Instructions Make the Filling

  1. Preheat your oven to 375° F (190° C) and get a small baking dish.
  2. Prepare the fruity filling by placing the sliced banana, apples and dates into a medium-sized bowl. Add the cinnamon, ginger, nutmeg and lemon juice, then toss until everything is nicely coated with the spices.
  3. Transfer into your prepared baking dish and bake for 8-10 minutes, just until the fruit starts to bubble.

Make the Oat Topping

  1. While the first layer is baking, combine the rolled oats with the applesauce, crushed walnuts, vanilla extract and salt using the same bowl as before. Mix well with a spoon.
  2. If you want your crumble topping to be sweeter, just add 2 tbsp of maple syrup or brown sugar at this stage.

Assemble the Apple Crumble

  1. Once the apple and banana mixture becomes soft and fragrant, take it out of the oven and top evenly with the oat crumble topping.
  2. Return the dish to the oven and bake for another 15-20 minutes, or until the oats are slightly golden and crisp.
  3. Let your apple crumble cool for 5-10 minutes before serving warm on its own or topped with vegan ice cream.

Instructions

  1. Pound the chicken so it is even thickness.
  2. Measure the marinade ingredients into a large glass measuring cup or mixing bowl. Whisk using a wire whisk until well combined.
  3. Add the chicken to a glass bowl or other container. Then, pour the marinade over, cover, and transfer to the refrigerator. Allow the chicken to marinate for at least 4 hours.
  4. Preheat the grill to 450ºF.
  5. After marinating, remove the chicken from the marinade, and pat dry.
  6. Cook the chicken on the preheated grill for 5 minutes per side, or until the chicken reaches 165ºF at the thickest part. (Note: If you don’t want to grill the chicken, my Greek chicken recipe has detailed instructions on how to bake or pan fry it instead. An indoor grill pan may also be used.)
  7. Remove the chicken from the grill. Let it rest on a plate for 5 minutes. Then, slice the chicken into thin strips.
  8. Stuff pitas with chicken and additional toppings in desired amounts. (Note: I like to warm the pita bread in the oven for a few minutes before assembling. This helps prevent it from breaking or cracking.)
  9. Add crumbled feta cheese and fresh dill for garnish.

  • 2 red onions (finely chopped)
  • 1 fresh red chilli (finely chopped)
  • 3 cloves of garlic (minced)
  • 7 ouces brown lentils (cooked)
  • 7 ouces chestnut mushrooms (finely sliced)
  • 5 ouces carrots (grated)
  • 1 red pepper (finely chopped)
  • 2 tablespoons tomato paste
  • 3½ ounces wholemeal breadcrumbs
  • 2 sprigs fresh rosemary (finely chopped)
  • 1 sprig fresh sage (finely chopped)
  • 9 sprigs fresh thyme (finely chopped)
  • ¼ teaspoon ground allspice
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon ground nutmeg
  • 1 cup vegetable stock
  • 3½ ounces cooked chestnuts (crumbled)
  • Zest of 1 orange
  • Salt and pepper (to taste)
  • Vegan butter to prepare loaf tin

Instructions

  1. Preheat your oven to 180°C/356°F
  2. Spread your Brazil nuts, walnuts, hazelnuts, and pecans over a baking tray and put them in the oven, and roast them for 8 minutes, when done set them aside to cool
  3. Meanwhile, while your nuts are roasting, add your chopped parsnips to a pan of boiling salted water and cook until they are soft, approximately 10 – 15 minutes. When they are cooked, drain the water and then return them to the pan, mash them, and set them aside
  4. Over medium heat, heat your olive oil in a large frying pan, and add the onions and fry for approximately 12 – 15 minutes until they have turned dark brown and are starting to caramelize, stirring often to stop the onions from sticking and burning. Next, add in your red chili and garlic, stir to combine, and cook for 1 minute. Now add in your brown lentils, mushrooms, carrots, red pepper, and tomato paste and stir to combine and cook them until the carrot has started to soften approximately 15 – 20 minutes
  5. Next, add in your breadcrumbs, fresh rosemary, fresh sage, fresh thyme, ground allspice, smoked paprika, ground nutmeg, and stir to combine. Now, pour in your vegetable stock, stir to combine all of the ingredients, and simmer over a very gentle heat until all the liquid has been absorbed. Remove your pan from the heat
  6. Take the cool roasted nuts and place half of them in your food processor and blitz them until they are a fine nut meal. Roughly chop the remaining nuts into varying sizes to your own preference. Roughly break up the cooked chestnuts. Add the nut meal, the chopped nuts, chestnuts, and stir to combine. Now add your orange zest, add the amount that you personally prefer. Finally, take your mashed parsnips and add them to the nut roast mixture, folding them in to create a well combined thick mixture. Taste and season with salt and freshly ground black pepper
  7. Next, wipe vegan butter all over the insides of your loaf tin, to ensure the nut roast doesn’t stick.
  8. Now, add the nut roast mixture into the prepared loaf tin. Press firmly down on the mixture so it compacts tightly into the loaf tin and then ensure you have a smooth even top in line with the loaf tin.
  9. Place your prepared nut roast on a baking tray. Cover with foil and bake for 1 hour, then remove the foil and bake for a further 10 minutes. When your nut roast is ready, it’ll be dark brown on top, remove it from the oven and leave it to cool for 10 – 15 minutes. Remove from the loaf tin by placing a plate on top of the loaf tin and then turning it upside down, your cooked nut loaf should easily fall out of the tin. To serve, cut into slices and serve with all the trimmings!

  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup Lakanto or preferred granulated sweetener
  • 1/3 cup cacao powder
  • 1 tsp vanilla extract
  • 2 tablespoons gelatin (optional, makes them chewy)
  • 1/2 cup low-carb chocolate chips or chopped-up chocolate

Instructions

  1. Pre-heat oven to 350F.
  2. Line a small baking dish, like a loaf pan with parchment paper.
  3. In the bowl of your food processor combine the avocado, eggs, fat and nut butter and blend until smooth. Then add the remaining ingredients.
  4. Blend on medium, low power until just smooth. No more than 30 seconds. If you overmix the batter they will be cakey. You can use a spatula to scrape down the mix and then fold it together, mashing up any chunks of avocado left.
  5. Use the spatula to transfer the batter to the baking dish and smooth it out evenly.
  6. Top with fun things.  I’m partial to chocolate chips!
  7. Bake for 25 minutes. Until the edges begin to separate from the sides.
  8. Remove from the oven and let it cool for 15 minutes before handling.
  9. Pick it up, carefully, by the parchment paper and set it on a cutting board.
  10. Cut into 8 squares! Enjoy! Store leftovers in Tupperware in the fridge for up to a week.

Instructions Make the Crust & Topping:

  1. Preheat the oven to 350 degrees Fahrenheit and line an 8” x 8” baking dish with parchment paper.
  2. Add all of the ingredients for the crust and topping to a large bowl and stir well until everything is combined. The dough should be somewhat crumbly and not over oily.
  3. Measure out ½ cup of the mixture and set it aside to reserve as the crumble topping. Transfer the remaining crust mixture to the parchment-lined prepared pan and press it into an even layer.
  4. Use a fork to poke several holes into the crust.
  5. Bake the crust for 15 to 20 minutes, or until it is just slightly golden brown.

Make the Strawberry Filling:

  1. While the crust is baking, prepare the strawberry mixture. To do so, transfer the strawberries and granulated sugar (or pure maple syrup) to a saucepan with 2 tablespoons of water. Cover the pan and heat it on the stove top over medium heat.
  2. Allow the mixture to come to a full boil and cook until the strawberries are very soft and much liquid is seeping out, about 8 to 10 minutes. Mash the strawberries using a spoon or fork until they reach your desired texture. Stir in the gluten-free all-purpose flour (or tapioca flour or corn starch) and continue cooking without the lid until the strawberry filling is nice and thick, about another 2 to 3 minutes.

Make the Bars:

  1. Once the crust is out of the oven, pour the strawberry filling mixture over it and spread it evenly. Sprinkle the reserved crumble mixture on top.
  2. Bake for 22 to 30 minutes, or until the topping is golden-brown.
  3. Remove the strawberry oatmeal bars from the oven and allow them to cool completely before slicing and serving.
  4. Serve with a scoop of vanilla ice cream and fresh berries for an even more decadent dessert.

  • 1/2 cup white onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 2 large eggs, whisked
  • 1/3 cup soy sauce, low sodium
  • 1 tablespoon sesame oil, divided
  • 2 tablespoons seasoned rice vinegar
  • 1 tablespoon hoisin
  • 1 tablespoon vegetarian oyster sauce (optional)
  • 1/2 tablespoon olive oil
  • 3/4 teaspoon kosher salt, divided

Instructions

  1. In a large sauté pan on medium heat, melt 1/2 tablespoon of butter. Add shrimp and cook approximately 90 seconds per side until pink. Season with 1/2 teaspoon of salt.  Remove from pan and set aside.
  2. Add other 1/2 tablespoon of butter to pan and melt and then add eggs and scramble with remaining 1/4 teaspoon of salt.  Remove from pan and set aside with the shrimp.
  3. Add sesame oil to pan and add garlic, onion, carrots, peas, and ginger and sauté for about 4-5 minutes, stirring often.
  4. In a small bowl create the sauce by mixing soy, vinegar, hoisin, and oyster sauce and whisk.
  5. Add cauliflower to sauté pan, stir, and then add sauce mixture.  Turn heat to medium high stir again so everything is well combined, then flatten in all in the pan and let “fry” for approximately 7 minutes.  Give it one more gentle stir, flatten, “fry” again for 3-5 minutes allowing the cauliflower to brown and crisp a little.
  6. Add shrimp and eggs back to pan. Stir to combine top with remaining sesame oil (if desired) and serve!

  1. Pre-heat oven to 350° F.  Place baby asparagus on small baking sheet, pour a little olive oil over it and shake and roll a bit, to help coat the stalks. Pour a tablespoon of balsamic vinegar over the stalks and roll them in it.
  2. Bring a small pot of water to a boil. Next place the asparagus in the oven,  for 5 to 7 minutes, taking care to not leave it in too long!  Poach the egg for about 3 minutes.
  3. While the egg is poaching and asparagus is in the oven, peel and wedge the avocado and place on a plate in spiral form.

  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)

Instructions

  1. Preheat oven to 325F. Move the rack to the middle of the oven. Line a large baking sheet with a Silpat non-stick mat or parchment paper. 
  2. Prep your flax egg and let it sit for about 10 minutes.
  3. Add the peanut butter, sugar, flour, and flax egg to a large mixing bowl. Using an electric hand mixer on low speed, mix until combined.
  4. Roll the batter into balls (mine were just shy of 1.5″ each, makes about 16-18 cookies). Use a fork to press them down a bit (make a criss-cross pattern). Space them about an inch apart since they do spread a bit.
  5. Bake the cookies for 18-20 minutes (I baked mine for 20).
  6. The cookies will likely seem too soft when you take them out of the oven, but that’s ok. They will firm up as they cool. Carefully remove them from the baking sheet and let them cool on a cooling rack.
  7. Store cookies in an airtight container as soon as they’ve cooled. Their final texture is slightly crumbly when you bite into it, but soft and chewy inside.

  2. Meanwhile in a small bowl, mix pesto with mayonnaise until combined. Spread evenly onto wrap, leaving about a 1-inch border around the edges of wrap.
  3. Arrange one fourth of the roasted vegetables in the middle of each wrap, top with one fourth of the feta cheese, and a handful of spinach. Wrap tightly. Repeat with remaining wraps. Enjoy immediately.

  • 1/4 teaspoon baking soda

  • 3 Tablespoons powdered Swerve
  • 2 Tablespoons vanilla (or chocolate) gluten free brown rice protein powder
  • 1 teaspoon vanilla
  • 2 Tablespoons unsweetened coconut milk or water

Instructions

  1. Preheat oven to 350 degrees F.
  2. Prepare a large non-stick donut pan by spraying oil into each well of the donut pan (including the middle part that makes the donut hole). Make sure to oil the pan even if it’s non-stick.
  3. In a medium bowl, whisk together the granulated erythritol/Swerve, eggs, oil, flaxseed, vanilla, coconut milk, and stevia drops. Set aside.
  4. In a small bowl, whisk together the brown rice protein powder, coconut flour, cocoa powder, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and mix well until a thick batter forms.
  6. Spoon the batter evenly into the prepared pan about 3/4 full and smooth out the batter. Don’t overfill these or they will be harder to get out of the pan.
  7. Bake for 14-15 minutes.

  4. Once done, assemble your bowls by adding in the rice, beef, corn, beans, and cheese with pico de gallo and guac if you wish. If you choose to meal prep this for the week and are not eating it right away and would like to add pico de gallo and guac, package it separately to avoid making the taco bowl soggy.

Instructions

  1. Put the bell peppers, onion, garlic, 2 tablespoons of the oil, the lime juice, and 2 tablespoons of the fajita seasoning in a large mixing bowl. Toss the vegetables until they are evenly coated. Lay the vegetables in a thin layer across a rimmed baking sheet.
  2. Preheat the oven to 400°F.
  3. Heat the remaining tablespoon of oil in a large cast-iron skillet over medium-high heat. Season the chicken thighs on both sides with the remaining seasoning. Add the chicken to the pan and sear on both sides until the skin is crispy and golden brown. (The chicken will not be fully cooked at this point.)
