- Add the paste and milk into a medium saucepan. Heat over medium heat until hot and it starts to steam, whisking often.
- Meanwhile, in a small bowl whisk together the remaining 2 tablespoons sugar, egg yolk, cornstarch, and salt. Add a little bit of the hot milk to temper the egg, whisking constantly. Pour the entire mixture into the saucepan.
- Continue cooking the mixture until thick and bubbly, whisking constantly, roughly 3-5 minutes.
- Remove from the heat and whisk in vanilla and butter until butter has melted.
- Divide pudding between two ramekins or similar serving vessels, cover with plastic wrap (ensuring it touches the surface to prevent a skin), and chill for at least 4 hours. Serve with whipped cream and remaining 2 tablespoons pistachios.Refrigerate leftovers for up to 5 days.

- Measure the tapioca starch into a small bowl. Measure out the milk, then add a couple of tablespoons of the milk into the bowl with the tapioca starch. Mix well to form a slurry and get out all the lumps.
- Add the milk, cream, sugar and glucose syrup to a small pot on the stove. Heat on medium and stir well until all the sugar is dissolved.
- Add tapioca starch slurry and stir well for a few minutes on medium heat. Remove from heat and allow to cool for about few minutes.
- Add the pistachio paste and vanilla essence and blend well until smooth. Chill in the fridge for at least four hours, ideally overnight.
- Put your ice cream storage container into the freezer to chill. If you are using a self-chilling churner turn it on ten mins before to chill. Churn the ice cream. It will be the consistency of soft-serve when done.
- Transfer to the chilled ice cream container, cover and freeze for at least four hours, or until firm.
- To serve remove from the freezer, scoop and enjoy. Fabulous on its own or with some extra chopped roasted pistachios sprinkled over the top. Delicious!

Instructions Cake
- Step 1 – Prepare the Tin – Preheat the oven to 180°C/GM4. Grease a 9 x 13 inch oven dish or tray/ti
- Step 2 – Roast the Pistachios – Dry roast the pistachios in a pan over medium heat until fragrant. Allow to cool slightly, then pulse in a food processor until finely ground. Avoid over blending or they may turn into pistachio butter.
- Step 3 – Make the Cake Batter – In one bowl, combine the flour, baking powder, cardamom, salt and ground pistachios. In a second bowl, whisk the egg whites until foamy. Add 50g sugar and continue whisking until soft peaks form. In a third bowl, beat the egg yolks with the remaining sugar until pale and fluffy.Mix the milk and optional food colouring into the yolk mixture.Gently fold the dry ingredients into the yolk mixture, then carefully fold through the egg whites. In a third bowl beat egg yolk with sugar till pale.
- Step 4 – Bake – Pour the batter into the prepared tin and bake for 25–30 minutes or until a skewer inserted into the centre comes out clean. Allow the cake to cool completely.
- In a third bowl beat egg yolkswith 150 g sugar till pale. (2 minutes).
- Stir Milk and food colouring into the yolk mixture.
- Gently add the flour mixture to the egg yolk mixture. Then fold in the whites.
- Pour batter into tin/dish and bake for 25 – 30 minutes.

- Step 5 – Make the Milk Mixture – hisk together the evaporated milk, condensed milk, double cream, ground pistachios, cardamom and optional food colouring. Pierce the cooled cake all over with a fork, then slowly pour over the milk mixture. Allow the cake to absorb the syrup for at least 30 minutes.
- Once the cake has cooled, pierce all over with a fork and drizzle in the milk mixture. Leave for 30 minutes.
Decorate
- Step 6 – Decorate – Whip the double cream with icing sugar until thickened.Spread over the chilled cake and finish with coarsely ground pistachios. Sprinkle over course Pistachios.

- Start by cooking your chicken breasts. We like to poach them as a healthier way to prep the meat. Simply cook your chicken breasts in a skillet with about 1 cm of water in the pan. Cook until no longer pink. Chill the chicken and then cut in into small cubes. Place the pistachios into a Ziploc bag and smack it with a mallet briefly to lightly crush the pistachios or chop them with a knife. In a mixing bowl, add the cubed chicken, pistachios, chopped cherries, mayo, shallots, and salt and pepper. Mix until combined and pile onto lettuce cups. If you’re craving carbs, feel free to load it onto some bread and make a sandwich or serve on crackers. - Blanch the pistachios. Bring a pot of water to boil. Then, turn the heat off and add the pistachios. Blanch the pistachios in boiling water for 2-3 minutes. Then, drain, rinse with cold water, and rub the skins off the pistachios using a paper towel. Discard the skins.
- Make the pistachio paste. Add the blanched, skinned pistachios to a food processor. Grind the pistachios in a food processor until fine. Scrape down the sides of the food processor, then add 1/2 cup sugar and continue to grind until it begins to hold together (you want Play-Doh like consistency, though a bit more grainy). Scrape the sides again, as needed, and continue to process in the food processor until it becomes a smooth paste and holds together.
- Make the gelato base. Combine HALF of the milk, the remaining 1/2 cup sugar, and lemon zest in a medium saucepan. Whisk until smooth. Heat milk over medium heat. When it’s almost boiling, whisk in the cornstarch. Continue to cook for another 2-3 minutes, until thickened. Turn off heat and add the remaining milk and the pistachio paste.
- Chill for 4+ hours. Chill in an airtight container in the refrigerator until completely cold, at least 4 hours or up to 2 days.
- Churn. Prepare your ice cream maker according to manufacturer instructions. Add the cold gelato base and church according to the ice cream maker’s instruction manual.

Instructions Pistachio Flour
- Pulse the pistachios in a food processor until you have about 1/2 cup of finely ground pistachio flour.
Olive Oil Cupcakes
- Preheat the oven to 350°F and line a 12 cup cupcake pan with cupcake liners
- In a small bowl, whisk together the flour, 1/2 cup pistachio flour, baking powder, and salt. Set aside.
- Finely chop the fresh rosemary and add to the granulated sugar. Then use your fingers to gently massage the rosemary into the sugar.
- In a separate large bowl, whisk together the olive oil, eggs, and vanilla. Then whisk in the rosemary sugar until smooth.
- Gently mix in half the dry ingredients. Then add in the yogurt and the remaining dry ingredients and mix until just combined. The batter will be thin.
- Pour about ¼ cup of batter into each cupcake liner (they should be about halfway full).
- Bake at 350°F for 18-22 minutes or until a cake tester comes out clean.
- Remove from pan and let cool on wire rack.
- Let the olive oil cupcakes cool completely before filling and frosting.
- Use a cupcake corer to remove the center of each cupcake, then fill with 1-2 teaspoons of fig jam.
Honey Mascarpone Frosting
- In a stand mixer fitted with the paddle attachment, cream together the softened butter and mascarpone cheese until completely smooth.
- Then add in the powdered sugar and beat on slow until combined.
- Add in the honey and salt, then beat the frosting for 3-4 minutes on high speed until light and fluffy.
- Frost the filled cupcakes with honey mascarpone frosting and then drizzle honey and extra crushed pistachios. Then top with fresh figs and sprigs of rosemary.

- Blitz all the ingredients for the crust in your food processor until the nuts are chopped and the dough holds together when you pinch in with your fingers.
- Cut some parchment paper into strips and line each mold of a 6-mold muffin tin with two paper strips placed into the mold like a cross (see video). Press crust onto the bottom. Wet your hands for that part, it makes things less sticky.
- Place the muffin tin in your freezer while you prepare the cheesecake layers.
- Rinse and drain hazelnuts and place in your mixer together with all the other ingredients apart from the nut milk. Blend until smooth and thick, taking breaks to scrape down the sides. Add nut milk bit by bit stopping once you have reached the perfect texture.
- Pour the Nutella layer onto the crusts and place in the freezer for 30 minutes.
- For the pistachio layer, rinse and drain pistachios and cashews and blend into a very smooth cream, adding some nut milk if you feel the mix is to thick to blend properly. Remove the pre-frozen cheesecakes and top with the pistachio cream. Return to the freezer for another 2 – 2 1/2 hours.
- Melt chocolate and coconut oil in a microwave or double boiler. Take cheesecakes out of the freezer and quickly dip the mold into a shallow pan filled with hot water for easy release. Remove the cakes by pulling on the parchment paper strips. Place on a cake cooler and drizzle with melted chocolate. I used a piping bag, but you can use a small sandwich bag or freezer bag and cut a little hole in one corner.
- Let soften a bit a room temperature and enjoy.

- In the bowl of a stand mixer fitted with the paddle attachment (or a large bowl with a hand mixer), beat together the butter, sugar, and brown sugar until smooth.
- Add in the eggs, vanilla, and almond extract and beat until just combined.
- Add in the flour, baking powder, and salt and mix until fully incorporated.
- Then stir in the chopped pistachios. The dough should be sticky.
- Scoop half the dough onto one side of baking sheet and pat it into a 10 inch x 2 inch rectangle that’s about 1 inch thick (lightly wetting your hands helps a lot with this step). Repeat with the other half of the dough.
- Place the baking sheet with the shaped biscotti logs in the fridge and chill for about 20 minutes (this helps them not spread too much).
- While the biscotti logs are chilling, preheat the oven to 350°F.
- Bake at 350°F for 20 to 30 minutes, until the top and edges are set. Remove from the oven and let cool for 25 to 30 minutes.
- Reduce the oven temperature to 325°F.
- Carefully transfer the logs to a cutting board and use a spray bottle filled with room-temperature water to very lightly spritz them (just one spray on each section of the logs). Wait about 5 minutes before using a very sharp serrated knife to slice biscotti ½ inch wide.
- Return the biscotti slices to the baking sheet, standing them up with ½ inch in between them, so air can circulate around them. Bake for another 25 to 30 minutes, until dry and golden.
- Remove from the oven and transfer to a wire rack to cool to room temperature.
- Dip the biscotti in the melted white chocolate and sprinkle with chopped pistachios.
- Let the chocolate fully harden before storing.

- Roast Pistachios in a pan for about 5 minutes till fragrant, then grind to a coarse crumb.
- Add Lime Zest to Sugar and rub in.
- Then beat Sugar, Butter, Cardamom Powder and Lime Zest & Juice for 5 minutes.
- Add Eggs one by one, beating between each addition.
- Stir in Ground Almonds.
- Fold Pistachios in to batter.
- Add Lime Juice and stir in.
- Add batter to a tin lined with baking/parchment paper.
- Bake for 1 hour to 1 hour 10 minutes.

- Semi-melt white chocolate & pistachio paste in the microwave stirring every 30 seconds
- Heat cream until just simmering. Pour warm cream over the chocolate & pistachio paste. Add a good pinch of salt. Let the mixture sit for a minute then stir together or use a blender to emulsify.
- Place ganache into a shallow container, cover the surface with plastic wrap and refrigerate for min 6 hours or overnight. The ganache will set into a pipeable consistency that is appropiate to fill your Pistachio macarons
Macaron shells
- Measure all your ingredients with a Digital scale and prepare all the tools you need at hand. Properly clean your mixing bowl and whisk attachment by wiping them down with vinegar. Pulse blend icing sugar with almond flour for 5-10 seconds then shift them together. The mixture should be very fine powder like
- Move one of the 55g egg white into your Stand mixer
- Start making the sugar syrup by boiling granulated sugar with water in a saucepan over medium heat
- Star whisking the egg white on low / medium speed, then gradually add the superfine sugar into it
- Boil the sugar syrup until it reaches 118C-120C / 244-248F. Use a Infrared thermometer gun or any other thermometer to measure the correct temp
- By the time syrup reaches 118C-120C / 244-248F, the egg white & fine sugar mixture should be already reaching a consistency of somewhere between foamy and soft peak
- Once syrup at the right temp, remove it from the heat. Keep the Stand mixer speed on medium and begin slowly pouring the syrup down on the side of the mixing bowl making sure that the syrup flows on the side only and does not get onto the whisk
- Increase Stand mixer speed to medium / high and continue whisking the meringue until it forms early stiff peaks meaning it is strong enough to hold its shape but not over whipped
- In the meantime, mix the remaining 55g of egg white into the almond flour mixture (almond meal & powdered sugar) until it forms a paste, use a flexible Rubber spatula.
- When meringue is almost done, mix in food coloring (powder or gel) and continue beating for a few more seconds
- Once meringue as well as almond paste is ready, gently fold the meringue into the marzipan paste with the help of a Rubber spatula. Fold meringue in thirds, making sure that each third is fully incorporated before adding the next
- The first third is about loosening up the marzipan, the second third already working on the macaronage process and somewhat pressing the air out and the last third is fine tuning the consistency to the stage you need that is ribbon stage
- After adding the last third of the meringue make sure you check the consistency of the macaron batter every few seconds. When you lift the Rubber spatula over the mixture the batter should fall slowly forming
- Move macaron batter into a Piping bag fitted with round nozzle tip and while holding the piping bag fully vertical pipe equal sized round shapes, leaving enough space in between them to slightly spread. You can pipe on Silicone baking mat or parchment paper
- Tap the baking tray onto the kitchen counter a few times to release any air bubbles. You can also pop air bubbles out using a toothpick
- Rest the macarons at room temp for about 25-40 minutes depending on temperature and humidy. Test by gently touching the macarons, it should feel dry on the touch and proper skin should form on the surface of them
- Pre-heat the oven while the macarons are drying. I recommend baking the macarons at 155C / 311F (no fan) but pre-heat the oven 20C / 68F more as when you open the oven door, the temp drops. Make sure you use a Digital oven thermometer to check your real oven temp
- Bake the macarons for 14-15 minutes, adjust if necessary to your oven (use my Troubleshooting guide)
- Once macarons are done, remove them from the oven and leave them on the parchment or Silicone baking mat for 30 minutes. They are not supposed to come off the baking mat until they are properly cooled
- Once macaron shells are cooled, remove them from the baking sheet. In case they ended up slightly different in their sizes, pair the similar sizes next to each other
Filling & Decorating
- Pipe pistachio ganache filling onto one side of the macaron shells then press two shells together evenly so the filling will come out to the side
- Decorate with melted white chocolate and chopped pistachios
- Macarons require about 12h aging time in the fridge, within this time frame the filling will soften the shells.
- Store the macarons in fridge

- 1/3 cup honey or agave syrup
- 2/3 cup plain unsweetened almond milk or milk of choice
- 1/2 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 ½ teaspoon almond extract
- 2 Tablespoons pistachios (coarsely chopped)
- 2 Tablespoons powdered sugar (optional)
Instructions
- Preheat oven to 350° F (175° C).
- Line a muffin tin with 12 liners or grease each nonstick muffin indent liberally with oil, coconut oil or butter.
- Add pistachio flour, coconut flour, salt, soda, baking powder, and matcha (if using) to a small sized bowl and use a wire whisk to mix together. See notes for instructions on making in a blender and/or making pistachio flour from pistachios.
- Into the same bowl add eggs, honey, almond milk, coconut oil, vanilla and almond extract and whisk until well incorporated.
- Pour batter into prepared muffin tin or use a measuring cup to drop in, evenly distributing between all 12 holes.
- Sprinkle crushed pistachio on top of each one, dividing between the 12 muffins.
- Place muffin tin in oven and bake for 20- 24 minutes until muffins are cooked through (if needed, test by sticking a toothpick into the center – it will come out mostly clean when muffins are ready).
- Remove muffins from oven and let cool in the pan for 10 minutes before removing and letting cool completely on a wire cooling rack.
- OPTIONAL: once cool, use a fine mesh sieve to dust powdered sugar over the top of the muffins for visual appeal.

Instructions Make the Dough
- In a mixer bowl, combine warm water, 1 tablespoon sugar, and yeast. Lightly mix and let sit for 10 minutes until foamy.
- Add remaining sugar, egg, oil, flour, and salt. Mix with a dough hook on medium speed until a soft dough forms.
- Knead for about 8–10 minutes until smooth and elastic. If sticky, add flour 1 tablespoon at a time.
- Transfer dough to a greased bowl, cover, and let rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
Make the Pistachio Filling
- In a food processor, pulse pistachios and sugar until finely ground.
- In a small saucepan, melt white chocolate, butter, and milk over low heat, stirring until smooth.
- Add the melted mixture into the food processor and blend until creamy.

Instructions
