Instructions Prep:
- Preheat the oven to 350F and position the oven rack in the middle of the oven. Grease a muffin pan or line it with parchment muffin liners. If using cupcake liners, spray them.
- Add the oats to the blender and blend for about 20 seconds until they’ve turned into oat flour.
Make the batter:
- In a large bowl, whisk the eggs. Then, add the canned pumpkin puree and Greek yogurt and mix until smooth.

- Add the oat flour to the bowl and mix gently until no visible flour remains.
- Wait 10 minutes for the batter to thicken.
