- Optional: If you plan to roast your seeds, remove any fleshy strings and dry them first. Then, toss in avocado oil with salt, pepper, and any other spices of your choice. Transfer to a baking sheet and toast for 10-15 mins.
- Roast your pumpkin, onion, and garlic cloves for 40 to 45 minutes.
- Once the pumpkin is roasted, allow to cool down (if your blender cannot accommodate hot foods) or proceed to the next step if you have a blender that has a soup setting.
- Scoop out the flesh of the pumpkin, the roasted onions and garlic, and add to the blender along with 4 cups of vegetable stock and ½ cup of coconut milk (optional). Blend until smooth.
- If your blender does not have a hot soup setting, then add the ingredients to a large Dutch oven or pot and bring to a mild simmer. Let it cool down and then blend.

Instructions
- Clean the mushrooms, remove the stem with the help of a small knife, then clean them with a damp cloth.
- Preheat the air fryer to 370F degrees.
- In a bowl, beat the eggs.In anotherv bowl pour the breadcrumbs.
- Mince the garlic and parsley and add it to the breadcrumbs along with the parmesan cheese, salt and pepper and mix well.
- Dip the mushrooms first in egg and finally in breadcrumbs, repeat this step twice, and lay them on a plate.
- With the help of a kitchen brush, or a spray oil , lightly oil the basket of the air fryer.

- Whisk all the ingredients together in a large sauce pan over low heat. Heat through for about 5-10 minutes. Stirring occasionally so it doesn’t burn on the bottom. PRO TIP- lightly crush the dried basil in the palm of your hand before adding to the soup. It will enhance the flavor and release the oils.

- Preheat the oven to 400°.
- Place the cubed bread on a rimmed baking sheet. Toss the bread with all the olive oil to coat. Sprinkle on all the herbs & seasonings.
- Roast for 5 minutes. Toss. Then roast another 5-8 minutes, until golden and crispy, but not burnt.
