- Preheat the oven to 180°C / fan 160°C / 356°F / gas mark 4.
- Heat the oil over a high heat in a large oven proof pot.
- Brown the oxtail all over. It’s best to do it in batches. Set the oxtail aside.
- Continuing using the same pot, lower the heat and add the onions, stirring vigorously to soak up all the fats. Fry for about 3 minutes, or until softened and translucent.
- Add the garlic, carrots and celery to the onions. Stir fry for about another 5 minutes, sweating the vegetables.
- Add the tomatoes, and cook for another 5 minutes until a very chunky sauce forms.
- Tip the oxtail in with the vegetables and stir.
- Turn the heat up to high then pour in the red wine. Let it bubble for 3 minutes.
- Add the sherry and bay leaves, cook for another 2 minutes.
- At this point you have to check the level of liquid in the pot because you don’t want it to dry out while cooking. Add enough water that all ingredients are barely covered. Continue cooking until a bubbling point is reached.
- Place the lid on the pot and transfer to the oven.
- Cook for 1½ hours.
- Check the liquid level every hour or so and add a splash of water if required.
- Lower the temperature to 160°C / fan 140°C / 320°F / gas mark 3, add the parsley and stir, then cook for another 1½ hours.
- Fish out the oxtail and pieces of meat that fell off because it’s so tender. Set aside.
- Get a large bowl or pot and sieve the remaining contents. The goal is to separate the vegetables and bay leaves from the sauce.
- Give the vegetables a squeeze to get as much of the juices out as possible, then discard them. What you’ll be left with is a rich, dark and glossy gravy.
- Tip the oxtail back into the sauce, stir and gently reheat before serving.
- Serve immediately, with chunky potato wedges – tapas-style. Enjoy!

- You will need escalivada, a Spanish roasted vegetable dish which you can make ahead of time. Otherwise, you can roast the vegetables in the oven on another tray while the potatoes are roasting. Essentially, escalivada is roasted green and red pepper, onion and eggplant, then peeled, sliced thinly and tossed with salt and olive oil. This is part of the topping for the potatoes.
- Preheat the oven to 375°F.
- Slice potatoes evenly, about ¾” (2 cm) thick.
- Drizzle approximately 1 tablespoonful of olive oil on the baking tray, then arrange potato slices to fill it (you can use a brush or your fingers to spread oil).

- It’s time to construct the tapas! You can leave the potatoes on the tray and assemble them there, however, I’m going to show you how I make them on a plate, though.
- Spoon some of the cream and manchego mixture evenly on each potato slice. Next, add some of the escalivada. Finally, top with some chorizo. Serve immediately.

- Place the stock in a saucepan, cover with a lid and bring to a gentle simmer. Remove from heat and add the saffron. Leave the lid on to keep it warm.
- Add the chorizo to a pan over medium-high heat and cook for 2-3 minutes until you notice a few bits getting golden.
- Reduce the heat to medium. Add the oil, onion, celery and garlic and cook for a further 2-3 minutes until the vegetables have softened.
- Add the rice and cook for 1-2 minutes until it starts to look a little glassy and translucent in places.
- Bring the stock back to a simmer, then turn it off again.
- Add a ladleful (about 125ml / ½ cup) of the stock to the rice mixture. Scrape any colour (aka flavour) off the bottom of the pan and stir constantly until the rice has absorbed all the stock.
- Pour in all of the remaining stock and cover the pan with a lid. Let it come to a simmer, then immediately turn the heat down to low. You want the rice to cook at a very low simmer now for around 20 minutes until almost all the stock has been absorbed and the rice is cooked, tender with just a little bite.
- Stir in the manchego cheese then taste and add salt and pepper to taste (I usually add about ¼-½ tsp of salt and ¼ tsp finely cracked black pepper).
- Transfer to a plate and cool for 15-20 minutes at room temperature only, stir in the parsley, then transfer to the fridge for 1-2 hours until cold.

- 1 lb smoked salmon (I used my local market’s Chili Smoked Salmon, but use whatever brand or flavor of smoked salmon that’s available and sounds good to you)
- 3/4 cup Chimichurri sauce

- Add the flour, sugar, salt, black pepper, and chili powder to the bowl of a food processor fitted with the chopping blade. Pulse a couple of times to combine all the ingredients.
- Add the cheese and pulse 2 or 3 times to combine. Add the butter, all at once, and pulse until the mixture resembles bread crumbs. Sprinkle in the water, and pulse a few more times, just until the mixture starts to look like dough. (If the dough is still quite dry, sprinkle in another teaspoon or two of water.)
- Dump the dough – which will be a bit crumbly – into a large bowl or onto a clean work surface. Press the dough together and knead a few times with your hands to bring the dough together. Wrap tightly in plastic wrap and refrigerate for at least 30 minutes, and up to 1 day.
- Preheat the oven to 400 degrees and have at the ready: a baking sheet covered with parchment paper, a 1 1/2-inch biscuit cutter or sharp knife or pastry wheel, a cup of flour, a large flat spatula, and a rolling pin.
- Sprinkle some flour across a clean works surface. Remove the dough from the refrigerator, unwrap it, and lay it on the work surface. Dust the top with a sprinkling of flour. Roll the dough into a thin sheet, approximately 1/8 inch thick. (NOTE: If the dough has been in the refrigerator for several hours, you’ll probably have to let it soften on the counter for 10 – 15 minutes to let the butter soften before rolling out.)
- Run the spatula underneath the dough from all sides to loosen any dough that’s stuck to the work surface. Cut out the crackers with the biscuit cutter and lay them on the baking sheet very close together, but not touching. (You can also cut the crackers into squares with a knife or pastry wheel.)
- Bake for 14-16 minutes, until the edges of the crackers are starting to brown. Remove from the oven onto a wire rack and allow the crackers to cool completely on the sheet. Store in an airtight container at room temperature for up to 3 weeks.
- Mix the mayonnaise and garlic together in a small bowl.
- Lay a cracker on a work surface or platter. Top with about 1 teaspoon of garlic mayo. Lay a slice or two of avocado over the garlic mayo. Top avocado with about 1/2 oz smoked salmon and then drizzle with about 1 tsp chimichurri sauce.

- 1 small onion
- 2 bay leaves
- 4 cloves

- 1 large leek ((about 8 to 10 oz/ 225-280 grams once finely chopped))
- 3 cups whole milk
- 2 oz butter ((good quality))
- 3 oz flour
- 1 ½ tsp sea salt
- ⅛ tsp ground nutmeg
- 1 egg ((with a splash of milk for egg wash))
- ¾ cup breadcrumbs ((as needed))
- olive oil ((as needed for frying))
Instructions
- Begin by attaching two bay leaves to a small onion with four cloves.
- Finely chop the leek(s) if you haven’t yet done so, then sauté them in about 2 Tbsp olive oil over medium heat (do not brown).
- While the leeks are cooking, put the milk in a pot and add the onion. Heat to 175˚F (80˚C).
- In a medium sized pot, melt the butter, then add the flour.
- Stir briskly, and cook the flour and butter to avoid the raw flour taste. Begin adding some of the hot milk (remove the onion first). Continue adding milk and stirring quickly until all the milk has been added.
- Add salt and nutmeg and continue cooking and stirring until the béchamel thickens (watch the video to see the consistency). Next, add the sautéed leeks.
- Cook over low heat, stirring until the béchamel stays when pulled away from the side of the pot (see the video for a visual).
- Place into a container, cover with parchment paper, then refrigerate overnight.
- The next day, shape the mixture into round balls about 50 g (1.75 oz) each.
- Dip each croquette in beaten egg with some milk. Then immediately roll in breadcrumbs, and store in container until ready to fry. (We froze some like this and they were great to use later; just defrost in the fridge then fry.)
- When ready to fry the leek croquettes, heat some olive oil to 320˚F (160˚C). Fry the croquettes until golden brown and heated all the way through.Remove from oil and drain well. Place on paper towel lined plate or tray.
- Serve hot with a little mayonnaise, if desired.

Ingredients
- 1/2 pound uncooked chorizo, cut into bite-sized pieces (about 5-6 sausages)
- 1 tablespoon olive oil
- 2-3 cloves of garlic, sliced
- 1 bay leaf
- 1 cup of dry red wine
- Chopped fresh parsley for garnish
Instructions
- Place a frying pan or saucepan over medium-high heat.
- Add the chorizo and cook for 3-5 minutes searing the chorizo until it starts to brown on both sides.
- Add the olive oil and use a wooden spoon to scrape any bits of chorizo from the bottom of the pan.
- Add the garlic and allow it to soak up the flavor of the oil and chorizo. Cook the garlic for 1-2 minutes.
- Add the wine and bay leaf. Reduce the heat to a simmer and slowly cook for 20-25 minutes.
- It is ready when the wine becomes slightly thickened.
- Place in a serving dish and sprinkle with fresh parsley. Serve with crusty bread as a snack or as part of a tapas night.

Ingredients
- 125 grams broken, raw cashews
- 150 grams tofu
- 3-4 tsp white miso
- 4 tsp nutritional yeast
- juice third lemon
- 50 grams vegan Chorizo sausage (finely diced)
- 50 grams fine bread crumbs
- sunflower oil for deep frying
Instructions
- Soak the cashews for at least 1 hour in some warm water. You want them to be quite softened
- In a high speed blender, blend the cashews with a little of their soaking water until completely smooth
- Add the tofu and blend
- Add the miso, lemon juice, nutritional yeast and salt. Blend again.
- Taste to see if the mix is cheezy enough. If not, add more miso and nutritional yeast until you think it has a tangy, cheezy flavour.
- Mix in the little pieces of chorizo and put it in the coldest part of the fridge to set a bit to make the mix easier to work with.
- Put the breadcrumbs out on a plate.
- Once the mix is firmer, put a tablespoon of the mix onto the breadcrumbs. You can now roll the mix into a ball about the size of a large walnut, covering it with breadcrumbs. As the mixture picks up the crumbs it will become easy to manipulate into a ball.
- Heat the oil in a saucepan. Test to see if the oil is hot enough by dropping a crumb of bread into it. It’s the right temperature when the breadcrumb sizzles and turns golden in a few seconds.
- Carefully cook the croquettes in batches, making sure they are golden on all sides. Remove from the pan and drain on paper towels.

- Toss mushrooms with olive oil and place on a baking sheet. Bake mushrooms in 375 degree F oven for 20 minutes until they begin to soften.
- When mushrooms are done, there should be water that has settled in the mushroom cap. When mushrooms are cool enough to handle, drain out the liquid.
- Stuff mushrooms with shredded cheese and top with a slice of roasted pepper. Drizzle with additional Spanish olive oil and bake for an additional 10-15 minutes or until the cheese has melted.
- Garnish with fresh parsley.
