  7. While the potatoes are roasting, add the broccoli into a large bowl, cover with 1 tbsp of olive oil, then add 1/4 tsp of salt and 1/4 tsp black pepper. Toss to cover the broccoli.
  8. Spread broccoli on the baking sheet and pop into the same oven and bake for 20 minutes. Stir midway and bake until the broccoli browns up.

Chicken

  1. Slice every chicken breast lengthwise to create thinner pieces.

Instructions Lemongrass chicken

  1. If you’re using lemongrass stalks, finely slice the white part of the lemongrass stalk and then finely mince it. The minced lemongrass will be used in the marinade.
  2. Mix the ingredients for the marinade in a small bowl. Whisk until everything is mixed through. If you prefer, you can add about 1 – 2 tbsp of water to adjust the consistency of the marinade to your liking.
  3. Place the chicken in a ziploc bag, or a large bowl or container. Pour the marinade in and toss the chicken pieces well to make sure all the chicken is well coated in the marinade.
  4. Let the chicken marinate for at least 30 minutes, OR for best results marinate in the fridge overnight (or up to 24 hours).
  5. When ready to cook, heat a non-stick skillet with a drizzle of vegetable oil, over medium heat. You can use a cast iron skillet as well, but you may need to reduce the heat slightly because the cast iron skillet retains more heat.
  6. OPTIONAL – When the pan is heated, pat dry the excess marinade from the chicken pieces using paper towels. This is an optional step, but helps the chicken grill and caramelize better.
  7. Place the chicken thighs on the heated pan, skin side down. Do not overcrowd the pan, so cook in batches.
  8. Cook the chicken for about 5 minutes per side, until the chicken is caramelized on both sides and is cooked through. Adjust the cook times depending on how fast the chicken is caramelizing, since the cook times will vary depending on the size of the chicken and your stove.

  1. Make sure to use freshly squeezed lime juice to make the nuoc cham sauce.
  2. Place all the ingredients in a bowl. Whisk until the sugar is dissolved through. Taste and adjust the flavor by adding more lime juice, honey, or water.
  3. Keep in the fridge until ready to serve.

To serve

  1. Serve the sliced lemongrass chicken with a salad and rice or noodles, and any other additions.
  2. Serve the nuoc cham on the side, so that it can be poured over the rice and salad.
  3. If you make this for meal prep, either pack the salad separately, OR add sauteed vegetables instead of raw vegetables/salad. Also add the nuoc cham sauce separately, since it can become bitter when heated.

  • 3 small zucchini, chopped ((about 3 cups chopped))
  • 1/2 teaspoon Creole seasoning
  • 1/2 teaspoon garlic powder
  • 4 meal prep bowls ((I used Pyrex glass storage containers))

Instructions Quinoa:

  1. Place the quinoa and water in a small saucepan, and heat over medium heat till it begins to boil. 
  2. Lower the heat, cover with a lid, and cook for 20 minutes. While the quinoa is cooking, prepare and cook the other ingredients. 
  3. Once the quinoa is done cooking, turn off the heat and allow it to sit in the pan for 5 minutes, still covered. Stir in the Earth Balance, salt, and pepper. 

Chicken:

  1. Spray some oil in a nonstick pan, and heat the pan over medium heat while you cut up the chicken.  
  2. Once the chicken is cut into cubes, add them to the hot pan along with the Jamaican jerk and garlic powder and stir to mix the spices with the chicken. 
  3. Continue to cook the chicken, stirring frequently, over medium heat until the chicken is cooked through. This usually takes about 8-10 minutes. 
  4. Remove the chicken from the pan and set aside. You’ll immediately add your zucchini to cook in the hot pan, adding a little more spray oil to the bottom of the pan first. 

Zucchini:

  1. While the chicken is cooking, wash and cut up your zucchini into small pieces. I usually cut it in quarters lengthwise, then dice it.
  2. When the chicken is finished cooking, spray the pan and immediately add the zucchini, creole spice, and garlic powder to the pan to cook over medium heat, stirring frequently.
  3. Cook the zucchini until it is tender crisp, about 8-10 minutes. 

Assembling the meal prep bowls:

  1. Divide the quinoa, chicken, and zucchini between 4 meal prep containers (or divide between 3 if you want bigger meals). 
  2. Cover and store in the fridge or freezer. Enjoy!

Option 2 (cooking the zucchini and chicken together):

  1. If you want to save time, you can cook the chicken and zucchini together in the pan. 
  2. First heat up your pan with some spray oil and cut up your zucchini as the pan is heating up. Add your zucchini to the pan for a few minutes before adding the chicken.
  3. Cut up the chicken into cubes and add to the pan with the zucchini, along with the Jamaican jerk seasoning and garlic powder. You can add an additional teaspoon or two of Jamaican jerk seasoning to this to season the zucchini as well (skip the creole seasoning here). 
  4. Continue to cook over medium here, stirring frequently, until the chicken is cooked through, about 8-10 minutes.
