  1. Get out the instant pot and add quinoa, water, salsa, salt, black pepper, and olive oil to it. Then, cut chicken breasts into 6 pieces or so and place them on top of everything.

  3. Cook in the instant pot on high pressure for 8 minutes. Once done, release the pressure quickly using the valve.

  1. Preheat oven to 400°F.Slice the potato into ½” slices.Trim the ends from the green beans, and then cut beans into 2″ sections.Add the potatoes and beans to a large bowl and toss with olive oil, salt, and garlic.Place the squash and sweet potato on a baking sheet in a single layer.
  2. Roast the potatoes and beans for 15 minutes, until the beans begin to blister. Remove the green beans from the baking sheet and set aside. Flip the potatoes.
  3. Pat the salmon dry. Sprinkle with a small pinch of salt, and then top with freshly grated Parmesan.Add the salmon to the baking sheet with the potatoes.
  4. Cook the salmon and potatoes for about 10 minutes, or until the salmon is opaque and tender and the potatoes are cooked through.Tip: The salmon should cook for about 10 minutes per 1-inch thickness. If your fillet is very thin, it will cook more quickly and a very thick fillet will take longer. If needed, remove either the salmon or potatoes from the pan and allow the other to finish cooking.

Ingredients

  • 1 1/2 lbs. ground beef
  • 2 T olive oil
  • 1 lb. mushrooms, washed, drained dry, and cut into quarters (I used brown Cremini mushrooms)
  • 1 onion, chopped small
  • 4 cups cauliflower rice (see notes)
  • 1 tsp. steak seasoning
  • salt and fresh-ground black pepper to taste
  • 1 cup grated Mozzarella
  • 1 tsp. Better Than Bouillon Beef Base (or a beef bouillon cube) mixed with 1/4 cup water and then simmered to reduce to 1 tablespoon thick stock
  • 1 cup sour cream
  • 1/2 cup mayo
  • 1 cup grated Mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 tsp. steak seasoning

Instructions

  1. Preheat oven to 375F/190C. Spray a large glass or ceramic casserole dish with non-stick spray or brush with a little olive oil. (I used an oval-shaped dish that’s 13 inches long and 10 inches wide at the widest part.)
  2. Mix the Better Than Bouillon Beef Base (or a bouillon cube) with 1/4 cup water; then simmer the mixture on the stove in a very small pan until it’s reduced to 1 tablespoon thick stock. Let it cool.
  3. Heat a couple of teaspoons olive oil in a large heavy frying pan and cook the beef over medium-high heat until it’s completely browned, breaking apart with the turner as it cooks. Put browned beef in the casserole dish.
  4. While beef browns, wash mushrooms and spin dry in a salad spinner, or let them drain well.
  5. Chop up the cauliflower and pulse in the food processor to make cauliflower rice if you’re not using packed cauliflower rice.
  6. Cut drained mushrooms into quarters (or halves if they’re small.) Heat a couple more teaspoons olive oil in the frying pan and cook mushrooms over medium high heat until they have lost all their liquid and are slightly browned. Put mushrooms in the casserole dish.
  7. Mix the sour cream and mayo and add the cooled and reduced stock and stir together.
  8. While mushrooms cook, chop an onion into small pieces. Heat two more teaspoons oil in the frying pan (if needed), add the onions, and cook over medium-high heat until onions are softened and starting to brown.
  9. Add the cauliflower rice, 1 tsp. steak seasoning, salt, and pepper to the frying pan with the onions. Turn heat to high and cook about 3 minutes, or until cauliflower is partly cooked and some liquid from the cauliflower has evaporated as steam.
  10. Add the onion-cauliflower rice mixture to the casserole dish and gently combine all the ingredients.
  11. Mix the 1 cup grated Mozzarella, Parmesan, and 1/2 tsp. steak seasoning into the mayo-sour cream mixture.
  12. Gently mix the sauce into the cauliflower rice-ground beef mixture in the casserole dish, patting it down when all the ingredients are well combined. Wipe off the edge of the casserole dish if it’s messy.
  13. Top the casserole with 1 cup (or more) grated Mozzarella.
  14. Bake casserole 30-40 minutes, or until it’s bubbling hot and the top is lightly browned.
  15. Serve hot. Leftovers of this will keep in the fridge for at least a week. It can be reheated in a microwave or in a small pan on the stove.

  1. Preheat oven to 400ºF and lime a medium baking sheet with parchment paper. Add Brussels sprouts and sweet potato. Drizzle with olive oil and season with sea salt and pepper. Gently toss with hands to coat. Roast for 25 minutes, stirring halfway through cooking. Remove from oven and cool at room temperature while cooking steak.
  2. Heat olive oil over medium-high heat in a cast-iron pan for 2 minutes. Season steaks with salt and pepper on both sides. Place onto the hot pan and sear for 4-5 minutes on each side, depending on thickness and desired doneness (rare, medium, well). Rest steaks on a cutting board for 5 minutes.

Instructions Cut and Prepare the Chicken Breasts:

  1. Pat the chicken with a paper towel to remove moisture. Place a chicken breast on a cutting board and hold it steady with one hand. With a sharp knife, cut a 3-inch slit into the side of the thickest part, slicing about ¾ of the way through to create a pocket. Be careful not to cut all the way through. Repeat with the remaining chicken breasts.
  2. in a small dish combine the salt, pepper and paprika together. Hold the chicken breast with the pocket facing up. Open the pocket and sprinkle in half of the seasoning along with some thyme leaves. Repeat with the remaining chicken breasts, then set aside.

Stuff the Chicken Pockets:

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper. In a medium skillet, melt 2 tablespoons butter over medium heat. Add the sliced shallots and sauté until softened, about 4 minutes. Stir in the garlic and cook until fragrant, then remove from the heat and let cool for 5 minutes.
  2. Spoon some of the shallot mixture into each pocket, then add Brie cubes and a few pieces of fig. Secure the openings with wooden skewers or toothpicks and place the chicken breasts on the prepared baking sheet.
  3. Melt the remaining 2 tablespoons of butter, pepper jelly and the vinegar in a small dish in the microwave and brush over the top and sides of the chicken. Sprinkle the remaining salt, pepper, and paprika over the chicken breasts, then transfer the baking sheet to the oven.
  4. Bake for 18–20 minutes, or until the internal temperature reaches 160°F on an instant-read thermometer. Remove from the oven, tent loosely with foil, and let rest for 5 minutes. The carryover heat will bring the chicken up to the safe temperature of 165°F.
  5. To Serve: Remove the wooden picks from each chicken breast, transfer to a serving platter and garnish with fresh thyme sprigs.

  2. Add some olive oil to a skillet, heat it up and cook beef burger patties for 2-3 minutes on each side. Add a pinch of salt and black pepper to the meat. Make sure it is fully cooked before removing it.
  3. Pat the meat with a kitchen towel to get rid of excess fat.
  4. Fry an egg over medium heat in a skillet. Sprinkle with salt and pepper.

Teriyaki Tofu-Tempeh Casserole is a family style meal, ready in about an hour, and features baked tofu and tempeh, broccoli, carrots and snow peas tossed in a delicious teriyaki sauce.

Ingredients

  • 10 oz. organic tofu (extra-firm or super firm), cubed
  • 8 oz. tempeh, cubed
  • 12 oz. combo of snow peas, baby carrots and broccoli florets or 1 bag (12 oz.) stir-fry vegetables (found in the produce section)
  • 1 cup long grain rice or 3 cups cooked rice of choice (quinoa or cauliflower rice would be great too)
  • 1 cup water
  • 1/2 cup tamari, low-sodium soy sauce or coconut aminos
  • 1/2 cup pure maple syrup (or 1/3 cup cane sugar or coconut sugar)
  • 1/2 teaspoon ground ginger or 1 teaspoon freshly grated
  • 1/2 teaspoon garlic powder or 1 garlic clove, minced
  • 2 T. cornstarch or 3 T. tapioca flour + equal amount of water

Instructions

  1. Preheat oven to 400 degrees F.
  2. Drain tofu and place between a clean folded dish towel, place a medium pot on top for about 10 minutes to remove excess water. If using super firm tofu, skip this step. Once done, cube into 3/4 – 1 inch cubes. Cube the tempeh as well.
  3. : In a small saucepan, add the tamari, water, maple syrup/sugar, ginger and garlic, bring to a boil, reduce heat and cook on low for 1 minutes. In a small bowl, mix together the cornstarch/tapioca powder with the water until smooth. Add the mixture to the teriyaki sauce and cook another minute, or until sauce thickens. Remove from heat, cover and set aside. Taste for flavor. If you like your teriyaki sauce on the sweeter side, add an extra tablespoon or two of your preferred sweetener.
  4. In a 9×13 casserole or baking dish, add tofu and tempeh, drizzle with 1 cup of teriyaki sauce and gently toss to coat. Place in oven on middle rack and bake for 20 – 25 minutes. Turn down oven to 350 degrees F.
  5. Cook rice according to package directions. I used basmati rice here which only took 20 minutes total to cook. Rice may vary in cooking time, some take as long as 40 minutes. If making a longer cooking rice you may like to start it earlier.
  6. Steam veggies: Steam the veggies using a bamboo steamer, microwave or whatever is your preferred method.
  7. In dish the tofu-tempeh cooked in, scoot the tofu and tempeh to one side, add the cooked rice and steamed vegetables. Pour most of the remaining teriyaki sauce overtop, reserving a little for serving, toss to combine. Enjoy as is or continue to next step to warm through if needed.
  8. Bake: Place in preheated oven set to 350 degrees, uncovered, for about 10 – 15 minutes to heat through as needed (feel free to skip this step).
  9. Place in individual bowls and top with a little remaining sauce. Would also be great with a sprinkle of toasted sesame seeds over top. Enjoy!

  • 1/3 cup olive oil
  • kosher salt and freshly cracked black pepper to taste
  • 3 to 4 cups mixed greens
  • 4 strips applewood-smoked bacon (cooked and crumbled)
  • 8 to 10 strawberries (hulled and quartered)
  • 2 ears corn on the cob (roasted, kernels removed in strips)
  • 1 to 2 ripe avocados (pitted, peeled, and sliced)

Instructions Chicken:

  1. Combine the oil, chipotles, garlic powder, oregano, and black pepper in a small bowl. Place the chicken in a large zip-top bag and add the marinade. Zip the bag and mix the chicken into the marinade to coat. Place in the fridge and let in marinade for at least 1 hour and up to 8 hours.
  2. Heat an outdoor grill or grill pan to about 400 degrees F (medium- high heat). Place the chicken on the grill and grill for 5 to 6 minutes per side, until the chicken is cooked through. Remove the chicken from the grill and let rest for 10 minutes. Slice the chicken against the grain.

  1. Combine all the ingredients in a small bowl and whisk to combine. Adjust the salt and pepper as needed. The dressing will keep in an airtight container in the fridge for up to 5 days.

  1. Add olive oil to the frying pan and heat it to medium-high heat. Add chicken thighs and cook on both sides until it’s cooked. It will take around 10 minutes.
  2. Combine all the teriyaki sauce ingredients in a bowl. Pour over the chicken and cook until it thickens, stirring throughout to coat the chicken with the sauce. It will take around 5-6 minutes.
  3. Sprinkle the chicken with sesame seeds and green onion

Broccoli and Rice

  1. While cooking the chicken, cook the rice according to the packaging instructions.
  2. Fluff your rice once finished.
  3. Fill a pot with water and bring it to a boil. Add a pinch of salt.
  4. Now, wash the broccoli. Then, cut the broccoli into florets and slice them up so they boil up faster.
  5. Add florets into the boiling water and cook for 3-4 minutes until they are tender. Remove and drain them before serving.

Assemble Meal Prep Containers

  1. Divide the rice into the containers, do the same with broccoli and then chicken. Your meal prep bowls are ready! Keep in the fridge for 3-4 days, and enjoy! Eat it cold or heated up.

  2. Add the thinly sliced beef, garlic salt, and pepper and cook it until browned. Remove from the pan and set aside, but leave about 2 Tbsp of grease in the skillet to cook the vegetables in. If there isn’t enough grease left, just add a little more oil to the pan for the veggies.
  3. Add the sliced bell peppers, onion, and mushrooms to the skillet. Cook until softened.
  4. Add the Worcestershire sauce, beef broth, and cream cheese to the pan and combine. Heat through until the cream cheese is melted.
  5. Add the beef back to the pan and combine all ingredients. If you don’t have an ovenproof skillet that’s large enough to hold all of the ingredients, transfer the mixture to a 9×13 pan and combine it in there.
  6. Sprinkle with shredded provolone cheese or provolone slices.
  7. Bake 15 mins until heated through. Broil for 2-3 mins if prefer crispy cheese on top. Garnish with chopped fresh parsley. Enjoy!

  2. To make the baked tofu, toss the cubed tofu with the soy sauce, garlic powder and a pinch of salt and pepper. Sprinkle with cornstarch if using and toss again. Transfer to a parchment-paper lined baking pan and bake at 400 F for 20-30 minutes until browed. You can bake it at the same time as the tempeh.
  3. You can leave the broccoli raw but it’s suggested to steam it. Bring water to a boil then add the broccoli in a steamer basked, cover and cook for 4 minutes. Remove from heat.
  4. If you’re making a dressing for the salad, prepare that now.

  • 1 Pound Ground Beef (or ground turkey)
  • 4 Tablespoons Keto Taco Seasoning (or 1 (1.25-ounce) package taco seasoning (note 3))
  • 1 Cup Keto Queso ((note 4))
  • 1/2 Cup Sour Cream
  • 2 Cups Lettuce (shredded)
  • 1 Tomatoes (diced + deseeded)

Instructions

  1. Prep. Preheat oven to 400 F and line a baking sheet with parchment paper. Bring a pot of water large enough to submerge your cabbage (1 head) to boil.
  2. Steaming the cabbage. Once the water is boiling, add the cored cabbage (note 1) and allow it to cook for two minutes. Use 2 sets of tongs to remove 1 cabbage leaf at a time from the cabbage–it’s easiest to pull the leaf using 1 set of tongs from the base (where the core was removed). Use the second set of tongs to hold the cabbage steady as you do so. If they aren’t easy to remove, just cook the cabbage a little longer (note 5). Well only need 12 cabbage leaves for our Crunchwraps, so save the center of the cabbage for another recipe.
  3. Removing some of the cabbage stem. Place each leaf spine side up on a cutting board. Carefully remove the thick part of the stem by sliding a sharp knife over the top. Set cabbage aside on a plate while we prep the filling…(note 7)
  4. Make the crisps. Sprinkle cheddar (1 cup) into flat 4″ round circles on the prepared baking sheet. Bake in preheated oven for 6 minutes, or until the edges start to brown around the edges.
  5. Make the nacho cheese if following my recipe, or heat up your favorite low carb store bought version.
  6. Cook the meat. Meanwhile, heat vegetable oil (2 tablespoons) (note 2) in a large skillet over medium-high heat. Add ground beef (1 pound), breaking up with the back of your spoon into small pieces as it cooks. Cook until completely brown. Drain excess fat from the pan (note 6), then return pan to heat. Stir in taco seasoning (4 tablespoons) (note 3) and water (2/3 cup). Cook for 2-4 minutes, or until the sauce thickens.
  7. Assemble. Place 3 cabbage leaves, spine side down, on a flat surface with the center of the leaves slightly overlapping in the middle. Start with a dollop of nacho cheese (or shredded cheddar) (1cup), then meat, a cheese crisp, sour cream (1/2 cup), diced tomatoes (1 piece), shredded lettuce (2 cups), and last another dollop of nacho cheese (note 4). Instructions

  1. Add the chicken breasts to a large plastic bag with the chipotle vinaigrette, allow to marinate for at least 1 hour, or up to 8 hours.
  2. Before grilling the chicken, prepare the chunky avocado salsa using the recipe link provided above.
  3. Place in the refrigerator until ready to use.
  4. Remove the chicken from the marinade and place on a grill preheated to medium high heat.
  5. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F.

Instructions Chicken

  2. In a frying pan, heat up sesame oil and cook the chicken until it’s brown. It will take around 12-15 minutes.
  3. While the chicken is cooking, mix all of the sauce ingredients together in a small bowl.
  4. Remove the cooked chicken and add the sauce to the empty frying pan.
  5. Cook the sauce until it thickens, stirring throughout. It will take around 5-10 minutes.
  6. Add the cooked chicken back into the frying pan and stir all the ingredients together to coat the chicken.*
  7. Sprinkle with chopped green onion and sesame seeds.

Broccoli and Rice

  1. While cooking the chicken, cook the rice. Wash the rice and add it to a saucepan, then pour in the water. Add some salt.
  2. Bring the rice to boil and reduce to simmer for 10 minutes. Make sure you cover the saucepan with a lid. Let it sit for another 10 minutes (make sure you cook the rice as per instructions on the packet).
  3. Fluff your rice and leave it be.
  4. Fill a pot with water and bring to a boil. Add a pinch of salt.
  5. Wash the broccoli, cut away the stems from the crown, and slice your florets into pieces.
  6. Add florets into the boiling water and cook for 3-4 minutes until tender.
  7. Remove and drain your broccoli.

  • 4 chicken breasts ((use 4 thin chicken breasts, or use 2 large chicken breasts, sliced in half, horizontally))
  • 2 cups broccoli florets (, blanched, chopped)
  • 6 strips bacon (, cooked, chopped)
  • 1/2 cup Ranch dressing
  • 1 cup Cheddar cheese (, shredded)
  • 1/3 cup Mozzarella cheese (, shredded)

Instructions

  1. Preheat the oven to 375 F.
  2. Add chicken breasts to the casserole dish. I used the the oval casserole dish measured 13 inches x 9 inches x 4 inches deep.
  3. Note about chicken: use 4 thin chicken breasts, or use 2 large thick chicken breasts, sliced in half horizontally each to make 4 thin chicken breasts.
  4. Top with chopped and blanched broccoli florets.
  5. Top with chopped cooked bacon.
  6. Spread Ranch dressing on top.
  7. Top with shredded Cheddar and Mozzarella cheese.
  8. Bake, uncovered, for about 20-30 minutes, until the chicken is cooked through. The cooking time will depend on the thickness of your chicken breasts.
