- 388 ml -can of crushed pineapple w/the juice
- 1/2 tsp coconut extract
- 3 tbsp light coconut milk

Instructions
- Preheat the oven to 350 degrees F/ 175 degrees C and spray an angel food cake pan with non-stick cooking spray or Wilton Cake Release.
- Open the can of crushed pineapple and remove 2 tbsp of pineapple liquid. Discard.
- In a large mixing bowl, stir together the contents of Angel Food cake mix box (just the dry mix -nothing else!!) and the can of crushed pineapple, including the remaining juice, with 3 tbsp of light coconut milk and the coconut extract.
- Stir together with a spoon or spatula. This mixture will become frothy.
- Pour into the greased angel food cake pan and bake for 30 minutes or until cake tester comes out clean.
- Remove from oven and place on a pot holder and cool for 5 minutes in the pan.
- Run spatula along edges and flip onto a cooling rack. I put the rack on top to flip, then I tap the bottom of the pan with a spatula. * Don’t worry if a little piece of the cake sticks to the bottom of the pan, you can remove it and place it on the cake and it will mostly be covered by garnish.
- Cool for another 5 minutes.
- Once it’s completely cooled, trim off any brown, if desired. Alternatively, you can just leave it.
- Then flip it back over onto a serving plate, so the smooth/smaller side is facing up.
Garnish
- Pat pineapple rings dry and dry off liquid on cherries and add to top of cake. Then sprinkle on unsweetened coconut flakes.

Instructions For the cake:
- Preheat the oven to 350 degrees Fahrenheit.
- Add 1 cup unsweetened applesauce, 1 cup unsweetened milk of choice, 1/2 cup maple syrup, 1/3 cup extra virgin olive oil, 1/3 cup cocoa powder, 1 teaspoon white vinegar, apple cider vinegar, or lemon juice , 1 teaspoon pure vanilla extract, and 1/4 teaspoon salt to a large mixing bowl, then use a whisk to mix until combined.
- Add 1 3/4 cups buckwheat flour (spooned into the measuring cup–not scooped) and 1 teaspoon baking soda, then whisk again until combined.
- Transfer the batter to a 9-inch baking pan lined with parchment paper.
- Bake for 33 minutes or until a toothpick inserted into the middle of the cake looks clean upon removal.

- Puree prunes and their soaking liquid in a blender until smooth. Add eggs, sugar and vanilla and puree until smooth. Drizzle chocolate through feed tube while motor is running and puree until fully combined. Beat in vanilla and the pureed prunes until smooth on medium-low speed.
- Pour prune puree mixture into the cocoa mixture and mix with a silicone spatula until completely combined.
- Spread batter in the prepared pan. Carefully pour boiling water into the roasting pan, around the spring-form pan to create a hot water bath. Transfer the roasting pan to the oven and bake until puffed, starting to crack slightly and jiggles as a whole when the pan is tilted, 38 to 42 minutes. It will not seem firm like a cake with flour but will firm-up as it cools.
- Remove from water bath and carefully remove foil from sides. Cool on a wire rack until room temperature. Chill in refrigerator until cold and firm, about 2 hours. Remove pan sides and slice to serve.

- 3 1/2 tablespoons heavy whipping cream

Instructions Protein cupcakes
- In a large bowl, melt 1/3 cup butter and stir in 3 1/2 tablespoons heavy whipping cream.
- Add 3/4 cup cocoa powder, 1/2 teaspoon vanilla extract and 1/2 cup powdered sweetener. Whisk until smooth.
- Add 3 large eggs, one by one, mixing very well between each.
- Sieve in the flours: 6 tablespoons lupin flour, 3 tablespoons protein powder and 2 tablespoons golden flaxseed meal, plus 1 teaspoon baking powder, and 1/4 teaspoon baking soda. Mix until the flours are well incorporated.
- Add 1/2 cup black coffee, slowly, while whisking. Let the batter sit for a couple of minutes, and give it a last mix before filling the liners.
- Pour the batter into 12 silicone cupcake liners or directly into the buttered holes of a muffin pan.
- Take the tray into a preheated oven at 170 °C (340 °F) for 25 minutes, or until a toothpick comes out mostly clean.
Protein frosting
- Add 1/2 cup water to 4 scoops protein powder, little by little, and mix until creamy and completely lump free
- Add 1/2 cup smooth peanut butter and Liquid sweetener to taste, plus vanilla if using it.
- Mix vigorously until it has a soft toffee-like consistency. Try it and adjust sweetener if necessary.
- If it’s too hard to pipe, add more water. If it’s too soft to pipe, add more protein powder.

Instructions For The Cake: –
- Pre-heat oven to 180C FAN / 350F / Gas Mark 4
- Lightly grease a loaf tin. Cut out and line the base with a piece of greaseproof paper.
- In a large mixing bowl, place the carrots, sunflower oil, eggs and sugar. Beat them together.
- To the large mixing bowl stir in the flour, salt, cinnamon, baking powder, bicarbonate of soda and milk to create a batter.
- Pour the batter into the loaf tin and bake in the centre of an oven for about 35-40 minutes. Check the cake is cooked by inserting a skewer into the centre. It should come out clean.
- Once cooled, put the loaf tin on a wire rack to cool for about 10 minutes. Then turn out the cake, remove the piece of greaseproof paper from the bottom and allow to cool further.
For The Cream Cheese Topping: –
- While the cake is cooling make the cream cheese topping. Sift the icing sugar into a bowl and stir in the cream cheese. Beat well together.
- Once the cake has cooled completely, spread the topping all over the top using a palate knife and decorate with the chopped mixed nuts.
- Keep the finished cake in an airtight container. Slice as required.

- 6 large eggs, separated
- 1/4 teaspoon salt
- 1/2 cup granulated sugar

- Boiling water
Instructions
- Preheat oven to 325°F and start a pot of boiling water on the stove.
- In a small bowl, mix flour and cocoa.
- In another bowl, mix together the milk, dark chocolate, vanilla extract, and oil. Microwave in 30-second increments, stirring between each time, until smooth (the mixture will still be runny…this is normal).
- Whisk 6 egg yolks into the chocolate mixture.
- Then, add flour mixture to the chocolate and stir well.
- Next, using either an electric hand mixer or a stand mixer with whisk attachment, whisk together egg whites and salt at medium speed until it becomes foamy.
- At that point, add the sugar, turn up the speed to high, and whisk until soft peaks to make a meringue.
- Add the meringue it to the chocolate batter, one-third at a time, gently folding it in until the color is uniform and there are no white streaks.
- Prepare a 9 x 9 baking dish by spraying it with cooking spray, then lining the bottom and sides with parchment paper, then spraying the parchment paper with the cooking spray again. Make sure to leave “handles” of parchment sticking up the sides, as you’ll use these handles to lift the cake out of the pan after baking.
- Pour the cake batter into the lined and greased 9 x 9 pan, using a spatula to level the top.
- With the pan sitting on the counter, lightly drop it three times. This will break up any air bubbles.
- At this point, prepare the bain-marie: Place the 9 x 9 baking dish into the roasting pan, then carefully pour the boiling water into the roasting pan until it reaches about 1″ up the sides of the baking dish. If you prefer, you can also place the baking dish in the roasting pan, then place everything in the oven, then add the boiling water.
- Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
- Immediately lift the cake out of the pan using the “handles” of parchment paper.
- Then, while the cake is still hot, drop some dark chocolate chips on top.
- Let the cake cool for only a few minutes. Remove the parchment and wrap the hot cake tightly in plastic wrap (to seal in the moisture) and place in the refrigerator for several hours until cool.
- To serve, cut into 1″ slices and enjoy with tea or coffee.
