- Add the tomato puree, chili powder, turmeric, and garam masala. Press the Cancel button to turn off the Instant Pot. Pour in the water and stir well with a wooden spoon, nudging loose any browned bits from the pot bottom.
- Place a tall steam rack in the pot, making sure all of its legs are resting firmly on the bottom. Place the bowl of salmon on the rack.
- Secure the lid and set the Pressure Release to Sealing. Select the Pressure Cook or Manual setting and set the cooking time for 4 minutes at high pressure.
- Perform a quick release by moving the Pressure Release to Venting. Press the Cancel button to turn off the Instant Pot. Open the pot and, wearing heat-resistant mitts, remove the bowl of salmon to a trivet and remove the rack.

Stovetop Method
- Sear the Salmon: This step helps to seal the flavor of the marinated salmon tikka. I highly recommend not skipping this step. Heat oil in a medium pan or Dutch oven on medium-high flame. Then, arrange the marinated fish in a single layer. Let the fish sear on one side, then flip and cook for another 2 minutes until you see a char. This should take about 5 minutes. Take the fish out in a plate and set it aside.
- In the same pan, add the onions and saute for 4-5 minutes. Then add the minced ginger and garlic and saute for another minute. (Note: if you like a smooth sauce, you can puree the onions at this time and add them back to the pan).
- Add the tomato puree and spices. Stir well and cook for 2-3 minutes. Then add the water and cook for about 8 minutes on medium-low heat. Cover the pan and stir in between.
- Stir in the heavy cream. Crush the dried fenugreek leaves between your palms and then add to the curry.
- Add the salmon to the curry. Cook until you get a gentle boil, about 3 minutes.

- Add the wine, stir, and simmer until the wine is reduced, about 2 minutes.
- Start a timer for 15 minutes. Ladle prawn stock one ladle at a time into the rice, stirring constantly in-between and allowing the rice to absorb the liquid before adding another ladle of stock. Repeat and continue until the timer goes off at 15 minutes.
- Now add the prawns, stir them into the rice, and continue to ladle more stock in, stirring and cooking the prawns and allowing the rice to continue absorbing the stock. Do this until the prawns are cooked; the pink parts will have turned to a bright orange when cooked.
- Remove the pan from the heat. Pour in the lemon juice and stir in gently. Drizzle olive oil over the pan and sprinkle chopped parsley. Serve immediately.

- Let the alcohol evaporate and then add the tomato passata (purée). Mix everything together and season with salt and pepper and let the ragu simmer on a low heat for about 30-40 minutes. Once the ragu is ready stir in the cream and let the ragu rest while you cook the pasta.
- Put a pot of water on to boil for the pasta. Add salt once it starts to boil and bring to the boil again. Cook the pasta al dente according to the instructions on the packet. Once the pasta is ready, drain it and add it to the creamy beef ragu.
- Mix everything together well over a medium heat for 1 minute. This will help infuse the pasta with the flavours from the sauce. Finally, add the pesto and mix again. Serve immediately with some fresh basil and grated Parmigiano if required.

- Heat a medium to large sized pot of salted water on stove over high to bring to a boil. This can take up to 10 minutes.
- After about 4-5 minutes, add butter to a skillet and heat over medium. Once mostly melted, add panko bread crumbs and garlic and onion powder. Mix in butter then spread out in an even layer to toast 30-60 seconds, then mix to continue to toast for another 30-60 seconds until bread crumbs begin to brown. Remove bread crumbs from pan and set aside.
- In the same pan, add pancetta to fry for about 6 minutes. By now your pasta water should be boiling, add the orecchiette pasta to water and set timer for 1 minute less than the cooking time on box / container instructs (most of the time orecchiette pasta takes about 9-12 minutes, 9 being the most al dente, so we find 10 minutes the right amount of cooking time so we boil it for 9 minutes).
- Add fresh garlic and cook with pancetta for another minute or two until pancetta is fully cooked (browned and crisped). Stir often to prevent garlic from burning.
- Once pancetta is done, spoon out a majority of the grease, but leave about a tablespoon left.
- Add peas and give a quick mix with the pancetta (and grease) then add the chicken stock and ladle out a 1/2 cup of pasta water from your pasta (that should be just about done by now), and add to the skillet. Add parsley, oregano, basil, and salt to skillet.
- Drain pasta (don’t rinse!).
- Turn up heat to medium high and bring everything in the skillet to a gentle boil, then add pasta to the skillet and mix. Let the pasta finish cooking in the skillet for another 1 minute. Test for doneness.
- Once pasta is done, turn heat down to medium low and add Parmesan cheese. Mix well.
- Add 1/2 of the panko breadcrumbs and mix. Serve and add the remaining bread crumbs to the plates. Enjoy!

- 4 wedges lemon ((to serve))
Instructions
- Soak the scallops for 10 minutes in a brine solution (3 Tbsp Kosher salt in 16 oz water.)
- Remove after 10 minutes and place on a rack to dry.
- Next, put a large pot of well salted water on to boil for the pasta. Once the pasta goes in, set a timer for 7 minutes before the pasta will be ready (according to package instructions.)
- Make sure the scallops are dry. If they are not, pat them dry with a paper towel. When the timer goes off, put a large cast iron pan on high heat and add the extra virgin olive oil.
- When the pan and oil are very hot, add the scallops and sear them for about 1 ½ minutes before adding the shrimp, garlic, and parsley.
- Cook for another 2 minutes, then turn the scallops and shrimp and cook for a further 1 ½ minutes. Next, add the wine, scraping the bottom of the pan; turn the heat down just to keep it warm.
- Add the butter and stir to melt. Add some freshly ground black pepper, if desired, then taste the sauce or a piece of seafood and add salt if needed.
- Drain the pasta, which should be ready, but reserve a cup or so of pasta water. You will only need this pasta water if you want to add some after mixing everything together. Add the pasta directly to the seafood sauce in the pan.
- Stir gently to incorporate all the ingredients together. Add some of the reserved pasta water.
- Serve immediately as this seafood pasta dish is best piping hot. Don’t forget some crusty bread to mop up the buttery garlic and wine sauce at the end!

- Arrange 8 ounces assorted mushrooms in an even layer (if needed, do this in 2 batches). Cook the mushrooms, leaving them undisturbed, until deep golden-brown on the bottom, about 2 – 4 minutes. Note: Resist the urge to saute and stir these around, as this will prevent browning!
- Once browned, use tongs to flip each mushroom and brown the other side, an additional 2 – 3 minutes. The mushrooms will have shriveled up significantly and appear crispy and browned on both sides. Turn the heat off. Season with salt and pepper, then transfer to a paper-towel lined plate and set aside. Keep the residual oil in the pan. Note: There will likely be some bits of mushroom stuck to the pan. As long as these aren’t burnt, keep them as is! If they are burnt, carefully remove from the pan.
- Add 4 cloves garlic, 1 small white onion, and 1 medium carrot to the pan and set over medium heat. Saute for 8 – 10 minutes, or until the vegetables have softened and the onions are translucent.
- Add 1 anchovy fillet (optional) and a pinch of black pepper, and saute for 1 minute. Use a wooden spoon to slowly begin mashing the anchovy (it will continue to disintegrate over time).
- Stir in 1 1/2 teaspoons dried oregano and saute for 1 minute.
- Add 2 tablespoons tomato paste and saute for 1 – 2 minutes until paste turns a deep red color and the oil begins to separate. Stir in the 3/4 teaspoon all-purpose flour and mix to incorporate into the paste.
- Add 3/4 cup red wine and bring to a boil, scraping up any bits stuck to the bottom or sides of the pan. Simmer until wine has reduced by half and the mixture looks slightly glossy and thickened.
- Add the cooked mushrooms back into the pot, along with 1 cup mushroom broth (or 1 cup water and 1 teaspoon mushroom bouillon), 1 bay leaf (if using), and 1 – 2 tablespoons white miso paste, and bring to a boil. Taste and adjust seasoning for salt and pepper. Note: Mushroom bouillon and miso paste are both salty, so be careful about adding too much salt! And keep in mind, as the stew continues to reduce it will become saltier, so I recommend adding a little less salt than you might want. You can always adjust later.
- Reduce the heat to medium-low, and simmer the stew for 30 minutes, stirring occasionally. At the end of the 30 minutes, the liquid should have reduced significantly, appear glossy, and cling to the mushrooms. Note: If the liquid is reducing too much, add 1/2 cup of additional stock at a time. If there is still too much liquid, continue simmering until it reaches your desired consistency.
- Season to taste with salt and pepper, then top with parsley and serve over mascarpone polenta, pasta, or enjoy with warm bread.

- Prep Water and Seasoning: Heat a pot of salted water on high to bring to a boil.Add cumin, paprika, chili powder, and salt to a small bowl and mix well, and set aside.
- Sear Corn: Add 1 tablespoon of butter to the pan and heat over high to melt. Add the corn and jalapeno to the pan with the butter to let it char. Cook for 1 minute, stirring often as it chars. It’s ok if the bottom of the pan burns a little, you’ll want that char later! Cook for another minute on high and then turn the heat down to medium-high and let it cook for another 2-3 minutes. (If using frozen, this may take a couple extra minutes)
- Saute Veggies: Lower the heat to medium, add the red onion and bell pepper with 1/2 of the spice mixture, and mix well. Saute for 4-5 minutes, or until the onion begins to soften.
- Create Cheese Sauce: Meanwhile, add 2 tablespoons of butter and 2 tablespoons of flour to a saucepan and heat over medium. Melt and whisk to create a roux. Slowly add milk to incorporate it all with the roux. Add the other half of the spice mixture to the milk, sour cream, and cream cheese and whisk until all of the cream and cheese is well combined, approximately 2-3 minutes. Reduce the heat to low before adding to the corn and veggies.
- Cook Pasta: Add pasta to the now boiling water and cook for 6 minutes (or 1 minute less than noted on the package or only 2 minutes for fresh pasta). Drain pasta and add to the pan with corn and veggies.
- Sauce: Add cheese sauce to the pan and mix with veggies, and add lime juice and mix well so it’s all well coated. Add cotija and cilantro and mix well.
- Serve and Enjoy! Add more chopped cilantro and crumbed cotija then serve and enjoy!

- Spread out the slices of brie cheese evenly. Sprinkle the goat cheese crumbles over the pizza, trying to fill in the gaps between the brie cheese slices.
