  6. On the remaining empty area of the skillets, put about 2 Tablespoons of chopped onion into each skillet and 2 Tablespoons of mixed vegetables. (If you’re using sturdier vegetables like Brussels sprouts or broccoli, remember to slice them thinly for optimum cooking.)
  7. Put the skillets onto the heated outdoor grill. Don’t move the tofu, vegetables, or sausage for several minutes, so that it can brown on one side. (If you have a cover, this is a good time to put it down, so that the heat stays in & it cooks faster.) Once it has browned nicely, flip everything with a long spoon or spatula. Allow it to cook for a few more minutes before moving again. Once everything is evenly browned, and the onions have bits of caramelized color on it, the skillets are done. Carefully scoop the tofu scramble and sausages onto four plates.

Instructions

  1. Add the flour, baking powder, baking soda, salt, and sugar to a bowl and stir with a wire whisk to combine.
  2. Add the eggs, buttermilk, and melted butter and whisk just until the ingredients are combined. You will have a few small lumps – that’s ok. It’s important to not overwork the batter.
  3. Set a skillet over medium heat and add enough butter to generously coat the bottom of the skillet.
  4. When the butter has melted, add the batter to the skillet to form pancakes. I usually use about 1/3 cup of batter per pancake – BUT, don’t add the batter all at once. Add a small amount of batter to the skillet to make small pancakes. As the batter begins to set, carefully add more batter to the top of each pancake. This is how to make thick, fluffy pancakes. (See photos above.)
  5. When the tops of the pancakes are covered in small bubbles and the sides look set, they are ready to flip. Use a spatula to flip them over and cook until browned on the second side. (*See note below about monitoring temperature.)
  6. Flip the pancakes out onto a plate, wipe out the skillet with a paper towel, or rinse it briefly in the sink, add a new pat of butter, and continue cooking pancakes until all of the batter has been used.

  5. Roll the dough out onto a lightly floured surface and knead for 5 to 10 minutes. Place the dough into a greased bowl (you can use 1-2 tsp of vegetable oil to coat the bowl you mixed everything in). Cover bowl with saran wrap and then a kitchen towel. Let sit until the dough has doubled in size, approximately 60-90 minutes.
  6. When dough has doubled in size, punch it down. Then put it back on a floured surface and using a rolling pin, roll the dough into a rectangle approximately 15×9 inches.
  7. Scoop the marshmallow fluff into a small bowl and microwave for 15 seconds. This will make it softer and easier to spread. If you are using the cinnamon, mix it into the fluff now. Spread the marshmallow fluff across the dough. Sprinkle the chocolate chips and additional graham cracker crumbs across the fluff. Drizzle with chocolate syrup. Let the dough sit like this for about 5-10 minutes for the fluff to cool again which will help prevent it from oozing out of the rolls too much from being warm.
  8. From the long edge, tightly roll the dough all the way to the other long edge and pinch dough together to seal. Using a serrated knife, cut the log in half. Then cut each half into half again so that you have four equal pieces. Lining up two pieces at a time, cut each into three rolls so that you have a total of 12.
  9. Coat the bottom of your 9×13″ baking dish with some additional melted butter and sugar to coat. Place the cinnamon roll slices close together in the dish (four rows of three) and let them rise until the dough has doubled again, approximately 45 minutes. (If you are making these the night before, once the rolls have doubled in size, cover them in plastic wrap and place them in the refrigerator. In the morning, pull them out to warm to room temperature before baking).
  10. Preheat the over to 350F. Once the rolls have doubled in size, place them in the oven and bake for about 30 minutes or until they are starting to brown.
  11. While the rolls are baking, prepare the icing. Whisk the cream cheese in a stand mixer until creamy. Add the milk and whisk in until combined. Sift in the powdered sugar and whisk until smooth. You can also add some flavorings such as vanilla if desired.
