  2. Add tomatoes, salt and cumin to blender. Pulse until smooth.
  3. Pour tomato mixture into separate saucepan on medium heat. Bring to boil then reduce to simmer while preparing the tortillas.
  4. Fry each tortilla for about 10-20 seconds on each side in the remaining oil. If necessary, add more oil. Don’t overcook. The tortillas should be softened but not crispy. Remove to a plate and blot with paper towel as necessary to remove any excess oil.
  5. Once the tortillas are cool enough to handle, begin assembly. Place 1/4 cup sauce on microwave safe plate. Spread evenly. Place about 2 or 3 tablespoons cheese and one tablespoon onion (the other half of the onion that wasn’t cooked) in center of a tortilla, roll up (or fold over) and place on top of tomato mixture on plate. Repeat for remaining tortillas. (We usually put two or three per plate.) Pour about 1/4 cup sauce on top of rolled tortillas. If desired, sprinkle some shredded cheese on top.
  6. Microwave assembled tortillas 1-2 minutes to melt the cheese. Serve immediately. If you prefer, you can assemble the entomatadas on an oven safe plate and heat slightly in an oven to melt the cheese.

  4. Add all of the ingredients–lentils, bulgur, fire-roasted tomatoes, tomato paste, veggie broth (or water), and spices– to your stockpot and increase the heat to medium-high and bring to a boil.
  5. Once boiling, turn the heat down to low and cook uncovered for approximately 30 minutes, stirring occasionally. The lentils should be cooked until tender but still keep their shape.
  6. Serve on a whole grain (or gluten-free) bun with your favorite condiments. I have a terrific homemade low-fat mayonnaise that is terrific with these. We also love to top our sloppy joes with a coleslaw that is really easy to make in minutes.

  • 2 cans chickpeas (drained, or 1 ½ cup cooked)
  • 5 teaspoons olive oil (separated)
  • ½ teaspoon garlic powder
  • 1 teaspoon thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 red bell pepper (or you can use a heaping ¼ cup of roasted red peppers or roasted red pepper tapenade)
  • ¼ cup tahini
  • ¼ cup water
  • ¼ teaspoon garlic powder
  • Juice of one lemon or lime (or one teaspoon lemon juice)
  • 1 pinch red pepper flakes

Instructions Make the roasted red peppers

  1. Place the whole red pepper on a flat griddle or cast iron pan and cook until the skin is blackened. Turning over to get all the sides. You can also roast them in the oven or air fryer.

  • 2 Tbsp. lemon juice
  • 1/4 tsp. garlic powder

Instructions Peel and Slice Kohlrabi:

  1. Remove the shoots from the outer skin with your fingers or to cut them off with a knife. These fibrous shoots may be discarded.
  2. Cut the leaves off the top of the kohlrabi with a knife. The leaves can be saved and used in another recipe or thrown in your compost bin.
  3. Cut the top and bottom of the kohlrabi off with a knife and discard. This will give you a flat surface on both the top and bottom portion of the vegetable and make it easier to cut. With the flat surface of the kohlrabi on the cutting board remove the skin with the knife and discard (the process is much like peeling a butternut squash or a pineapple).
  4. Cut the kohlrabi in half and then cut the halves into slices, making sure that the slices are relatively uniform in size to ensure even cooking.

Parboil The Kohlrabi:

  1. Place the sliced kohlrabi wedges in a pot of water on the stove top and bring to a boil. Once the water is boiling, reduce the heat slightly to a low boil and cook the kohlrabi for 10-12 minutes, or until they are slightly softened but not mushy.
  2. Drain the parboiled kohlrabi and place the wedges on some paper towels or kitchen towels and allow them to dry out slightly and cool.

Bread The Kohlrabi:

  1. Add 1 cup gluten free flour blend (or AP flour if not gluten free) to one bowl.
  2. In a second bowl, add 4 eggs and 1 tablespoon of water. Stir until completely combined.
  3. Add 1 ½ cups gluten free Panko breadcrumbs (or regular Panko breadcrumbs if not gluten free) in addition to 2 teaspoon each of garlic powder, onion powder, and paprika, along with 1 teaspoon kosher salt and ½ teaspoon pepper. Stir until combined.

  2. Once heated (the kohlrabi should sizzle as it hits the pan), place some of the kohlrabi slices in the skillet, being careful not to overcrowd the pan.
  3. Cook for 5 minutes on the first side, flip, and cook for another 4-5 minutes on the second side. Repeat with the remainder of the breaded kohlrabi, adding another tablespoon or so of oil in between batches.

  1. Preheat the oven to 450 degrees F. Wash and dry the eggplant. Cut them each in half.
  2. Generously sprinkle salt on each half of the eggplant and let sit for 30 minutes to draw the moisture out. Use a paper towel to dry the eggplant and remove moisture.
  3. Brush the eggplant with the 2 Tablespoons extra virgin olive. Sprinkle with salt and pepper and your favorite spices. Lay the eggplant out on a large non-stick or lined baking sheet and roast in the oven for 20 minutes.
  4. Flip the eggplant and put back in the oven for another 10 minutes until it’s started to brown and is perfectly tender.
  5. While the eggplant is in for the last 10 minutes, pour 2 tablespoons olive oil into a large pan and bring to medium-high heat.
  6. Add the onion and cook for around 5 minutes until softened and starting to brown.
  7. Add the garlic, ginger, cardamom, cloves and curry leaves and fry for a minute until fragrant, then add the remaining spices and fry for another minute.
  8. Pour in the passata and coconut milk, stir and bring to the boil.
  9. Reduce to a simmer and add the roasted eggplant, continuing to simmer and stir occasionally for 10 minutes. Remove the cardamom pods and cloves before serving. Serve with fresh cilantro and rice.

  5. Peel the garlic cloves and add them to the blender with the cumin seeds, then blitz to form a paste and transfer this to a bowl.
  6. Pour the soy sauces, brown sugar, lime juice and coconut milk for the tofu into the paste and mix to combine.
  7. Dry the tofu on kitchen paper, then cut it into cubes around 30-35mm (1½) square and 20mm (¾”) thick and add it to the marinade and allow it to marinate for at least 1 hour and up to 24 hours.
  8. Mix together all of the ingredients for the dipping sauce and set aside.
  9. If you are using bamboo skewers, soak them for 30 minutes before cooking, then thread the tofu onto the skewers. Heat a griddle pan as hot as you can, and when it is hot, brush with some neutral oil, then place them into the hot griddle pan.

Stir occasionally and keep an eye on the butter, this will take a few minutes, do not rush the process by turning up heat. After 4-5 minutes the center will erupt in a caramel color. The butter is now browned. Immediately turn off heat and add chopped sage leaves. They will ‘fry’ in the butter and become crispy.
  5. Cook pasta to package directions. While it cooks, grate parmesan.
  6. Strain pasta, pour onto a platter, drizzle with brown butter, sprinkle with cheese, sea salt, pepper and red pepper flakes (if using). Garnish with pine nuts and extra sage leaves if desired. Serve!

  5. Add all of the seasonings into the white sauce and stir until combined. Squeeze the roasted garlic directly into the white sauce.

  1. First, turn the Instant Pot onto saute and heat the olive oil in the inner pot. When the oil is hot, add the garlic and onions and saute them for about 1 to 2 minutes or until they are fragrant.
  2. Next, add the diced peppers, black beans, Italian herb mix  or chili seasoning, ground cumin, salt, and sugar (if you are using it). Once they are all added, saute for another minute.
  3. After a minute, pour in the water and give it a stir. Make sure you scrape off any food particles stuck at the bottom of the pot.
  4. Once you have scraped down the pot, add the pasta and evenly top it with marinara or tomato sauce. When you have added the pasta, do not stir the pot! Instead, lightly press the pasta down until it’s submerged under the sauce. Doing this will allow it to cook evenly.
  5. Next, close the lid of the pot, set the seal to closed, and pressure cook for 5 mins followed by a quick release.
  6. Finally, carefully open the lid and give the pasta a stir. Serve it in a pasta bowl and garnish with either finely chopped cilantro or parsley.

  1. You can make the black bean pasta recipe on the stove top if you don’t have an Instant Pot. We highly recommend getting an Instant Pot, because it will cut down the number of dishes you need and the time it takes to cook the pasta.
  2. Here’s what you need to do to make this on the stove top.
  3. First, fill a large stock pot with water and bring it to a boil. Next, add the pasta and cook according to the box’s instructions. This is usually about 10 minutes, give or take.
  4. As the water heats and the pasta cooks, heat the olive oil over medium heat in a large pot. Once the oil is hot, add the onions and garlic and saute for about 1 minute or until they are fragrant.
  5. When the onions are ready, add the green and red peppers and saute for about 1 to 2 minutes or until they start to soften.

  5. When the pasta is cooked to your liking, taste and add extra salt and grated Parmesan cheese if desired.
  6. If the sauce seems too stiff, add additional stock, cream, or water, up to 1/4 cup. The sauce will stiffen up as the pasta cools.

  • 1 tablespoon olive oil

Instructions

  1. Heat oil in a pan and add sliced onion. Saute until the onion turns translucent.
  2. Add minced garlic and the chopped white part of scallion. Saute for a few seconds.
  3. Add sliced mushrooms and cook until the moisture released by mushrooms dries up and the mushrooms are cooked.
  4. Add enchilada spice blend and saute for a few seconds.
  5. Next, add salsa and saute for a minute.
  6. Add spinach and cook for a few minutes.
  7. Once the spinach leaves get wilted add chopped scallion and cilantro. Mix everything and switch off the stove.
  8. Take a tortilla and spread around 1 tablespoon of enchilada sauce on one corner of it.
  9. Spread a generous amount of mushroom filling on top of the sauce.
  10. Top it with some shredded cheese and roll the tortillas tightly. Repeat the process with all the remaining tortillas.
  11. Spread some enchilada sauce on a baking dish.
  12. Arrange the tortilla rolls on it with the open side down.
  13. Spread the remaining enchilada sauce over the rolls.
  14. Top it with shredded cheese.
  15. Bake in a preheated oven at 200°C (around 400° F) for 18-20 minutes or until the cheese melts and starts getting golden brown patches.
  16. Garnish with chopped onion, cilantro, and scallion. Enjoy!

  1. Cook the beans. Rinse and drain the legumes next day, picking out any impurities (such as small pieces of rock). Add them to a 5-quart pot along with the vegetable stock. Bring up to a boil, then cover the pot, turn heat down to simmer, and cook 1 hour, stirring occasionally.
  2. Create the base flavor.Caramelize the onion. While the beans cook, heat the ghee in a large skillet over medium to medium-high heat. Add the onion and cook until soft and deep caramel in color, about 15 minutes, stirring occasionally. You can add a splash of water or turn the heat down at any point if the onions start to get too dark or the pan starts to get too hot.Add the aromatics.   3. Cut the cleaned leeks into ¾-inch pieces. Set aside.

Roast the Vegetables

  1. In a large cast iron skillet, cook bacon pieces over medium heat until crispy.
  2. When the bacon pieces are crisp, remove the skillet from heat, and remove the bacon to a small dish. Set aside.
  3. To the drippings remaining in the skillet, add butter, honey, and hot sauce, and toss to combine.
  4. Add the cubed butternut and cut leeks to the pan and toss to coat them thoroughly with the honey-bacon mixture. Season with salt, pepper, and paprika and toss once again.

  4. remove stem from portabella mushrooms, if applicable
  5. place grated parmesan, garlic and onion powder together in a small bowl and stir to combine
  6. spray slow cooker with non-stick spray
  7. spread a few tablespoons of sauce around bottom of slow cooker
  8. add a layer of eggplant
  9. cover with thin layer of sauce
  10. sprinkle with a layer of the parmesan mixture
  11. sprinkle some chopped basil on top
  12. next, place of layer of sliced mozzarella until fully covered

  6. For a creamy farrotto, add extra liquid as needed, about 1/4 cup at a time until the grains are cooked to the desired consistency. This should take about 10 more minutes.
  7. Stir in arugula or other greens and let them wilt.
  8. Add the fresh basil and stir to combine. Taste and season with salt.
  9. Add cheese if desired.
  10. Serve with additional grated cheese if desired.

Ingredients

  • 1 head cauliflower ((about 2 lbs) cut into small florets, 5-6 cups total)
  • 3 tablespoons adobo sauce (from a can of chipotle peppers in adobo*)
  • 2 chipotle peppers in adobo sauce (finely chopped*e)
  • 3 tablespoons olive oil (or avocado oil)
  • 1½ tablespoons taco seasoning
  • 1 tablespoon fresh lime juice
  • 1 cup sour cream (or greek yogurt)
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 tablespoons fresh cilantro (finely chopped)
  • ½ teaspoon salt
  • 12 gluten-free corn tortillas (charred)
  • 1 cup red cabbage (shredded (about ¼ of a small cabbage head))
  • 1 avocado (sliced)
  • ¼ cup fresh cilantro (roughly chopped)
  • 1 lime (cut into wedges)

  4. Spread the cauliflower in a single layer on the prepared baking sheet. Give each floret a little space, if they’re crowded, use two baking sheets. Roast at 450℉ for 30 to 35 minutes, stirring 2 to 3 times, until the cauliflower is tender, crispy, and charred at the edges.
  5. While the cauliflower roasts, make the cilantro lime crema. Combine 1 cup sour cream, 2 tablespoons fresh lime juice, 1 teaspoon lime zest, 2 tablespoons fresh cilantro, and ½ teaspoon salt in a small bowl and stir until smooth. Refrigerate until ready to serve.
  6. Char 12 gluten-free corn tortillas, one at a time, directly over a gas burner on low for about 30 seconds per side. If you don’t have a gas stove, warm them in a dry skillet over medium heat or wrap in a damp paper towel and microwave for 30 seconds.
  7. To assemble, layer the roasted cauliflower onto the charred tortillas. Top with 1 cup red cabbage, 1 avocado, and a drizzle of cilantro lime crema. Garnish with ¼ cup fresh cilantro. Serve with 1 lime cut into wedges on the side.

  1. Place panini pan on cooktop on med/high heat
  2. Slice bread 1/2″ thick, spread one slice generously with fig spread.
  3. Top with 2-3 slices of brie cheese. Top with second slice of bread.
  4. When pan is hot add butter to center of pan.
  5. Use a brush or swirl pan to spread butter out to accommodate sandwich.
  6. Place sandwich on pan and top with press. Lower heat to med/low. Let sit for 2 minutes and then check bottom piece of bread. When golden and crispy turn over and place press on sandwich again.
  7. Allow to cook until cheese is melted and bottom piece of bread is crispy and golden.
  8. Cut in half on the diagonal and serve.

  4. Divide onto four plates, and sprinkle with grated Parmigiano Reggiano cheese, if desired,, and serve right away.
