- In a small bowl, whisk together 4 large eggs, 2 large yolks, 1½ oz vegetable oil, 1 tablespoon vanilla extract, finely grated zest from 1 lemon, 4 oz honey and 1/2 of the buttermilk, set aside. Sift 11 ¼ oz cake flour, 8 oz granulated sugar, 2 ½ teaspoons baking powder and ½ teaspoon table salt into a mixer bowl. Mix on low speed to combine the dry ingredients.
- Toss 6 oz unsalted butter chunks into the flour mixture and add the remaining buttermilk. Mix on medium high for 2-3 minutes to aerate the batter. Scrape the bowl and the beater. With the mixer running, add the egg mix in 3 batches, scraping the bowl between each addition.
- Pour the batter into the prepared pan. Bake until the cake springs back when lightly pressed or a toothpick inserted into the center comes out clean, about 40 minutes.
- While the cake bakes, make the glaze. Put 4 oz unsalted butter, 2 oz water, 4 oz sugar, 6 oz honey and ⅛ teaspoon table salt in a small saucepan. Bring the mixture to a boil, reduce to a simmer and cook 5 minutes, stirring constantly. Remove the pot from heat and stir in 4 oz Irish Whiskey.
- As soon as the cake comes out of the oven and while it’s still in the pan, generously brush the cake with some of the glaze. Cool in the pan for 15 minutes to allow the glaze to absorb and for the cake to set. Turn the cake out onto a clean baking sheet.
- Brush the entire top and sides of the cake with glaze, allow the glaze to absorb and repeat brushing until all the glaze is used up. Any glaze that drips onto the pan can be picked up with the brush and brushed back onto the cake.
- Allow the cake to cool completely. Wrap in plastic wrap and set aside for 1 day to allow the flavors to develop.

- Carefully place pan with ramekins in oven. While in oven, pour enough boiling water into pan to cover two-thirds of the height of the ramekins. Be careful not to splash water into ramekins.
- Bake 25 to 40 minutes until the center of the custard is set but jiggly (it’s okay if sides are jiggly too as long as the center is set)
- Carefully transfer ramekins individually to cooling rack—I found that lifting with a hamburger turner worked best. Refrigerate until chilled, approximately 2 hours.
- Sprinkle about 1 1/2 teaspoons of brown sugar over each chilled custard. Place under pre-heated broiler to brown. Watch like a hawk to avoid burning (or fire).

Instructions Bangers
- To make bangers and mash you first sear the sausages, and then while you’re caramelizing the onions for the gravy, you’ll start making the mashed potatoes. The sausage gets added to the gravy to finish cooking, and they get served over the mashed potatoes.
- Heat 1 Tbsp of olive oil to a skillet and sear the banger’s sausages over medium heat on both sides to brown the sausage. Set the sausages aside but leave 1 Tbsp of grease in the skillet for making the gravy.
Onion Gravy
- Add 3 Tbsp of butter and stir until melted. Add the sliced onions and cook them for 10 minutes or until very soft. Turn the heat down to low and put the lid on the pan, continue cooking 10 more minutes. Add the flour, combine with the onions, and cook for 1 minute. Start on the mashed potatoes while the onions are simmering.
- Add the beef broth, Guinness stout beer (and brown sugar if adding the stout), and Worchestershire sauce to the pan. Cook over medium-high heat until the gravy starts to bubble. Add the bangers Irish sausage back to the skillet. Turn the sauce down to medium-low and simmer for 15 minutes until the gravy is reduced, starts to thicken, and the sausages are cooked through. Add salt and pepper to taste.
Mashed Potatoes
- Add water to a pot for the mashed potatoes and bring the water to a boil over high heat.
- Add the potato cubes and cook the potatoes 12-15 minutes or until fork-tender.

- Preheat oven to Broil
- Place the salmon with the marinade in a baking dish, smoked salmon side up. Brush the salmon liberally with the marinade and place the baking dish under the broiler.Broil the salmon for 8-10 minutes or until it starts to get nicely browned on top. This should yield a crispy on the outside and moist on the inside salmon, just a touch underdone. If you prefer well-done salmon, reduce the broiler temp to 400 and continue to cook for 3-4 minutes longer after the initial broiling.

- Drain the potatoes and return to the pot. Mash with the butter and milk, and season with salt and pepper to taste. Set aside when done.
- While the potatoes are cooking, start your filling. Brown the ground beef in a medium to large pot over medium heat until cooked through.
- Add the carrots and onion, and cook until softened, approximately 5 minutes.
- Add the tomato paste, garlic, thyme, cornstarch (or flour), and 1/4 teaspoon salt. Cook for one minute.
- Add the Guinness and Worcestershire to the meat, scraping up any browned bits from the bottom of the pot.
- Cover, reduce heat to low, and simmer 10-15 minutes.
- Preheat oven to 375F.
- Stir the peas into the beef mixture. Pour the beef mixture into a small baking dish (approximately 8×8 inches).
- Spread the potatoes across the top of the meat in the dish, edge to edge, completely sealing the meat in to trap the moisture and juices.
- Bake until the top is starting to brown, approximately 20 minutes. Serve warm.

Instructions
- Pre-heat oven to 190 degrees celsius (fan-forced).
- Grease a pie dish and line with pastry (joining pieces together where necessary using your fingertips). Trim edges and then line with baking paper and pie weights (use uncooked rice if you don’t have pie weights).
- Bake for 10 minutes before removing pie weights and baking paper and baking for another 5 minutes.
- Meanwhile, peel and slice apple and place in a saucepan along with lemon juice and rind and water. Bring to a simmer and simmer for 15 minutes or until apple becomes a pulp. Top up with water during the process if necessary.
- Take off heat and add butter, sugar and egg yolk. Stir until combined.
- Place apple mixture into pie shell and return to oven. Cook for 25 minutes.
- Meanwhile, make the meringue by beating egg whites and salt until stiff and then gradually adding the sugar, continuing to beat until you have a smooth, glossy mixture.
- When the pie is baked, spoon meringue onto top of pie to completely cover the filling.
- Place into the oven and bake for 10 minutes. Reduce oven temperature to 120 degrees celsius and bake for another 10 minutes.
- Serve pie warm or cold with cream or ice cream.

- Heat 1 tbsp olive oil in a large soup pot on medium heat. Cook the bacon until it’s nice and crispy, about 10 minutes. Remove the bacon to a plate with a paper towel on it, set aside to cool. Drain most of the bacon fat from the pan but leave a bit for flavor. When the bacon has cooled, crumble it up into small bits to serve on the soup later.
- Return the pan to the burner on medium heat, add the other tablespoon of olive oil. Add the onion, cook for about 5 minutes, until it begins to soften.
- Stir in the carrots, followed by the cabbage and garlic.
- After the cabbage and garlic have had a few minutes to soften, add the potatoes and sage. Add a bit of salt at this point, too.
- Add the liquids: vegetable broth, water, and Guinness. Add the bay leaf and fennel seed at this time, too. Stir well to combine. Bring the liquid to a boil, then reduce heat to simmer on medium. Simmer uncovered for about 30 minutes, until the potatoes are soft.
- Remove the soup from the heat. Discard the bay leaf, then puree the soup with a handheld blender, or transfer to puree in a food processor. I went for a consistency that still had some nice chunks of potato and other veggies, but you could go for a smoother puree if you prefer.
- Ladle the soup into bowls. Sprinkle bacon, cheddar and a bit of the shredded cabbage on top of each bowl to for a nice presentation. Enjoy with a glass of Guinness!

- Brown the lamb: Return the skillet to the stove, heat the remaining olive on medium. Add the lamb. Salt and pepper the lamb to taste, then cook for 5 minutes on one side to brown. Turn the lamb over, brown the other side for another 5 minutes.
- Transfer the lamb to the slow cooker. Pour in the chicken stock and the water, then add the sprigs of rosemary and bay leaf.
- Cook in the slow cooker for 1 hour on high, 8 hours on low. When cooked, stir in the baby spinach leaves for some nice green color.

- Add cubed potatoes, vegetable broth, salt, and pepper. Bring to a simmer, cover, and reduce heat to low. Cook for 10-15 minutes, or until potatoes can easily be pierced through with a fork (cooking time will depend entirely on the size of your potato cubes).
- Remove from heat and allow to cool for 2 to 3 minutes. Use an immersion blender and blend until smooth, or transfer soup in batches to a standard blender to process until smooth (remove the center cap from the lid and lightly cover with a kitchen towel to allow steam to escape. Never fill a blender more than halfway full with hot soup).
- Pour soup back into stock pot (if using a standard blender) and transfer back to the stove. Over medium-low heat, add whole milk and stir until incorporated and soup is heated to your liking.
- Serve warm with your favorite soup toppings, like chopped parsley, croutons, cheese, or crumbled bacon.

- 2 Tbsp brown sugar
- 2 Tbsp Irish whiskey
Instructions Make the Whiskey Cake:
- Oven temperature: 350℉ (180℃).
- Grease the pans using butter or a spray, line the bottom with parchment paper, then dust the sides with flour. Set aside.
- In a stand mixer or using a handheld mixer, cream the butter and sugar until very light and fluffy. It will begin to pale in color, too.Add about one third of the beaten eggs, and continue to beat medium speed.
- Now add about a third of the sifted flour. Repeat this step, then add the rest of the eggs and mix well. Turn the mixer to low and add the final flour and the whiskey and mix until well combined, but do not over mix.
- Using a scale, divide the mixture evenly between the two tins and place in the center of a preheated oven for about 35 minutes. If you don’t own a scale (I highly advise it for best baking results) just eye it. Since ovens vary greatly, do not open the oven until you start to smell the cake and it looks well risen (through the glass).
- Carefully check that the cake is done with a cake tester or thin skewer. If it is too raw, the cakes will fall and you won’t be happy, so the previous step is important.
- When the cake is done, remove them from the oven and allow to cool for about 15 minutes before removing from the tins.
- To remove: place a cooling rack over the top of the cake and flip it over quickly. Remove from the tin, peel off the parchment paper and allow to cool completely before filling.
Fill and Decorate the Irish Whiskey Cake:
- Make the whiskey buttercream by mixing all of the ingredients together in a bowl until a smooth spreading/piping consistency is formed.
- Using a cake leveler, or large serated knife, place the cake layers, flat side down on the counter and slice off the top to make them even.
- Save or freeze the leftover cake to make trifle(s)!
- Place one layer, CUT SIDE UP on a serving plate or cake stand and spread or pipe the whiskey buttercream over the top. I used a 2D tip if you wanted to do the same.
- Top with the second layer, but this time, CUT SIDE DOWN.
Make the Whiskey Glaze:
- Put all of the glaze ingredients except the whiskey into a small pot over medium heat. Bring to a boil and simmer for 2 to 3 minutes.
- Remove from heat and allow to cool slightly before adding the whiskey. Stir and check the consistency before pouring over the cake: it should be a bit more thick than it was when hot, but not so cool/thick that it won’t run off the edges of the cake.
- Pour over the cake and allow to run slightly down the edges. Decorate with some clover if you have it (for St. Patrick’s Day).
- Slice and serve.

- In a small mixing bowl, combine the old fashioned oats with boiling water. Allow to sit for 15-20 minutes before making your cake.
- Preheat your oven to 350 degrees F (175 degrees C) and generously coat your 9 x 13 baking pan with butter or non-stick cooking spray.
- In a large mixing bowl, cream together your butter with both white and light brown sugar. Pour your vanilla extract into eggs, mix, then add to the soaked oatmeal and combine.
- Add the baking soda, cinnamon, and nutmeg (plus optional salt) then combine. Add the flour and mix until thoroughly incorporated.
- Add the wet ingredients to your flour mixture and mix just until all of the flour has been incorporated. Transfer to your coated 9 x 13 pan and place on the middle rack of your preheated oven.
- Bake at 350 degrees F (175 degrees C) for 30-35 minutes, or until a toothpick inserted into the middle of your oatmeal cake comes out clean (or with a crumb or two on it, but not wet or ‘gooey’). Allow cake to cool in the pan while you make the frosting.
Caramel Pecan Frosting
- In a medium saucepan, melt your butter at medium heat. Add the light brown sugar, sweetened condensed milk, and vanilla. Stir to combine and until all of the brown sugar has melted.
- Whisk frequently while the caramel mixture heats up, then constantly while cooking. Reduce heat as needed to keep your caramel at a low (soft) boil, and just barely bubbling.
- Continue to whisk for 5-10 minutes, or until your caramel has thickened and darkened to a golden light brown caramel coloring. It will be soft, creamy, and still pourable (although very thick).
- Transfer your caramel mixture to a cool bowl, stir in crushed pecans (reserve some for topping your cake, if desired) and allow to cool 10-15 minutes (but still slightly warm) before spreading over your cake. Finish with additional crushed pecans, if desired.

Instructions
- Preheat the oven to 425°F.
- If you need to boil your potatoes, start them now while you make the lentil filling, otherwise, steam the frozen potatoes in the microwave according to package directions.
- In a large seasoned skillet, saute the onion for about 3 minutes before adding the drained or frozen mixed veggies. Continue cooking over medium-high heat until most of the liquid is cooked off.
- Now add in the cooked lentils and stir everything together. Continue cooking until excess liquid is cooked off.
- Finally, add the tomato sauce, tomato paste, coconut aminos, and seasonings. Mix everything together until combined and adjust seasonings to taste before turning off the heat.
- To finish the potato topping, use a fork or potato masher to mash the boiled or steam potatoes with the vegan butter and milk in a bowl. Mash them to your desired consistency.
- Smooth out the lentil filling in the skillet you used, a deep casserole dish, or about 6, 8 oz ramekins. Then top with the mashed potatoes.
- Bake the shepherd’s pie(s) for 10 minutes, just until the mashed potato begins to crisp and get golden brown on top.
- Remove and serve with a sprinkle of parsley, if desired.

They are basically little balls of cream cheese, butter, shredded coconut, and powdered sugar rolled in cinnamon to look like little taters. Our veganized Irish potatoes use unrefined coconut oil for the butter (works like a freakin’ charm!) and Tofutti cream cheese. They are SO easy to make and only need to chill in the fridge for about an hour – a great last-minute holiday treat.

- 4 oz. vegan cream cheese
- 1/4 cup coconut oil (measured solid*)
- 1 16- oz bag organic powdered sugar
- 1 tsp vanilla extract
- 2.5 cups unsweetened shredded coconut
- 2 Tbsp ground cinnamon
Instructions
- Place a large mixing bowl in the fridge or freezer to chill and get your hand mixer ready.
- Cream together the cream cheese, coconut oil, and vanilla extract until fully combined.
- Slowly add the powdered sugar in 3-4 batches and beat with the hand mixer in between each addition until a large ball forms. Stir in your shredded coconut until fully incorporated.
- Next, add your cinnamon to a shallow dish (like a pie dish or any plate, really). Use a small ice cream scoop (or your hands) to scoop out 1.5 – 2 Tbsp of the mixture and form it into a ball. Roll each ball in the cinnamon, coating it completely. The cinnamon coating and white insides are what make this beauties look like little potatoes!
- Line your Irish potatoes on a baking sheet and allow them to chill in the fridge for about an hour.

- 160 g bourbon cookies (or alternative vegan cookies)

- 50 g vegan block butter (or coconut oil (solid))
- 500 ml Guinness draught (or Guinness extra stout)
- 300 g vegan dark chocolate (I used 70%, use vegan milk chocolate for a sweeter cake.)
- 350 g silken tofu (drained)
- 150 g vegan cream cheese
- 25 g cocoa powder
- 1 teaspoon lemon juice
- pure maple syrup, to taste (optional)
- grated vegan chocolate (optional, for garnish)
Instructions
- Add the Guinness to a saucepan and bring to a simmer over medium heat. Keep a close eye on the pan as it may bubble over the sides of the pan once heated initially. Continue to simmer for about 20-30 minutes until the mixture has reduced to 200ml. Once reduced, transfer the liquid to a heat-resistant jar and place it in a cold water bath to bring the Guinness reduction to room temperature.
- Add the cookies and sea salt to your food processor and blitz for about 30 seconds until evenly finely ground. Add in the vegan butter and blend again until evenly combined and the mixture sticks together between your fingers.
- Line the bottom and sides of a 7″ or 8″ cake tin (with removable base) with some parchment paper. Press the cookie mixture into the base of the cake tin, and smooth it out with a ¼ cup measure or flat bottomed glass, making sure it is compact. Set aside in the freezer while you prepare the filling.
- For the filling, melt the chocolate over a bain-marie (double boiler). Add the Guinness reduction, melted chocolate, silken tofu, vegan cream cheese, cacao powder, and lemon juice to a high-speed blender and blend until smooth and creamy.
- Transfer the filling into the cake tin using a spatula to smooth it out. To get the swirl effect on top, place the cake tin on top of a turntable, and use your spatula to make a swirl print on the surface of the cake whilst spinning the turntable. Place in the fridge to set for 3-4 hours (or overnight if preferred).
- Once set, remove the cake from the tin. You can use a blow torch to gently heat the sides of the pan to make it easier for the cake to slide out of the tin.
- Garnish with some grated chocolate before serving.
Storage
- Keep this chocolate stout cheesecake in an airtight container and refrigerate for up to 5 days. To freeze, I recommend portioning it off into servings and individually wrapping them or sealing them in airtight containers before freezing. Then simply defrost for a couple of hours at room temperature before serving.

Add bell peppers, season with salt and pepper and continue to sauté for an additional 4 to 5 minutes or until vegetables become slightly caramelized and cooked down, but still hold a small bite. Set aside.
- Cheese sauce: In a large saucepan combine evaporated milk, egg, dry mustard, salt, and pepper and whisk together. In a large mixing bowl combine cheese, starch and lemon juice and toss together.
- Place saucepan over medium-low heat and whisk together for about 2 minutes. Whisk in small handfuls of the cheese mixture at a time, making sure not to add more cheese until the previous addition had been fully incorporated to the sauce.
- Continue to whisk and add cheese over the low heat until all the cheese has been added and a creamy and smooth sauce forms (make sure not to rush this process or your cheese sauce will not be smooth).
- To assemble: Spread half of the waffle fries onto a large platter and top with half of the bacon and half of the vegetable mixture. Ladle some of the cheese sauce over the nachos. Spread the remaining fries over the nachos and top with the remaining ingredients, including the fried egg(s). Season with salt and pepper and sprinkle with sliced chives. Serve immediately.

Transfer to a clean dish towel, roll and squeeze the grated potatoes to dry them out as much as possible (Use a dark colored dish towel since the potato starch can leave difficult stains on a white towel). Add the grated potato to a mixing bowl.
- Add the finely chopped onion, flour and salt and pepper. Mix the ingredients together.
- Beat one egg and mix it in to the potato mixture to bind it all together.
- Heat the oil and butter over medium heat in a large skillet. Drop the potato mixture in large spoonfuls into the pan with plenty of space between each cake. Use the back of the spoon to flatten the hash brown cakes. Cook for 4 to 5 minutes on each side until golden brown. Remove from the skillet and keep warm.
- Bring the water to a boil in a large cooking pot. Add the white vinegar. Reduce the heat and simmer. Stir the water to create a gentle whirlpool. Slowly tip one egg into the center of the water. Repeat with the other egg. Keep the heat low and poach for 3 to 4 minutes. Remove the poached eggs one at a time with a slotted spoon. Drain on kitchen paper.
- Serve the hashed potato cakes on individual serving plates and top with a poached egg. Season the eggs with freshly ground black pepper.

Ingredients
- 250g raisins
- 225g sultanas or currants
- 25g glace cherries, rinsed, dried and cut into quarters
- 300ml strong, cold tea
- 50ml Irish whisky (or any other alcohol of your choice – I sometimes use Green’s ginger wine if I don’t have whisky)
- 1 medium egg, beaten
- 200g caster or soft light brown sugar
- 220g self raising flour
- 1 teaspoon ground mixed spice
- 1 tablespoon orange marmalade (optional)
Instructions
- Soak the dried fruit in the cold tea and whisky overnight.
- When you’re ready to bake the Barmbrack, preheat the oven to 180C/160Fan/350F/gas mark 4. Grease and line and 900g (2lb) loaf tin. (My tin is 5×8 inches.)
- Stir the egg, sugar, flour and mixed spice into the fruit mixture until all the flour has disappeared and the mixture is smooth.
- Pour the mixture into the prepared tin and bake for 80-90 minutes or until the cake springs back when lightly pressed and a skewer inserted in the middle of the cake emerges clean. If the top of the barmbrack looks like it is becoming too dark, cover with a piece of baking parchment.
- Remove from the oven and leave to cool completely in the tin on a wire rack. While the cake is still warm, brush with marmalade if using. Leave the cake to go completely cold before slicing.

- Preheat oven to 350 degrees Fahrenheit. Grease a 9-inch round cake pan and set aside (optionally, add a round piece of parchment to the bottom for easy removal later).
- In a bowl, add butter and granulated sugar. Using a hand mixer (or stand mixer) beat until creamed and fluffy, about 1-2 minutes. Add eggs and vanilla extract and mix until creamy and smooth.
- In a separate bowl, add dry ingredients: flour, baking powder, and salt. Whisk to combine and remove clumps.
- Add half of dry ingredients to butter mixture and gently mix until just incorporated. Add half of milk and gently mix to incorporate. Repeat once more to incorporate remaining dry ingredients and milk. Do not overmix.
- Pour batter into prepared 9-inch cake pan. Bake for about 26-32 minutes, or until a toothpick inserted into the center comes out with crumbs, not batter. Or, gently press into the top of the cake with a finger. If cake springs back right away, it’s done. If it leaves an indent, your cake needs more time.
- Cool cake in pan on a wire cooling rack. Once cooled, turn out onto a serving plate and dust the top with confectioner’s sugar just before serving.
