- Prep Breadcrumbs: Add breadcrumbs to a medium-sized bowl. Add milk, starting with 1/4 cup and use just enough to wet all of the bread. Add a bit more if all of the bread is not wet, but don’t use more than 1/3 of a cup. Set aside.
- Make Meatballs: Add the meats to the large bowl with the onions and add the parsley, egg, salt, ginger, and nutmeg. Mix well and then add the milk-soaked bread crumbs. If there is any extra milk in the bowl with the bread, do not add. Add the meat mixture to the fridge for at least 15 minutes to cool. This will help make shaping the meatballs easier.
- Shape Meatballs: Shape the meat into 2 – 3ish inch meatballs and add to a rimmed baking sheet. Don’t worry about crowding.

Instructions
- Cut the onion in half, then peel it and cut it into 3-4mm (⅛”) thick half-moon shapes.
- Heat a small-medium (18-20cm or 7-8″) saucepan that is not nonstick over a low heat, and when it is hot, add the oil and the onions. Slowly caramelise the onions for around 1 hour, stirring every 10-12 minutes.
- If you are grinding your own meat, place the veal and the pork belly in your mincer with a coarse plate and pass them through once. If you are not grinding your own meat, but you are adding the pork belly, chop it as finely as you can with a sharp kitchen knife.
- Add the salt and pepper to the meat and then form two evenly sized patties and sandwich them between two sheets of baking parchment and allow them to rest in the fridge for at least 1 hour. Make sure that you remove the patties from the fridge 10-15 minutes before cooking.
- Once the onions are a deep brown, add in the sugar and stir until dissolved,
- Turn up the heat to medium-high, then pour in the port and bubble down until sticky and dry, taste and add a pinch of salt.
- Cut the slab of Gouda into two large squares, 1cm (just under ½”) thick.
- Take two baking trays that nestle into each other and place a layer of baking parchment in the first, followed by the Parma Ham, followed by another layer of baking parchment. Add the second baking tray, followed by another piece of baking parchment, then the Gouda cheese squares, then another piece of baking parchment.
- Place the next baking tray in a preheated oven and cook for 12-15 minutes at 200°C or 400°F.
- Heat a 28cm (11″) frying pan over a high heat and oil both sides of the patty with a drizzle of oil. When the pan is hot, add the burgers and cook for 4-5 minutes on each side, then remove and set aside.
- Toast the burger buns in the pan that you cooked the patties in for 30-60 seconds.
- Now build your burgers, I start with rocket/arugula, followed by a burger, some onions, baked cheese, Parma ham, then iceberg lettuce and finally some more onions.

- In a large mixing bowl, combine the parsley, onions, mint, bread crumbs, egg, olive oil, garlic, cilantro, salt, pepper, paprika, cumin chili flakes and cinnamon. Blend together well.
- Add the ground veal (breaking it into chunks) and using your hands, work this seasoning mixture into the meat. Blend a couple of minutes. Cover the bowl with plastic wrap. Refrigerate for about an hour to let the flavors blend.
- Put parchment paper on a cookie sheet. Make 10-12 balls with the veal mixture. About one-fourth cup plus of mixture.
- Form the meat around the skewer into a ‘sausage’ shape about 3-4” long. Coat the meat with cooking spray on all sides.
- Coat a grill with cooking spray. Heat to about 350 to 400. Place the skewers on the grill and cook on each side about 3-4 minutes. Turn with tongs. When done, remove to a clean platter.
- Labneh Sauce: Combine all ingredients in a bowl and blend together. Serve the labneh sauce, olives and bread with the kefta.

Instructions Roast Eggplant
- Heat oven to 400 degrees F.
- Rinse eggplant and dry with clean towel.
- Cut eggplant lengthwise. Leave stems on.
- Score eggplant in cross hatch pattern, making sure not to cut into skin.
- Season with salt. Brush with olive oil.
- Place face down on baking sheet.
- Bake eggplant for 20 minutes. Check to see how done it it. This will all depend on size. I baked mine for 30 minutes.
- While eggplant is baking, cook veal.
For Ground Veal or Ground Meat
- Loosen veal with hands. Season with salt and pepper. Pour milk over. Let it soak In.
- Mix in herbs, spices and egg.
- In large frying pan, saute onion for five minutes until softened, but not browned. Add garlic, and be careful not to brown.
- Add ground meat, making sure to break apart and cook on low until meat is cooked through, continuing to stir.
- Take eggplant out of the oven. Cool for a few minutes.
- Scoop out all insides of the eggplant, carefully, so as to not break the skin.
- If there is excess water in the baking dish, use paper towel to sop up.
- Add eggplant in to the ground meet.
- Top with tomato sauce, which is optional.
- Top with some mozzarella cheese.
- Bake for ten minutes or until cheese is melted.
- Serve with grated parmesan cheese.

- 1 kilo potatoes, cut into thin slices
- 500 grams small zucchini, cut into thin slices
- ½ cup olive oil for frying
- Ground cinnamon to sprinkle on top
Instructions
- Heat the olive oil in a pot and sauté the onion until translucent. Add the garlic and mix for a few seconds
- Add the ground meat and sauté for a few minutes. While mixing, add salt, pepper, cinnamon, allspice, tomato juice and water and cook over moderate heat for about 15 minutes or until the sauce reduces. Remove from the heat and discard bay leaf Mix in parsley and set aside.
- When the béchamel sauce is ready, you can optionally mix in two tablespoons of the béchamel sauce.
- Meantime, wash the vegetables and dry them.
- Peel the potatoes and cut them into ½ cm thick slices.
- Heat the olive in a non-stick frying pan and fry the potatoes on both sides, in batches.
- While frying them, cut the zucchini a little bit thinner without peeling them
- Eggplants must be cut just before frying as they oxidize.
- Remove them on kitchen paper Continue with the zucchini and fry them on both sides.
- There will be some leftover olive oil so remove it in a metallic bowl and leave just about 1 tablespoon olive oil in the frying pan.
- Sauté the eggplants on one side, brush them on top with a little bit more olive oil and sauté them on the other side as well Continue with the remaining eggplants adding a tablespoon olive oil each time and brushing them before turning them over.
- Heat the milk and set aside.
- Beat the eggs with a fork until combined and set aside.
- In a saucepan heat the olive oil and add the flour and mix thoroughly to make the roux* Add salt and nutmeg.
- Withdraw the pot from the heat and add the warm milk, stirring constantly.
- Gradually add the beaten eggs, a little at a time slowly, but stirring constantly until it is absorbed.
- Put the pot back on the heat and continue mixing until the sauce thickens.
- Remove from the heat and mix in the grated cheese, reserving some to sprinkle on top.
- Place a layer of half of the vegetables, first the potatoes, then the eggplants and then the zucchini, in a 32 x 23 x 6 cm (12.5 x 9 x 2.5 inches), baking tin and season each layer with salt
- Mix in a couple of tablespoons béchamel in the meat sauce.
- Add the meat sauce on top of the vegetables, and then layer the remaining vegetables, which again season with salt.
- Add the béchamel sauce on top and spread it to cover the vegetables
- Sprinkle some of the grated cheese and sprinkle some cinnamon on top.
- Bake in a preheated oven to 180o C /350o F (160°C / 320oF for a convection oven) for about 45 – 50 minutes or until golden on top.
- Set aside for at least half an hour to cool before serving.

- Bake for 30 minutes.
- Combine the topping ingredients while it bakes and set aside.
- Remove the meatloaf and brush on the topping. Bake for an additional 30-40 minutes. (Pull it once it reaches 155 degrees.)
- Let it rest for 15 minutes in the loaf pan prior to slicing in. It will increase 8-10 degrees in temperature during this time. Slicing in too early also causes the juices to leak out. Ensure the middle is 160 degrees before you slice it.
- Serve with creamy mashed potatoes and enjoy!

Meatballs
- Gently combine all meatball ingredients, (except the oil), in a large bowl, don’t overwork the meat, we want tender meatballs.
- Roll into 1+1/2 inch balls.
- Heat the oil in a large sauce pan or dutch oven over medium heat.
- Give each meatball a final roll and add them to the pot.
- Brown them in batches, for a few minutes on each side. They won’t be cooked all the way through.
- Remove and set aside until the sauce is prepared, then simmer them in the sauce for 45 minutes.
Homemade Sauce
- Use the same saucepan as you used to brown the meatballs. Heat 2 tablespoons of olive oil over medium heat. Add the onions and saute until they’re softened, about 5 minutes.
- Add the garlic and heat for 1-2 minutes.
- Add the crushed tomatoes.
- Add the bay leaf, bunch of parsley, red pepper flakes, salt, and pepper.
- Bring the sauce to a gentle boil, then reduce the heat back down to a light simmer.
- Add the meatballs and toss them with the sauce.
- Cover the pot and simmer for 45 minutes.
- Remove the bay leaf and parsley prior to serving. Stir in the basil. Serve, and enjoy!

- Add 1 tablespoon of olive oil and shallots to a large skillet and cook on medium heat for 2 minutes. Add the garlic and cook for 2 minutes, stirring frequently so it doesn’t burn.
- Add the stock, white wine, and lemon juice and bring to a simmer for 7 minutes to reduce the pan sauce.
- Add the baked meatballs to the sauce and cook for 5 more minutes.
- Remove the pan from the heat and stir in butter, capers and parsley. Season to taste with salt and pepper, and serve.

27. Cypriot Veal Tortellini

Kaloirka is a traditional Cypriot recipe, which is a pasta dish filled with minced veal or beef, similar to tortellini.
Ingredients
- 300 grams (10.5 oz) ground veal
- A few tablespoon olive oil
- 1 medium onion, finely chopped
- 3 spring onions, finely chopped
- 1 garlic clove, finely chopped
- Salt and pepper to paste
- ½ cup dry white wine (no water)
- ½ cup parsley, finely chopped
- 500 grams all-purpose flour (follow this recipe)
- 6 cups Chicken broth
- Salt
Instructions
- Heat the olive oil in a sautéing pan and sauté the onion and garlic until translucent
- Add the ground veal, mix and then add the wine. Add salt and pepper and cook until the entire pan juices have evaporated, mixing from time to time. No water is necessary. When done, add parsley and mix.
- Remove from the heat and set aside to cool.
- Roll out a thin phyllo either with a pasta machine or manually.
- Cut round pieces of dough, using a round cookie cutter (9 cm – 3 inches diametre), add a teaspoon of meat filling on one side and fold to form a semi-circle
- Brush the cut circle with water and add 1 teaspoon of the meat mixture into the center.
- Fold the edge closest to you over the filling to meet the other side, press to seal the edge.
- Then join the two ends together and fold the top side together with the two ends.
- Bring chicken broth or stock to a boil and add some salt
- Place them in salted, boiling water and cook as any other pasta, for about 10 – 15 minutes stirring occasionally, until they will float.
- Remove with a slotted spoon into a platter and sprinkle with grated halloumi or anari.
- Serve immediately.
