1. Air Fryer Churros

Air Fryer Churros is a practical addition to this collection, with a straightforward method and adaptable serving options.

Recipe details: Prep: PT15M · Cook: PT8M · Total: PT23M · Yield: [’24’]

This recipe for easy air fryer churros makes a fun Mexican dessert!

Ingredients

  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 cup butter
  • 1 Tablespoon granulated sugar
  • 1 cup all purpose flour
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup granulated sugar
  • 1 Tablespoon ground cinnamon

Instructions This is not a difficult recipe but for the best results read the recipe through and get all the ingredients and equipment ready before you start!

  1. In a medium saucepan, combine water, milk, butter and 1 tablespoon of the sugar. Bring it to a boil over medium heat, stirring as it cooks.
  2. Remove the pan from the heat and stir in the flour into the saucepan with a wooden spoon. Stir until the flour is completely mixed in.
  3. Put the saucepan back on the heat and stir it constantly for 2 minutes, until dough comes together in a smooth ball.
  4. Take the dough off the heat and put the dough in a large mixing bowl.
  5. Beat the dough with an electric mixer until fluffy. This will cool the dough so the eggs don’t cook when they are added. Beat the dough for 3-5 minutes.
  6. In a small bowl, whisk together the eggs and vanilla extract.
  7. Slowly add the egg mixture to the cooled dough in the bowl, beating with the mixer after each addition. Scrape down the sides of the mixing bowl and continue until the eggs are mixed in and the dough is smooth.
  8. To pipe the churros use a disposable pastry bag with a #1M open star decorating tip or use a zippered bag with the corner cut off.
  9. Add dough to the pastry bag or put it into the plastic bag. If you are using a plastic bag don’t cut the corner off until the dough has been added.
  10. Pipe dough directly into air fryer basket and cut the end with scissors. I usually make 3 inch churros, but you can adjust the length as desired to fit into your air fryer basket. Smaller churro bites are also fun to make.
  11. Once all the churros are in the basket use a mister bottle to spray churros with a little bit of oil.
  12. Cook for 8-10 minutes at 380 F or until golden brown.
  13. While churros are cooking, combine cinnamon sugar mixture in a medium bowl.
  14. Remove churros from air fryer, and add to cinnamon sugar mixture right away. Toss them so they are coated with cinnamon sugar and set them on baking rack to cool.
  15. Serve immediately with chocolate sauce, caramel sauce, or nutella for dipping.

Ingredients

  • 1 Cup White Self-Rising Flour

  • Cooking Spray
  • 1 1/2 Tbsp Powdered Sugar

  2. Next we want to prepare a work surface. Put down some parchment paper and dust it with flour. Put the dough on the paper and cut the ball into 4 equal sections.
  3. Now we want to work with one of the four sections. Cut the dough into 6 pieces. Rolling them each into a long thing rope that is about 8-10 inches long will work best. After they are rolled out pile up the ropes of dough and shape them loosely into a funnel cake.

Really Easy Air Fryer Banana Bread (Mini Loaf!) is a practical addition to this collection, with a straightforward method and adaptable serving options.

Recipe details: Prep: PT5M · Cook: PT30M · Total: PT35M · Yield: [‘4’]

Got a brown banana hanging around? Fan of freshly baked banana bread but don’t want a big loaf lying around to tempt you? This mini banana bread is a super easy one bowl recipe and there’s no creaming of butter and sugar necessary. Just mix together a few basic pantry ingredients, pop the cake into your air fryer (or oven if it’s already on) and you’ll be enjoying a delicious slice of healthy banana bread in around just 30 minutes.

Ingredients

  • 1 banana (small to medium (about ⅓ cup), mashed – the riper the better)
  • 1 egg
  • 2 tablespoons brown sugar (I add 2-3 tablespoons depending on my mood!)
  • 2 tablespoons oil (I’ve used light olive oil and canola and coconut oils. Melted butter works really well, too.)
  • ¼ cup milk (Any milk works, including non dairy such as almond and soy.)
  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • 1 pinch salt
  • 1 pinch cinnamon or nutmeg ((optional))
  • raspberries, blueberries, chocolate chips, coconut, nuts, ½ teaspoon vanilla ((All optional extras!))

Instructions

  1. Line a very small ovenproof baking pan, glass dish or mini loaf pan (I’ve used 5 sq inches and also a 5×3 inch mini metal loaf pan) with baking paper and trim. Spray with a little oil.
  2. Pre-heat air fryer or oven to 320F/160C.
  3. In a small bowl, whisk the egg into the mashed banana. Then whisk in the sugar, oil, and milk.
  4. Add the flour and baking soda and salt and mix until just combined. Add a drizzle more milk if the mixture seems at all dry (certain flours such as whole wheat and coconut are more absorbent than all purpose flour). Fold in any mix-ins e.g. chocolate chips, nuts.
  5. Pour the batter into the prepared pan and bake in your oven or air fryer for 25 to 35 minutes or until a skewer poked into the bottom of the cake comes out clean. A little bit of sticky-ness is fine. For me it takes 30 to 35 minutes in my air fryer and 25 minutes in my oven.
  6. Let cool for 10 minutes in the tin/dish, then transfer to a wire rack to cool.

  • ½ cup White sugar (granulated)
  • 2 cups Blueberries, Fresh or Frozen (If frozen, thaw and drain a bit before use. )
  • ½ cup Water
  • 1 tsp Lemon juice (Optional)
  • 1 tsp Cinnamon (Optional)
  • 2 Pillsbury Pie Crusts (thawed and at room temperature)

  1. In heavy saucepan, whisk cornstarch and sugar.
  2. Add remaining ingredients and cook over medium heat.
  3. Stir frequently, smashing blueberries a bit as you stir.
  4. Once mixture is obviously thick (after 10-12 minutes or so), remove from heat and allow mixture to cool while you prepare the dough.

Pie Dough

  1. Allow two refrigerated or frozen store-bought pie crusts to come to room temperature as instructed on package.
  2. Once dough is at room temperature, roll out on clean surface.
  3. Using a four-inch round cookie cutter (or drinking cup), cut circles out of dough. (My two pie crusts usually yield 12 four-inch circles.)

Filling Blueberry Mini Pies

  1. Using a small to medium sized cookie scoop, scoop one leveled scoop into the center of one circle of dough. (This is something you will have to judge for yourself depending on the size of cookie cutter/cup you used and the size of scoop you have.)
  2. Carefully fold over the top half of the dough circle to form a perfect half-moon shaped pie.
  3. With a fork, crimp the edges. (If filling starts to ooze out, you have too much filling. Remove some filling and proceed from there. Going forward, put a bit less filling in the other pies.)

If Using an Air Fryer

  1. Spray both sides of dough lightly with a cooking oil spray such as Pam.

  3. Cook in the air fryer for 6 minutes at 375°.
  4. Flip and cook for 6 minutes longer or until pies are nicely browned.
  5. Repeat with remaining pies.

If Using an Oven

  1. Spray two large cooking sheets with a spray oil such as Pam.
  2. Place 6 pies in each pan, ensuring pies to not touch.
  3. Bake each pan in 375° preheated oven for 6 minutes.
  4. Flip pies and cook for 6 minutes longer or until pies are nicely browned.

Glazing Mini Blueberry Pies

  1. In a mixing bowl, mix 2 cups powdered sugar with 3 tablespoons milk and the teaspoon of vanilla.
  2. Mix until glaze is thin enough to pour easily but not too runny. Add additional sugar to thicken mixture or additional milk to thin mixture as needed.
  3. With a spoon, drizzle glaze in an even pattern over each cooled pie.
  4. Allow glaze to set (about 15 minutes) before serving.
  5. Store leftover pies in an air-tight container. (I recommend storing them in the refrigerator for added freshness.)

These peanut butter cookies are super quick and easy to make in the air fryer with just 3 ingredients. Vegan and keto versions are also shared.

Ingredients

  • 1 cup peanut butter (use creamy or chunky)
  • ½ cup sugar (or powdered erythritol for keto or low carb)
  • 1 chia egg (or egg)
  • 1 tsp. vanilla extract (optional)
  • 1 tbsp. chocolate chips (optional)

Instructions

  1. This 3 ingredient peanut butter cookie is super easy to make.
  2. Take all the 3 ingredients – peanut butter, sugar or substitute and chia egg or egg in a bowl and mix well to form the cookie dough.
  3. To make chia egg mix 1 tbsp. chia seeds with 2.5 tbsp. water. Keep aside for 5 minutes to thicken slightly. Then use.
  4. I also add 1 tsp. vanilla extract for added flavor. It is optional.
  5. Using an ice cream scoop or a spoon, take out one tsp. of cookie dough. Form a cookie shape. Then add chocolate chips on top (optional). Use a fork to flatten down the center a bit. This is done to ensure that the center cooks evenly.
  6. Now preheat the air fryer at 350 F or 180 C for 4 minutes.
  7. Lay the prepared peanut butter cookies leaving gap between the cookies. I use perforated parchment paper so that the cookies do not stick to the air fryer basket.
  8. Air fry at 350 F for about 4-6 minutes. Air fry only till they are golden brown. They may look undercooked but don’t wait for them to brown or they will go over and become crumbly (though still delicious).
  9. Poke the center of the cookie with a toothpick. It comes out clean when the cookie is done.
  10. Take them out. They will look soft but don’t worry they will harden.
  11. Let them cool for 10 minutes. Now take them out and eat. They are delicious.
  12. You can store them in an air tight container for 2 days. If you keep them in fridge they tend to get soft.
  13. You can freeze them for upto 3 months.
