  2. Weigh cabbage and salt: Using a kitchen scale, weigh out 650 grams of cabbage and add to your bowl. This will be approximately ½ of medium-large cabbage head or 9-½ cups. (See notes how to accurately weigh your ingredients.) Add 16 grams of salt to cabbage and caraway seeds if using.
  3. Massage cabbage: Using clean hands or a fermentation temper, massage the cabbage until it starts releasing liquid. For softer sauerkraut, massage cabbage vigorously. For a crunchier result, massage just enough to combine the salt.
  4. Transfer: If using peppercorns, add them to the bottom of your jar. Then transfer the cabbage and all released juices to a quart-size jar, packing it in very well.

  3. In a large wok or a large skillet with high sides, heat up 2 tablespoons of sesame oil. Add the sliced onion, and stir fry for about 3 minutes over high heat, or until the onion starts to brown. Add the sliced cabbage, julienned carrot, and the remaining sesame oil and stir fry for about 3 minutes, or until desired done-ness of cabbage. I wanted to leave the cabbage and the carrots crunchy for a bit of texture, so 3 minutes over high heat was enough.

  5. Add the cooked soba noodles and the remainder of the sauce. Stir fry for about 2 minutes, or until the sauce fully coats the noodles, the cabbage and the noodles are well mixed, and the noodles are warmed through.Serve warm with a sprinkle of sesame seeds.

  • 1 lb (500g) crunchy vegetables of your choice (I’m using a mix of white cabbage and red cabbage)
  • 4 scallions (spring onions)
  • 1/2 cup cilantro (coriander) leaves
  • 1 tablespoon toasted sesame seeds
  • 1 red chilli (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons sweet chilli jam (or use sweet chilli sauce, honey or hot honey sauce and add 2 crushed garlic cloves and a 1-inch piece of ginger, grated)
  • 1 teaspoon soy sauce (use tamari for a gluten-free or vegan version)
  • 1/2 teaspoon salt

Instructions

  1. I like using a mandoline because it makes it a lot easier, but you can use a knife. I find the easiest way to cut cabbage is to cut a portion off the head, and then chop that into fine slices. It’s a lot easier than trying to chop a round cabbage! Get the chopped vegetables into a large mixing bowl.
  2. Cut 3 scallions finely, and slice the other into long thin strips. Add the finely chopped scallions into the mixing bowl with the shredded vegetables, fill a mug with cold water, and then pop the long thin strips into the water. This will make them curl up and give you a lovely curly garnish to top your salad with. Chop the cilantro leaves roughly, and chop the red chilli finely (if you’re using it). Pop those into the mixing bowl with the shredded vegetables, along with 1 tablespoon of toasted sesame seeds.
  3. In a small bowl, combine 1 tablespoon olive oil, 1 tablespoon sesame oil, 2 tablespoons chilli jam, 2 tablespoons rice vinegar, 1 teaspoon soy sauce and 1/2 teaspoon of salt. Give it a good mix with a fork or small whisk, until combined well.
  4. When you’re ready to serve, pour the dressing into the bowl with the salad, and give everything a really good toss with tongs, to make sure everything is well coated in the dressing. Transfer the salad to a large serving bowl, top it with the curly scallions and dig in!

Once the water is at a rapid boil, press the dough in batches of about 1/2 cup at a time through a Spaetzel maker or colander with a spatular or wooden spoon directly over the pot of water. This should create small, dumpling-like noodles that drop into the water. 4. Continue to press all the dough thought the Spaetzel maker or colander (careful not to get to close to the hot water, or the dough will stick), until all dough is used. 5. Cook the Spaetzel 5-6 minutes in boiling water until they float and expand in size. Remove with slotted spoon to a bowl, to drain and set aside. Making the Spaetzel with Red Cabbage and Bacon: 1. Heat a large, deep skillet over medium heat. 2. Add chopped bacon and cook until crisp, stirring occasionally, about 7-10 minutes. 3. Remove crisp bacon with a slotted spoon to paper towels. 4. Add onions and cabbage to the pan with the bacon fat. Season with salt and pepper, and cook over medium heat, stirring occasionally- 7-8 minutes, until cabbage and onions are softened and lightly browned. 5. Add the garlic and cook 1 minute until just fragrant. 6. Add cooked Spaetzel and butter and toss to combine with the cabbage, onions and garlic. 7. Add the crisp bacon back to the pan, reserving a bit for topping (if desired). 8. Finish with a pinch salt and pepper 9. Sprinkle with fresh parsley and serve hot.
