Instructions

  1. Preheat oven to 425ºF.
  2. Rinse and drain quinoa if needed. Place quinoa and water in a medium saucepan and bring to a boil. Once boiling, reduce heat to simmer, cover and let it cook for 15 minutes. Remove from heat after 15 minutes and place quinoa in a large bowl to cool.
  3. Drain and rinse your canned chickpeas. Place the chickpeas on a paper towel or hand towel to dry.
  4. Toss broccoli and sweet potato chunks with enough olive oil to coat and season liberally with salt and pepper. Roast veggies at 425ºF for about 20 minutes.
  5. After 20 minutes, add your kale and chickpeas to the roasting pan. Add a bit more oil, salt and pepper, if needed and toss. Roast for another 15 minutes. Stirring the veggies around at least once during the roasting process.
  6. Once your veggies are tender, remove from the oven and combine them with the quinoa. Chop parsley, crumble feta and add to the quinoa and vegetable mixture.

  1. Drain the chick peas, transfer to a strainer, then rinse under cool running water until the water runs clean from the strainer.
  2. In a large bowl, combine the chickpeas with the lemon juice, olive oil, paprika, and salt. Stir to combine. Cover the bowl and transfer to the fridge. Marinate at least 15 minutes and up to an hour.
  3. While the chickpeas marinate, dice the vegetables and chop the fresh herbs.
  4. Add the tomatoes, cucumbers, bell pepper, onion, mint, and parsley to the marinated chickpeas and toss to combine. Taste for seasoning and add additional salt, pepper, or lemon juice if needed until the flavor pops. 
  5. Serve immediately with fresh pita. If time permits, chill for 30 minutes, then serve. Store leftovers in the fridge in a sealed container for up to 3 days.

Ingredients

  • 14 ounces extra firm tofu (, pressed and cut into 1-inch cubes (*see note))
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons grapeseed oil ((or any oil with high smoke point), more if needed)
  • 1/4 cup tamari sauce (, low sodium. Sub soy sauce)
  • 3 tablespoons hoisin sauce
  • 1-2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1/3 cup vegetable broth (, low sodium)
  • 2-3 cloves garlic (, grated or minced)
  • 1 tablespoon fresh grated ginger ((sub with frozen, jarred or paste))
  • 1 tablespoon corn starch
  • 8 ounces stir fry noodles ((sub with preferred noodles))
  • 2 tablespoons grapeseed oil ((or any oil with high smoke point))
  • 1/2 medium red onion (, sliced )
  • 1 small head (3 cups) broccoli (, cut into small florets (about 1.5″))
  • 1 large red bell pepper (, cut into thin strips)
  • 1/2 teaspoon crushed red pepper flakes ((*optional))

Instructions

  1. In a large bowl, gently toss the tofu cubes with the corn starch and salt until all sides are coated. Also, prepare a paper towel-lined plate for when tofu is cooked and set aside.
  2. Add all the sauce ingredients to a medium bowl and whisk to combine well. Taste and adjust flavor if needed. Set aside. 
  3. Cook stir-fry noodles according to package directions. I usually reduce the cook time by 1-2 minutes for firmer noodles. Rinse with cold water and drain well. Drizzle with oil to prevent sticking. 
  4. Heat up a Wok or Large Skillet over medium-high heat for 1-2 minutes. Once heated add oil and wait until it shimmers. Now add prepared tofu cubes and let them sit for 1-2 minutes to brown. Using tongs or sturdy spatula, flip to the other side to brown. Continue until all sides are crispy. Remove from heat and place tofu on the paper towel-lined plate. Wipe out wok.
  5. Place the wok back on the stove over medium-high heat. Once heated, add the oil and wait for it to shimmer. Now add the onions and stir fry for 1-2 minutes until slightly softened. Add the optional red pepper flakes. 
  6. Now add the peppers and broccoli. Stir fry for about 4-6 minutes until the veggies are crisp-tender. 
  7. Turn heat down to medium and add the crispy tofu. Whisk the prepared sauce again and pour into the pan. Cook for 1-2 minutes until slightly thickened. Stir often. 
  8. Add the noodles and gently toss to coat. Cook for 1-2 minutes to warm noodles. Remove from heat and serve. See notes for serving ideas.
