1. Paleo Protein Energy Bars

Paleo Protein Energy Bar with Calendula is a practical addition to this collection, with a straightforward method and adaptable serving options.

Recipe details: Prep: PT15M · Cook: PT20M · Total: PT35M · Yield: 12

These Paleo Protein energy bars with Calendula are a great source of protein, fiber, and healthy fats, so they will keep you happy and satisfied whether you have them for breakfast or as a snack.

Ingredients

  • 1 cup dates
  • 1/4 cup maple syrup
  • 1/4 cup roasted unsalted almonds
  • 1 1/2 cup oats
  • 1 cup dried calendula
  • 1 cup cranberries
  • 2 tablespoons sunflower seeds
  • 2 tablespoons sesame seeds

Instructions

  1. If you have soft dates than you can skip this step. It they are harder in texture, soak them in hot water until they’re completely submerged as then it’s easier to blend them. Soak for 15-30 minutes or until the dates are soft.
  2. Blend the dates in the food processor and mix them with maple syrup till the mixture is consistent.
  3. place the mixture into a bowl and add all the remaining dry ingredients – almonds, oats, calendula, cranberries, sunflower and sesame seeds.
  4. mix them well and place them on a baking pan preferably with straight edges to achieve bars with desired sharp corners.
  5. The most important step in the whole process is to pack down the oat mixture in the pan. Once you place all the mixture on the baking pan, you need to press it really hard in order to make it firm. I used the square bowl which I pressed really hard to create a firm substance.
  6. Before putting the mixture in the oven, cut the substance into bars while it’s soft. It’s harder to do it after removing from the oven as the mixture is harder, pretty consolidated and easy to break.
  7. Bake the bars in the oven for 20 minutes.
