- 4½ cups turkey bone broth ((or chicken bone broth))
- 1 bay leaf
- 1 tablespoon fresh thyme leaves ((or 1 teaspoon dried))
- 1 teaspoon dried sage
- 1 teaspoon dried rosemary
- 1 cup milk, 2%
- ¼ cup flour
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese

Instructions
- Chop the onion, celery, and carrots into ½-inch dice (1.27 cm). Slice the mushrooms, finely chop the parsley garnish, and cut the turkey into 1-inch cubes (2.54 cm).
- Heat the olive oil in the Instant Pot on high sauté for 1-2 minutes. Add the onion, carrot, celery, and mushrooms and sauté for 5-10 minutes. Stir the veggies frequently. They should be softened, not browned.
- Add the broth, dry wild rice, bay leaf, thyme, sage, and rosemary. Cover the Instant Pot with the lid.
- To pressure cook: Close vent on lid. Pressure cook for 15 minutes using the “rice/risotto” setting under high pressure. Allow the pressure to release naturally for 10 minutes before carefully opening the lid vent.
- To slow cook: Leave vent on lid open. Cook on high 3-4 hours or low 6-8 hours until the wild rice is tender. If the rice absorbs too much liquid, add up to 1 cup of extra broth before continuing.
- While the soup pressure cooks or slow cooks, whisk the milk and flour together into a smooth paste. Remove the Instant Pot lid when the soup is finished pressure cooking or slow cooking.
- Put the Instant Pot on the high sauté setting. Add the cooked turkey or chicken pieces, milk mixture, cream, and Parm to the InstantPot. Remove the bay leaf and discard it. Add salt and pepper if you wish (this will likely not be necessary if you used store broth).
- Cook the mixture (using the high sauté setting) for 10-15 more minutes. Stir the soup frequently to keep ingredients from sticking to the bottom of the Instant Pot. The soup will thicken and become creamier.

- Add all of the ingredients except for the peas and flour to a crock pot and stir well. Secure the lid on the crock pot and cook on Low Heat for 8 to 10 hours, or High Heat for 5 to 6 hours, until meat is very tender and shreds easily with a fork.
- When there is about 2 hours left of cooking, Add 1/3 cup of gluten-free all purpose flour to a small bowl. Ladle 1 cup of broth from the stew into the bowl and stir well. Pour the flour mixture into the crock pot with the stew and stir well. Cover the slow cooker with the lid again and continue cooking for the rest of the time. Once stew has finished cooking, add the canned or frozen peas and stir.
- The longer the stew sits after adding the flour mixture, the thicker it will become. Stew is always more flavorful the next day (and several days following prep), so if you are able to make it at least one day ahead of time, I would recommend doing so.
- Serve stew with choice of bread and butter.

Instructions
- Peel and chop the onions, carrots, celery and potato into a 3-5mm (⅛”) dice and throw them all into the slow cooker.
- Pour in the fish stock, and add the salt and bay leaf, then add a lid and cook on low for 2½ hours.
- Just before the 2½ hours are up, chop the chilli as finely as you can.
- Zest and juice the lime.
- Add the butter, chilli and lime zest to the soup and stir until the butter has melted.
- Pour in the cream and stir to combine. Now is a good time to test for salt and add more if required.
- Add the salmon, return the lid and cook for a further 25 minutes.
- Remove the salmon with a slotted spoon and flake it up, discarding the skin.
- Chop the parsley as finely as you can.
- Return the fish to the slow cooker and add the lime juice and chopped parsley, stir and serve.

- Meanwhile, in a sauté pan on medium low, toast star anise, cloves, coriander, fennel, and cardamom pods, and cinnamon for approximately 2-3 minutes until fragrant. Add immediately to crock pot.
- Add oil to pan and cook onion and ginger until onion is browned and soft, approximately 5-7 minutes. Turn ginger over half way through. Add to crock pot.
- Add 8 cups of water, sugar, and fish sauce to the crock pot. Cook on high for 4 hours or low on 8 hours.
- With a sieve (or colander, but dependent upon colander size it may not capture all of the seeds) drain seeds, pods, etc. from broth from crock pot into another large pot them immediately return to crock pot.
- For the last 30 minutes, turn to high (or add 30 minutes to the 4 hours) and add chopped bok choy. Put flank steak in freezer for about 10 minutes to make slicing easier. Slice steak as thin as possible.
