Ingredients
- 1 tablespoon olive oil
- 1 to 1 1/2 pounds boneless skinless chicken breasts (cubed in 1/2-inch pieces)
- Salt and pepper
- 1/2 cup finely diced shallot or other onion (like red or yellow)

- In a large, 12-inch nonstick skillet, heat the olive oil over medium heat until hot and shimmering.
- Season the chicken pieces with salt and pepper and add to the skillet in a single layer. Let them cook and sizzle without moving (so they can get nice and golden) for 1-2 minutes. Flip the pieces and continue cooking until no longer pink in the center, another 1-2 minutes. Remove the chicken to a plate, keeping as much liquid in the skillet as possible, and return the skillet to medium heat.
- Add a drizzle of olive oil if the skillet is dry. Add the shallot (or onions), red pepper, and garlic. Cook, stirring often, for 5 minutes, until the onions have started to turn translucent and soften.
- Add the sweet potato, red pepper flakes (if using), and broth. Give the mixture a good stir and bring to a gentle simmer. Cover the skillet and cook for 8-10 minutes, stirring once or twice to make sure the sweet potatoes aren’t sticking (turn the heat down, if needed), until the sweet potatoes are tender. Add more broth as it cooks if the mixture becomes sticky or dry.
- Add the chicken back to the skillet along with the kale. Stir and heat through until the kale is bright green and slightly wilted (if you like the kale more tender and cooked, add it to the skillet first without the chicken, cover the skillet and let it steam until it is tender; uncover, add the chicken and heat through).
- Season to taste with additional salt and pepper.
- Sprinkle cheese over the top and cover with the lid until melted or pop under a preheated oven broiler until golden and bubbly.
- Serve immediately.

- 1/4 teaspoon black pepper
- 2 large eggs
- 1 tablespoon water
- 2 tablespoons olive oil (for brushing, optional)
Instructions
- Step 1: If needed, lightly pound the chicken to an even thickness about 1/2 inch, then pat dry. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or set a rack over a sheet and lightly oil.
- Step 2: In a shallow bowl, whisk the eggs with the tablespoon of water to make an egg wash.
- Step 3: In another shallow dish, combine the breadcrumbs, Parmesan, paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Step 4: Dredge each chicken piece in the egg wash, allowing excess to drip off, then coat thoroughly with the crumb mixture, pressing to adhere.
- Step 5: Place the coated chicken on the prepared sheet or rack. If using, brush or spray lightly with olive oil to help the crust crisp.
- Step 6: Bake for 22–25 minutes, flipping once halfway, until the chicken reaches 165°F (74°C) internally and the crust is golden and crisp.
- Step 7: Rest 5 minutes, then serve with lemon wedges or your choice of dipping sauce; garnish with parsley if desired.

22. Waffle Burger
Waffle Burger is a practical addition to this collection, with a straightforward method and adaptable serving options.
Recipe details: Prep: PT3M · Cook: PT30M · Total: PT33M · Yield: [‘3’, ‘3 burgers’]
This waffle burger is a combination of savory and sweet, and is one of the most ultimate bacon cheeseburgers you’ll ever have!
Ingredients
- 1 pound ground beef (or 3 pre-pattied burger patties)
- 3 slices bacon
- 6 waffles
- 3 slices American cheese
- 3 eggs
- butter (optional for cooking egg)
- salt (if desired)
- pepper (if desired)
- 1/2 cup maple syrup (if desired)
Instructions Waffles
- First, if making homemade waffles, you’ll want to do that first, so they’re ready to use as buns when your burger patties, bacon and eggs have been cooked. Here is a really easy Belgian Waffle tutorial if choosing to make your own. (Just make sure to pay attention to how many waffles your recipe calls for, so you have enough waffles for the burgers. You’ll need 2 waffles per burger and this recipe makes 3 burgers – so 6 waffles are needed.)
- If using storebought or frozen waffles, you can wait to warm them up when it’s time to build the burger.
Burgers
- Shape ground beef in to 3 burger patties and sprinkle with salt and pepper (pinch of each on each burger, if desired) and place in greased baking dish.
- Bake in a 375° oven for 20-25 minutes or until the juices run clear.
- If making cheeseburgers, once the burgers have finished baking, place a slice of cheese on each fully cooked burger and with the oven turned off, allow the leftover heat to gently melt the cheese on to each patty. Once the cheese melts, remove from oven after cheese has melted. (Approximately 2-3 minutes.)
Bacon
- While burgers are baking, you can cook your bacon with your favorite method. Our favorite is to cook bacon in the air fryer, however you can cook bacon in a skillet on the stove, bake it in the oven, or even cook it for a few minutes in the microwave. If cooking in a skillet, cook low and slow for about 10 minutes – flipping halfway through. (Crispy bacon is ideal!)
Eggs
- If making over-easy eggs, simply melt a little butter in a skillet on medium heat and gently crack egg in to skillet.
- Allow egg to cook for a few minutes and once the whites of the egg are no longer runny, gently turn the egg over and allow the yolk-side of the egg to cook for about one minute. Carefully remove from skillet and set-aside. (Keep warm if possible.)
Assemble the Waffle Burger
- Once all of the burger “layers” are cooked and ready, it’s time to assemble this waffle burger!
- Take one waffle, and top with cheeseburger.
- Next, add on the over-easy egg, and top with bacon.
- Place second waffle on top and if desired, serve without syrup.
- If serving with syrup, warm up your maple syrup for best results. Then, gently pour over assembled waffle burger and serve with a fork!
23. Swedish Meatballs
Skillet Swedish Meatballs is a practical addition to this collection, with a straightforward method and adaptable serving options.
Recipe details: Prep: PT25M · Cook: PT25M · Total: PT50M · Yield: [‘6’, ‘6 servings’]
Ingredients
- 1 1/2 pounds ground pork, ground beef or ground turkey (see note)
- 1 large egg
- 1/4 cup milk
- 1/3 cup bread crumbs (see note)
- 1/4 cup finely minced or grated onion
- 1 teaspoon salt
- 1 teaspoon brown sugar
- 1/4 teaspoon ground nutmeg (see note)
- 1/4 teaspoon ground allspice (see note)
- 1/4 teaspoon black pepper
- 1-2 tablespoons oil for cooking
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/4 cup all-purpose flour
- 3 cups low-sodium beef broth
- 1 teaspoon brown sugar
- 1/2 cup sour cream
- Chopped fresh parsley or dried parsley
- Cooked egg noodles, mashed potatoes, or rice, for serving
Instructions
- For the meatballs, in a large bowl, combine all the meatball ingredients except for the oil and mix until evenly combined.
- Scoop the meat mixture into meatballs about 1 1/2 inches in diameter.
- Heat the oil in a 12-inch, nonstick skillet or electric skillet over medium heat until hot and rippling.
- Add the meatballs to the pan in a single layer an inch or so apart. You may need to cook in batches, depending on the size of your pan. (*See note for oven-baked method.)
- Brown the meatballs on all sides. They’ll finish cooking in a later step. Remove the meatballs to a pan or plate. Repeat with remaining meatballs adding a bit more oil to the skillet, if needed. Remove them from the skillet once browned.
- For the sauce, return the skillet to medium heat and add 1 tablespoon butter and 1 tablespoon oil. If the skillet was mostly dry before adding the butter and oil, you may want to add another tablespoon or two of either butter or oil so the sauce isn’t lumpy. Heat until melted. Add the flour and cook, stirring constantly, for 1-2 minutes.
- Slowly add the broth, just 1/2 cup at a time, whisking quickly to remove any lumps. Let each addition of broth cook until thick and smooth before adding the next bit. Once you’ve added about 2 cups, add the remaining broth and whisk until combined.
- Stir in the brown sugar and bring the sauce to a simmer, whisking constantly.
- Add the meatballs back to the skillet and cook 10 to 12 minutes until the meatballs are cooked through, turning them once or twice while cooking.
- Off the heat, stir in the sour cream to the sauce (just whisk it in around the meatballs). To help it blend in easier, you can ladle out a bit of the warm sauce into a bowl and whisk the sour cream in before adding it all back in to the skillet.
- Garnish with fresh or dried parsley and serve over hot, cooked egg noodles, potatoes, or rice.
24. Grilled Cheese
How to Make the Perfect Grilled Cheese is a practical addition to this collection, with a straightforward method and adaptable serving options.
Recipe details: Prep: PT1M · Cook: PT5M · Total: PT6M
If the ooey-gooey perfection of amazing grilled cheese sandwiches has always eluded you, this tutorial is for you!
Ingredients
- Sliced white or sourdough bread
- Softened butter
- Cheese of your choice
Instructions
- For each sandwich, you’ll need two slices of bread, about 1 1/2 ounces of cheese (more or less depending on your taste and how indulgent this experience is going to be) and about 2-3 teaspoons of butter.
- Heat a skillet or griddle to medium heat (about 300 degrees if you’re using an electric skillet.) Butter one side of each slice of bread.* Place the cheese evenly on top of one un-buttered side, then top with another slice of bread, butter-side up.
- When the skillet is hot, carefully place each sandwich on the skillet. Cook until the cheese is starting to get melty, the butter is smelling caramel-y, and the bread on the skillet side is golden brown.
- Using a pancake turner or spatula, carefully flip the sandwich. Cook for another 2-3 minutes or until the bread is golden brown and the cheese is completely melted (the cheese around the edges will look dark and oily right before it’s ready, then it will suddenly turn very light when it’s ready; also, if you pick up the top piece of bread, you’ll be able to feel that the cheese is melted through and holding the sandwich together. Cut each sandwich in half diagonally and you should probably serve it with creamy tomato or roasted red pepper soup.
25. Fried Chicken
Electric Skillet Fried Chicken is a practical addition to this collection, with a straightforward method and adaptable serving options.
Recipe details: Prep: PT20M · Cook: PT20M · Total: PT100M · Yield: [‘8’, ‘8 servings’]
In this electric skillet fried chicken recipe, the buttermilk marinade consistently produces juicy, tender chicken breast, and the flour-egg-flour dredging method ensures that it’s always wrapped in that perfectly crunchy coating we all know and love.
Ingredients
- 2 ½ cups all-purpose flour
- 1 tablespoon parsley ( dried)
- 1 tablespoon oregano (dried)
- 2 teaspoons garlic salt
- 1 tablespoon salt
- 1 teaspoon black pepper
- 3 large eggs
- ⅓ cup buttermilk
- juice of 1 lemon
- zest of 1 lemon
- 4 to 5 pounds raw chicken pieces
- canola oil or peanut oil (for frying)
Instructions
- Sift the dry ingredients. In a shallow dish (such as a pie plate), sift together the flour, parsley, oregano, garlic salt, salt and pepper.
- Whisk the wet ingredients. In a medium size bowl, whisk the eggs, buttermilk, lemon juice and lemon zest together.
- Flour. Egg. Flour. Coat the chicken pieces with the flour mixture. Next, dip the chicken into the egg mixture and once again into the flour mixture. Place on a sheet pan, making sure the pieces are spread out and not touching. Refrigerate for at least 1 hour.
- Prepare the electric skillet. Add enough oil to reach a depth of ½ inch in the skillet. It should reach about half-way up the chicken. Heat to medium-high (375°F).
- Fry the chicken. Fry the chicken for about 5 to 10 minutes per side, depending on the size of the pieces. Fry in batches so that you do not crowd the pan, causing the oil to cool. The chicken should be a nice golden brown color and the juices should be clear. If using a thermometer, the internal temperature of the chicken needs to reach 165°F. (The time it takes will vary. If the oil is cooking the chicken too quickly, turn the heat down to 350°F.)
- Drain & serve. You can drain the chicken on a wire rack with paper towel underneath it. Let cool & drip for 5-10 minutes. Serve.

If I asked you to think of a classic Sunday night meal from your childhood, what would come to mind? For many of us, pot roast is likely the answer. It’s not only a staple for family meals and holiday gatherings, but everyone knows it is filling and delicious. My version is made in an electric skillet.
Ingredients
- 4 ½ teaspoons salt
- 2 teaspoons paprika
- ½ teaspoon thyme (ground)
- 1 teaspoon garlic powder
- 1 ½ teaspoons black pepper (freshly ground)
- ¼ teaspoon cayenne pepper
- 1 chuck roast (3 ½ to 4 pounds)
- 2 tablespoons canola oil
- 1 onion (sliced thinly)
- 3 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 bay leaves
- 1 cup mini carrots
- 2 celery stalks (sliced)
- 3 potatoes (peeled and cubed)
Instructions
- Make a dry rub by combining the salt, paprika, thyme, garlic powder and peppers. Rub it all over the roast.
- Add oil to electric skillet and heat to 400°F. Brown the roast on all sides.
- Add the onion to the skillet and cook until softened (about 5 minutes).
- Add beef broth, Worcestershire and bay leaves to the skillet. Cover the skillet. Bring to a boil. Then reduce the temperature to 200°F (or 250°F if that is as low as your skillet goes) and simmer for 2 ½ to 3 hours. Keep an eye on the water level, adding more if it runs low!
- Add the carrots, celery and potatoes to the skillet in the last 1 to 1½ hours of cooking so that they are tender but not mushy.
- Discard bay leaves and serve.

- ½ cup chopped parsley (curly or flat; ~½ oz)
- ½ cup chopped arugula (~½ oz)
- 1 teaspoon lemon zest
- 1 tablespoons lemon juice

- 2 tablespoons Panko crumbs
- 2 tablespoons shredded Parmesan
- 3 tablespoons tahini
- 1 clove garlic (rough chopped)
- 4 teaspoons maple syrup
- 2 tablespoons water
- Kosher salt (to taste)
Instructions Prepare Quinoa
- NOTE: If you are using leftover quinoa, you can skip this step. Rinse the quinoa in a fine-mesh sieve under running water. Combine quinoa and ⅔ cup salted water in a small saucepan and bring to a boil. Reduce heat to a simmer, cover, and cook until the quinoa is tender and most of the liquid is absorbed, 15 to 18 minutes.
- While the quinoa is cooking, line a sheet pan with parchment or a Silpat mat and place in the freezer.
- When the quinoa has finished cooking, remove the sheet pan from the freezer, and spread the quinoa out over it.Prep the rest of the ingredients while the quinoa cools.
Make Fritter Mix
- Crack the eggs into a bowl, season generously with salt and pepper, and lightly beat.
- In a medium bowl, combine eggs, green onions, chopped parsley and arugula, lemon zest, panko crumbs, parmesan, and cooled quinoa. Mix well to combine.
Cook Fritters
- Add 2 tablespoons of olive oil in a large skillet over medium-high heat.
- When the skillet is hot, use a ¼-cup measure to form patties, flipping them out of the measuring cup directly into the skillet. Use a spatula to flatted them slightly. Patties should be about 4-inches in diameter and ¼-inch thick.
- Cook patties in batches until golden brown and cooked through; about 4-5 minutes per side. Transfer to a paper-towel-lined plate until ready to serve.
Make Maple-Tahini Sauce (Optional)

Ingredients
- 1 pound ground beef
- pinch kosher salt (approx. 1-1/2 teaspoon)
- ground peppercorn (to taste)
- 1 tablespoon garlic powder
- 1 stick butter (8 tablespoons – The REAL unsalted butter is my favorite)
- 3 slices American cheese
Instructions
- Turn skillet on to 350 degrees.
- Mix together ground beef, salt, pepper, and garlic powder.
- Coat the electric skillet with the butter. (Approximately 3 Tablespoons.)
- Patty out the burgers and place in the skillet covered, cooking for a couple of minutes until the tops of the burgers turn tan and the bottoms are a gorgeous brown.
- Flip the burgers and cook for a couple of minutes, or until the juices forming out the top run clear and are no longer pink/red.
- DO NOT mash down the burgers while cooking. This will release the juices that you want to stay in.
- Turn skillet down to a simmer, and place a slice of cheese on each burger.
- Remove cheeseburgers from skillet and place on a dish close to one another to trap in heat.
- Dump the grease out of the skillet into a heatproof bowl.
- Increase the heat to 300, and coat the skillet with butter.
- Place each bun half on the skillet and toast the buns for about 30 seconds.
- Once the buns are toasted, you’re ready to assemble the cheeseburgers!
