1. Mini Vegan Halloween Pizzas

Mini Vegan Halloween Pizzas is a practical addition to this collection, with a straightforward method and adaptable serving options.

Recipe details: Prep: PT5M · Cook: PT15M · Total: PT35M · Yield: [‘3’]

These mini mummy pizzas are so easy and fun to make! Made with a cashew mozzarella and black olives to make a delicious and healthy treat for dinner, appetizer, or a snack!

Ingredients

  • 1/2 cup raw cashews (soaked for at least 15 minutes then drained)
  • 1 cup hot water
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon nutritional yeast
  • 1/4 teaspoon garlic powder
  • 1 1/2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 3 whole wheat sandwich thins
  • 1/2 cup pizza sauce
  • 12 slices black olives

Instructions

  1. Combine cashews, hot water, vinegar, nutritional yeast, garlic powder, cornstarch and salt in a blender until smooth. The mixture will be watery at this point.
  2. Transfer to a saucepan over medium-high heat. Whisk until creamy and sticky, about 1 minute.
  3. Allow the cashew mozzarella to cool for about 5-10 minutes. Meanwhile, preheat your oven to 400°F (205C°) and line a baking sheet. Separate the halves of the sandwich thins and place insides face up on the sheet. Spread an even amount of pizza sauce on each pizza then add 2 olive slices as “eyes” on each pizza.
  4. To drizzle the “cheese” over the pizza in thin lines, use a piping bag or plastic food storage bag. Fill the bag by holding the bag in the middle and fold the top half down over your hand to open it up. With a spoon or spatula, scoop the cashew mozzarella into the bottom of the bag. Cut off the bottom tip of the bag where the “cheese” will squeeze out of. I recommend cutting just the very tip to get the best thin lines. Gently squeeze the bag over the pizzas to draw lines across like mummy bandages.
  5. Bake in the oven for 10-12 minutes until the bottom of the pizzas are golden and the edges become crispy.

2. Halloween Pizza Potato Skins

Halloween Pizza Potato Skins Recipe is a practical addition to this collection, with a straightforward method and adaptable serving options.

Recipe details: Prep: PT15M · Cook: PT12M · Total: PT27M · Yield: [’12’, ’12 potato skins’]

Halloween Pizza Potato Skins are a delicious spooky savory Halloween recipe. A great holiday snack, lunch, or dinner meal that is gluten free and vegetarian. Perfect for Halloween party food.

Ingredients

  • 12 potato skin shells ((see note for recipe))
  • ¾ cup Red Wine and Oregano Pizza Sauce ((or favorite sauce) (plus more for dipping) (see note for recipe))
  • 8 ounces provolone cheese ((deli slice package) (or mozzarella, see note))
  • 9 black olives

Instructions

  1. Prepare your potato skin shells if not done already. See link for recipe and instructions in notes below. (If they are not already cooked or prepped, this will add to overall cook time).
  2. Preheat oven to 350°F.
  3. Cut your olives. For four spider web potato skins: cut two olives in half lengthwise. These are the bodies. Set aside. Cut another four olives to make the legs. First cut them in half lengthwise, then cut each half into four strips. You will have 8 “legs” per olive total, and eight legs for each body. Set aside. For four mummies: Cut three olives into thirds crosswise so you get three rings or circles per olive. This will give you nine rings (one extra). Set aside.
  4. Cut your cheese. For the four mummies: stack two slices of provolone. Cut them in half and stack. Cut the cheese on the short side (versus the longer way) into 1/2″ strips. Set aside. For the four spider webs: stack two slices of provolone. Cut the cheese slices into 1/4″ strips, some a touch wider and some a touch thinner to give you variety. Set aside. For the four ghosts: freehand cut a ghost shape with a knife in each slice. Set aside the scraps for use later. Alternatively, you can also use a ghost cookie cutter.
  5. Line the empty potato skin shells on a baking sheet. Tear the leftover cheese scraps from the ghosts and place the pieces in the bottom of each shell.
  6. Spoon 1/2 to 1 Tablespoon of the pizza sauce into each potato skin shell. You may need more or less depending on the exact size of the potato. It does not have to be full to the top.
  7. Ghosts: Place the cheese ghosts in the potato skin shells.
  8. Mummies: Place the thicker cheese strips in an alternating zig zag pattern up the entire length of the potato skin. The cheese should lay horizontally on a vertical potato skin (see picture) instead of the opposite. Place two of the olive rings on each potato skin for the eyes. If the end pieces of olives are not sitting flat, carefully trim the rounded side off.
  9. Spiders: Using the thinner cheese strips, lay longer cheese pieces into an “x” with one or two additional pieces crossing over, like a snowflake (see picture). Then use thinner cheese strips to connect the long pieces in a circle around the center of the web. I made two rings (see picture). Tear the cheese as needed to get your desired lengths. Once the cheese is in place, put a halved olive down for the spider body. Then add the olive strips on each side to give the spider their eight legs (see picture).
  10. Bake the potato skins in the oven until the cheese is melted, approximately 12 minutes. The cheese will not completely liquefy and will hold its shape, so you are looking for it to simply melt at the edges (see picture).
  11. Optional: Make a face for the ghosts using pieces of ground red pepper flakes once they are out of the oven.
  12. Serve immediately with additional pizza sauce if desired.

For the Spiderweb Dip

  1. Fill a small bowl with ketchup.
  2. Make three mustard circles around the bowl, each one smaller than the last, spacing evenly. Add a large dot of mustard in the middle.
  3. Using a toothpick, start from the middle and pull straight out past the last circle. Repeat 5-7 times around the circle

For the Monster Puddle Dip

  2. Fill the inside of the bowl with green relish.
  3. Place candy eyes on top.

For the Bloodshot Eye Dip

  1. Spoon mayonnaise into a bowl and use a spoon to create a hole in the middle.
  2. Fill the hole with ketchup.
  3. Using a toothpick, starting in the ketchup pull outwards in a squiggle line, dragging some ketchup out to create a bloodshot effect.
  4. Add a little circle of mustard to finish the eye.

For the Ghost Dip

  1. Use a mini ghost cookie cutter or a sharp knife to cut out a ghost shape from the cheese.
  2. Place in a bowl of ketchup.
