  1. Preheat the oven to 375F/190C.
  2. Cook pasta in a large pot filled with salted water 3-4 minutes less than the package directs.
  3. While pasta is cooking make the cheese sauce. Melt butter in a small saucepan over medium heat, blend in flour with a wire whisk. Continue cooking for 2-3 minutes while stirring the entire time, then add milk and stir.
  4. Cook the sauce for 5 minutes, it will gradually thicken, continue stirring with a wire whisk to avoid lumps. When the sauce is the desired consistency take it off the heat and stir in both cheeses, reserve a combined 1/4 cup of cheese.
  5. The cheese should melt and completely incorporate into the sauce. Use your wire whisk to ensure the sauce is smooth and lump-free. (Don’t walk away from the stove the entire time the cheese sauce is cooking as it can burn quickly and/or will go lumpy if left unattended.)
  6. When your pasta is cooked drain but reserve 1/4 cup of starchy water the pasta was cooking in. Return the drained pasta into the same pot and add pasta water and cheese sauce, gently toss to coat the pasta. It should be quite runny. Mix in sliced kielbasa and transfer to a deep baking dish, sprinkle with the remaining 1/4 cup of cheese.
  7. Bake in the preheated oven for 30 minutes. The top should be golden by the end of the cooking time. If the pasta still looks pale at the end of the cooking time set your oven to broil and let the top crisp up for 2-3 minutes.

  2. Deglaze pan with 3 tablespoons of chicken stock, then add onion, garlic and saute until onion is translucent, about 3 minutes.
  3. Add rice, salt, pepper, and mustard and stir to combine, frying for 1-2 minutes.
  4. Add remaining 3 cups of chicken stock and lemon juice. Turn heat up to bring it all to a boil, then reduce to medium low to a gentle simmer. Cover and cook for 15 minutes.
  5. After 15 minutes, remove lid and add broccoli. Don’t mix! Just add the broccoli to the top and cover and cook for another 5 -7 minutes, until broccoli is tender.
  6. Add kielbasa and stir. Add 1/2 cup of the cheese and stir to combine then top with remaining cheese and cover with lid to melt the cheese.
  7. Serve and enjoy!

  2. Add in the potatoes and chicken broth. Bring to a boil and then reduce to simmer, with pot partially covered. Cook until potatoes are tender, but not falling apart. (this time will vary with the size of your potatoes) Remove bay leaf.
  3. In small bowl, whisk together half and half with the flour and pour into soup. Cook for another 5 -10 minutes, stirring occasionally.
  4. With an immersion blender, blend up the soup so about half is blended creamy, leaving a about half of the potatoes and veggies unblended.

Instructions

  1. Set grill to low heat. (180 degrees) Place the sausages directly on the grill, grilling them slowly to give them some grill marks. *slow is the key here – grilling to fast over high heat will cause your sausage to split and you will lose all of the juices.
  2. Lightly brush the onions and add them to the grill, too.
  3. Both the sausage and onions will have those nice grill marks in only a few minutes.
  4. While these are slowly grilling, to a grill safe pan combine apple juice, Dijon mustard, caraway and celery seed. Stir in Frank’s Kraut (the juice, too!) Take pan out the the grill.
  5. Cut link sausage into quarters, and nestle the grilled sausage and grilled onions into the kraut mixture.
  6. Place pan, uncovered, on grill and close the lid. Continue cooking them on a low simmer for one hour.
  7. Serve as is, or on hard rolls.

  • 2 cups chicken stock (or broth, regular or low-sodium)
  • 1 ½ cups uncooked long-grain white rice (may substitute short grain white rice)
  • 14.5 oz fire-roasted or regular diced tomatoes (1 can, undrained)

Instructions

  1. Instant Pot InstructionsPress Saute to preheat the Instant Pot Insert (this is the one I love and recommend). When “HOT” is displayed, add olive oil.
  2. Saute onions, bell pepper, celery in HOT Instant Pot, stirring occasionally about 4-5 minutes until golden and translucent (add a small teaspoon of butter or dab of oil if needed)
  3. While veggies are caramelizing, heat a separate skillet over medium-high heat, adding a couple teaspoons of olive oil. Add sausage to skillet, stirring to quickly brown both sides, about 2 minutes per side, remove to plate. Add chicken to skillet, browning on both sides, about 2 minutes per side, remove to plate.
  4. Add garlic, cajun/creole seasoning, sea salt and Italian seasoning to onion mixture in Instant Pot, stirring until fragrant. Pour in chicken stock, scraping bottom of pan to release any brown bits. Press CANCEL on panel to turn off IP
  5. Add browned chicken and sausage back to Instant Pot. Pour uncooked white rice evenly over the top of the meat, add can of tomatoes over the top of rice, evenly, pressing gently to cover the rice.
  6. Secure lid, steam vent in locked position. Press PRESSURE COOK (Manual), adjust timer to 5-6 minutes (sea level) or 6-8 minutes (altitude), at high pressure.
  7. Once finished, carefully, and immediately release the steam! Remove lid, stir gently, serve with chopped parsley if desired.
  8. If adding shrimp | Add 12 oz medium cooked shrimp and immediately reseal the Instant Pot lid and allow the Jambalaya to warm for 5 minutes in the residual heat (Alert: the Instant Pot is on Warm). Borrowed these instructions from Boulder Locavore

  1. Roast the potatoes:Preheat oven to 425F with rack in the middle position. Lightly coat a large rimmed baking sheet with nonstick cooking spray.
  2. In a large mixing bowl, toss 1 pound quartered baby new potatoes, 1 tablespoon olive oil, 1/2 teaspoon garlic powder, 1/4 teaspoon coarse salt, and a few grinds of pepper until the potatoes are coated. Then spread them on the prepared baking sheet in a single layer with their flat edges against the pan.
  3. Roast in the oven for 25 to 30 minutes, stirring halfway through, until potatoes are golden and fork tender.
  4. Make the kielbasa and cabbage:Warm a tablespoon olive oil in a large nonstick skillet over medium-high heat and add 14 ounces kielbasa cut into 1 & 1/2-inch pieces. Cook, without stirring for 1 minute. Then stir occasionally for about 3 minutes. Transfer to a plate with a slotted spoon.
  5. In the same pan with some of the rendered kielbasa fat, add a small head of chopped cabbage, 1 large cut sweet onion, 3 cloves minced garlic, 1 teaspoon sugar, and 1/2 teaspoon EACH coarse salt and pepper.
  6. Stir to combine and cook for about 5 minutes, stirring occasionally.

Instructions

  1. OPTIONAL (if you choose not to broil the sausage, skip to the next step): Arrange the sausage on a foil-lined sheet pan and broil, on low, for 3 minutes on each side, or until the sausage is slightly charred on the edges. Remove the sausage from the oven and set aside. 
  2. Cut the potato into quarters (lengthwise), then slice each quarter into slices 1/2″ thick. Set aside. 
  3. Heat the olive oil and bacon slices in a 6-quart dutch oven over medium-high heat. Use a wooden spoon to break up the bacon pieces as they cook.
  4. Add the onions and garlic to the bacon in the pot and cook the veggies until they appear glossy and translucent, about 3-4 minutes.
  5. Stir in the potatoes, salt, sage, and pepper. Pour in the chicken stock, and use your wooden spoon to scrape any browned bits from the bottom of the pot. 
  6. Bring the liquid to a boil, then reduce the heat to medium-low. Cover the pot and allow the stew to simmer for 10 minutes.
  7. After 10 minutes, add the sausage and kale to the pot. Cover and allow the stew to simmer for another 10 minutes, or until the potatoes are fork-tender and the kale has wilted. 
  8. Spoon the hot stew into individual bowls and top with a generous amount of the shredded cheese and slice of artisan bread.
