- 1 tsp Salt
- 1 tbsp freshly cracked black pepper (please use less, if you don’t like spicy food)
- 2 tbsp vegetable oil
- 1 tbsp soy sauce
- 2 packets dried ramen noodles ((plain noodles, without spice packets))
- 1 L chicken broth (or beef broth, reduced salt (just over 4 cups))

Instructions Pork
- Mix all the ingredients in the spice mix.
- Spread the spice mix all over the tenderloin. Cover and marinade for at least 1 hour, upto overnight (in the fridge)
- Preheat oven to 350°F / 180°C.
- When the oven is preheated, roast the pork tenderloin until the pork has an internal temperature registered at 160°F with a meat thermometer. This can take between 20 – 30 minutes depending on the thickness of the tenderloin piece.
- Once it’s cooked, remove from the oven, cover and let it rest for about 10 minutes before slicing.
Eggs
- Follow the recipe instructions for ramen eggs, to make ramen eggs for this recipe. The eggs require at least 2 hours or upto overnight marinating.
- To make hard boiled eggs (with runny yolks) – Bring a pot of water to a boil over medium high heat (with enough water to completely cover the eggs).
- Add some salt or vinegar to the water. Lower the eggs into the water gently. To prevent the eggs from cracking, remove the pan from the heat, and lower the eggs gently. Once the eggs are in the pot, return it back to the stove.
- Cover with a lid and allow the water to come to boil. Set the timer to cook the eggs for exactly 6 minutes (set a timer). Reduce the heat to a simmer.
- When the 6 minutes are up, remove the eggs and place them in a bowl with iced water OR under cold running water for a few minutes.
- Crack and remove the egg shell carefully. Keep the eggs covered until you are ready to serve.
Ramen Noodles and broth (make this while the pork is cooking)
- Place all the ingredients except for the ramen noodles, mushrooms, Asian greens and chopped spring onions, in a pot.
- Bring the stock to a boil over medium high heat. Cover and let it simmer on medium – medium low heat for about 15 – 20 minutes.
- Once the pork is cooked and ready to be sliced, you can remove the garlic cloves, ginger and spring onions from the broth if you want (we like to eat it all).
- Add the greens and blanch quickly for 1-2 minutes in the simmering water. Remove the greens and set aside.
- Add the ramen noodles, and sliced shiitake mushrooms and let it simmer for 3 – 5 minutes until the noodles are done.
Assembly
- Slice the pork tenderloin into thin slices.
- Divide the ramen noodles and broth into two bowls.
- Add the enoki mushrooms and blanched greens over the hot broth, followed by the pork slices, jammy egg, cut in half and the chopped spring onions. Enjoy!

- Bring a large pot of water to a boil with a pinch of salt. Cook the noodles for half of the time recommended on the package. Drain and rinse them to stop them from overcooking. This helps keep the pasta firm in the baked casserole.
- In a large mixing bowl, add both cans of soup, the cans of corn with their juices, the shredded cheese, the diced pork and the black pepper, and stir to combine.
- OPTIONAL: If you want to add onions to the casserole, heat the olive oil in a small saute pan for a minute and cook the diced onions until softened and translucent, about 3 – 4 minutes. Stir them into the soup mixture.
- Gently fold in the cooked noodles to the sauce mixture so you don’t crush them.
- Pour the noodle mixture into a casserole dish that has been prepared with cooking spray.
- Preheat the oven to 375°F.

- Whisk all the sauce ingredients together (soy sauce, water, oil, honey, sugar, fish sauce, vinegar, garlic, ginger, peppers, hoisin, and peanut butter). You could also puree the sauce in a food processor to get the garlic, peppers, and ginger smooth.
- Marinate the pork in the sauce overnight or for at least a few hours. I did mine overnight and then some, about 15 hours.
- Heat a nonstick skillet over medium high heat and stir-fry the pork until browned on the outside. I found that there wasn’t a whole lot of extra sauce after marinating, but I discarded the little bit that was left.
- Cook your rice noodles according to package directions. Keep a little bit of liquid with the noodles to make sure it doesn’t dry out. Top with pork, carrots, scallions, peanuts, cilantro, and extra sauce of choice (more hoisin sauce, soy sauce, sweet chili garlic sauce, sesame oil, etc). This is definitely a build-your-own kind of thing – just throw whatever you like in there with the noodles.

- Place the sliced potatoes, 1 1/2 cups water, onions, and juice from pork roast in a 12″ nonstick skillet.
- Bring to a boil, cover, and boil over medium heat for 10 minutes.

Instructions How to Cook the Pork
- Set pressure cooker to saute. Add olive oil. Using tongs add the tenderloins to the instapot. Let cook on each side for about 1 minute, then flip and cook the other side.
- Add chicken broth to pressure cooker and, close the lid, close steam valve, set pressure to high. Cook for 15 minutes.
- Let steam naturally releaase for 5 minutes. Open valve to completely release pressure. Move the pork to a cutting board and let rest for 5 minutes.
- Thinly slice pork.
How to make Quesadillas
- While the pork is cooking I start prepping the rest of the ingredient for the quesadillas.
- Over medium heat melt half of the butter in a large skillet. Add sliced onions and mushrooms. Saute until they are soft and cooked through, about 5 minutes. Remove to a bowl.
- Once the pork is ready, add the remaining butter to the same skillet and heat over medium heat. As soon as the butter is melted add a tortilla.
- We’re going to start layering the ingredients over half of the quesadilla. First, sprinkle half of the grated cheese over half of the tortilla.
- Next, add a layer of sliced pork.
- Spoon on mushroom and onions.
- Sprinkle the remaining cheese over mushrooms and onions.
- Flip the part of the quesadilla without any toppings over the other half to create a top.
- Cook until the bottom of the quesadilla is golden brown. Then flip. Cook the other side until it’s golden brown.

- 375g ready-rolled puff pastry
- 50g butter
- Half an onion, finely chopped
- 1 stick of celery cut into a mirepoix (1cm dice)
- 1 carrot peeled and cut into a mirepoix
- Half a tsp each of fresh chopped marjoram and thyme
- 1 clove garlic. finely chopped
- 1 Knorr chicken stock cube dissolved in 200ml hot water (or use pork/ham stock if you have it)
- 2 tbsp plain flour
- 1 tbsp dry white wine
- 400g leftover roast pork cut into 1cm pieces
- Small handful of frozen garden peas
- 1 egg, beaten
- Sea salt and freshly ground black pepper
Instructions
- Heat oven to 190˚C
- Heat half the butter in a saucepan and gently fry the diced/chopped vegetables and herbs until softened (10 mins). Add the garlic and cook for another minute. Remove to a bowl.
- In the same pan, melt the rest of the butter and add the flour to form a roux. Cook the flour and butter for a minute or so before adding the stock. Whisk into a very thick velouté. This will be way thicker than any normal velouté, but this is correct. Stir in the wine and season.
- Add the pork, peas and vegetables to the velouté, mix well and portion into 3 large ramekins or put the whole lot in a gratin dish.
- Turn the rolled pastry out onto a floured surface and made sure you have enough area to cover the 3 pie dishes. Cut the pastry to just target than the pie dishes and drape over. Pinch the pastry to the edge of the dishes and trim off with a knife. Make two holes in the top to let steam out and brush over with beaten egg.
- Put the finished pies onto a baking sheet and bake in the oven for 40 mins until golden. Remove and allow to cool before serving straight from the dishes.
- As this dish is made with leftover roast pork, it makes sense to serve it with bubble and squeak made with leftover roast potatoes and sprouts.

- Cook frozen vegetable in the microwave for 2-3 minutes. Just enough to thaw them. Drain any excess liquid they create. Set them aside.
- Heat vegetable oil in a wok, or a large nonstick skillet over medium high heat.
- Roughly dice the bell pepper, and the leftover pork. Make sure they are bite size pieces.
- Once the oil is smoking (after about 1-2 minutes), add the pork and the bell pepper and saute for 3 minutes. Stir it around often so that it does not burn.
- Add the rice to the pan and begin stirring it around. Continue stirring the rice around so it does not burn. Cook for about 5 minutes ensuring to break it up as you mix it.
- If the vegetables have any water from heating them in the microwave, be sure to drain all of the water. Add the vegetables into the pan and saute and stir for another 5 minutes.
- Now add the seasonings: garlic powder, black pepper, soy sauce, and sesame oil into the pan. Stir it around until it is thoroughly combined.
- Push the rice to one side of the pan so that the other side is completely open. Crack both eggs into the open side of the pan and scramble them around with your spatula.
- Be careful not to mix the eggs into the rice until they are cooked through.
- Once the eggs are completely cooked, mix them into the rice until it is all combined.
- Garnish with green onion. And enjoy!

Instructions
- Heat 1 teaspoon of the oil in a large pan over medium high heat. Add the broccoli, peppers and carrots, and cook for 4-6 minutes until softened and lightly browned. Season to taste with salt and pepper.
- Remove the vegetables from the pan; place on a plate and cover with foil to keep warm.
- Add the remaining 2 teaspoons of oil to the pan. Add the pork, then season with salt and pepper to taste. Cook, stirring occasionally, until the meat is browned and cooked through, 4-6 minutes.
- Add the garlic and ginger to the pan and cook for 30 seconds.
- While the pork is cooking, make the sauce. Place the soy sauce, water, brown sugar, honey and sesame oil in a small pot over medium high heat. Stir until sugar is dissolved, about 3 minutes. Turn up heat to high and bring to a boil.
- Mix the cornstarch with 2 tablespoons of cold water until dissolved. Add the cornstarch mixture to the sauce and boil for 1-2 minutes or until sauce has thickened.
- Add the vegetables back to the pan with the pork. Pour in the sauce and toss to coat. Sprinkle with sesame seeds, then serve.
