  2. Slice the ends off the squash and discard. Slice it in half, lengthwise and use a spoon to scrape out the seeds. Place the halves skin-side up on the cutting board and slice crosswise into ½- to ¾-inch thick slices.
  3. Place the sliced squash on the prepared baking sheet, drizzle it with the olive oil and maple syrup and season with the sea salt. Use your hands or a spatula to mix until well coated.
  4. Transfer to the oven and roast for 20 minutes, or until fork tender. Remove from the oven and allow the roasted squash to cool while you continue with the rest of the recipe.

Toast the Walnuts

  1. Reduce oven temperature to 350 degrees F.
  2. Place the walnuts on a small baking sheet and bake for 5 minutes, or until lightly toasted. Transfer to a cutting board and chop. Set aside.

Instructions Prepare the casserole:

  1. Preheat the oven to 375 degrees F. Line a rimmed baking sheet with foil. Rub the butternut squash halves with the oil and place cut side down on the baking sheet. Roast 35-45 minutes or until fork tender.
  2. When cool enough to handle, scoop out the butternut squash flesh and purée in a food processor until smooth. You’ll end up with roughly 4 – 4 1/2 cups of purée.
  3. Transfer the purée to a fine mesh sieve lined with cheesecloth placed over a bowl. Cover loosely with plastic wrap and let stand in the refrigerator overnight to allow liquid to drain from the purée.
  4. Preheat the oven 350 degrees F when you’re ready to bake the casserole, and spray an 8×8″ baking dish with cooking spray.
  5. Beat the butternut squash, eggs, maple syrup, milk, butter, cinnamon, vanilla and salt until smooth, then pour into the prepared baking dish.

Prepare the streusel:

  1. Combine the oats, flour, brown sugar, pecans, cinnamon and pinch of salt in medium bowl.
  2. Cut in the cold butter in with a pastry blender, fork, or your fingers, until it’s in pea-sized clumps.
  3. Sprinkle the streusel evenly over the top of the butternut squash filling and bake at 350 degrees F for 45 minutes or until the streusel has browned and puffed up in the center.
  4. Cool on a wire rack for about 10 minutes, then serve.

  • 8 ounces cremini mushrooms (sliced)
  • 1 small yellow onion (diced)
  • 1 rib celery (diced)
  • 1 sweet crisp apple (peeled, cored and diced)
  • 2 cloves garlic (minced)
  • 2 teaspoons fresh chopped thyme (or rosemary or a mix of both)
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ⅓ cup shredded parmesan cheese
  • 1 cup shredded cheese (I do a mix of mozzarella with sharp cheddar but any other cheese works)

Instructions

  1. Preheat the oven to 400°F/200°C, then cut each acorn squash in half and scoop out the seeds with the help of a spoon or an ice cream scoop and discard the seeds.
  2. Place on a sheet pan, drizzle with olive oil, season with salt and pepper and roast for 30-40 minutes or until fork tender.
  3. Meanwhile, make the filling: In a skillet over medium high heat, add olive oil and melt the butter then add ground chicken. Cook until it’s browned.
  4. Add the mushrooms, onion, celery and apple and cook for 4-5 more minutes or until the onions are soft and translucent. Add garlic, thyme, salt, pepper and cook for 30 seconds.
  5. Mix in the parmesan and remove from heat.
  6. When the acorn squash are cool enough to handle, carefully scoop out the flesh leaving about ¼ inch of wall all around the squash (try not to create a hole in of the sides, I use an ice cream scoop to do this, or a spoon).
  7. Add the scooped squash to the filling, and stir to combine.
  8. Divide the filling between the 4 acorn squash halves
  9. Top the filling with shredded cheese and roast for 5 minutes, then broil for a couple of extra minutes until the top is bubbling and lightly browned.

Instructions Main Recipe

  1. Grease a 9″ by 13″ casserole dish with animal fat, butter or coconut oil. Set aside. Preheat the oven to 325℉, if you plan to bake the casserole immediately.
  2. Place all ingredients into a large 14-cup food processor (or puree ingredients in two batches if necessary). Puree 30 to 50 seconds, scraping down the sides once, until all ingredients are smooth and well mixed.
  3. Pour puree into casserole dish and smooth the top. Make Crumb Topping.

Crumb Topping

  1. In (dry) food processor, blend walnuts to a meal.
  2. Add the remaining ingredients and pulse until they come together nicely, clumping somewhat.
  3. Sprinkle topping on casserole. Cover and freeze, if you’re making the casserole ahead of time. Or bake in preheated oven if eating immediately.
  4. Bake in preheated 325℉ oven until even the middle is hot and the topping is golden brown but not too dark.  Check after 45 minutes and cover loosely if it’s browning too quickly.  Total times will vary slightly, about 1 hour total. (Note: the center will be slightly jiggly, not fully set.)
  5. For make-ahead casseroles, take casserole out of the freezer the afternoon/night before you plan to serve it, allowing about 24 hours for it to defrost in the fridge. Uncover the casserole while it defrosts. Cook according to above baking instructions.
  6. Once baked, allow casserole to cool, and set up further, for 20 minutes, before serving.

  3. Remove from heat and remove the lid. Add the water, wine, parmesan cheese, salt and pepper and stir vigorously for 1-2 minutes until the risotto has absorbed all of the liquid.
  4. Prepare the sage leaves while the risotto is in the oven. Heat the remaining tablespoon of olive oil over medium heat until it shimmers. Add the sage leaves and fry just until dark (not brown) and remove to a paper towel lined plate.

Curry recipe:

  1. Meanwhile, place a large pan on a medium heat and fry the onion, ginger and chilli for a few minutes.
  2. Then place another small frying pan on a medium heat and toast the peanuts for a few minutes until they begin to brown.
  3. When the onion is translucent add the garlic and cook for one minute until fragrant before adding the curry powder, garam masala, cumin and turmeric.
  4. Pour in the stock, increase the heat until it begins to simmer and stir in the tomato puree.
  5. Add the chickpeas and spinach and let them cook for a few minutes until the spinach is wilted.
  6. Stir in the sour cream, add the roast butternut squash (it should be cooked at this point). Allow the curry to simmer for a few more minutes until the chickpeas are tender.
  7. Serve immediately with rice or naan bread topped with fresh chopped coriander/cilantro and toasted peanuts.

Cook the rice with dried fruits:

  1. While the veggies are roasting, cook the rice. Place the rinsed wild rice in a pot with boiling water (if your rice is pre-soaked, use a 2 to 1 water-to-rice ratio, or 3 to 1 ratio if it’s not).
  2. Place the wild rice first as it needs to cook for about 10 minutes longer than the brown rice.
  3. Add the other half of the sauce mixture you used for coating the veggies to the rice, stir, cover the pot with the lid, and reduce the heat to its very lowest setting to help the rice cook evenly (for about 20 minutes). Remove from heat, add the cranberries and the raisins. Cover again and let it sit covered, so the steam will plump the rice and fruits.

  2. While the oven is preheating, prepare the ingredients that will be roasted.
  3. Peel the butternut squash and scoop out the seeds. Dice it into about 1-inch cubes. Chop shallots, garlic cloves, celery, carrots and apple. Keep in mind that after roasting we will be using an immersion blender to puree these ingredients so don’t spend too much time making sure everything is the correct size and shape.
  4. Layer the butternut squash, carrots, celery, shallot, garlic cloves, and apple on the lined baking sheet. Drizzle with 3 tbsp. of olive oil and toss lightly. Top with thyme sprigs and place in the oven. Roast for about 30 minutes or until the squash and carrots are fork tender. Flip the vegetables using a spatula at least once throughout the roasting process.
  5. While the vegetables are roasting, mince the sage leaves and peel and grate the ginger. This would also be a good time to cook the bacon and chop the chives for serving.
  6. When the vegetables are done roasting remove the baking sheet from the oven. The leaves should have fallen off from the thyme sprigs and you can discard the woody stems. Transfer the vegetables to a large stock pot or Dutch oven and place it on the stovetop.
  7. Add the broth, grated ginger, minced sage, salt, and pepper to the stock pot and stir. Bring the broth to a boil, then reduce heat and allow it to simmer for about 10 minutes.
  8. Remove the soup from the heat. Carefully use an immersion blender to blend the soup until the vegetables are fully pureed and no chunks remain. This can also be done by using a high powdered hot/cold blender. You will need to blend in batches if using this method. It is helpful to let the soup cool partially before transferring it to the blender pitcher.
  9. Once pureed, stir in your milk of choice until the soup is a uniform creamy orange color.
  10. Serve the soup hot topped with chopped, cooked bacon, chopped chives, and a swirl of cream.
  11. Leftovers can be stored in an airtight container in the fridge for 3-4 days or in the freezer for up to 2 months.

  • ¼ teaspoon cayenne pepper, optional
  • Juice of a small lemon (about 2-3 tablespoons juice)

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit (218 degrees Celsius and line a two half sheet baking trays with silicone baking mats or parchment paper.
  2. Use a large sharp knife to chop the pumpkin into quarters, cutting around the stem. If you’re having a hard time cutting it, try microwaving it or baking it for a few minutes to soften it. You don’t need to peel the pumpkin now–you can remove the skin after it’s roasted. Remove the innards and set aside. I find grapefruit spoons to be really useful for this task.
  3. You can separate the seeds from the membrane while they roast, but you don’t want to roast the seeds at the same time since they’ll burn at a higher temperature.
  4. Cut the pumpkin into smaller crescents (easier to peel later) and add to a baking tray. I don’t like mine to dry out, so I recommend you rub them with a little bit of grapeseed oil or spray them with vegetable broth. If opting for the broth, I’d cover the tray in tin foil so they stay moist and the broth doesn’t evaporate. Season the pumpkin with sea salt and fresh cracked black pepper.
  5. Slice the sweet potatoes lengthwise into halves or quarters, then add those to a different tray. Add oil or broth and season the same way. Cover if using broth.
  6. Bake at 425 degrees Fahrenheit (218 degrees Celsius) for approximately 35-45 minutes or until both pumpkin and sweet potatoes are easily pierced with a fork. Let cool enough to handle and remove the skin.
  7. While the pumpkin and sweet potatoes are cooking, take this opportunity to saute onions until they are translucent (over medium high heat, about 4-5 minutes), then add the garlic and saute another minute. Set aside.
  8. Blend everything–you’ll likely need to do this in batches. I have a 64 oz blender and I did it in two batches. So if doing in batches, add half the peeled pumpkin, half the peeled sweet potatoes, half the onion and garlic mixture, and half of the spices and broth. If you want an ultra silky smooth texture, you can add a splash of oil but I didn’t think this was needed. I blended my soup for about 1 minute per batch. If you only have an immersion blender, you can add everything to a big pot and blend until smooth that way.
  9. Add all the blended ingredients to a large pot and cook for 10 minutes over medium heat (with a lid on… it will bubble and because of how thick it is it can kind of get everywhere if you don’t cover it) until everything is nice and hot.
  10. The 10 minutes while it cooks are perfect for roasting the seeds. Spread the cleaned seeds out in a single layer on a parchment paper lined baking tray. If they’re a little wet when you season them you don’t need oil to make it stick. I just put salt and pepper on mine but use what you like. Roast for about 10 minutes at 350 degrees Fahrenheit (177 degrees Celsius), stirring at the halfway point. Once they cool, you can store these in a jar on the counter. Or your stomach.
  11. Serve pumpkin and sweet potato soup warm with crusty bread, a sprinkle of seeds, a little fresh thyme or sage, and a grind of black pepper. Enjoy!
  12. Refrigerate leftovers up to 5 days in an airtight container. It also freezes quite well.

Instructions Noodles

  1. Fresh lasagna noodles need no cooking. If using dried lasagna noodles, prepare in salted, boiling water according to package directions. Drain and set aside. (If using no-boil noodles, increase liquid and baking time)

Preparing the squash

  1. Preheat oven to 425* F. Toss squash, 2 Tablespoons oil, and 1 teaspoon salt on a baking sheet. Season with pepper. Bake until light gold and tender, 25 to 30 minutes. Let cool.
  2. Melt butter in a small saute pan over medium-high heat. As soon as it starts to sizzle, add sage and cook until light gold and slightly crisp at edges, 3 to 4 minutes.
  3. Place squash in a medium bowl and mash 1/2 with the back of a wooden spoon. (I use my hands to do this) Leave the other 1/2 of the squash in small chunks. Gently stir in sage-butter mixture and chicken or vegetable broth. Season with 1 teaspoon salt and 1/4 teaspoon white pepper.

Ricotta Filling

  1. Reduce oven temperature to 375* F. Combine ricotta, cream, yolks, mozzarella in a medium bowl. Season with 1/2 teaspoon salt and 1/4 teaspoon white pepper and pinch of nutmeg.
  2. Spread 3/4 cup of ricotta mixture in a 9 cup baking dish. Top with a layer of noodles. Spread 1/2 of the butternut squash mixture over the noodles. Top with a layer of noodles. Spread 1 cup of ricotta mixture over noodles. Repeat layering once more, (noodles, squash, noodles, ricotta) Sprinkle Parmesan over ricotta mixture.
