Ingredients
- 6 large eggs (yolks separated from whites and at room temperature)
- 1/2 cup (100 grams) granulated sugar (divided)
- 1 cup (120 grams) cake flour (sifted)
- 1/8 teaspoon cream of tartar (or lemon juice)
- 6 egg yolks
- 1 cup (215 grams) granulated sugar
- 1/4 cup (60 milliliters) sweet marsala wine
- 1/4 cup (60 milliliters) blackberry brandy
- 2 pounds (904 grams) mascarpone cheese (chilled)
- 1 dry pint (510 grams) blueberries (large berries cut in halves)
- 1 pound (450 grams) strawberries (hulled and diced)
- 6 ounces (170 grams) raspberries (cut in halves)
- 6 ounces (170 grams) blackberries (cut in halves)
- 1 cup (200 grams) granulated sugar
- 1 stem (about 7 each) mint leaves (minced, optional)
- 2 medium limes (juiced and zested (about 1/4 cup of juice and 1 tablespoon of zest))
- 1 cup (250 milliliters water (boiling)
- 2 bags (2 grams) green tea
- 2 cups (500 milliliters) heavy cream (chilled)
- 1/4 cup (50 grams) granulated sugar
- 1/2 teaspoon (2.5 milliliters) vanilla extract
- 6 medium strawberries (halved)
- 6 large blackberries (halved (or 12 small left whole))
- 12 raspberries
- 12 blueberries
- 12 small mint leaves
Instructions Bake the Ladyfinger Sponge Cake 8 Hours Ahead (Skip to “Assemble the Berry Tiramisu” if Using Store-bought Ladyfingers)
- Preheat your oven to 425°F (218°C).Lightly grease only the bottom of a half-sheet pan. Line the bottom of the pan with a piece of parchment paper and lightly grease the paper only. Don’t grease the sides of the pan at all. The sponge cake needs to grip onto the sides of the pan to rise as high as possible
- Whip the whites with an electric mixer on medium speed for 1 minute or until they become foamy. Add the cream of tartar to the egg whites and whip for an additional 30 seconds at medium speed. Sprinkle 1/4 cup (50 grams) of the granulated sugar a little at a time while the mixer continues to run at medium speed. Once the sugar is in, increase the mixer’s speed to medium-high and whip until the egg whites hold a stiff peak. This entire step takes about 7 minutes from start to finish.
- In a separate stainless steel bowl, whip the yolks and sugar together on high speed until the mixer’s beaters leave ribbons on the surface when you lift the beaters from the bowl or for 6 minutes.Use a sifter to sift half of the cake flour onto the surface of the whipped egg yolks. Gently fold the flour into the yolks using a large rubber spatula. See post for instructions on the proper folding-in technique.Gently fold in half of the whites using the same motion.
- Repeat the steps by sifting in the last of the cake flour, folding it in, then folding in the last of the egg whites. Fold in both of these components gently but quickly. The more time that passes and the more aggressive you are, the more volume you lose in the eggs. It’s better to have a few streaks of egg whites still visible than to over-mix and deflate the batter.
- Use an offset spatula to spread the mixed batter onto the prepared sheet pan in an even layer. Gently tap the sheet pan on the counter to dispel any air bubbles.Bake the sponge cake for 8 minutes in the preheated oven, until it is golden brown and has puffed up. Transfer the cake to a cooling rack and allow it to cool completely.
- Use the tip of a very sharp knife to loosen the edges of the sponge cake from the sides of the sheetpan once the cake is cool to the touch. Carefully flip the sponge cake out of the pan onto the cooling rack and peel off the parchment paper slowly and carefully, so you don’t tear the cake.Allow the cake to sit out, uncovered, for at least 8 hours (or overnight) to get stale.
Make the Sabayon/Zabaglione Up to 3 Hours Ahead
- Make a double-boiler by putting a metal mixing bowl over a pot filled 1/3 of the way with water, making sure the water in the pot doesn’t touch the bottom of the bowl. Bring the water in the pot up to a simmer over medium heat.
- Add the egg yolks, sugar, sweet marsala wine, and blackberry brandy to the mixing bowl and whisk to combine the ingredients. Heat the sabayon while stirring constantly, remembering to scrape the sides of the bowl occasionally to keep the yolks from curdling there. The mixture will thicken to the point that the whisk leaves ribbons on the surface when lifted.
- Remove the bowl from the heat and allow the sabayon to cool to room temperature. Cover the bowl with plastic wrap and refrigerate the sabayon for three to four hours (or overnight with the sponge cake) until completely chilled.
Finish the Mascarpone Filling
- In a large mixing bowl, blend the cold mascarpone on low speed for 1 minute to make it smooth. Add the cold sabayon to the cheese and blend on low speed for 1 minute.Stop the mixer and scrape down the sides of the bowl and the beaters. Blend the mascarpone mixture for another 30 seconds on low speed until the sabayon is completely mixed in. Cover the mascarpone bowl and refrigerate while you macerate the berries.
Macerate the Berries
- Add the blueberries, strawberries, blackberries, raspberries, sugar, lime juice, zest, and mint leaves together using a large spoon in a 4-quart mixing bowl. Cover the bowl with plastic film and refrigerate the mixture for at least 30 seconds, or up to 4 hours.
- Brew 2 bags of green tea in 1 cup of hot water while the fruit is macerating. Once the tea is completely cool, remove the tea bags and press out any excess liquid from them.Discard the tea bags.
Make the Berry-Green Tea Syrup
- Strain the juice that the berries released into a separate bowl. You should have close to 2 cups of berry juice. Add the cool green tea to the juice. Save the berries to add to the berry tiramisu during assembly.Set this aside while you make the whipped cream.
Whip the Cream
- Set a 3-quart mixing bowl in a shallow dish of ice water, then pour in the heavy cream and vanilla extract into the bowl.Start beating the cream at medium speed until the beaters leave trails on the surface.
- Gradually sprinkle in the sugar. Once the sugar has been added, increase the mixing speed to medium-high and whip the cream until it holds stiff peaks. This process usually takes about 4-6 minutes from start to finish.
Assemble the Berry Tiramisu
- Use a deep (3-inches or deeper) 9×13 baking dish or cake pan as template for cutting the ladyfinger sponge cake into two sheets that will fit into the baking dish.Snuggle one of the sponge sheets into the bottom of the baking dish. Pour half of the berry-tea mixture onto the sponge’s surface and allow it to soak in for 2-3 minutes.
- For Store-Bought Ladyfingers: dip each cookie into the berry-tea mixture and arrange them in a single layer in the bottom of the baking dish. It should take 18-20 cookies for each layer.Break up the cookies as needed to fit them into the corner section of the baking dish.
- Spoon half of the fruit mixture onto the cake layer into an even layer. Next, spoon half of the mascarpone filling onto the fruit. Use an offset spatula to spread the cream into an even layer.
- Repeat the cake/ladyfinger layer, followed by the rest of the berry-tea mixture. Give the mixture a couple of minutes to soak in before spooning on the rest of the fruit.Finally, add the remaining mascarpone cream and spread it in an even layer. Depending on how deep your dish is, you may be right at the top of the dish when you’re done assembling.
Decorate the Berry Tiramisu
- Spread the whipped cream over the mascarpone and eyeball or score 12 serving pieces. Arrange a strawberry halve, blackberry halve, raspberry, blueberry and a mint leaf on each square.
- Refrigerate berry tiramisu for 2 hours before serving it. Cut the berry tiramisu into 12 servings and enjoy it on its own or with coffee.

Instructions
- Place half of the cereal into a large mixing bowl.
- In a microwaveable safe bowl, melt half the white chocolate chips on high for 45 seconds; stir. Continue to microwave in 15 second intervals, if necessary, until the chocolate is melted and can be stirred smooth.
- Stir in a few drops of red food dye; whisk vigorously until completely combined and smooth.
- Pour the melted chocolate evenly over cereal, folding gently with a spatula until evenly coated. Separate any pieces that are stuck together. (If the mixture doesn’t drizzle, just dollop it in sections, but make sure to do it before it sets.)
- Transfer to a gallon sized re-sealable food storage plastic bag. Add half the powdered sugar, seal bag and toss gently until all the cereal is well-coated.
- Repeat the entire process with the other half of ingredients, using the blue food dye this time.
- Place both mixtures in a large bowl and toss to combine.
- Try not to eat it all in one sitting! HA.

- Preheat the oven to 350 F. Line baking sheets with parchment paper or a silicone baking mat. Set aside.
- Microwave the butter in a large microwave-safe bowl for about 40 seconds. Butter should be about 80% melted. Whisk until completely melted.
- Add the sugars and mix until well-combined.
- Stir in vanilla and egg until incorporated.
- Add the flour, baking soda, and salt. Please read the recipe note about properly measuring flour.
- Mix dough until just combined. Dough should be soft and a little sticky but not overly sticky.
- Stir in M&M’s and mini chocolate chips.
- Scoop out 1.5 tablespoons of dough (medium cookie scoop) and place 2 inches apart on baking sheet.
- Bake for 7-10 minutes, or until cookies are set. They will be puffy and still look a little underbaked in the middle.

Ingredients
- 2 cans Pillsbury Biscuits (8 Count)
- 6 oz. strawberry pie filling ((about ¾ cup))
- 6 oz. blueberry pie filling ((about ¾ cup))
- 12 oz. cream cheese
- 5-6 tbsp. milk
- ½ cup powdered sugar
- 1¾ tsp. vanilla extract
Instructions
- Preheat your oven to 375°F.
- Pop open your biscuit cans and cut each biscuit half. Roll each half in between your hands until you have smooth round balls of dough. You will have 2 biscuits leftover.(You can bake them off for dinner later.) 😉
- Place each biscuit ball on a nonstick surface like a silicone mat or parchment paper. (This will make it easier to slide off your flag onto your serving platter.) *You want 5 rows of 6 biscuit balls across totaling 30.
- Brush each biscuit with your egg wash and bake on the top rack for about 8-10 minutes or until cooked through. Don’t overbake.
- Allow your biscuits too cool completely before filling. While waiting, add cream cheese, 5 tbsp. of milk, powdered sugar and vanilla into a mixing bowl and mix together until smooth and creamy. *Add the extra tbsp. of milk if it’s too thick!Add cheesecake filling to a piping bag with a tip. I used a star tip but any tip will work.
- Insert the piping tip in the top of each biscuit and fill generously. It’s okay if the filling comes out a bit. Distribute the filling amongst all of the biscuits.
- Once all biscuits are filled, we are going to pipe our “white stripes”. Pipe a star onto the top of the second row of biscuits starting with the 5th biscuit then the fourth row, starting with the first biscuit. (See photo above!)
- Next, add the “blue” by adding a dollop of blueberry filling on the top of the upper left 6 biscuits. You are going for a square. (See photo above!)
- Finally, top the remaining biscuits with the cherry filling for the “red stripes”. These are the top remaining row, third and bottom 6.
- Sprinkle with powdered sugar or serve as is! Any extra cheesecake or pie filling can be served on the side!

- Prepare white cake mix according to package directions, baking in a greased 9×13 pan. Allow cake to cool for about 25 minutes.
- Using a straw or the handle of a small wooden spoon, poke holes all over the surface of the cake.
- Prepare each box of Jell-o using 1 cup of boiling water + 1/2 cup of cold water. (This is 1/2 cup less cold water than what is called for on package instructions.)
- Carefully pour or spoon the blue Jello over a portion of the cake, making sure to get the liquid into the holes.
- Carefully pour or spoon the red Jello over the other portion of the cake, making sure to get the liquid into the holes.
- Refrigerate the cake for at least 6 hours or ideally overnight – this allows the Jell-o to set up within the cake.
- Spread the top evenly with the Cool Whip.

- Cut into squares and enjoy!

Instructions
- Wash blueberries and strawberries. Place blueberries in a bowl and squeeze some fresh lemon juice over then, then sprinkle a little sugar and toss. Chop strawberries into small pieces and repeat with the lemon juice, sugar and then toss. Set aside for about 10 to 15 minutes.
- Place a thin layer of crushed biscuits (or crumbled cake) in the bottom of the ramekins or dishes, and sprinkle with Grand Marnier or a light juice.
- When the strawberries have macerated for a while, place a layer of strawberries on top of the biscuit layer, making sure to put strawberries right next to the side of the ramekin (the goal is to see a red, white and blue layer.)
- Lastly, spoon some blueberries on top and make sure each space is covered…very easy!
- Place a dollop of cream in the center and voila, it’s finished! Keep refrigerated for a minimum of an hour for best flavor, up to about 8 hours.

- In small bowl, stir granola and brown rice syrup until combined.
- Using end of wooden spoon, press approximately 3/4 tablespoon granola into each frozen pop mold. Granola should be packed tightly into bottom of molds.
- In another small bowl, stir together milk and yogurt; set aside.
- Using small food processor or high-powered blender, puree strawberries until smooth. Stir water into each puree so they are pourable, about 2 tablespoons each, more if necessary.
- Set aside 30 blueberries and puree remainder. Add water, as needed, to make pourable.
- To layer pops, start by pouring, piping or syringing 1 tablespoon milk and yogurt mixture into each mold, covering granola layer.
- Put each mold in freezer until firm, at least 1 hour.
- Layer 1 tablespoon strawberry puree on top of frozen yogurt layer in each mold.
- Cover top of molds with foil, insert sticks and freeze again until solid.
- Remove foil, add another layer of yogurt and freeze again.
- For final layer, add 1 tablespoon blueberry puree and 3 blueberries to each mold. Freeze until solid.
- Keep frozen pops in molds until ready to eat. Run each mold under lukewarm water for approximately 10 seconds to loosen and remove frozen pops.
12. Oreo Cream Cheese Truffles

- Using a small cookie dough scoop, form dough into a ball.
- Roll the ball in your hands until smooth.
- Place the balls on the prepared baking sheet.

MAKE COATING:
- Break almond bark into squares and place in it in a medium microwave-safe bowl.
- Heat in the microwave for 1 minute, and then stir.
- Heat for 15 seconds at a time, stirring after each heating. Stop when there are a few bits of chocolate left, then stir until completely melted.
DIP TRUFFLES:
- Using a fork, dip the Oreo ball into the chocolate and shake off the excess chocolate.
- Place the truffle on the prepared baking sheet. Repeat with the remaining truffles and chocolate.
- Let harden about 10-15 minutes.
MELT CANDY MELTS:
- In 2 separate microwave-safe bowls, add candy melts.
- Start heating in the microwave for 30 seconds, and then stir.
- Heat for 15 seconds at a time, stirring after each heating. Stop when there are a few bits of chocolate left, then stir until completely melted.
- Transfer the melted chocolate to plastic squeeze bottles.
GARNISH AND CHILL:
- Drizzle Oreo Truffle with red and blue chocolate.
- Garnish with sprinkles.
- Trim off any extra chocolate that pools at the bottom of the truffles.
- Chill truffles for 30 minutes.
STORE AND SERVE:
- Store in an airtight container in the refrigerator until ready to serve.

- Brush the dough with milk, heavy cream, or egg wash.
- Pop it in the oven for 25 minutes. Ovens vary so check your galette to make sure it’s not browning too fast. If it is then turn down your oven by about 20 degrees and continue to keep an eye on it.
- Take the galette out. It should be a deep golden brown. Let rest for 10 minutes. Cut and serve with vanilla ice cream or whipped cream.

- Combine the remainder of the boiling water 1 ¼ cups with 2 packages of unflavored gelatin and stir until completely dissolved, pour in the sweetened condensed milk and mix well.
- Divide the sweetened condensed mixture evenly between 3 small bowls and set aside.
- Pour one of the bowls of blue Jello into the bottom of your prepared pan and place it in the freezer for 5 minutes.
- Pour one of the bowls of the white gelatin mixture evenly over the blue and place it back in the freezer for 10 minutes.
- Continue alternating colored and white jello creating a striped pattern. Freezing for 5 minutes after the colored layers and 10 minutes after the white layers.
- **Note- if at any time during the layering process the Jello in the bowls begins to set microwave it for about 30 seconds and stir to liquify
- Once all your layers are poured, place the pan in the refrigerator for at least 3 hours to set completely.
- To serve, cut into 24 equal cubes. To get perfect cubes you may have to trim the edges depending on your pan.
- Serve cold. To store, cover the pan with plastic wrap or place cubes in an airtight container and refrigerate.

- 6 3/4 cups confectioners’ sugar

Instructions Make the Vanilla Cake
- Preheat the oven to 350 degrees Fahrenheit. Grease two 8 inch round cake pans with vegetable oil, line bottoms with parchment paper and then grease the parchment paper with vegetable oil as well.
- Make sure you pick through your 4 cups of mixed berries, wash and dry them. You want them to be as dry as possible because the raspberries will ooze liquid.
- Wash the strawberries and dry them. Depending on the size of the 2 cups of strawberries you have, cut them into quarters if they’re small, or eighths. You basically want the strawberry slices close in size to the other berries.
- In a large bowl, whisk together the 2 1/4 cups of multipurpose gluten free flour, 1 cup granulated sugar, 1 1/2 teaspoons baking powder, 1/2 teaspoon baking soda and 1/2 teaspoon kosher salt. Set aside.
- In a medium bowl, whisk together the 1 3/4 cups of milk , the 1/2 cup light brown sugar, the 1/2 cup plus 2 tablespoons vegetable oil, the 1 teaspoon white vinegar and the 2 teaspoons pure vanilla extract.
- Slowly add the milk mixture into the flour mixture and use a spatula to combine as it gets thicker. It will still be fairly liquidy.
- With a spatula, scoop half the batter into one pan and the other half into the other pan. Smooth the tops with a butter knife.
- Bake the cakes in the center rack at 350 degrees Fahrenheit for 35 minutes until golden on top and slightly springy when carefully touched.Let them cool in the pan and then transfer to a cooling rack.
- Once the cakes have cooled completely, we are going to cut them in half horizontally. Now we will have 4 thin layers of cake.If the tops of your cakes have domes, you can very carefully slice them off to make the tops flat.
Make The Vanilla Frosting
- In a large bowl of an electric mixer or using a hand held mixer, beat the 3/4 cup of unsalted butter until it is smooth and creamy. About 2-3 minutes.
- Beat in the 6 3/4 cups confectioners’ sugar, 3 teaspoons of vanilla and 1 pinch of kosher salt.
- Slowly add in the water a little at a time until you get the desired consistency. You may not need to use all the water.Divide the frosting into 4 equal servings.
Assemble The Cake
- Place one layer of cake on a cake plate/stand. Scoop 1/4 (about 1 cup) of frosting on top of the layer and use an icing spatula to spread it around.
- Take 1 cup of all the mixed berries and scatter them all over the top of the buttercream.Place another layer of cake on top; repeat this same process. Do this with 3 layers of cake.
- Once you get to the top layer of cake, place it bottom (or flat) side up so the top of the cake is nice and flat.
- Use an icing spatula to frost the top with the last 1 cup of frosting. Add another cup of mixed berries all over the top or you can put a mound of berries in the center of the cake as I did.
- Refrigerate the cake immediately so the berries don’t ooze as much liquid.
- Keep the cake in the fridge until about 5-10 min prior to serving. If you serve it right away, the berries bleed when you slice into the cake.

For Shortcakes
- Heat oven to 450 degrees. In a large mixing bowl, stir together flour, sugar, baking powder and salt until combined. Add the grated butter and stir just until the butter is incorporated and coarse crumbs appear throughout the dough.
- Pour buttermilk on top of flour mixture. Stir just until combined — you don’t want to overwork the dough. The dough will look crumbly, but it will come together in the next steps.
- Turn the dough out onto a floured surface, like a countertop or pastry board. Gently using your hands, combine the dough so that it comes together and then pat the dough into a 1-inch-thick rectangle. If necessary, you can flour your hands to work with the dough if it’s a bit sticky.
- Fold one side of the dough toward the center, and then fold the other side on top of the first fold like a letter. Flatten into a 1-inch-thick rectangle again and then give it a quarter turn. Repeat three more times and flatten into the final 1-inch-thick rectangle. (Please see the blog for photos if that’s helpful.)
- Using a 3-inch cookie cutter, cut the dough into shortcakes. Do not twist the cookie cutter. Simply press down, lift straight up and gently remove the dough. Reshape the scraps and cut more shortcakes. This recipe should yield about six shortcakes.
- Place the shortcake dough close together in a 12-inch cast-iron skillet. Alternatively, you can use a baking pan, but the cast-iron skillet will give you a nice crust. Brush with additional buttermilk and bake until the tops start to brown, about 15 minutes.

- In a large mixing bowl, add heavy cream, sugar and vanilla. Beat until stiff peaks form.

- In a large pot, start to melt ¼ cup butter over medium-low heat. Once melted, add 5 cups of the mini marshmallows to the butter, stirring often. Once the marshmallows are almost melted, reduce the heat to low. Add ½ teaspoon of vanilla and the red food coloring, a few drops at a time, and mix well. If needed, continue to add drops of food coloring until you reach the desired color. Remove from heat. Mix in 4 cups of the cereal. Stir until the cereal is well coated. Pour into the parchment lined pan. Spread evenly while pressing down firmly, and smooth the top using the back of a buttered spoon.
- Repeat the same process, leaving the second batch white. Pour the white batch on top of the red layer. Press down smoothly and evenly.
- Repeat the process one last time with the blue food coloring. Place on top of the white layer. Press firmly and smooth out the top layer.
- Add sprinkles to the top, if desired, pressing them down to stick.
- Allow to cool completely at room temperature for about an hour.
- Remove the treats from the pan (use a knife to cut around the edges if needed). Gently peel off the parchment paper and place on a cutting board.
- Cut the treats into star shapes using a cookie cutter. If the cutter isnât deep enough to completely reach the bottom of the pan, create an indentation with the cutter to use as a stencil, and then cut it out completely using a knife. If desired, you can also just cut them into squares.

- Meanwhile, make the coconut filling. Whip the chilled coconut cream for 2-3 minutes until fluffy using a stand mixer with the whisk attachment or by using a hand mixer. Make sure to use only the solid coconut cream, discard or save the excess liquid from the can.
- Add the 3 tbsp maple syrup and coconut extract to the whipped coconut cream and whisk until well combined. Set aside.

- Add confectioners sugar, pure vanilla extract and heavy whipping cream, a little at a time, and beat until light and fluffy.
- Use a spoon and drop mascarpone/cream cheese topping on the bottom of the mason jars. OR you can fill a piping bag and pipe in the topping. This is the method I used in this recipe.
- Add 1-2 tablespoons of crushed vanilla wafers over topping. Drop in strawberries.
- Add another layer of topping, add crushed vanilla wafers and blueberries for the next layer.
- Lastly, add another layer of topping. Drop in raspberries.
- Refrigerate, serve and enjoy!

- Follow the directions on the back of your cake mix and bake.
- Let the cake cool completely before crumbling it up and fluffing it.
- Mix in the cream cheese frosting until well combined.
- Take 1 tablespoon of the mix and form it into a ball and place it on a cookies sheet. Repeat the process until all of the mix has been used.
- Place the cake balls into the freezer for a half hour to harden up a bit.
- Five minutes before you pull the cake balls out of the freezer, melt the vanilla wafers. Microwave the wafers in 30 second intervals.
- Once the wafers are melted, mix in the coconut oil.
- Remove the cake balls from the freezer and push one stick into the center of each of the balls.
- Stretch some cling wrap over three cups and set aside.
- Dip the cake balls into the chocolate and decorate with sprinkles immediately.
- Push the cake pop sticks into the cling wrap covered glasses to dry completely.
