  8. Fill each potato skin half with mash potato mixture and then sprinkle with bacon bits and cheese. Bake for 20 minutes and then broil for 1-2 minutes (if you want to brown the cheese). Keep a close eye on the potatoes while they broil so they don’t burn on top.
  9. Allow potatoes to cool, add desired toppings and enjoy!

  • 1 small onion (diced)
  • 3 cloves garlic (minced or crushed)
  • 1 1/2 tsp dried thyme (leaves)
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp cajun salt (we use Tony Chachere’s)
  • 1/4 tsp black pepper
  • 1/4 tsp scotch bonnet pepper powder**
  • 2 cups white basmati rice (rinsed)

Instructions

  1. Heat a dutch oven or medium heavy bottomed pan that has a tight-fitting lid over high heat.
  2. Add coconut milk, broth/liquid from peas and water to the pan. You need 4 cups of total combined liquid (broth/liquid from peas, coconut milk and water) for this recipe. If you don’t have a full 2 cups of broth, add extra water to make the total liquid equal 4 cups in the pan. If you have extra broth, use it and reduce/omit the water. Just make sure you add only 4 cups of liquid total to the pan.
  3. Add peas, onion, garlic, all spices, salt and pepper to pan. Stir and bring to a boil.
  4. Add rice to pan, stir and bring back to a boil.
  5. Stir one last time, reduce heat to low, cover with tight fitting lid and set a timer for 15 minutes.
  6. Do not open until 15 minutes has passed (this will cause the steam to escape).
  7. After 15 minutes has passed, check on rice and ensure it’s done, especially around the edges of the pan. If it’s not done, allow it to cook another 3-5 minutes, covered.
  8. Once done, turn heat off, fluff rice gently and serve.

  • 1/2 cup whole cashews, toasted and then chopped
  • 2-3 cloves garlic, minced
  • 2 teaspoons fresh ginger, minced
  • 1 teaspoon soy sauce
  • 2 teaspoons honey
  • 3 tablespoons seasoned rice vinegar
  • 3 tablespoons sesame oil
  • 3 tablespoons olive oil

Instructions

  1. Combine quinoa and water to a saucepan and bring to a boil. Cover, reduce to a simmer and cook for 10 minutes. Turn the heat off, leave the lid on and allow the quinoa to sit on the burner for a further 5-7 minutes. Remove the lid and fluff with a fork.  Set aside to cool. 
  2. Heat a small saute pan to medium and add sesame seeds and toast for 3 minutes stirring occasionally.  Remove from pan and set aside.
  3. While pan is still hot, add cashews and toast for 1-2 minutes, stirring often to be sure they do not burn. Remove from pan, set aside to cool, then give a rough chop.
  4. Meanwhile while quinoa is finishing, in a small bowl mix together vinairgrette dressing ingredients.
  5. In a large bowl, add cabbage, kale, carrots, cilantro, green onions, quinoa, black sesame seeds, and cashews and mix.
  6. Add dressing to large bowl of veggies and mix well. Cool in fridge until ready to serve.

  8. Once carrots can easily be pierced with a fork they are done. Allow to cool and enjoy. Add extra feta, rosemary or honey if desired!
