- Spoon half of the glaze mixture onto the meatloaf and use a brush to spread it over the top. Set aside the remaining glaze for later.
- Place the meatloaf into the oven and set a timer for 1 hour. Apply the remaining glaze to the top of the meatloaf and bake and additional 15 minutes, or until done. Allow the meatloaf to rest for 10 minutes then transfer to a serving platter.
- Slice meatloaf into 1 inch slices for serving. Enjoy along with your favorite sides.

Instructions
- Pre-heat oven to 350ºF (180ºC). Add tomatoes to a baking dish, drizzle 1 tbsp olive oil, and season with ¼ tsp salt and black pepper. Toss to coat and bake for 25-30 minutes or until soft.
- In the last 10 minutes of roasting the tomatoes, start making the stew. To a medium-sized pot, heat 1 tbsp olive oil. Once hot, add onion and cook over medium heat for 3-4 minutes, until fragrant.
- Add garlic, chili flakes, and tomato paste, and cook for 2-3 minutes, until the tomato paste is caramelized and darkened in color. Make sure to stir often to prevent burning. If it starts to burn, you can deglaze the pot with a splash of white wine, broth, or water.
- Next add white beans, vegetable broth, ¼ tsp salt, black pepper, and the bay leaf. At this point, the tomatoes should be ready, so take them out of the oven and smash each one with the back of a spoon to release the juices. Add them to the pot and stir.
- Bring to a boil and simmer on medium-low heat for 15-20 minutes or until the stew has thickened and the onions are cooked through. Make sure to stir it from time to time.
- Finally, stir in the chopped parsley and your greens of choice (if using) and cook for 2-3 more minutes. Remove from the heat, taste and adjust the flavor if needed, adding more salt or black pepper as taste. Serve!

- 1 teaspoon garlic powder
- 1 teaspoon dried sage
- 3-5 fresh Rosemary leaves (or half to one teaspoon of dried Rosemary)

- Place in the oven for 30 minutes. Remove from oven, and stir the potatoes and apples.
- Return pan to oven and roast for an additional 10 to 15 minutes or until the chicken is fully cooked, its juices run clear (or until an instant read thermometer inserted in the thickest part of the leg reads 165°F.), and the skin of the chicken, and potatoes are sufficiently browned.

- First, we’ll start with the spaghetti squash. Preheat your oven to 400°F.
- Cut your spaghetti squash in half and use a spoon to remove the seeds from the center. Spray the squash with cooking spray or brush with olive oil.
- Season with salt and pepper and place face down on a baking sheet. Bake for 30-40 minutes or until the squash can be shredded with a fork.
- Next, let’s prepare the meatballs. In a mixing bowl, combine ground turkey, panko crumbs, 1/4 cup feta cheese, egg, onion, tarragon, balsamic vinegar, Dijon mustard, red pepper flakes, salt, and pepper.
- Use a cookie scoop to scoop meatballs and place onto a greased skillet.
- Heat skillet over medium-heat and let the meatballs brown on each side, about 5-8 minutes. Then, add diced tomatoes and tomato sauce.
- Stir meatballs so they’re all covered in sauce.
- Cover skillet with a lid and let the meatballs simmer for 15-20 minutes. The internal temperature of the meatballs should be 165°F.
- When meatballs are done cooking, garnish with the rest of the crumbled feta cheese and more tarragon.

- Pour olive oil into a deep skillet. Cook the sausage in the skillet with the olive oil on low heat until the sausage is lightly brown.
- Remove the smoked sausage from the skillet. Remove broccoli florets from stalk and sauté broccoli in the pan for 3-4 minutes. You want the broccoli tender but, still crisp.
- Add the sausage, uncooked pasta, beef broth, garlic powder, onion powder, salt, pepper to the skillet with the broccoli. Stir and cover. Cook 5 minutes.
- Pour in the heavy whipping cream. Stir and push the broccoli down into the sauce. Cover and cook for 12 minutes more.
- Remove the lid and add 2-3 cups of shredded cheese. Stir the cheese to mix it together with the pasta, sausage, and the broccoli. Simmer for 3 minutes on low heat or until the cheese is melted.
- Taste and add more seasoning if needed. We added a little Cajun seasoning to our pasta.
- Serve while hot. Enjoy!

- Add the butternut squash in one tray, spreading out in a flat layer
- Spray the tops of the squash pieces with nonstick spray or drizzle in olive oil
- Bake the squash in the oven for about 40-50 minutes, flipping each piece halfway through
- Add the brussel sprouts to the other tray, drizzle with olive oil and season with salt
- Bake the brussel sprouts in the oven for 30-40 minutes, moving around halfway through to ensure all pieces get crispy
- While the vegetables are cooking, cut the fresh green beans and gather other ingredients if you haven’t done so already
- In a large bowl, add the kale and dressing
- Mix the kale until it’s fully coated in the dressing and has a softer texture
- When ready, remove the vegetables from the oven and let cool
- The brussel sprouts should be crisp and squash caramelized but not burnt
- Once the farro is cooked, it’s time to assemble the Autumn Kale Salad
- Start by combining the kale with the farro
- Add in the remaining ingredients one at a time

- Slice the tops off the peppers and remove the ribs and seeds inside.

- While the peppers are cooking, prepare the filling. Heat the olive oil in a large pan over medium heat.
- Add the ground beef and season with salt and pepper.
- Cook for 5-6 minutes, breaking up the meat with a spatula, until meat is cooked through.
- Add the onion to the pan and cook for 3-4 minutes or until softened. Add the garlic and cook for 30 seconds.
- Add the rice, tomato sauce and Italian seasoning. Stir to combine. Stir in 1/2 cup cheese and salt and pepper to taste.
- Remove the peppers from the oven and drain off the water. Turn the peppers over and fill each one with the beef mixture.
- Top each pepper with the remaining cheese. Cover and bake for 20 minutes. Uncover and bake for another 10 minutes or until cheese is melted and browned and peppers are tender.

With a sharp knife, cut a 3-inch slit into the side of the thickest part, slicing about ¾ of the way through to create a pocket. Be careful not to cut all the way through. Repeat with the remaining chicken breasts.
- in a small dish combine the salt, pepper and paprika together. Hold the chicken breast with the pocket facing up. Open the pocket and sprinkle in half of the seasoning along with some thyme leaves. Repeat with the remaining chicken breasts, then set aside.
Stuff the Chicken Pockets:
- Preheat the oven to 425°F and line a baking sheet with parchment paper. In a medium skillet, melt 2 tablespoons butter over medium heat. Add the sliced shallots and sauté until softened, about 4 minutes. Stir in the garlic and cook until fragrant, then remove from the heat and let cool for 5 minutes.
- Spoon some of the shallot mixture into each pocket, then add Brie cubes and a few pieces of fig. Secure the openings with wooden skewers or toothpicks and place the chicken breasts on the prepared baking sheet.
- Melt the remaining 2 tablespoons of butter, pepper jelly and the vinegar in a small dish in the microwave and brush over the top and sides of the chicken. Sprinkle the remaining salt, pepper, and paprika over the chicken breasts, then transfer the baking sheet to the oven.
- Bake for 18–20 minutes, or until the internal temperature reaches 160°F on an instant-read thermometer. Remove from the oven, tent loosely with foil, and let rest for 5 minutes. The carryover heat will bring the chicken up to the safe temperature of 165°F.

Ingredients
- 2 kg 4.4lbs whole chicken
- 700 ml 3 cups BBQ sauce, homemade or store-bought
- 2 tablespoons olive oil
- 1 kg 2.2lbs roasting vegetables of choice (potatoes, carrots, brussels sprouts, etc. See post for more ideas)
- 690 g 2 1/2 cups Passata, or canned tomato sauce
- 3 tablespoons liquid smoke
- 105 g 1/2 cup stevia, brown sugar substitute, or sugar/sweetener of choice
- 2 1/4 teaspoons allspice
- 2 teaspoons sumac (or 118ml (1/2 cup apple cider/white vinegar))
- 1/2-1 teaspoon hot (sweet, or smoky paprika, adjust to your taste)
- 3/4 teaspoon cumin
- 3/4 teaspoon ground black pepper
- 2-3 teaspoons salt (to taste)
Instructions 1. Make BBQ Sauce (optional):
- Add all of the BBQ sauce ingredients into a pot.
- Cook on medium-high heat stirring occasionally for about 10-15 minutes, until the sauce has thickened. Allow it to cool to room temperature before step 2.
2. Marinade the chicken:
- Place the chicken in a large, ziplock bag with 1.5 cups of BBQ sauce and olive oil, and refrigerate overnight. Save the rest of the BBQ Sauce for tomorrow.
3. Bake the chicken:
- Preheat the oven to 200 degrees C/ 390 degrees F.
- Place chicken upside down in a roasting tray, covering the surface of the chicken with any sauce leftover in the ziplock bag. I used a pastry brush to brush the bbq sauce over the chicken evenly.
- Roast chicken in the preheated oven for 15 minutes.
- Take it out after 15 minutes, and reduce the oven temperature to 140°C/285°F.
- Turn the chicken over, add the veggies and any remaining BBQ sauce to the pan, stir the vegetables, cover the roasting pan with aluminum foil or a lid, and bake it for one hour.
- After an hour, take it out and increase the temperature back up to 200°C/390°F.
- Remove the foil or lid.
- Place back into the oven, uncovered, and let the chicken cook for 35 minutes.

- Using the same pan, add onions, carrots and celery. Cook over medium heat scraping up any brown bits from the pan until soft and lightly browned.
- Stir in garlic and saute for an additional 30 seconds, stirring well to prevent scorching
- Add flour and tomato paste, stirring constantly until well combined and a deep color 1-2 minutes
- Add 1 cup of red wine while stirring. Stir until reduced being certain to scrape up any bits from the pan.
- Add remaining wine, beef broth, chopped mushrooms and reserved mushroom water
- Add short ribs and any juices that have accumulated
- Add fresh herbs and bay leaves
- Cover with lid and place in preheated 300°F oven for 3 hours, turning meat halfway through
- After 3 hours check to see if ribs are tender and then remove from broth and place on a plate. Cover ribs with foil to keep warm.
- Remove herbs and bay leaves and let liquids cool for a few minutes, allowing fat to rise to the surface. Skim fat from the surface.
- Place pot on the stove on high heat and bring to a boil. Reduce to a simmer and allow sauce to reduce until sauce is desired consistency, 10-15 minutes
- Taste sauce and add additional salt and pepper, if needed
- Serve ribs with sauce drizzled over the top.

Instructions
- Wash the chicken, removing giblets, and any feathers, fat etc. Place in a large glass bowl and squeeze all the citrus juices on to the chicken. Add the wine.
- Pull the rosemary off the stem and scatter in and on the chicken, then sprinkle the salt inside and outside, also.
- Slice the garlic and place it on top and inside the chicken, along with some freshly ground black pepper. Cover with plastic wrap and let marinate overnight, at least 12 hours. I turn the chicken over once during this time.
- When you’re ready to cook the birdie, place it in a roasting pan, I trussed (cut a hole in each side of the skin opposite each leg, and pulled the legs through, but it usually opens up while cooking; use string if you want to be sure to keep it tied up properly) the chicken, but it’s not necessary (do not add the marinade.)
- Preheat the oven to 375º F (191ºC)
- Once the chicken is in the oven. Boil some potatoes in salted water until just partially cooked, drain the water and, with the lid on, shake the pot to “rough up” the potatoes. Add them to the roasting pan, next to the chicken. Taste a little of the potato to see if it needs additional salt, and if so, sprinkle some on. Continue to cook, until the chicken is done.
- You can increase the oven temp by a bit if you want more browning or crispiness, the last few minutes (thermometer inserted in the thickest part of the bird, between the breast, thigh and leg should read 165ºF or 74ºC.) The chicken should be golden brown.
- Let the chicken cool for about 10 minutes, covered loosely with a tent of aluminum foil, before slicing, to allow the juices to reabsorb into the meat.

- Prepare the dry dredge mixture by combining the flour and seasonings together in a large bowl; set aside.
- Prepare the wet dredge mixture by whisking together the egg with a cup of buttermilk in a large bowl; set aside.
- Remove the chicken pieces from the marinade and place on a paper towel lined sheet pan. Use a paper towel to gently dry the chicken pieces slightly.
- Dredge each chicken pieces in the dry dredge mixture, then wet, then dry; shake off excess. Place dredged chicken pieces on a foil lined sheet pan. Repeat until all pieces are done.
- Cooking in batches; begin by adding the chicken legs, thighs and wings to the hot oil making sure not to over crowd the skillet.
- Use tongs to turn every 5 minutes, fry the chicken until crispy and golden brown (12-15 minutes).

- Add the onion to the cooking pot. Sauté for about 3 minutes until tender, stirring occasionally to scrape up any browned bits from the bottom of the pot.
- Stir in the 3 1/2 cups water and beef base or bouillon,* tomato paste, and bay leaf.
- Return the roast and any accumulated juices to the pot. Lock the lid in place. Select High Pressure and 50 minutes cook time.
- When the cook time ends, turn off the pressure cooker. Let the pressure release naturally for 10 minutes, then use a quick release to release any remaining pressure.
- When the valve drops, carefully remove the lid. Transfer the roast to a cutting board and cover with aluminum foil.
- Add potatoes and carrots directly to the juices remaining in the cooking pot. Lock the lid in place. Select High Pressure and 3 minutes cook time.
- When the cook time ends, turn off the pressure cooker. Use a quick pressure release. When the valve drops, carefully remove the lid. Check the potatoes for doneness. If needed, select Sauté and simmer in the juices until potatoes reach your desired tenderness.
- Use a slotted spoon to transfer the potatoes and carrots to a serving bowl and sprinkle with parsley. Cover with foil until ready to serve.
- Pour the juices in the cooking pot through a mesh strainer into a fat separator. (You can skip the strainer if you like onions in your gravy. Be sure to remove the bay leaf, though!) Skim off any excess fat. Return the juices to the cooking pot.

- 1 cup barbecue sauce ((or a little more if you’d like))
- 16 oz yams cut into cubes (~500g)

Instructions
- Preheat the oven to 425ºF (220ºC)
- Cut the sweet potatoes into small cubes and trasnfer them to a 11″x7″ (30x20cm) baking dish.
- Add olive oil, honey, salt, and spices to the sweet potatoes and toss to coat them evenly. Bake them covered with aluminum foil until tender (about 18 minutes). Remove foil and broil until golden brown (about 5 more minutes).
- While the potatoes are cooking, add the barbecue sauce to the shredded chicken and mix everything until evenly coated. If using bacon, you can fry it on a skillet now and add it to the chicken.
- Once Potatoes are ready, evenly distribute the shredded chicken mixture over the potatoes, sprinkle the cheese on top and bake it at 350ºF (180ºC) for about 10 minutes or until cheese is melted.

- Spread the chopped hard boiled eggs over the pea layer. Sprinkle with salt and pepper.

- Combine the parsley, rosemary and thyme in a small bowl. Sprinkle the vegetables with 1 tablespoon of the herb combination.

Chicken
- Carefully separate the skin from the meat where possible and spread half the butter under the skin. Spread the other half of the butter over the chicken.

- Add flour to a plate and gently dredge each chicken tender in the flour, giving them a very thin coat of flour.
- Heat a large pot of salted water for the pasta on high.
- Heat olive oil in pan and then add chicken. Cook on medium on each side for 3-4 minutes until internal temperature reaches at least 165 degrees and then set aside.
- Once the water comes to a boil, cook pasta for 5 minutes (or 1 minute less than recommended time on box). Once done, drain, rinse with cold water, and set aside. If using fresh pasta, see recipe notes.
- Heat pan to medium and add butter to deglaze the pan from the chicken. And add garlic and onions. Cook for 1-2 minutes stirring often. Add the peppers, and stir and saute for another 1-2 minutes.
- Add wine, lemon juice, and chicken stock and the rest of the Italian seasoning (1 1/2 teaspoons), to the pan and bring to a gentle boil. Reduce heat and let simmer for approximately 8-10 minutes – this is what will allow the alcohol to cook off and the peppers to soften.
- Add pasta to sauce and mix and and chicken to pan and cook for another minute until pasta is reheated.
- Plate, garnish with fresh parsley, and drizzle remaining sauce over plate.

Press breadcrumbs into all sides of the eggplant to make sure they stick properly to form a crust.

- Press both sides of the oiled chicken breast into the panko mix until all of the mix is on the chicken. Set aside.
- Heat the remaining oil in a cast iron pan until shimmering.
- Fry the chicken breast on both sides until the panko crust is golden-brown (about 4 minutes on each side).
- Transfer the pan with the chicken into the oven. Bake the chicken until it is fully cooked and reaches an internal temperature of 165 degrees F. (About another 5 minutes, for a ¾-inch thick chicken breast.)

- Toss the chicken with 2 Tbsp (15g) cornstarch until coated. Dust off excess.
- Heat a 12″ non-stick skillet over medium-high heat. Add the butter and the oil. Once the butter and oil are sizzling, slowly add each piece of chicken and cook for a few minutes until the chicken is golden brown, then flip.
- Continue to cook until the other side is browned. Don’t worry about cooking the chicken all the way through at this stage, you’ll do that in a later stage.
- Once browned, transfer the chicken with a slotted spoon to a clean plate. Leaving the drippings in the pan.
- Set a pot of salted water to boil for the Gnocchi.
- Deglaze the chicken pan with white wine. Simmer until it’s reduced by 1/3. Then add the chicken stock, the sundried tomatoes, tomato paste, Italian Seasoning, and the garlic.
- Add the chicken back in and simmer until the chicken is cooked through and the sauce starts to slowly come up to a boil.
- Then in a small bowl mix the remaining 2 Tbsp of cornstarch (15g) with 2 Tbsp (30ml) of very cold water. Slowly add this mixture to the sauce, whisking as you go, thickening the sauce. If your sauce gets too thick, add more chicken stock or you can also add a ladle or two of the starchy pasta water too.
- Then add the heavy cream, and the parmesan cheese. whisk to combine and then add the baby spinach, whisking until it starts to wilt. Taste it for seasoning and add salt and pepper if desired.
- Set sauce aside, taking it off the heat.
- Cook the Gnocchi for 5-8 minutes. Drain it and add the cooked gnocchi to the skillet to coat them with the sauce.
- Serve skillet-to-table or transfer to a platter and serve with grated parmesan cheese and red pepper flakes if desired.

- 1 tbsp oil, for cooking
- ½ medium red onion, sliced
- 1 medium carrot, sliced
- 1 medium red bell pepper, sliced
Instructions Cook noodles
- Fill a medium pot with water and bring to a boil. Add ½ tsp salt and noodles and stir. Cook them according to packaging instructions. Then, drain and transfer to a plate. Add sesame oil and toss to coat. Set aside.
Chili oil
- To a medium bowl, add soy sauce, chili powder, bouillon cube, garlic, ginger (optional), and spring onion. Mix until a paste has formed. If it appears too dry, add a little bit more soy sauce (but don’t overdo it).
- Add a skillet over medium heat. Add the oil and heat until smoking hot. Once it starts to smoke, remove it from the heat and pour over the chili paste. Mix until well combined.
Vegetables
- Using the same skillet, add more oil if needed and cook the vegetables for 5-6 minutes, until lightly golden, but still crunchy.
Assembling
- Add the noodles to the skillet, alongside the chili oil, and toss until well coated. Remove from the heat if you haven’t already. Stir in the chopped cilantro and lime juice. Serve!
