Instructions For the Cauliflower & Marinade:

  1. Defrost the cauliflower overnight in the fridge or a few hours at room temperature. Cut up any larger pieces so that the florets are all roughly the same size for even cooking. Drain the cauliflower and dry it as much as possible on paper towel or a clean tea towel if necessary. Place in a large bowl. Set aside.
  2. In a small bowl, whisk together the ingredients for the marinade. Pour the marinade over the cauliflower and toss. Cover and marinate for a minimum of 30 minutes, but a few hours is best.
  3. Preheat the oven to 425°F. Lightly oil a large baking sheet, or line it with parchment paper. Spread the cauliflower out on baking sheet, ensuring there’s space between each floret. Once the oven has preheated completely, place the cauliflower on a middle rack and roast for 25-35 minutes, tossing once half way through. Prepare your toppings and tzatziki.

Assembling the Gyro Wraps:

  1. Warm the flat-breads by wrapping them in foil and placing them in the oven during the last few minutes of roasting the cauliflower.
  2. Layer the cauliflower, tzatziki, veggies and olives down the middle of a warm flatbread. Fold the sides of the flatbread over the fillings. Wrap in parchment or foil to help make things less messy if desired. Store leftover cauliflower, toppings and flatbread separately – these wraps are best assembled just before serving.

Instructions Tofu filling

  1. Heat up the olive oil in a non-stick frying pan on medium-high heat. Add the cubed or crumbled tofu and fry for about 5 to 8 minutes stirring occasionally, until the tofu is lightly browned and just starting to get crispy.
  2. Reduce the heat to medium. Stir in the dry seasonings.
  3. Add the soy sauce and tomato puree/paste to the pan and stir through to distribute evenly. Fry for a couple more minutes, stirring occasionally. Remove from heat.

Assemble wraps

  1. Lay a tortilla on a flat surface, cover a section down the centre with lettuce, strips of red pepper, avocado slices, some of the tofu filling and a sprinkle of coriander leaves/cilantro.
  2. To make a closed wrap, start by folding both ends of the wrap inwards. For an open wrap, just do one end.
  3. Start to roll the wrap by folding the bottom flap over the filling, tuck the filling in and then continue rolling the wrap to finish.
  4. Continue with remaining wraps and enjoy!

  1. Prepare sauce to spread on each wrap by mixing together mayo and ketchup in a small bowl.
  2. Saute peppers and onions in olive oil for 5 minutes. Add garlic and cook for 1 more minute. Remove from the pan and set aside.
  3. Heat roast beef in the same pan for just about one minute. You don’t want to overcook it.
  4. Separate into individual portions and top with cheese to melt. Remove from the heat.
  5. Wash and dry your lettuce leaves. Be gentle so that your lettuce doesn’t tear.
  6. For lettuce cups, spread some of your sauce on your lettuce. Scoop up the cooked meat with cheese and place in lettuce cups. Top with veggies. Then just pick them up and eat like you would a taco.
  7. Or for an easy on-the-go wrap, layout two overlapping lettuce leaves on parchment paper. Spread some sauce onto the lettuce. Add your cheesesteak and veggies.
  8. Now roll as tightly as you can tucking the ends of the lettuce inside. Then tightly roll your parchment paper around the lettuce wrap. Fold both ends tucking the paper in. Cut horizontally into two parts with a sharp serrated knife.
  9. Tear off a little paper at a time as you enjoy eating your wrap.

  4. Brush soy sauce mixture over fillets. Tuck narrow end of each fillet underneath (so salmon cooks evenly). Bake for 12 to 15 minutes or until salmon is cooked through, opaque, and flakes easily with a fork (insert the tines of a fork into the thickest part of the fish at an angle and twist gently; it should flake easily).Note: If your salmon fillets has the skin attached, you can remove and discard before using in the wraps.

Creamy Honey Mustard Yogurt Sauce

  1. Whisk together all ingredients in a small bowl until combined.

Assemble the Wraps

  1. Spread the creamy honey mustard yogurt sauce onto one half of each tortilla. Top with spinach, bell pepper, onion and carrot. Break salmon up into chunks and distribute over top of veggies.
  2. To fold the wraps: For each one, bring the bottom of the tortilla up over the ingredients (covering them) and then gently pull it back towards you to tighten. Fold in each side, then begin to tightly roll the wrap (keeping everything tucked in as you roll, so it’s compact). I like to fold wraps burrito-style. Alternatively, you can fold the wrap your favourite way. Serve and enjoy!

  1. Start by preparing the peanut sauce. This creamy sauce is very easy to make in about 5 minutes. Simply combine all the sauce ingredients in a bowl and whisk together until smooth. If needed, heat the mixture in the microwave for 30 seconds to allow for easier blending. If it needs to be thinned a bit, just add a little more almond milk. Set to the side while you start on the wraps.
  2. Collard leaves are very large and rigid. They require a few steps to make them easier to work with.
  3. First, lay the collard leaf on a cutting board or other flat surface and turn it with the coarse side up. Use a sharp knife to trim the thickest part of the stem, being careful not to cut through the leaf. This will help allow the leaf to be rolled and folded without cracking and tearing. See my video that shows how easy this is to do.
  4. Next, bring a pot of water to boil to parboil the leaves to make them more pliable and easy to bend when rolling. Lower the heat to medium-low. Hold the long stem of the leaf (or use tongs) and dunk it into the water for approximately 20-30 seconds, then quickly remove the leaf and lay it on a cutting board or another flat surface.
  5. Each leaf will need to be done separately, so don’t pile all of them in the pot together. I like to parboil all my leaves during one prep time even when I’m not planning to make all the rolls at once. This is because, once they are prepared, they keep really well in the refrigerator.
  6. Use scissors or a sharp knife to cut off the long stem to level with the bottom of the leaf.
  7. Now, it’s time to stuff and roll the leaf. Begin by spooning 2-3 tablespoons of cooked bulgur onto the middle of the leaf, about 1/4 of the way up the stem.
  8. Add all of the other diced and grated vegetables and drizzle with approximately 2 tablespoons of the peanut sauce.
  9. Fold the side edges of the leaf over the middle-filled filled portion. And, make sure that your stuffing ingredients are not all pushed too far up the leaf. See my instructional photos to help with this.
  10. Next, fold the bottom (stem end) up and over the filling. It looks like you’re making a little pocket for the filling. You want it to be nice and firmly folded, but be careful not to tear the leaf.
  11. Begin to roll it up firmly to the end, then place the roll side down on a plate. You shouldn’t need a toothpick or anything to hold them in place because leaves are more flexible and stay in place due to the blanching in boiling water step above.
  12. Lastly, use a sharp knife to slice them in the middle for easy serving because all of the colors on the inside make a beautiful and impressive display.
  13. Serve immediately with the rest of the peanut sauce for dipping.

  6. Gently roll up the wrap and cut it in a half before serving.

Instructions To make lime baked tofu

  1. Preheat oven to 400 degrees. In an 8 x 8 inch glass baking dish, drizzle the extra virgin olive oil and tamari. Tilt the baking dish from side to side to evenly distribute the liquid. Toss the tofu planks in the liquid and spread them evenly across the baking dish.
  2. Bake the tofu planks for 20 minutes. Remove from oven, turn the planks over, and sprinkle them with the lime juice. Return the planks to the oven and bake for 15 minutes longer.
  3. The tofu can be used hot or cold in the wraps. Either use them immediately in the wraps or put them in a covered container in the refrigerator. The refrigerated tofu will develop an even firmer texture as it cools.

To make spring roll wraps

  1. For easy wrapping, quickly warm the tortillas one by one in a dry skillet at a medium heat. Or microwave all of them together on a plate for about 30 seconds. This makes the tortillas more pliable and easier to roll.
  2. Place one large green leaf lettuce or romaine leaf on each tortilla. On top of the leaves, add a small handful each of carrot sticks, cucumber sticks, red bell pepper strips, cilantro, peanuts, and tofu planks. Roll the wraps like a burrito and serve with spicy peanut sauce.

To make spicy peanut sauce

  1. In a small bowl, use a fork to combine peanut butter, tamari, rice vinegar, sriracha, and water until it is fully combined and has the texture of a creamy sauce. Thickness of peanut butter varies. So if your sauce is too thick and pasty, add another teaspoon of water. If it’s too thin, add another teaspoon of peanut butter. Add the garlic and ginger powder and fully combine. If desired, serve in small sauce dishes, so that every person has a personalized dipping sauce for her/his wrap.
  2. Keep any extra sauce in a covered container in the refrigerator. It will thicken as it cools. Add a teaspoon of water to thin it out, if needed, after refrigeration.

Instructions

  2. Drain and rinse the chickpeas and put them in a bowl. Smash them with your hands or with a fork.
