  3. In the same oil, on medium high, cook mushrooms and half the green onions until tender, about 5 minutes. Check the water to see if it’s ready for the pasta. Set the timer for the minimum cook time for the pasta (since it will cook a little in the mushroom mixture).
  4. Reduce heat on skillet to medium. Add pepper, basil, chicken stock, cream and the cooked Prosciutto. Cook until liquid is reduced by half, about 5-6 minutes.

During the last 5 minutes or so of baking time, you may turn the broiler function on to slightly crisp up the cheese until golden brown.   1. Bring a pot of water to boil, then cook the Farfalle to al dente following the package instructions (typically 10-12 minutes).
  2. While the pasta is cooking, heat 1 tablespoon of oil over medium heat in a large cast iron or saute pan and saute the onion until just beginning to soften, then add the pecans, and prosciutto.
  3. Cook for about 2 more minutes then turn off the burner and stir in the diced apple, so the apple caramelizes a little in the warm pan but does not become mushy.
  4. In a separate bowl mix the balsamic vinegar and Mascarpone cheese until smooth.  At first it will seem as though they will not mix well, especially if the cheese is very cold, but after a couple minutes it will break and combine easily.
  5. In a separate pan warm 1 tablespoon of oil and saute the chicken over medium heat until lightly browned and cooked through, about 5 minutes.
  6. When the noodles are done cooking, drain the water and toss with a couple teaspoons of olive oil to keep them from sticking.
  7. Return the pan with the onion, apple, and prosciutto to low heat and stir in the cheese mixture, until melted and smooth.  Mix in the chicken, followed by tomato, and finally the pasta.
  8. Serve warm

  • 50 g butter ((2oz))
  • 1 tbsp poppy seeds

Instructions

  1. Cut the thick prosciutto slice into small cubes or juliennes. Dry toast the poppy seeds in a small frying pan until they are fragrant (2-3 minutes). Don’t let them burn. 
  2. Bring a large pot of water to a boil for the pasta. Add salt once it starts to boil and bring to the boil again.
  3. Heat butter in a deep frying pan or skillet. Add the cut pieces of prosciutto and let it saute for 1-2 minutes, until it changes colour. Add the cream, stir and add some of the toasted poppy seeds. Let the cream reduce slightly and then remove from the heat. Add black pepper and salt to taste. 
  4. Cook the tagliolini until al dente according to the instructions on the packet. If fresh or homemade the pasta will cook very quickly.
  5. Drain the tagliolini and add to the pan with the sauce. Stir everything together well and let it cook for a couple more minutes on a low heat, until the sauce is partially absorbed.
  6. Plate the pasta and sprinkle some more poppy seeds on top. Arrange a thin slice of prosciutto on top and serve immediately.

Instructions

  1. To make the stuffing, heat the olive oil in a skillet over medium heat.
  2. Next add garlic, onion, sage, rosemary, thyme and mushrooms.
  3. Season the mushroom mixture with salt and then sauté until softened, about 10-12 minutes.
  4. Add the spinach to the pan and toss.
  5. Remove from the heat and let cool.
  6. Preheat the oven to 375 °F.
  7. To begin making the pork roast, place the meat on a cutting board.
  8. Cut the pork by slicing at an angle, away to your cutting board, and then keep slicing lengthwise to cut into the pork to slowly ‘unroll’ it.
  9. Lay the piece of meat open then cover with plastic wrap to avoid meat splatter.
  10. Using a meat mallet, pound the meat to about 3/4 inch thickness then set aside.
  11. On a piece of parchment paper, arrange prosciutto slices in a single layer but so the edges overlap.
  12. Sprinkle chopped sage leaves on top of the prosciutto.
  13. Season the pork with salt and place on top of the prosciutto slices.
  14. Spread the stuffing evenly over the meat.
  15. Roll up the pork and tie in intervals with twine to secure.
  16. Tuck a rosemary sprig into the twine, on top of the pork loin.

Instructions

  1. Preheat oven to 300F.
  2. Cut the bread into approximately 1 inch cubes and spread on a baking sheet. Drizzle the bread with olive oil and a little salt.
  3. Bake the bread until the cubes are just crunchy but do not squish or bend. They should not be as hard as croutons. The time this takes will depend on how dry/dense your bread already is (for me it typically takes 20-30 minutes). When done, set aside to cool to room temperature.
  4. While the bread is baking, prepare the mix-ins. Either cut the cantaloupe into 1 inch pieces or use a melon baller to get balls of melon. Place in a large bowl. (If using a melon baller, see note).
  5. Add the arugula to the bowl with the cantaloupe.
  6. Tear the prosciutto slices into smaller pieces (4-5 pieces per slice) and add to the bowl. Cut the mozzarella if needed into bite sized pieces and add to the bowl.
  7. In a small bowl, prepare the dressing by combining all of the ingredients. Whisk together and salt or pepper to taste.
  8. When the bread is done and cooled to room temperature, add the bread and toss to combine.
  9. Pour the dressing over the salad and toss to coat. Let the dressing sit on the salad ideally for 30 minutes in the refrigerator before serving so that it starts to soak into the bread. It will not make the bread soggy.

  • 3 tablespoons crumbled gorgonzola
  • 2 cups thinly sliced yellow onion

Instructions

  1. Set the oven. Preheat the oven to 450°F and adjust a rack to the center.
  2. Make rosemary mixture. In a small bowl, combine the rosemary, 1 teaspoon of the thyme, garlic and the 1 tablespoon of oil. Set aside.
  3. Prepare the persimmons. Slice about ½ inch off the stem end of each persimmon, and about ¼ inch off the bottoms, and peel them. Cut two of them into rounds, as thinly as possible. Set aside. Then cut the third one into approximately ½ inch wedges and set it aside (separate from the rounds).
  4. Prepare the pork. Working on a clean, dry surface, use a boning knife to trim the pork of any excess fat. Next, butterfly it in a roll cut. To do this, cutting lengthwise, slice about ½ inch from the edge, starting to cut down at a 45 degree angle. When the knife is about ½ inch from the bottom of the tenderloin, angle it parallel to your work surface and continue to slice, gently pulling the pork back as you go. You’ll end up with a somewhat flat piece that’s about ½ inch thick. Now sprinkle it very lightly with water, and then place a large piece of plastic wrap on top. Use a smooth meat pounder or the bottom of your smallest sauté pan, to pound the pork until it’s as smooth and even as possible, if possible without thinning it. (It will tear if it’s too thin.)
  5. Assemble. On another clean dry surface, place another large piece of plastic wrap, and lay the prosciutto slices on it, layering them by about ½ inch along their edges, lengthwise. It’s should be about the length of the pork. (If you have leftover slices, place them in any thin areas.) Gently rub about half of the rosemary mixture evenly on top.Season both sides of the pork with salt and pepper and then place it directly on top of the prosciutto with the rosemary mixture, smooth side down. Rub the remaining half of the rosemary mixture on top.Layer the thinly sliced persimmon rounds on top, overlapping a bit along the edges.Sprinkle the gorgonzola evenly over the persimmon slices.
  6. Roll. Now, starting with the end closest to you, roll up the pork, as tightly as possible. You’ll be rolling the pork off of the prosciutto — don’t roll the prosciutto with the pork! Once the pork is tightly rolled, with the seam side down, use the plastic wrap to help you wrap the prosciutto around the pork roll, as tightly as possible.
  7. Sauté onions, remaining thyme and persimmon wedges. Set the pork aside and coat the bottom of a large oven-proof sauté pan (approximately 14 inch) with olive oil and place it over medium heat. Add the onions and remaining ½ teaspoon of dried thyme. Sauté, stirring often, until the onions are soft and becoming golden, about 10 minutes. Add the sliced persimmon wedges, mix and sauté for another few minutes. Season to taste with salt and pepper. (Here’s How to Season to Taste.)
  8. Sear. The rolled pork will most likely be too long to fit, so cut it in half, horizontally, in the center. Turn the heat up to medium-high, spread the onion-persimmon mixture to the edges of the pan, and add a bit more olive oil in the center. Being very careful, use your hands or kitchen tongs, gently place the pork in the pan, seam side down. If it’s in two pieces, try to have at least an inch between them. Sauté long enough to brown the bottom, about 1 minute. (It’s okay if they become unwrapped a little — they might not be perfect.)Turn the heat off and spread the onion-persimmon mixture evenly around the pork, and between them if there are two.
  9. Roast. Place the pan in the preheated 450°F and roast just until the pork is cooked through, about 15 minutes.
  10. Rest, slice and serve. Let it sit for about 5 minutes before slicing it into rounds and serving.

Remove 1½ cups of the grated potatoes from the water, squeeze out as much liquid as possible with your hands, and add it to the stock. Place the pot over high heat and bring to a boil. Then cover, turn the heat to low, and simmer until the potatoes are soft, about 5 minutes. Pour this mixture into a blender and purée just until smooth, 5 to 10 seconds on high. (Alternatively, you can also use a hand immersion blender in the pot.) Set aside to cool.
  3. Make prosciutto mixture. Place a large sauté pan (about 14-inch), over medium heat, and add 2 tablespoons of the butter, onions and garlic. Stirring often, cook until the onions are soft, about 10 minutes. Mix in the prosciutto and 1½ tablespoons of the rosemary and sauté for another 3 minutes.
  4. Prep remaining grated potatoes. Pour the remaining grated potatoes into a strainer, and then squeeze out as much liquid as possible with your hands, adding them to the sauté pan with the prosciutto as you go. Add 1 more tablespoon of the butter and mix everything together. Stirring often, continue sautéing until the potatoes begin to turn golden, about 10 minutes.
  5. Assemble. Pour the contents of the pan into a very large mixing bowl, and let it cool slightly. Add the the stock-potato mixture, sour cream and 2 cups of the cheese. Quickly stir to combine, season to taste with salt and pepper, and then pour this into a 9 x 13 x 2-inch baking dish. Set aside.Melt the remaining 4 tablespoons of butter, and in a small bowl, combine it with the remaining ½ tablespoon of rosemary and the breadcrumbs.   3. Prepare cheese filling by combining all 3 kinds of cheese into a bowl. Add chopped herbs and blend well.
  4. Tear the prosciutto into bite-sized pieces
  5. Spread the cheese mixture on the rolled out dough but leave about 2″ free around the edges
  6. Scatter prosciutto on top of the cheese mixture
  7. Using a paper towel wipe most of the salt and the excess water off of the tomatoes
  8. Layer the tomatoes, overlapping slightly, in a circular pattern on top of the prosciutto starting from the outside and working in. Continue layering until all tomatoes are gone or you’ve filled the circle. (You only want to build one layer of tomatoes. If you stack them they will steam during baking instead of roasting)
  9. Gently pull up the 2″ sides and fold over the filling, pleating the dough and crimping to keep the dough together, leaving the whole middle of the galette open
  10. Brush entire galette with the cooled garlic olive oil
  11. Bake in preheated oven for about 30 minutes or until the crust is a light golden brown
  12. Let the galette cool for about 5-10 minutes before slicing. Can be served hot or room temperature. Garnish with a sprinkling of herbs if desired.

  4. Then add the tomato passata and continue cooking on a low heat for about 15 minutes. Every now and then add a little milk until you’ve used it up. Add the rest of the ham and cook for another 5 minutes. Add black pepper as required.

This authentic homemade tortellini recipe from Bologna, Italy makes the most delicious meat and cheese-filled pasta! While making tortellini from scratch takes time, it’s straightforward and much easier than you might think (especially filling and folding them!). Best of all, you’ll be rewarded with “Tortellini in brodo” – delicate comforting pasta pillows swimming in an aromatic broth. This is one of Bologna’s most treasured dishes alongside Bolognese ragù, and lasagna Bolognese. This traditional Emilian tortellini consists of three components: fresh egg pasta, pork and Parmigiano-Reggiano filling, and rich homemade meat broth (brodo). Below you’ll find our family’s preferred filling recipe using a traditional cooked pork filling, which I’ve found gives us the best flavor and texture. You’ll find the RAW pork filling variation in the recipe notes below.

Ingredients

  • 14 ounces Italian 00 Flour (about 4 scant cups of flour) (400g)
  • 4 large eggs (200g)
  • 3 1/2 ounces raw pork (preferably shoulder or neck) (or pork loin) (100g)
  • 6 ounces Prosciutto di Parma (175g) (sub high-quality San Daniele or other prosciutto crudo)
  • 6 ounces Mortadella di Bologna (175g) (sub-high-quality Italian Mortadella from another region)
  • 7 ounces Parmigiano-Reggiano cheese (preferably 25 or 30-month), finely grated (225g) (sub high-quality Grana Padano DOP)
  • 2 1/2 tablespoons unsalted butter (40g)
  • 1 sprig of fresh rosemary
  • 3 fresh garlic cloves, smashed
  • 1 large egg (50g)
  • freshly grated whole nutmeg, to taste (about 20 to 30 quick bursts on a Microplane)
  • salt, to taste
  • black pepper, to taste (optional)
  • 1 pound of beef preferably bone-in or with added bones (short rib, brisket, or flank)
  • 1/4 of an Italian capon (or free-range or regular chicken)
  • 1 medium onion, halved
  • 1 medium carrot, quartered
  • 1/2 rib of celery, halved
  • 1 teaspoon kosher salt, plus more for seasoning(4g)
  • 1/2 inch piece of whole cinnamon stick (not traditional but Mama Anna’s secret Italian ingredient – highly recommended)
  • rind of Parmigiano-Reggiano cheese (not traditional but highly recommended)
  • 1 gallon of water (5 liters)
  • freshly grated Parmigiano-Reggiano (optional

Instructions FOR THE COOKED PORK TORTELLINI FILLING (can be made up to 2 days in advance and refrigerated or even frozen for up to 1 month)

  1. Season the pork (shoulder, neck, or loin) with salt (and black pepper if desired) and place the rosemary and smashed garlic directly on top. Cover it and refrigerate overnight to allow the flavors to permeate the pork.
  2. . Remove the pork from the refrigerator and chop it into cubes. Place the rosemary, garlic, and 2 1/2 tablespoons of butter in a skillet and sauté the herbs over medium-high heat for a few minutes until the garlic and rosemary are both toasted and golden brown but not burnt.
  3. Reduce the heat to medium and add the pork and sauté just until the meat is cooked through. Turn off the heat and remove the mixture to a plate and allow it to cool, then remove the garlic and rosemary, setting them aside (do not discard the rosemary).
  4. Add the prosciutto and mortadella to the bowl of a food processor and process to a fine paste. Add the cooked pork, along with the flavored butter, to the prosciutto and mortadella mixture, and process until smooth.
  5. Add the egg, a good pinch of salt, and about 1/2 of the crispy rosemary if using (or more or less to taste), and process until the mixture is smooth and no whole rosemary pieces remain. *Adding the rosemary is not traditional, but we enjoy the flavor.
  6. Add the grated Parmigiano cheese and freshly grated nutmeg to taste and process the mixture for about 5 minutes, or until it becomes one cohesive mixture. The filling will be sturdy (easily pinchable).
  7. If desired, you may add 2 to 4 tablespoons of broth to the mixture to help loosen it up a bit, but this is optional.
  8. Heat the skillet back up and cook a small piece of filling so you can taste and adjust seasonings if needed adding more salt, nutmeg, or rosemary.
  9. Massage the mixture with your hands for a couple of minutes, wrap it in an airtight container, and refrigerate it for 24 hours (or at least overnight).

  1. Step 1. Make the pasta dough.
  2. Step 2. Knead the dough.
  3. Step 3. Rest the dough.
  4. Step 4. Roll out the dough to #6 or #7 on the Marcato Atlas pasta machine, or to your preferred thickness.
  5. Step 5. Cut the pasta squares and fill tortellini. Working with one of the 4 pieces of dough at a time (keep the remaining dough covered so it doesn’t dry out), cut 1 1/4-inch (3cm) squares of pasta (or larger if desired) and add about 1/4 teaspoon of filling to the middle of each square (the filling should be about the size of a pea for authentic tortellini).
  6. Fold each tortellini into a triangle, press out any air around the filling, fold the tip of the triangle down, bring the two other points together, overlapping them to create the typical tortellini shape, and press firmly to seal.
  7. Place filled tortellini onto a baking tray lined with parchment paper while you finish filling and shaping the rest. Allow the filled tortellini to rest at room temperature for 15 minutes or so before cooking or pop them into the freezer.
  8. Once completely frozen, place them into an airtight container or freezer bag until ready to cook. Cook the tortellini in the broth until al dente (about 2-3 minutes), or until they float to the top, or until they’ve reached your desired doneness. Cook frozen tortellini for 1 extra minute.

FOR THE BROTH (can be made up to 3 days in advance and refrigerated or even frozen for up to 3 months)

  1. Step 1. Make the tortellini broth. Add all of the broth ingredients to a pressure cooker, close the lid, and bring it to high pressure. Once high pressure is reached, cook the broth for 45 minutes and allow for a natural release (which will give you a clear broth). Strain the solids reserving the meat for another use and pour the broth back into the pot and season with salt to taste (and skim off any fat if desired).
  2. *Alternatively, you may add all of the ingredients to a large stock pot or dutch oven, bring it to a boil, cover, reduce it to a simmer and cook for 3 hours.
