  • 160 ml espresso (freshly brewed + cooled to room temperature )
  • 50 ml dark rum (or Amaretto/marsala/brandy *see note 4)
  • 50 g unsweetened cocoa powder

Instructions

  1. Note: For the best and most accurate results, I recommend measuring your ingredients using a digital scale.
  2. Prepare: Make the vegan mascarpone the day/night before. Prepare the vegan ladyfingers – this can be done on the day (recommended), or a day ahead of making the tiramisu. (See notes 1,2+3)
  3. Make the vegan sabayon: Add the soy milk, rum, sugar, cornstarch, and vanilla extract to a heavy-bottomed saucepan and whisk well until smooth without any visible lumps.
  4. Bring to a simmer over low-medium heat while continuously whisking. Cook for 3-4 minutes until you have a very thick custard. Note: If you’re using a gas hob, be extra vigilant and cook it out on the lowest temperature setting to make sure the mixture does not thicken too quickly.
  5. Remove the saucepan from the heat. Add the cold cubed butter to a large mixing bowl and pour the hot custard on top. Whisk vigorously – It will appear split at first but after a few seconds the ingredients will emulsify leaving you with an incredibly smooth and glossy pastry cream consistency.
  6. Cover the sabayon with plastic wrap – this will prevent it from forming a skin. Make sure you leave no space between the custard and the clingfilm. Place it in the fridge to chill completely for 30 minutes to an hour.
  7. Make the mascarpone cream filling: Once chilled, the sabayon will be extremely thick – so much that it will feel wrong! But don’t worry, this is what you need for the pudding to set properly. Add the vegan mascarpone to a blender jug and scoop the sabayon mixture on top of it. If your blender is small, do this in 2 batches.
  8. Blend the filling until smooth and creamy. This should not take very long, under a minute. Set aside.
  9. Make the espresso soak: In a wide shallow bowl or container, mix together room temperature espresso and rum, set aside.
  10. Assemble: Add a thin layer of the mascarpone cream to the base of a 10.5″x7.5″ dish (or similar), smooth it out with the back of a spoon or an offset spatula. Individually dip each ladyfinger in the rum-espresso soak for 2-3 seconds on each side and arrange them side by side on top of the cream.
  11. For the most even layers, divide the remaining vegan mascarpone cream into 2 parts. With a spatula, carefully smooth out one part on top of the ladyfingers. Repeat a second layer of soaked ladyfingers on top of this.
  12. Spread the remaining mascarpone mixture on top. Take your time and smooth it out as evenly as possible with an offset spatula.
  13. Generously dust unsweetened cocoa powder on top of the final layer of mascarpone. You can use a pastry brush to carefully brush away any powder from the sides of the baking dish. Refrigerate the tiramisu until set for at least 4-6 hours (for best results – overnight!)
  14. Serving: Carefully mark out your servings with a sharp knife and wipe the knife clean between each cut. I highly recommend using a wide metal spatula to lift out the slices. Then use a large knife or cake scraper to carefully push the tiramisu off of the spatula and onto your serving plate.
  15. Storage: Make sure you store it in the refrigerator until serving. Tightly cover the baking dish with plastic-wrap so that it is not exposed to the air as this can cause it to dry out and absorb odors from the fridge. It will keep in the fridge for 4 days. To freeze, you can add the set tiramisu to an airtight container and freeze for up to a month. Defrost it on a plate in the fridge overnight before serving.

Pour the cream over the chocolate. Do not stir it yet – wait about 4 minutes and then, use a wooden spoon and stir to combine. It will take a few minutes of mixing before you see it come together. (This is ganache.)
  2. Let it cool slightly and then pour it directly on the prepared crust. Place the springform pan on a baking sheet in the refrigerator until this layer solidifies, at least 1 hour. (You want it totally firm.)

Filling: Layer 2

  1. Melt 1 cup of chocolate and mix in the espresso powder. Set aside to cool.
  2. Use an electric mixer or a stand mixer fitted with the whisk attachment, to whip the cream into stiff peaks. This will take about 2 minutes. Set aside.
  3. Add the cream cheese to a food processor fitted with the blade attachment, or a bowl with an electric mixer. Blend for about 30 seconds. Then add the vanilla and powdered sugar½ and blend until it’s velvety smooth. Use a rubber spatula to scrape in all of the chocolate-espresso mixture. Mix to blend.
  4. Fold the whipped cream into the cream cheese mixture just until it’s combined.
  5. Once it’s been an hour, remove crust from the refrigerator and pour in the filling right over the set ganache. Smooth the top and cover with plastic wrap. Refrigerate overnight (at least 12 hours.)

  2. Sift the dry ingredients (except the espresso powder) into a large bowl and mix together.
  3. Stir the wet ingredients (except the hot water) together in a separate bowl until combined, then pour them into the dry ingredients and whisk gently until combined and free from lumps. Make sure to scrape down the bottom of the bowl. You can use a stand mixer for this if you want, but it’s very easy to do with just a bowl and a hand whisk.
  4. Stir the espresso powder into a cup of recently boiled water, then add it to the cake batter and mix it in. The batter will be quite runny, don’t worry, this is how it’s supposed to be!
  5. Divide cake batter evenly between cake pans and bake for 30 – 40 minutes. The cakes are ready when the centres spring back when gently pressed and a toothpick comes out with a few moist crumbs but no wet batter.

Make the Espresso Russian Buttercream Frosting

  1. Whip butter with a whisk attachment on high speed for 5 full minutes until pale and creamy. Make sure to pause periodically to scrape down the sides of the bowl.
  2. Turn the mixer down to medium-high speed and drizzle in the condensed milk very slowly and gradually, a little at a time, whipping in between additions. It is important not to add the condensed milk too quickly, or it won’t emulsify and the buttercream will split.
  3. Add the vanilla and salt and whip on high speed for a minute. The frosting should be smooth, thick and glossy.
  4. Mix the espresso powder in 1 tbsp of hot water and add it to the buttercream, whip until combined.
  5. Check my Russian Buttercream recipe post for more details on this buttercream and a troubleshooting guide.

Assemble the Cake

  1. Once the chocolate cakes have completely cooled, use a cake leveler or serrated knife to cut off the tops to make them level. Slice each cake in half horizontally to make four thin layers.
  2. Put one layer of your cake onto a cake plate or board and add an even layer of coffee buttercream, then add the next layer and repeat until all your layers are used.
  3. Cover the cake with the remaining buttercream and decorate as desired.

Instructions

  1. Open the can of biscuits and lay out on a cutting board. Punch out the center of each biscuit with a donut hole cutter.
  2. Into a medium or large pot, add enough canola oil to cover the bottom of the pot and about 2 inches high or more.
  3. Heat the canola oil over medium to medium high heat.
  4. Add a few donut holes to the pot to cook. This will also allow you to test the oil temperature if you don’t have a candy thermometer. Cook the donut holes and set aside on paper towels to soak up any excess oil.
  5. Fry the rest of the donut holes and donuts and set aside.
  6. In a small bowl, add the powered sugar and espresso coffee and stir to combine.
  7. Dip each donut and donut hole in the coffee glaze to coat the top.
  8. If desired, coat a second time.
  9. Serve immediately.

Ingredients

  • 2 cups all purpose flour
  • ½ cup cocoa powder
  • 1 ½ tsp instant coffee grounds
  • 1 tsp salt
  • ½ tsp baking powder
  • 1 tsp baking soda
  • 8 tbsp butter (softened (1 stick))
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • 2 eggs (room temperature)
  • 1 cup chocolate chips
  • 1 cup walnuts
  • 2 tbsp confectioners’ sugar

Instructions

  1. Heat the oven – Preheat the oven to to 350°F.
  2. Mix the dry ingredients – In a large bowl, mix the flour, cocoa powder, instant coffee grounds, salt, baking powder, and baking soda. Set aside.
  3. Mix the wet ingredients – Using an electric mixer, cream butter and sugar on a medium-high speed. Add in vanilla and the eggs one at a time and continue to beat until light and creamy.
  4. Make the dough – Turn the mixer down to a lower speed and slowly add the flour mixture. The ingredients will begin to form a dark brown dough. Once the dough is homogeneous, turn off the mixer and remove the bowl from the machine. Stir in the chocolate chips and walnuts.
  5. Make logs to bake – Once the dough is ready, use your hands to form two balls of dough on a floured surface and roll them into two logs about 2 to 3 inches wide and 1 inch high.
  6. Bake the logs – Place the logs onto a baking sheet lined with parchment paper leaving space between them, then pop them in the oven for 35 minutes, or until slightly firm.
  7. Bake them again – Once the logs look cracked on the top, remove the logs from the oven and allow to cool for about 5 minutes. Cut the dough diagonally into 1/2 inch slices. Place the biscotti back on the baking sheet, cut side down. Bake for another 10 minutes, or until the cookies are crisp.
  8. Let the cookies cool and enjoy – Once the cookies are done baking the second time, let them cool completely, then dust powdered sugar on them and enjoy with a cup of coffee or tea.

  4. Then pour the egg mixture over top of the bread, giving it a stir as you go so that all bread is evenly. Fold in chopped candied pecans.
  5. Spoon into individual ramekins and let sit for 20 minutes before baking.
  6. Then bake the mixture in your preheated oven at 375F for 35 minutes.
  7. To make the sauce, combine all the sauce ingredients in a medium saucepan and bring to a boil.  Pour over baked bread pudding.

This coffee creme brulee recipe is super easy to make with 5 ingredients and 15 minutes of prep time. The classic French dessert is the perfect coffee flavoured dessert for a dinner party or special occasion!

Ingredients

  • 240 ml (1 cup) Heavy / Thickened Cream
  • 1 teaspoon Vanilla Paste (or vanilla extract)
  • 1 1/2 tablespoons Instant Coffee Granules (or instant espresso powder)
  • 3 large Egg Yolks (equivalent to 60 grams, at room temperature)
  • 30 gr (2 1/2 tablespoon) Caster Sugar
  • 4 teaspoons Caser Sugar (divided in 4)

Instructions Coffee Custard

  1. Preheat your oven on 100 degrees Celsius / 215 degrees Fahrenheit. Place four deep 7 cm wide ramekins, or shallow 13 cm wide ramekins (2,5 inch and 5 inch) on a baking tray or large baking dish.
  2. In a small saucepan, mix the Cream, Vanilla and Instant Coffee. Stir to dissolve the coffee granules and bring to a simmer. Remove from the heat.
  3. In the meantime, place the egg yolks and sugar in a heat-proof large bowl. Whisk until smooth (see note 1).
  4. Slowly pour the warm cream mixture over the sugar / yolks while constantly stirring. Mix until you get a smooth, liquid mixture (see note 2). Optionally, strain the custard through a fine mesh sieve to remove any lumps and air bubbles.
  5. Pour the custard into the prepared ramekins. Carefully tap the tray the ramekins are sitting on to pop any air bubbles. If you notice some foam on top of the custard, remove it with a small spoon.
  6. Bake for about 60 minutes for the 7 cm ramekins, or 40 to 45 minutes for the 13 cm ramekins. The sides of the custard should be set but the centre should be still very slightly jiggly (see note 3).
  7. Place on a wire rack to cool down at room temperature for 30 minutes, then transfer in the fridge for at least 3 hours, or up to 24 hours.

Sugar Coating

  1. Sprinkle about 1 teaspoon of caster sugar over each coffee custard. Gently shake the ramekins to evenly distribute the sugar and make sure you get an even layer throughout (see note 4).
  2. Using a kitchen blow torch, caramelise the sugar until it turn into a crispy, golden coloured shell. Make sure to constantly move the flame and not put it in direct contact of the sugar to avoid burning it.
  3. Place in the freezer to set for 15 minutes, then serve straight away (see note 5).

  8. To make the buttercream, mix together a teaspoon of instant coffee with a teaspoon of water and set aside for later use.
  9. In a mixing bowl, add butter and icing sugar and mix together until combined. Then add the dissolved coffee and mix together until evenly distributed.
  10. To assemble the biscuits, spread or pipe the coffee buttercream on top of one biscuit, then top with another biscuit.

Instructions

  1. For accuracy, I highly recommend measuring your ingredients in grams using a digital kitchen scale.
  2. Prepare: Preheat your oven to 160°C/320°F fan (180°C/356°F conventional). Line the base of two cake tins with a circle of parchment paper and liberally grease the sides with oil or vegan butter.
  3. Mix dry ingredients: In a large mixing bowl, whisk together the finely chopped walnuts, flour, soft brown sugar, baking powder, baking soda, and sea salt.
  4. Mix wet ingredients: In a separate medium bowl, whisk together the espresso, vegan buttermilk, olive oil, and vanilla extract.
  5. Make the batter: Pour the wet ingredients into the dry and whisk until there are no visible pockets of flour. Be careful not to over-mix.
  6. Bake: Divide the batter between the prepared cake tins and bake for 35-45 mins. Check the cakes are done by inserting a knife or toothpick into it, which should come out clean.
  7. Allow the cakes to cool in the pans for 10-15 minutes before carefully transferring them out onto a cooling rack. Allow them to fully cool before transferring them to the fridge in an airtight container until ready to use.
  8. Meanwhile, prepare the vegan coffee Swiss meringue buttercream.
  9. Candied Walnuts: Add walnuts, sugar, and butter or oil to a pan on gently cook for 5-7 minutes, tossing constantly. Once the sugar has melted and the walnuts are fragrant, remove from the heat and transfer to a sheet of parchment to cool. Reserve 16 walnut halves for the topping, and chop the rest for the filling and topping.
  10. Assembly: With an offset spatula, smooth around 1/3 of the frosting on top of the first cake layer, followed by half of the chopped candied walnuts. Top with the next cake layer and coat the sides and top of the cake with another 1/3 of the frosting.
  11. Lastly, pipe the remaining 1/3 of the frosting on top of the cake and top with the candied walnut halves. Sprinkle the remaining chopped walnuts on top of the cake.
  12. Storage: Store in an airtight container in the fridge for up to 4-5 days. Remove from the fridge about an hour before serving to allow the cake and frosting to soften a little. This cake tastes best when served fresh. You can however freeze any leftover cake in an airtight container to serve another time.

Instructions

  1. Melt together the butter, sugar and cocoa over low heat.
  2. Add the eggs continue to cook, stirring constantly to fully cook the egg to a soft scrambled texture.
  3. Add the chocolate cookie crumbs, coconut and walnuts.
  4. Mix together until well combined, then press into the bottom of a parchment paper lined 9×9 inch baking pan.
  5. First sift together the icing sugar and cappuccino powder.
  6. With an electric mixer, beat together the butter, and icing sugar and cappuccino powder until it just starts to come together.
  7. Add just enough milk, a tablespoon or two at a time, until the icing is thick and smooth.
  8. This frosting should be very stiff but spreadable. (Much thicker than you would use to frost a cake for example) If you think it’s too thick, you may add a few drops of milk at a time to bring it to the right consistency.
  9. Spread evenly over the bottom layer.
  10. Chill in the fridge for a couple of hours before adding the chocolate topping.
  11. Melt together the chocolate chips and butter over low heat, just until the chocolate is melted, don’t over heat it.
  12. Spread quickly over the chilled frosted layer.
  13. Return to the fridge until the chocolate sets.
  14. Cut into squares or bars. These freeze very well.
