Transfer to a plate and repeat this step with remaining tofu.

Bring to a boil, then reduce heat to medium-low and continue cooking the sauce for another 30 minutes.
- Preheat your oven to 350°F. Add 1 cup of the reserved sauce to the bottom of the 9×13-inch lasagna pan. Layer your lasagna noodles above it. - Put water on to boil for the pasta. Add salt once it starts to boil.
- Clean the fresh mushrooms by cutting off the end of the stalk. It would be better not to rinse with water, given that the fungus absorbs it. You can use a small brush to remove any soil, or a damp cloth.
- Cut the mushrooms into pieces
- Fry the peeled garlic cloves in the olive oil, then remove them when golden and add the mushrooms.
- Cook them for about 3-4 minutes until they start to brown. If using frozen mushrooms add after the fresh ones have browned a little
- Add wine and nepitella or thyme, increase the heat and cook until the alcohol has evaporated
- Reduce the heat and add salt and pepper.
- Continue to cook for about another 10-15 minutes. Lower the heat once mushrooms are cooked through and add the butter. When the butter has melted remove the pan from the heat.
- Cook the pasta in salted boiling water, remove a glass of the pasta cooking water to be used later and then drain and add the pasta to the pan with the mushrooms and butter.
- Toss everything together over a low heat. The pasta absorbs liquid very quickly so if it looks too dry, add a little of the pasta cooking water at a time until you get the right creaminess.
- Serve immediately with grated parmigiano or vegetarian parmesan as required.

- Add everything except for the chickpea flour and breadcrumbs to a food processor. Pulse a few times until fully combined. Do not over blend so it’s completely smooth, it should be well-mixed but still have some texture to it.
- Transfer the mixture to a bowl and add the breadcrumbs and the chickpea flour and mix well with a spoon until you have a mouldable consistency. If the mixture is too soft or falls apart, add some more bread crumbs as needed.

Instructions Soaking Urad Dal & Rice
- In a bowl take the idli rice or parboiled rice along with the regular white rice.Instead of adding regular rice, you can also make the dosa with a total of 1 cup idli rice as I have shown in the video. The video has the recipe ingredients doubled in proportion.
- To the same bowl, add urad dal and fenugreek seeds.
- Rinse the rice, lentils and methi seeds together a couple of times and keep aside.
- In a separate bowl, take the flattened rice.
- Rinse it once or twice in water and then add rinsed flattened rice to the bowl containing the rinsed rice+lentils+methi seeds.
- Pour 1½ cups water. Mix. Cover with a lid and soak everything for 5 to 6 hours.
Making Dosa Batter
- Drain all the water and add the soaked ingredients in a wet grinder jar.
- Add ⅔ to ¾ cup water and grind till you get a fine grainy consistency of rice in the batter. A smooth consistency of batter is also fine.
- If the mixer gets heated up, then stop and wait for some minutes. When the mixer cools down, grind again. Depending on the jar capacity, you can grind everything once or in two batches. I ground in two batches and added overall ¾ cup water.
- Now take the batter in a large bowl or pan.
- Add ½ tsp rock salt. Mix very well. Cover and allow to ferment for 8 to 9 hours or more. Time of fermentation will vary depending on the temperature conditions.
- A proper fermentation will double or triple up the volume of the batter and you will see tiny air pockets in the batter with a light sour aroma.
- Now lightly stir the batter, before you begin to make dosa.
Making Dosa
- Heat a cast iron pan. When the pan becomes hot, spread ¼ to ½ teaspoon oil all over the pan. Do keep the heat on low to low-medium heat, so that you are easily able to spread the batter. If the pan base is very thick, then keep the flame to medium.
- Do not spread oil if you are using a nonstick pan, as you won’t be able to spread the batter.
- Now take a ladle full of the batter. Pour the dosa batter and gently spread the batter starting from the center and moving outwards.
- Cover it with a lid and cook the dosa on a low to medium heat. Do regulate the flame as per the pan size and thickness.
- When you see the batter on the top has cooked well and the bottom has become crisp and golden, then sprinkle ¼ to ½ teaspoon oil on the edges and center.
- With the spoon spread the oil on the dosa.
- Cook till the base is nicely golden and crisp. The base will leave the pan and the sides will also get separated when it gets cooked.
- Fold and serve sada dosa hot. Make all dosai this way.
Serving Dosa
- Serve these crispy plain dosa hot with sambar or potato masala or coconut chutney. Dosa tastes best when served immediately.
Storing Batter
- Refrigerate leftover batter in an airtight container for 2 to 3 days.
- Stir gently before use and adjust consistency with a little water if needed. The batter may turn slightly sour over time.

- Sprinkle the almond meal mixture over the oil-coated kale chips.

- Cook the white rice by your usual method, via stovetop or rice cooker for instance.
- While the rice is cooking prepare the fava beans, see above and link on how to shell, cook, and peel fresh fava beans.
- Let the rice cool slightly but you still want it warm so it absorbs some of the vinaigrette and becomes more flavorful.
- In a medium-sized serving bowl add the cooked rice and fava beans.
- In a small bowl whisk together the vinaigrette ingredients. Pour over the rice and fava beans. Stir gently to combine.
- Add the scallions and the lemon zest, stir lightly. Season with salt and pepper to taste. Serve immediately while still slightly warm or cold.
- This can be stored in the refrigerator for about 5 days. Bring to room temperature before serving and you may need to add additional dressing to bring it back to life.

- Use a wooden spoon or spatula to mix very well, making sure no clumps of chickpea flour remain.
- Heat a large frying pan over medium heat. Once the pan is hot, coat the base with a thin layer of oil.
- Scoop portions of the quinoa mixture into the frying pan, about 2 tablespoons for each patty. It will be loose, but the eggs will hold it together. Use a spoon to shape the patties into rounder shapes if desired (before flipping).
- Cook for 2-3 minutes on the first side, until golden brown, before flipping. Press down lightly with the spatula after turning. Cook the second side again for 2-3 minutes, until golden. Repeat until all of the mixture has been cooked.
- Keep the patties in a warm oven before serving if you’d like, and serve with avocado or any dips and sauces you like. I often serve with tahini garlic sauce.
- These will keep for a couple of days in the refrigerator in an airtight container, and freeze well. They are excellent both hot and cold.

- Prepare the Garlic Herb Sauce- in a medium bowl whisk together the olive oil, minced garlic, parsley, cilantro, rosemary, salt, and pepper. Set aside.
- Skewer the vegetables by alternating between red onion, zucchini, and the different colored bell pepper. Brush skewers with a light layer of olive oil.

- ¼ teaspoon fine sea salt
- 1-2 tablespoons ground chili paste or sriracha

- I highly recommend toasting your bread, even though it is optional. Toasting adds a delicious flavor and great texture. I have listed some bread options below.
- Though my homemade spicy vegan mayo is an optional spread for this sandwich, I think you’re going to want to make it, and it only takes 5 minutes. You will find so many other ways to eat it. It makes a great dip and salad dressing as well.
- So, to begin, take a few minutes and make the special sauce mayo spread while the bread is toasting.
- Next, slice your tomato and avocado. I prefer to leave it in slices and not mash it.
- You’ll be using 1/2 of an avocado for each sandwich. To prolong the life of the unused half (if you are only making one) and keep it from going brown too quickly, take a look at my suggestions below in the Notes section.
- Wash and chop the fresh cilantro, and slice the purple onion.
- Assemble your sandwich by spreading the spicy mayo on each slice of toasted bread and then layering the slices of tomato and avocado. Add the sliced purple onion and fresh cilantro.
- Sprinkle with garlic powder, onion powder, Tajin seasoning, salt, and pepper.
- Spritz with lime juice and then close the sandwich by adding the top layer of bread. Slice (or not), serve, and enjoy!
Spicy Vegan Mayo:
- Use a package of firm silken tofu (12-15 oz) for this recipe. I prefer the shelf-stable variety that is packed in very little water because it is the creamiest available. Even when using the firm or extra firm block, the texture is perfect for sauces like this. If you are using shelf-stable tofu, which is found on grocery store shelves instead of in the refrigerator section, there is no need to drain the water before using it because there are literally only a few drops when you open the carton.
- On the other hand, if you are using the refrigerator-type of tofu, be sure you have the softest texture available, and drain it before using. To do this, open the container and pour out the water it is packed in, then place the tofu block on a towel for a few minutes to release more of the water content before using.
- Place all of the ingredients into a blender or food processor and blend until you get a nice creamy texture. This usually takes about 1 minute or so. It will thicken up even more when chilled.
- IMPORTANT NOTE: Personally, I blend all of the ingredients except the hot sauce because this recipe makes almost 2 cups of mayo. That’s a lot! I like to have the non-spicy version on hand for dips, coleslaw, and potato salad. Then, I can easily stir in the hot sauce for the spicy mayo right before using it on sandwiches and wraps.

- ½ teaspoon pepper
- 2 teaspoons ginger garlic paste ((divided))
- 2 teaspoons lemon juice
- 2 teaspoons mustard oil
- 1 teaspoon Kashmiri chili powder
- ½ teaspoon chili powder (or cayenne pepper)
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- 2 tablespoons yogurt
- 2 teaspoons besan (or chickpea flour)
- 1/2 cup Mint chutney
Instructions Tenderize the chicken breast
- Skip to the next step if using thighs or legs.Clean the chicken and dice into 1½ inch cubes. Mix in baking soda and keep aside for 20 minutes.
- Rinse a couple of times and drain the water completely. Use kitchen towels to wipe the chicken dry.
First marination
- Add salt, pepper, ginger-garlic paste and lemon juice.
- Mix and let it marinate for 10 minutes while you prepare the second marinade.
Tandoori marinade
- Take Kashmiri chili powder in a small bowl. Heat mustard oil and add. Mix and let it cool.
- Add all the ground spices and yogurt. Whisk everything together and add to the chicken. Mix well.
- Roast besan on a low flame for 3 to 5 minutes until you get a nutty aroma. Let it cool and add to the chicken. Mix and refrigerate.
- Let it marinate for a minimum of 30 minutes.
“Smoked” tandoori chicken tikka (optional)
- Break up the stick of cinnamon and heat the pieces on direct fire until they are red hot. Place in a small bowl inside the bowl of marinated chicken.
- Quickly drizzle a spoon of oil or ghee to produce smoke and cover the bowl with a lid.
- Let it smoke for about 10 minutes. (You can do this either before refrigerating and leave it in while marinating. Or do it 10 minutes before roasting.)
Assemble and bake
- Preheat the oven to 230°C/446°F.
- Thread the chicken cubes onto skewers. Place the skewers on a baking tray. Prop them on the edges of the tray in such a way that the chicken cubes don’t touch the bottom of the tray.
- Bake in the oven for 10 minutes on “roast” setting.
- Take out the tray and baste the chicken tikka with ghee/melted butter.
- Change the oven setting to broil. Return the tray to the oven and cook for 10 minutes.
- Serve with mint chutney.
Tandoori chicken kebabs without oven
- You can cook this tandoori chicken tikka on a grill pan or frying pan, too.
- Marinate in the same way as above, but skip the besan. Thread the marinated cubes of chicken leaving a little gap between the pieces (not so close together as in the oven recipe).
- Add a tablespoon of oil in the pan. Place the skewers and cook on high flame for 5 to 8 minutes on each side, until browned. KEEP BASTING the chicken with hot oil or melted butter while cooking.
- Do you want the chicken tikka fry to be charred (restaurant-style)?Cook them on direct flame for about 2 to 3 minutes after removing from the pan. Keep turning the skewers to expose all the sides to the flame.

Instructions Make the Masoor Dal:
- In a fine mesh strainer, rinse 1 cup split red lentils with water a few times to remove any dirt or debris. Drain the lentils and transfer to a medium (3-quart) stock pot with 3 cups water.
- Set the stock pot over high heat and bring to a boil. Using a spoon, skim off any of the white foam that comes to the surface.
- Stir in 1/2 teaspoon ground turmeric. Reduce the heat to medium-low and simmer for 15 – 25 minutes, or until the lentils are extremely tender and have disintegrated into a somewhat mushy, soupy consistency but still retain some texture. Note: If you notice the water has reduced too much, you can add up to an additional 1/2 cup to 3/4 cup of water until it’s reached your desired consistency.
- Meanwhile, set a saute pan with 1 tablespoon canola oil over medium heat. Add in 1 teaspoon cumin seeds and saute until they begin to sizzle.
- Immediately add 1 large red onion, finely diced, and saute for about 8 – 10 minutes until onions are soft, translucent in the middle, and lightly browned on the edges. Note: You’re looking for a golden brown color here, not burnt onions.
- Add 2 garlic cloves, finely minced, and 1 serrano chili, and saute for 1 minute until aromatic.
- Stir in 1 plum or roma tomato, diced. Simmer until the tomatoes break down and the tomato-onion mixture resembles a thick, almost paste-like consistency, 7 – 8 minutes.
- Add 1 teaspoon garam masala, 1 teaspoon ground coriander, and 1/2 teaspoon kashmiri chili powder (if using). Season to taste with Salt and black pepper. Note: At this point, the mixture should taste slightly saltier and full of spice than you’d like it. Once you add the lentils, the flavor will be diluted, so feel free to adjust as necessary if you want more spice or salt.
- Once the lentils are cooked, add them to the saute pan and stir, simmering for 1 minute. Season again with salt, pepper, or other spices if necessary.
Make the Crispy Garlic Tadka:
- While the lentils simmer with the aromatics, set a small pan with 1 tablespoon canola oil over medium heat.
- Add 1 large garlic clove, thinly sliced, and let sizzle until they just begin to turn a pale golden brown color on one side. Flip the garlic and cook on the other side until both sides are pale golden, about 2 minutes.
- Add 1 teaspoon brown or black mustard seeds (if using). Once the seeds sizzle and pop, about 10 to 15 seconds, immediately take the tadka off the heat and pour over the dal.
Finish the Dish:
- Garnish with 1 handful fresh cilantro and a squeeze of lime. Divide amongst serving bowls and serve immediately with rice or chapati.

- We like to refrigerate the farro salad for 10 minutes to give it a nice chill and allow the flavors to combine but this is not necessary and it can be served immediately.

- Rinse the farro and drain. Place farro in a pot with enough liquid to cover. Simmer for 25-30 minutes until soft, but still has a bit of a bite. Drain and spread farro on a plate to cool.
- Rinse lentils and drain. Place lentils in a pot with 3 cups of water. Bring to a boil and simmer for 20 minutes until lentils are soft but still has a bit of a bite. Drain and spread lentils on a plate to cool.
Vinaigrette
- In a blender combine olive oil, vinegar, zest, juice, garlic, red pepper flakes, oregano and honey. Blend until well mixed.
Assemble the Salad
- In a large bowl, place quinoa, farro, lentils and black beans, pepper and onion. Pour vinaigrette over ingredients. Stir gently to coat.

Instructions
- Preheat the oven to 180C/350F/Gas mark 4.
- Scrub your potatoes but leave them unpeeled. Halve or quarter bigger ones and leave the really small ones whole trying to keep them similar size so that they roast evenly.
- Put them in the roasting tray with olive oil, thyme and good amount of salt and pepper. Give them a mix with your hands making sure they are evenly covered with oil and seasoning and put into preheated oven for 20 min.
- After 20 minutes take the roasting tray with the potatoes out of the oven and give the potatoes a little shake (you might need to use spatula if they got a bit stuck to the bottom) and put your salmon fillets on top (skin down).
- Sprinkle the fillets with juice squeezed out of half a lemon , season with some salt and pepper and put back in the oven for 13-15 min or until salmon fillets are cooked (the timing will depend on the thickness of your fillets). The fish should be just opaque.
- Take baking tray out of the oven and sprinkle salmon and potatoes with some spring onions.
- Serve with sides of your choice and extra lemon wedges.

- Lastly, once sauce begins to thicken, then use potato masher *or large fork, to press down beans and mash them into the consistency of refried beans. After beans are mashed, continue to cook on low heat for an additional 5 minutes, stirring constantly. Serve immediately.

- 2 stalks celery (finely chopped)
- 1-2 carrots (finely chopped)
- 2 garlic cloves (peeled and chopped)
- 1 sprig fresh rosemary (chopped leaves)
- 3-4 tbsp extra virgin olive oil.
- 1 tbsp tomato concentrate
- 2 pints warm water or vegetable stock (I used half and half)
- salt (to taste)
- Freshly ground black pepper. (as required)
Instructions
- Peel and finely chop the onion and garlic. Wash and finely chop the celery and carrots. Wash and chop the rosemary leaves. Rinse the lentils under running water to remove any impurities (like stones). Umbrian lentils don’t need pre-soaking. If you use another kind, check the packet to see if you have to soak them first. Small lentils are better. Red lentils not so good as they get mushy.
- Saute the onion, carrots and celery with the olive oil in a deep heavy pan or Dutch oven (I used my Dutch oven). When the veggies start to soften add the garlic, rosemary and tomato concentrate. Mix everything together. Let it cook for another minute and then add the lentils and cover with warm water and vegetable stock. (I used half and half). Let the soup simmer for about 20-30 minutes.
- Add salt to taste and then add the pasta. Continue cooking until the pasta is ready. Stir every now and again to prevent sticking. Serve with a little olive oil and ground black pepper as required.

They’re so flavourful on the inside with the best texture thanks to some key tips and marinating the tofu. They’re bound to be a part of your meal prep rotation – I made them three times in one week!
Ingredients
- 1 lb block tofu (pressed and drained of liquid)
- ¼ cup light soy sauce + 1 tablespoon (or liquid aminos or tamari (any is fine))
- ½ cup filtered water
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 tablespoon nutritional yeast (if you don’t have this, that’s okay)
- ¾ cup any nut milk (or ANY vegan milk (I used unsweetened almond milk))
- 1 ½ teaspoons apple cider vinegar (or regular vinegar)
- 1 cup all purpose gluten free flour mix (or regular flour (I used Bob’s Red Mill’s Gluten Free All Purpose Baking Flour))
- 1 ¼ cup gluten free breadcrumbs
- 3 teaspoons smoked paprika
- 3 teaspoons nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon sea salt
- ¼ cup of oil (if pan-frying, if not, instructions for baking are below)
Instructions
- Take your pressed tofu and slice it in half length wise (so you end up with two large slices the same length and width as the original). Tear the tofu into 1 inch cubes. I like to use a ruler to help me measure the first tear, then use that as a guide, but it doesn’t seem to be exactly 1 inch.
- In a bowl or glass tupperware, add all the marinade ingredients and stir to combine. Taste it, you can add more liquid aminos if you want yours saltier, or more water. Add in tofu and stir to combine so all the tofu is coated. Marinade for at least 15 minutes, but up to overnight. While marinating, prepare your bowls with the flour, the buttermilk, and the crumbs.
Batter & Crumb Mixture
- In a bowl, add the nut milk and the apple cider vinegar. Stir to combine and let sit for about 2 minutes. This is your buttermilk mixture.
- Add the flour to its own bowl and line up side by side.
- In a bowl add all the crumb mixture ingredients. You can use gluten free panko breadcrumbs or make your own by food processing 1 ¼ cups of brown rice krispies. Line up in a bowl beside the buttermilk. Line a baking sheet beside that – this is where you’ll place your tofu pieces before pan-frying them, or layer them to bake them.
Putting it All Together
- Take one tofu piece from the marinade. Dip it into the flour, shaking off all the excess flour, then into the buttermilk. Shake off the excess buttermilk, then dip it back into the flour, then into the buttermilk again, shaking off all the excess again. Then dip it into the crumb mixture, roll around, and place on the baking sheet.
- Once you get the hang of it, you can add several pieces at a time (I do like 10 pieces maximum at a time). This battering process is very forgiving!
- When you’re done all the pieces, it’s time to cook them.
Cooking the Tofu
- Heat ¼ cup of oil in a baking over medium high heat. When oil is hot, add one piece of tofu. Cook for 1 ½ minutes on each side (check for browning) or until golden brown, then flip and cook for another 1 ½ minutes on the other side. Remove to a paper towel to absorb the excess oil.
- Continue to cook the rest, but you can now add several pieces of tofu now that you’ve tested that the oil is hot and you have your cooking time figured out. Don’t overcrowd the pan since it’ll reduce the temperature the oil, making them not as crispy. It’s best to leave enough space between each piece of tofu.
- Continue unti you’ve cooked all of the tofu. Allow to cool slightly, then serve immediately by itself, or with a dipping sauce. You can also add these to tacos, sandwiches and many other uses!
- To BAKE these: Preheat the oven to 400F/200C. Line the battered and breaded tofu pieces on the baking sheet and spray with some cooking oil on both sides. Bake for 25 minutes, flipping once way at the halfway mark. Serve and enjoy!
