Instructions
- Heat the stock in a large soup pot to simmering.
- In a separate bowl, whisk the 4 eggs well, and then whisk in the lemon juice, making sure the eggs are completely broken up and smooth.
- Slowly pour one ladle of the hot broth into the egg mixture, whisking all the while. Add another in slowly, and then a third. You are tempering the eggs so they don’t curdle when you add them to the hot broth in the soup pot.
- Off the heat, slowly, drizzle in the lemon egg mixture back into the broth, whisking constantly. (If you are good at that pat the head and rub the tummy trick, you’ll do fine with this…) The soup will turn a cloudy creamy color.
- Put the pan back on the burner and heat gently while stirring, I use a silicone spoonula for this. Don’t heat too long, and don’t bring to a simmer or boil. The lemon egg mixture will heat through and give the soup a silky body, but it won’t get thick. Take off the heat and check the seasonings. I love to add lots of pepper, and you may need some salt.
- I like to put the rice and chicken in the individual bowls first, and then top with the hot soup. This way the orzo or rice doesn’t absorb too much of the broth and get soggy. Add the chives, and serve right away.
2. Duchess Potatoes

Instructions
- Cook the potatoes in boiling water for 15-18 minutes until tender.
- Drain and return to the pan.
- If cooking straight away, preheat the oven to 200˚C fan /220˚C / 392˚F convection / 425˚F
- Line two baking trays with baking parchment
- Return the pan to the heat and cook for 1 minute, to evaporate any moisture, shaking the pan every so often.
- Stir in the butter, nutmeg and season, then mash.
- Pass the mashed potato through a sieve, using the back of a spoon to push it through.
- Let the mixture cool for a few minutes then stir in the egg yolks, then place in a piping bag fitted with a 2 cm/ ¾” star nozzle.
- Tip: place a tiny amount of mashed potato in the 4 corners of your tin, between the tin and baking paper, this will stop the baking paper from moving when you pipe on it.
- Pipe 26-28 walnut sized mounds onto the trays (like icing a cupcake).
- Gently brush each mound with either a beaten egg yolk or a little melted butter.
- Place in the preheated oven and bake for 15-20 minutes, turning the trays around after 10 minutes, until golden.
- Serve immediately.

Pour into individual ramekins or glasses (or one larger dish) and place a piece of plastic wrap directly on the surface to prevent a skin from forming.
- Place in the fridge to cool. This can be done 2-3 days ahead of time.
Strawberry Compote:
- Put strawberries and maple syrup in a pot over medium-low heat, stirring occasionally until the strawberries are soft and juicy.
- Whisk together the lemon juice, water and arrowroot starch in a small bowl.
- Stir mixture into the strawberries. Cook over medium-high heat while stirring until it bubbles and thickens (about 2-3 min). Stir in the vanilla and allow to cool down until slightly warm or fully cooled (hot compote will melt the custard).
- Spoon compote over the custard and enjoy! (Or place in the fridge and enjoy later!)

With a short season of availability, their glorious colour and their unique, almost raspberry-like flavour, this is a great way to make the most of beautiful blood oranges.
Ingredients
- 8 egg yolks (See Note 1 and 2)
- 1 cup (220 g) superfine/caster sugar (See Note 2)
- 1/2 cup (125 g) unsalted butter
- 4 tsp finely grated blood orange zest – loosely packed (See Notes 3 and 4)
- 200 ml (3/4 cup + 1 tbsp) strained blood orange juice
Instructions
- Add the egg yolks and sugar to a medium-size bowl – See Note 2.
- Whisk the egg yolks and sugar together until well combined.
- Tip the whisked yolks and sugar into a heavy-based, non-reactive saucepan – (See Note 5.) Add the butter, zest and juice to the pan.
- Place the saucepan over low-medium heat and, using a whisk, stir constantly until the mixture just comes to a simmering point. As soon as the bubbles appear, remove the saucepan from the heat. (See Note 6).Stir for a minute or so – this will prevent a skin forming as the curd cools. The curd will thicken as it cools.
- Transfer to sterilised jars (See Note 7) while the curd is still slightly warm. When the curd is cold, add the lids and seal well.The Blood Orange Curd will keep for 1 week if well sealed and refrigerated.

- 2-3 sprigs curry leaf (optional and feel free to add more if you want! These are usually not eaten (like bay leaves.))
- 1 chilli padi
- 2 teaspoon sugar
- Pinch Salt (Often, this is unnecessary, so taste first before adding!)
- 5-6 cups cooked popcorn
Instructions
- Cook the eggs, preferably by steaming. Alternatively, you can also hard boil for about 10 minutes. Note: if steaming, you can separate the egg white and yolk before steaming! This way you won’t waste any previous yolk! (If you separate after cooking, they you usually end up with whites in the yolks or yolks in the whites!)
- If boiling, peel and separate the yolks from the whites. Mash the egg yolks finely with a fork till they resemble breadcrumbs.
- Using medium-low heat, melt the butter then add the curry leaf sprigs and stir fry till fragrant. Add the chilli, if using and give the sauce another stir. (Do not allow the butter to brown.)

- Add the sugar and stir. (Alternatively, if you want the sugar to form a light crunchy layer on the popcorn, add the sugar at the end of the entire process!)
- Taste and, if necessary, add salt, stir then remove the pan from the heat (and switch off the fire).
- Allow the sauce to cool.
- Once cool, pour over the popcorn and stir till well-mixed.

Instructions
- Cook pasta in a stock pot according to package directions. Reserve 1 cup pasta water, then drain the rest. Set aside.
- Meanwhile, place the butternut squash cubes and ¼ cup water in a microwave safe bowl. Microwave 4-5 minutes, until very tender. Drain the water. Place the cooked squash in a blender with the reserved pasta water, salt, black pepper, nutmeg and cayenne and puree until very smooth. Set aside.
- Heat the olive oil in the pot used for boiling the pasta to medium heat. Add the bacon pieces and cook, stirring regularly, until crispy. Add the butternut squash puree to the pot and bring to a simmer. Using tongs, stir in the cooked spaghetti and simmer until the sauce is thickened. Remove the pot from the heat.
- Use the tongs to stir the egg yolks into the pasta, then stir in the grated Parmesan until the spaghetti is glossy and coated with the sauce. If the mixture is thick, add the stock. Taste and adjust the seasoning, if necessary.
- Serve in bowls and top with more Parmesan, if desired.

- 2 tbsp cornstarch

Instructions
- Roll out the puff pastry sheets into 2 10×12 inch or 25×30 cm rectangles. Starting on the shorter side, roll the puff pastry sheets into a log. Wrap each log in parchment or plastic wrap and place in the fridge.
- To make the custard filling, whisk the egg yolks, whole egg, milk, sugar, and cornstarch until smooth and there are no lumps. Add the cinnamon stick and place it over medium heat.
- Whisk the custard as it heats for 3-4 minutes and then discard the cinnamon stick. Continuing whisking over medium heat until the custard thickens and coats the back of a spoon.
- Remove from heat and stir in the vanilla extract. Pour the custard into a bowl. Cover the bowl with plastic food wrap, placing the food wrap directly on top of the custard so that no skin forms. Allow to cool completely.
- Preheat oven to 450F while the custard is cooling.
- Once custard has cooled, remove the puff pastry logs from the fridge and cut each log into 12 equal slices. Working with one slice at a time, use a rolling pin to roll it out into a 3.5 inch or 9 cm circle. [Tip: you can roll out the circles to slightly larger shapes and use a 3.5 inch cookie cutter to cut perfect circles]. Place the circles into a metal muffin tin or tart shells. forming cups for the custard to sit in. Repeat with the remaining puff pastry portions.
- Spoon the custard mixture into the puff pastry cups. Bake in the oven for 20-25 minutes. At this point you should see some brown spots begin to form on the custard tops. If needed, continue baking for 3-5 more minutes, being careful not to burn the pastry. Remove from oven and allow to cool for 5 minutes in the pan.
- Carefully remove from the pan and transfer to a cooling rack to cool. Sprinkle with cinnamon and powdered sugar (if desired) and serve. [Tip: if sprinkling with powdered sugar, allow the tarts to cool completely otherwise the powdered sugar will melt on contact].

Instructions
- Preheat oven to 425 degrees. Butter a metal (not black) baking sheet or use a silpat.
- In a large bowl place berries and 1/3 cup Baker’s Sugar. Mix with a spoon to fully coat and set aside to allow berries to macerate (their juices with mix with the sugar creating a sauce).
- In a food processor bowl using the pastry blade combine the flour, ½ cup granulated sugar, baking powder, baking soda and salt. Pulse to fully combine.
- Add the chopped butter; pulse to combine until crumb-like consistency.
- Combine the 2/3 cup buttermilk, vanilla and egg yolk. Pour into the food processor while it is mixing; pulse until the liquid and solid mixtures have completely incorporated. If the dough is too dry to hold together, add additional buttermilk by the tablespoonfuls until the dough stays together.
- Place the dough onto a floured surface (if making the shortcake gluten-free be sure to use gluten-free flour). Gently flatten to the dough until it is 3/4 inch thick. Cut out rounds using a 3-inch round cookie cutter or biscuit cutter. Slide a spatula underneath the round of dough and gently transfer it to the prepared baking sheet.
- Combine remaining dough and repeat until no other shortcake can be cut from the dough scraps. Brush the top of each shortcake with buttermilk and place in the oven.
- Bake until shortcake is lightly golden brown; between 10-15 minutes. Remove from the oven and allow to sit on the baking sheet for 5 minutes. Transfer to a cooling rack and allow to cool fully (this is especially important for gluten-free shortcake to ensure the shortcake will stay intact). Once fully cooked, slice in half with a serrated knife horizontally.
To prepare the Whipped Cream:
- In a chilled mixing bowl combine the heavy cream, 2 tablespoons granulated sugar and 1 ½ teaspoons vanilla. Mix on high speed until soft peaks are reached but the cream is still a bit relaxed (do not beat until the whipping cream is completely stiff).
To assemble the shortcakes:
- Place the lower half of a shortcake on a serving plate. Add an ample spoon of the berries and liquid, whipped cream and place the top of the shortcake on top. Add a few berries on the top of the shortcake. Repeat with remaining shortcakes and serve.

- Meanwhile, dissolve the cornstarch in a little bit of the milk, and whisk until very smooth. Add the egg yolks, and whisk until smooth.
- Add the corn starch slurry to the rest of the milk and cream, and whisk briefly to combine everything.
- Add the milk/cream mixture to the partially cooled brown sugar, whisking as you go. The sugar will seize up and become hard, but don’t worry, everything will melt once the pan goes back on the heat.
- Return the pan to the heat, and gently bring the whole mixture to a boil over medium-low heat, whisking constantly. Once all the brown sugar has dissolved and the mixture is beginning to thicken, switch to a silicone spatula so that you can scrape the bottom and sides of the pan as it thickens.
- Once the pudding comes to a boil, (it should be quite thick), take it off the heat and immediately pour it through a fine mesh strainer.
- Add the butter, vanilla extract, and whiskey (if using), and whisk vigorously to combine (I whisked mine for a good minute or so to get the butter well incorporated.)

- In a large mixing bowl, whisk together the Egg Yolks and Icing Sugar for a couple of minutes or until smooth and pale.
- Add the very soft Salted Butter and whisk (or mix with a stiff spatula) until you get a thick, soft mixture.
- Sift in the Flour and Baking Powder. Work the dough with a stiff spatula or by hands to combine all the ingredients until you get a smooth cookie dough.
- Transfer the dough between two sheets of baking paper and roll it with a rolling pin to be about 6 mm (1/4 inch) thick (see note 1). Place in the fridge to chill for at least 1 hour – or overnight.
- Preheat your oven on 160’C/325’F. Prepare a baking tray lined with a baking mat or parchment paper (see note 2).
- Remove baking paper and cut out the cookies with a round or fluted Cookie Cutter, about 6cm (2,5 inch) wide (see note 3). Transfer the Sablés Bretons Cookies over the baking tray (see note 4).
- Optional: Use the back of a fork to create the cross pattern (if the fork sticks to the cookie, dip it in a little bit of water) then brush each cookie with the Egg Yolk for a golden finish.
