  8. Turn oven to 425 degrees F.
  9. Bake your sheet pan meal on the bottom rack for 25-30 minutes or until the chicken reaches 170 degrees F. You want to make sure and check the sheet pan meal towards the end of cooking because depending on your oven and the cut of chicken it could take less time than the 25-30 minutes.

  6. After 10 minutes, remove the pan from the oven and place the cherries around the chicken.
  7. Stir together the pomegranate molasses and honey in a small jug and pour over the cherries (take care to avoid the chicken skin or it will burn) and sprinkle with the lemon zest. Sprinkle with the remaining salt and pepper and return to the oven for 30 minutes.

Then remove chicken and place on plate, loosely cover with foil to keep warm, and set aside.
  4. Add chopped shallots, chopped leeks, sliced mushrooms, and minced garlic to skillet, and cook until softened, about 5 to 6 minutes, stirring often.
  5. Then add white wine, scrape any bits left in skillet with wooden spoon and continue cooking for about 5 to 6 minutes, until it has reduced just a little, stirring occasionally.

Turn the heat down to low and let everything warm through until the cheese melts, about 2-3 minutes. Remove from the heat and garnish with chopped basil.

Ingredients

  • 4 chicken breasts (boneless and skinless)
  • 125 g shredded mozzarella cheese (about 1/3 of a 500 g pkg)
  • 1 pkg 28 g basil leaves (whole (or your own garden basil) )
  • 1 dry pint grape tomatoes (sliced in half )
  • reduced balsamic vinegar glaze (drizzled)
  • additional fresh basil leaves ((set some aside))

Instructions

  1. Spray a baking sheet pan with non- stick cooking spray or line it with parchment paper. Preheat oven to 350 degrees F/175 degrees C.
  2. Add about 3-4 whole basil leaves to each chicken breast, then about 5 1/2 grape tomatoes (or however many you can fit). Top with grated (or sliced) mozzerella cheese.
  3. Add the remaining grape tomatoes to pan and cook for about 25 minutes, depending on thickness of your chicken breast.
  4. When chicken is done (no longer pink inside) and the internal temperature has reached 165 degrees F/74 degrees C, remove it from the oven.

Garnish:

  1. Drizzle reduced balsamic vinegar over everything. Garnish with fresh basil leaves. (this recipe tastes best if you eat the fresh basil with the chicken- I highly recommend this!)Serve hot.
