Instructions

  1. Preheat oven to 350F Grease and flour two 9-inch round cake pans, putting a round of parchment paper at the bottom of each one.
  2. Whisk together the flour, baking powder and salt and set aside.
  3. Put the sugar and lemon zest into a food processor and process until moist, pale yellow, and no large pieces of zest remain. This will take under a minute.
  4. Cream the butter and sugar together in a stand mixer for 3 minutes, scraping down the sides of the machine as necessary.
  5. Beat in the eggs, one at a time, scraping down the sides of the bowl in between each addition. Beat in the lemon paste, if you’re using it.
  6. Turn the mixer to low and add the flour mixture, and just before it’s completely mixed in, add the buttermilk and lemon juice. Blend until combined, but don’t over-mix. I like to finish by hand to get everything incorporated.
  7. Gently fold in the blueberries. Note: I didn’t use quite the whole pint. Then divide the batter equally between the two prepared pans. Spread out to an even layer.
  8. Bake the cakes in the center of the oven for about 35 minutes, or until just beginning to pull away from the sides of the pan, the top springs back when touched, and a toothpick comes out without any wet batter on it (moist crumbs are fine.)
  9. Let the cakes cool on a rack for 10 minutes, then remove them from the pans and continue to cool completely before frosting.
  10. To make the frosting, beat the soft butter and sugar together, gradually adding enough lemon juice to create a creamy spreadable frosting. If it is too thick, add more lemon juice, and if it is too thin, add a little more sifted sugar.
  11. Frost the cake and then decorate as you like. Store, covered, at room temperature.

Instructions Poach the pears

  2. Simmer on low, turning occasionally, until cooked through, 20-30 minutes, depending on the pears. Cool pears in syrup. This can be made two days ahead. Cover and refrigerate.

Make the tart shell

  1. In a medium-sized ovenproof bowl, combine the butter, oil, water, sugar, and salt.
  2. Place the bowl in the oven for 15 minutes until the butter is bubbling and starts to brown just around the edges.
  3. Remove the bowl from the oven using oven mittens (the bowl will be hot, and the mixture might sputter a bit), dump in the flour, and stir it in quickly until it comes together and forms a ball that pulls away from the sides of the bowl.
  4. Transfer the dough to a tart pan with a removable bottom and spread a bit with a spatula; reserve a small piece of dough, about a size of a raspberry, for patching any cracks.
  5. Once the dough is cool enough to handle, pat it into the shell with the heel of your hand, and use your fingers or fork to press it up the sides of the tart mold.
  6. Prick the dough all over with the tines of a fork, then bake in the oven for 15 minutes at 350 degrees Fahrenheit or until the dough is golden brown.
  7. Remove from the oven and if there are any sizable cracks, use the bits of reserved dough to fill in and patch them. Let the shell cool before filling.

Make the almond filling

  1. Beat the almond paste with the sugar and flour until smooth. The paste might be dry and hard to work with. Microwave it in 10 seconds intervals until soft and pliable.
  2. Gradually beat in the butter until smooth. Add eggs, liquor, and almond extract if using, and mix until combined.

Assamble

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Place the pre-baked tart shell on a baking sheet. Carefully spread the almond filling over the shell. Arrange the pears on top without touching each other and slightly press them into the filling; sprinkle with sliced almonds (optional).
  3. Bake the tart for about 45 minutes, or until the almond filling between the pears has browned.
  4. Cool tart in pan on a rack before serving. Push pan bottom up, releasing tart from pan; dust with confectioner’s sugar or glaze as desired.

Ingredients

  • 2 cups whole milk (500g)
  • 3.5 tablespoons unsalted butter (50g)
  • 1 vanilla bean (or 1 tablespoon extract or paste)
  • 3/4 cup +1 tablespoon all purpose-flour (100g)
  • 2 cups unsifted powdered sugar (250g )
  • 1 teaspoon sea salt (or 3/4 tsp table salt)
  • 2 large whole eggs
  • 2 large egg yolks
  • 1/4 cup spiced rum
  • 1 oz beeswax (see notes on beeswax)
  • 1 oz butter (salted or unsalted)

Instructions MAKING THE BATTER (2 days prior to baking)

  1. If you’re using a whole vanilla bean cut the vanilla bean in half, and scape the seeds out.
  2. Place the milk, butter, and whole vanilla bean and seeds in a medium sized saucepan over medium heat.
  3. Cook for about 3-5 minutes, stirring consistency and bring to boil. Watch carefully as the milk can overflow if cooked too high/fast.
  4. Once it reaches a boil (about 180-185℉), immediately remove from heat and set aside to cool about 20 minutes.
  5. While the milk is cooling, sift together flour, powdered sugar, salt.
  6. Gently mix the eggs and egg yolks together. You’re trying keep too much air from getting into the eggs so don’t beat too intensely. Then, strain or pour into the flour mixture (no need to mix together at this point).
  7. Once the milk has cooled, (to be exact you want it less than 120℉ so it’s cool enough that it doesn’t cook the eggs), remove the vanilla bean and place in a large bowl. Do not discard the vanilla bean. We’ll be using the vanilla bean and bowl later.
  8. Pour milk mixture onto the flour/egg mix and gently stir together. It will have visible lumps at this point.
  9. Pour the batter over a fine mesh strainer into the large bowl you’ve put the vanilla bean into. Press any lumps out of the batter through the stainer so you get a nice, lump free batter.
  10. Stir in the rum and vanilla extract or vanilla bean paste if using.
  11. Cover the bowl with plastic wrap and place in the fridge for 2 days (a full 48 hours), stirring occasionally to break up the batter. During this time it might get a small film on the top. This is fine and normal. Just stir to redistribute the batter.

PREPARE MOLDS (1 hour before baking)

  1. If using copper or metal molds, place the canele molds on a parchment or aluminum foil lined baking sheet. Place the baking sheet in the oven and set to 475℉. This will warm up the molds which helps the beeswax mix stay on the molds but not get too thick.
  2. Melt your beeswax in a glass jar or bowl in the microwave or in a pan on a stove top. See notes and post for tips on melting beeswax.
  3. While the wax is melting, line a baking sheet with parchment paper or aluminum foil and place a cooling rack on top.
  4. Once the wax has melted, add the butter and stir until it is incorporated. If you need to, you can continue heating in the microwave or on the stovetop until it’s all melted.
  5. Remove canele molds out from oven and using a pair of tongs or a heat proof gloves and pour the hot wax into the canele mold, filling all the way up and rotation around if necessary until it coats the entire inside.
  6. Immediately pour the hot wax from the first mold into the next mold and place the first mold upside down onto the prepared baking sheet we’ve lined with parchment and a cooling rack This allows the wax to drip off the canele mold so it doesn’t have too much wax inside.
  7. Moving quickly so the molds stay warm, continue filling the molds with the wax and pouring into them next mold, while setting the coated molds upside down on the wire rack. If the wax coating is too thick, place molds back in the oven until it melts and pour out the extra into the original container of wax.
  8. If using silicone or cavity molds – use a pastry brush to brush the wax into the mold.
  9. Once all the molds have been coated in wax, place them in the freeze for at least 1 hour before baking.
  10. While the molds are in the freezer, line another baking sheet with parchment or aluminum foil and place in the oven to preheat.

BAKING CANELES

  1. When ready to bake, take the rested batter out of the fridge and give it a good stir to make sure it’s thoroughly mixed.
  2. Remove the molds from the freezer and using a pourable measure cup or ladle, fill each mold with batter up to about ¼ inch from the top as they will expand while baking.
  3. Remove the preheated baking sheet from the oven and place the canele molds directly on the hot sheet, about 1-2 inches apart, making sure they’re equally spaced.
  4. Carefully place the baking sheet back in the middle rack of the oven.
  5. Immediately turn down the heat to 450℉ and bake for 15 minutes, turning the baking sheet half way through.
  6. After 15 minutes, turn down the heat again to 350℉ and bake for another 45-60 minutes, turning the pan each 15 minutes.
  7. If/when the caneles rise far up out of the canele mold, remove from oven and let the settle back into the molds. They should settle down in a minute or two and you can use tongs to help them back into the mold. Be sure to stop the timer so you keep an accurate record of how long they need to bake.
  8. Baking time can vary depending on the size of your molds, so start checking if they’re done after 45 minutes by removing the canele from a mold. They should slide right out when tipped upside down.
  9. If the caneles are still golden or have the ‘white tip’ (see troubleshooting section), place back in the mold and bake/check at 5 minutes intervals until they’re done. I recommend checking one canele at a time as they all can be done at different times.
  10. When done, immediately remove from mold and let cool on a wire rack 1-2 hours at room temperate.
  11. These are best the day they’re made and will stay crisp about 6-8 hours.

  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 8 ounces semisweet chocolate, chopped
  • 1 teaspoon instant coffee powder
  • 8 ounces semisweet chocolate, chopped
  • 2 ounces unsweetened chocolate, chopped
  • 2 teaspoons vanilla
  • 1 pound butter at room temperature
  • 5 egg whites
  • 1 cup sugar

Instructions

  1. Preheat oven to 350º.
  2. To make the cake, place the unsweetened chocolate in a microwave-safe bowl. Gently microwave, using 30-second increments, stirring frequently, until almost all melted.
  3. Remove and let sit, stir until smooth. If needed zap again for a few seconds to make sure all chocolate is melted.
  4. Spray two 9-inch cake pans with non-stick oil and flour spray like Bakers Joy.
  5. Whisk together the 2 cups of flour, baking soda, and salt in a medium bowl. Set aside.
  6. Combine the brown sugar and 8 tablespoons of soft butter in the bowl of an electric mixer fit with the paddle attachment. Beat on low for 3 minutes.
  7. Scrape down the sides of the bowl, then beat on high for 2 minutes. Scrape down the sides of the bowl again and beat on high for another 1 ½ minutes.
  8. Add 4 eggs, one at a time, beating on high for 30 seconds after adding each egg. Scrape down the bowl after each addition, then beat on high for 2 more minutes.
  9. Whisk in the vanilla, then add the melted chocolate. Beat on low for 30 seconds, then scrape down the bowl.
  10. Microwave 1 cup of water until near boiling in a microwave-safe Pyrex measuring cup.
  11. With the mixer on low, add a third of the flour mixture. Mix, then add ½ cup sour cream; allow to mix for 30 seconds.
  12. Add another third of the flour and the remaining sour cream and mix for another 30 seconds.
  13. Add the remaining sifted flour and the boiling water and mix for an additional 30 seconds before removing the bowl from the mixer.
  14. Use a rubber spatula to finish mixing the batter until it is smooth and thoroughly combined. You do not want to over-mix.
  15. Pour the cake batter into the prepared pans, dividing it evenly. Smooth the tops with an offset spatula.
  16. Bake until a toothpick inserted in the center comes out clean, 45 to 50 minutes.
  17. Remove the cakes from the oven and cool in the pans for 15 minutes at room temperature. Remove cakes to cooling racks and refrigerate until needed.
  18. To make the ganache, heat the heavy cream, 2 tablespoons of butter, and 2 tablespoons of sugar in a 2½-quart saucepan over medium-high heat, stirring to dissolve the sugar. Bring the mixture to a boil.
  19. Place 8 ounces of semisweet chocolate and the instant coffee powder in a heatproof bowl. Pour the boiling cream over the chocolate. Allow to stand for 10 minutes, then stir until smooth. Keep at room temperature until ready to use.
  20. To make the buttercream: Heat 1 inch of water in the bottom half of a double boiler over medium heat. Place 8 ounces of semisweet chocolate and 2 ounces of unsweetened chocolate in the top half of the double boiler.
  21. Tightly cover the top with plastic wrap. Allow to heat for 8 to 10 minutes, add vanilla and stir until smooth. Set aside until needed.
  22. Place 1 pound of butter in the bowl of an electric mixer fitted with a paddle. Beat the butter on low for 2 minutes, then on medium for 3 minutes. Scrape down the sides of the bowl.
  23. Beat on high until light and fluffy, about 4 to 5 minutes. Transfer the butter to a large bowl. Set aside until needed.
  24. Heat 1 inch of water in the bottom half of a double boiler over medium heat. Place 5 egg whites and 1 cup sugar in the top half of the double boiler. Gently whisk the egg whites until they reach a temperature of 120°F, about 3 to 5 minutes.
  25. Transfer the heated egg whites to the bowl of an electric mixer fitted with the whisk attachment. Beat on high until stiff peaks form, about 4 minutes. Remove from mixer.
  26. Fold the melted chocolate into the butter, using a rubber spatula to thoroughly combine. Fold in the whipped egg whites until thoroughly combined. Set aside.
  27. To assemble the cake: Remove the cakes from the refrigerator and turn them over so the top side is facing up. Trim off the tops of the cakes, if they are rounded. Slice each cake horizontally into 2 equal layers.
  28. Place the top layer of a cake onto the bottom of a closed 9-inch springform pan. Evenly spread 1½ cups of the buttercream over the cake in the springform pan. Place the bottom layer of the first cake onto the buttercream and gently press it into place.
  29. Pour 1¼ cups of ganache over the cake layer, spreading the ganache evenly to the edges. Refrigerate the remaining ganache.
  30. Place the top layer of the second cake on top of the ganache and press it into place. Spread 1½ cups buttercream evenly over this layer. Place the remaining bottom cake layer, cut side down, onto the buttercream, and gently press into place. Cover the entire cake and pan with plastic wrap and freeze for 1 hour.
  31. To decorate the cake: Fill a pastry bag fitted with a large star tip with 1 ½ cups of buttercream. Remove the cake from the freezer. Run a metal spatula or table knife around the edges next to the pan to release the cake from the springform pan. Transfer the cake to a serving plate. Using a cake spatula, evenly spread the remaining buttercream over the top and sides of the cake. Refrigerate the cake for 1 hour to allow the frosting to set.
  32. Fill a pastry bag fitted with a medium-sized star tip with remaining ganache. To decorate the cake, first pipe a ring of the buttercream stars around the outside edge of the top of the cake. Then pipe a circle of ganache stars (each star touching the other) inside the ring of buttercream. Alternate the rings of buttercream stars and circles of ganache stars, until the entire top of the cake is covered.
  33. Refrigerate the cake for at least 1 hour before cutting.
  34. To cut and serve the cake: When ready to serve, slice the cake and let it rest at room temperature for 10-15 minutes before serving.

  5. After the mixture has been infused, pour it into a saucepan and place over medium heat.
  6. In a separate bowl, whisk the egg yolks for 2 minutes or until pale and thick.
  7. Once the half & half mixture is steaming, slowly pour it into the egg yolks, whisking continuously.
  8. Once all of the half & half is incorporated into the egg yolks, scrape the mixture back into the saucepan and place it over medium heat.
  9. Allow the custard to heat up and thicken, stirring constantly with a wooden spoon. Once the custard is at 165ºF, it should be thick enough to coat the back of the spoon. The custard is done if a line remains when you swipe your finger across the back of the spoon.
  10. Pour the custard through a fine-mesh strainer into a clean bowl.
  11. Whisk in the heavy cream, mint extract, and creme de menthe.
  12. Pour the custard into an airtight container and refrigerate overnight.
  13. Place an airtight container in the freezer.
  14. The next day, churn the custard according to your ice cream maker’s instructions for about 20 to 25 minutes until thick and airy.
  15. About 5 minutes before the ice cream is done churning, place the chocolate chips in a microwave-safe bowl and heat in 20-second increments, stirring in between heatings until the chocolate is completely melted and smooth.
  16. Remove the ice cream from the freezer, and using a silicone spatula, drizzle the melted chocolate into the container quickly, flicking your wrist back and forth to make small chocolate lines in the bottom and on the sides of the container.
  17. When the ice cream is done churning, spoon a layer of ice cream into the airtight container. Drizzle more melted chocolate on top of the layer.
  18. Repeat this process until all of the ice cream is in the container. Using a spatula, stir the ice cream in the container to break up the hardened chocolate lines into small bits.
  19. Cover and freeze for at least an hour before scooping.
  20. Line a small baking sheet with parchment paper, and set aside.
  21. Using an ice cream scoop (you can use whatever you have!), scoop ice cream out of the container and place it onto the parchment baking sheet, leaving room in between each scoop. Remember to work quickly!
  22. Once all of your ice cream is scooped onto the baking sheet, place a wooden skewer into the center of each scoop about halfway through the scoop.
  23. Place the pan in the freezer for at least an hour or overnight if possible.
  24. Combine the chocolate chips and vegetable oil in a small metal bowl, and set this atop a saucepan with about an inch or so of water in the bottom.
  25. Place the saucepan over medium-high heat, and stir the chocolate mixture frequently until melted and smooth. Remove from the heat.
  26. Remove the frozen ice cream scoops from the freezer. Holding the scoops by the wooden skewer and over the bowl of melted chocolate, spoon melted chocolate over the top and sides of the ice cream scoop to coat it completely. Dip the bottom of each scoop into the chocolate quickly, then place it back on the parchment baking sheet.
  27. Repeat until all scoops are covered in chocolate. Remove the skewers from the top of each bon bon, and freeze for 30 minutes before enjoying.

  2. Make the biscuits into fine crumbs by either placing in a blender or use the end of a rolling pin to bash in a bowl.
  3. Add the melted butter and blend or mix in with a spoon until evenly distributed. (If using a blender, you’ll need to poke the biscuit crumb down with a wooden spoon at intervals as it tends to stick to the sides).
  4. Tip crumb mix into the cake tin and pat down evenly with a rubber spatula then smooth it around the outer edge to give a crisp edge.
  5. Place tin in the freezer (or fridge if you don’t have room) while you make the cheesecake topping.
  6. Whisk the double cream with an electric whisk (or by hand) until it forms soft peaks (it’s so easy to overwhip double cream so only go this far, we don’t want stiff cream as it will get whisked more later).
  7. Place cream in fridge.
  8. Then whisk together the Philadelphia cream cheese, caster sugar and vanilla extract until thoroughly combined.
  9. Next, add the cream and whisk in until just combined. Again, you don’t want to overdo this stage.
  10. Place half of the mixture over the biscuit base and smooth out with a spatula.
  11. Spoon over half of the salted caramel spread with a teaspoon in 6 evenly spaced mounds.
  12. Using a metal skewer (or tip of a very small knife), swirl out each mound to spread the salted caramel (it’s good practice for what you’ll be doing on the top layer).
  13. Add the rest of the cream cheese mixture and smooth over with a spatula.
  14. Repeat the spooning on of the salted caramel spread (6 mounds) to use up the rest of the jar.
  15. Finish off by making more swirls with a metal skewer to make a pretty pattern and fill the surface.
  16. Chill the cheesecake in the fridge for at least 5 hrs or overnight.

  5. Place cake pan in large roasting pan. Add enough hot water to roasting pan to come halfway up sides of cake pan.

  1. Bring whipping cream to simmer in small saucepan over medium heat. Remove from heat. Add chocolate and whisk until smooth.

  7. Drain and pat dry.
  8. Slightly roll out the puff pastry, working with one sheet at a time.
  9. Cut into 6 strips (along the short edge).
  10. Place jam and water in a bowl. Microwave for about 30 seconds just to heat slightly to ease spreading.
  11. Spread some sauce on the strip of puff pastry.
  12. Arrange apple slices on the top half of the slice from end to end.
  13. Fold lower half over apples, and roll.
  14. Place in muffin tin.
  15. Bake for 40 minutes or until golden and done (sauce will bubble into pan).
  16. Let cool for 5 minutes, loosen and remove to finish cooling.
  17. Decorate with sprinkles, or wait until completely cooled and sprinkle with icing sugar.

For the Cream Puff Dough (Choux Dough):

  1. Preheat the oven to 425°F (218°C).
  2. Line a baking sheet with foil and grease the foil.
  3. In a large pot over medium-high heat, add the water, milk, butter, sugar, and salt.
  4. Once it comes to a simmering boil, remove it from heat and quickly mix in the flour with a wooden spatula until fully incorporated.
  5. Put the pot back over the heat for 2 minutes, mixing the entire time. This is important for removing excess steam.
  6. Then remove the pot from the heat and mix for another 3 minutes to slightly cool and release more steam.
  7. Little by little, add in the whisked eggs, stirring constantly until everything is fully combined and the dough is stretchy and thick.

  1. Melt the butter in a heavy bottomed small saucepan over medium heat.
  2. Whisk in the sugar and bourbon, and bring to a simmer.
  3. In a large bowl, whisk the egg until well blended. Add a little of the hot bourbon mixture to the egg, and whisk. Continue to add the bourbon mixture a little at a time, to temper the egg. Once all the liquid has been added to the egg, pour all the liquid back into the pan, and return it to medium heat. Bring to a light simmer and cook for several minutes, until thickened. Keep warm.

  1. First, roughly crush your Oreos and set them aside
  2. Either using a stand mixer with a whisk attachment or using an electric handheld mixer, add the room temperature cream cheese to the mixing bowl and beat it until it’s smooth. Next, add in the vanilla and powdered sugar (icing sugar) and mix until it is fully combined. In a different mixing bowl, add heavy whipping cream, and start to mix, first slowly and increasing the speed until the mixture has formed stiff peaks. Now, add the whipped cream to the cheese mixture and fold it in gently. Next, fold in the crushed Oreos and white chocolate chips. Place the cream cheese mixture onto the chilled Oreo crust and flatten it so it becomes an even layer (an angled palette knife helps with this)
  3. Place the Oreo cheesecake in the fridge for a minimum of 5 hours, but preferably overnight

Optional cheesecake topping

Instructions Pastry Cream

  1. In a saucepan bring milk, vanilla, and salt to a simmer over medium heat. Do not boil the milk as it can overflow the pan and also overcook the eggs when tempering.
  2. In a separate bowl, whisk together the egg yolks, sugar, cornstarch. It should be thick, creamy, and pale yellow.
  3. While whisking, slowly add ½ cup of the hot milk mixture to the egg yolk mixture to temper it. This insures that the eggs don’t overcook and curdle.
  4. Add the remaining milk mixture half a cup at a time, while continuously mixing.
  5. Return to saucepan and cook over medium low to medium heat until the mixture is thick and bubbling. Remove from heat once the mixture boils.
  6. If adding butter, add one tablespoon at a time and mix until fully incorporated before adding the next. Sometimes the butter separates a bit and makes the mixture greasy. If this happens, whisk continuously for a few minutes until it’s fully combined and cooled down a bit. It should recombine and no longer be greasy.
  7. Once everything is fully combined and slightly cooled but still warm, pour the mixture through a fine mesh strainer into another bowl. This will make for a very smooth filling.
  8. Cover with plastic wrap, placing the wrap directly on top of the pastry cream so it doesn’t get a film on top.
  9. Then chill until ready to use, at least two hours or up to 2-3 days in advance.

Tart Dough

  1. Using standing mixer with paddle attachment, or using a land held mixer with a large bowl, cream butter, sugar, and salt and medium speed until combined.
  2. Mix in the egg, scraping down the bowl to ensure it is fully incorporated.
  3. Add the flour and mix on low until just incorporated, scraping down the bowl as necessary. Do not overmix.
  4. On lightly floured surface, divide dough into 2 balls and shape each into a dish ½ inch thick.
  5. Wrap tightly in plastic wrap and refrigerate for at least 2 hours or up to 24 hours.

Baking Tarts

  1. When ready to bake, preheat oven to 325 ℉.
  2. Remove the dough from the fridge and roll out to about ⅛ inch thick.
  3. Working quickly so the dough stays cold, cut out circles about ½-1 inch larger than the sides of the mini tart pans and gently place the dough into the pans, being careful to not stretch it out as want it to stay in place and not shrink back to it’s original size when baking. Re-roll remaining dough and repeat.
  4. If mini tarts need more dough, add more dough and press into place. If dough gets too soft, put it back in the fridge or freezer for 10-15 minutes. Do not add more flour.
  5. Once you’ve filled the tart shells, cut off an any excess using a knife. Then, score the bottoms of the tarts by gently poking the bottom of the tart shells with a fork about 2-5 times, depending on the side of your shells.
  6. Before baking, chill or freeze the the mini tart shells for 15 minutes.
  7. Place the chilled tarts on a baking sheet and bake in the pre-heated oven for 14-18 minutes (for 4 inch tarts), turning pan half way in between. Baking times will vary depending on size of tart shells.
  8. When tarts are golden brown, remove from oven and let cool.

Assembling Mini Fruit Tarts

  1. When ready to assemble, cut up fruit.
  2. Remove pastry cream from fridge and stir to combine. Add to a pastry bag with a large tip. Pipe the pastry cream into the tarts, about ¼ cup per tart if using 4 inch tart shells.
  3. You can leave the pastry cream as is if you want it slightly bubbled in the middle, or you can use an offset spatula or knife to smooth out the tops as shown in the post.
  4. Add the fruit.
  5. If you want to glaze the fruit, mix jam (typically apricot but you want use whatever your wish) with a tablespoon or so of water and use a pastry brush to brush all over the fruit.

  4. Add the salt and maple syrup to the date mixture. Blend for about 10 to 15 seconds, until combined. The crust should now be somewhat wet and able to easily hold together.
  5. Transfer the crust to the tart pan. Use your fingers to press the crust flat across the bottom of the pan, bringing it up the sides. Press any cracks flat.
  6. Bake the tart for 10 to 12 minutes. Remove from the oven and let cool.

Make the Chocolate Filling

  1. While the crust is cooling, melt the chocolate in a double boiler. (To create a double boiler, bring a few inches of water to a simmer in a medium pot. Place a heat-safe bowl on the pot. The water should not touch the bowl.)
  2. When all of the chocolate has melted, remove the bowl from the heat. Add the Vegan milk and cornstarch to the chocolate and whisk to combine. (You need to do this right away or the chocolate will start to harden again.)

  5. Tap the pan on the counter a couple of times to get rid of any air bubbles. Bake for 60-70 minutes.

Let the cheesecake cool completely on a wire rack in the pan for about an hour, then cover with foil and chill in the refrigerator for at least 6 hours or overnight.

Cheesecake:

  1. Stir 1 tbsp hot water and 1 tbsp instant coffee together in a small cup until dissolved. Let cool. In a small bowl, stir this coffee with ⅔ cup heavy whipping cream. Set aside.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. Generously butter the bottom and sides of a 9-inch springform pan. Dip 12 ladyfinger cookies into the coffee and liqueur mixture just long enough to get them wet, do not soak them! Arrange the ladyfingers on the bottom of the pan (break or cut the last one to fit and fill the gaps). Wrap the outside of the pan with aluminum foil, covering the bottom and extending up the sides (see recipe notes for more tips).
  4. Next, in a large bowl, with an electric mixer, beat one package of the cream cheese, ⅓ cup of the sugar, and ¼ cup cornstarch on low speed until smooth. Scrape the sides of the bowl and beaters with a spatula as needed.
  5. Blend in remaining cheese, one package at a time. Add the eggs, one at a time, and continue to beat slowly until combined.
  6. Beat in the remaining 1 cup sugar and 1 tbsp vanilla extract, and beat on medium speed just until light and fluffy. Slowly beat in the heavy cream mixture until blended; take care not to over whip!
  7. Spoon the batter into a springform pan. Place the pan in a large shallow pan containing hot water about halfway up the springform pan. Bake the cheesecake for about 1 hour and 10 minutes, or until the center barely jiggles when the pan is gently shaken.
  8. Remove the cake from the water bath and let cool in the pan, on a wire rack, for 2 hours. Cover with plastic wrap and refrigerate until completely cold, preferably overnight or at least 4 hours.
  9. Top the cold cheesecake, still in the pan, with a layer of remaining 12 ladyfingers dipped in the coffee mixture. Transfer the cake to the freezer until completely frozen, 3-4 hours or overnight.

Tiramisu:

  1. In a medium-size bowl, whip the 1 ½ cups cold heavy cream with the mixer on high speed until it thickens and soft peaks begin to form. With the mixer still running, add 2 tbsp sugar and beat until the stiff peaks form. Do not over mix! Beat in 1 tbsp vanilla.
  2. Gently fold in the 8 oz. mascarpone with a rubber spatula.

Assemble:

  1. Remove the cake from the freezer and let it stand at room temperature for about 10 minutes. Spoon the ⅔ of the mascarpone mixture on the top of the cheesecake and even out with a frosting spatula. Since the cheesecake is still very cold, the mascarpone cream will set fast.
  2. Release and gently remove the sides of the springform. Spread the remaining mascarpone cream around the sides of the cake.
  3. Lastly, sprinkle with cocoa powder or chocolate curls to decorate.
  4. Refrigerate at least 2 hours, until the mascarpone layer is cold and cheesecake layer has defrosted.

  1. Break wafers into smaller pieces, and place in a food processor; pulse until fine crumbs. Add butter to cookie crumbs, and process until well blended. Press the cookie mixture into the bottom and up the sides, about ½-inch, of a removable-bottom tart pan. Set aside.

For the Cheesecake:

  1. Fill a medium pot one-third full with water and bring it to a low simmer over medium heat. Place a heatproof bowl on top of the pan snugly, but will not touch the simmering water.
  2. Reduce the heat to low and add the 12 ounces chopped chocolate and 2 teaspoons espresso powder into the bowl of the double boiler. Heat until the chocolate is completely melted, stirring occasionally. Remove the pot from the heat, leaving the bowl of chocolate over the hot water. Set aside until needed.
  3. Using a stand mixer, with the paddle attachment, blend the 24 ounces cream cheese on low until completely smooth, about 2 minutes, scraping down the sides of the bowl occasionally. Add in 1 cup granulated sugar, 1/3 cup light brown sugar, and 2 & ½ tablespoons cocoa powder and beat until smooth. Add in the 4 eggs and 2 egg yolks, one at a time, beating until just combined, about 15-20 seconds each.
  4. Slowly add in ¾ cup heavy cream and 2 teaspoons vanilla, and mix until just combined, about 20 seconds.
  5. Remove the bowl from the food processor, and using a rubber spatula, fold the melted chocolate into the cheesecake batter, ensuring that the batter is evenly blended. The batter will be very thick at this point.
  6. Pour half of the cheesecake filling over the prepared crust. Spoon the raspberry jam over the filling, and lightly swirl it into the filling. Pour the remaining batter on top.
  7. Place the foil wrapped springform pan in a roasting pan or large baking pan. Place the roasting pan in the preheated oven and pour enough hot water into the pan to come up the sides of the springform pan about 1-inch.
  8. Bake the cheesecake in the water bath for 1 hour and 10 minutes, or until the center of the cake is set but still slightly jiggly. You can also test it with an instant read thermometer to see if it has reached between 140° to 150° F. The cake will set completely as it cools.
  9. Remove the cheesecake from the water bath and place the pan on a wire rack to cool. Carefully loosen the foil, then immediately run the tip of a knife or an offset spatula around the sides of the pan, to prevent the top from cracking as it cools.
  10. Let the cake cool completely in the springform pan, then transfer the cheesecake to the refrigerator to chill for at least 6 hours before adding the ganache.

For the Ganache:

  1. Add 8 ounces chopped chocolate to a medium bowl and set aside.
  2. In a small saucepan over medium-heat, bring 1 & ¼ cups heavy cream to a rolling boil then immediately remove from heat. Pour the cream on top of the chocolate pieces and set aside for 1 minute. With a whisk, mix the melted chocolate into the cream, until smooth and glossy.
  3. Using a spatula, add in ¼ cup butter and stir until the butter is completely melted. The ganache will be dark and glossy. Pour the ganache over the cooled cheesecake. Place in refrigerator until ganache is set, about 1 hour.

To Garnish & serve:

  1. Top cheesecake with fresh raspberries and a dusting of cocoa powder.
  2. To serve, slice the cheesecake with a thin-bladed sharp knife, wiping the knife clean between each cut.

  1. Preheat your oven to 130°C/265°F (110°C/240°F if using a fan or convection oven) and line a large tray with baking paper. I strongly recommend using an oven thermometer for the most accurate results.
  2. Measure out your caster sugar and set aside.
  3. Place the reduced aqua faba into a large, clean bowl along with the cream of tartar, vanilla and xanthan gum (if using). Use an electric whisk or stand mixer to mix until it becomes thick, pale and frothy.
  4. Keep the mixer on and slowly start adding in the sugar, around 2 tablespoons at a time. Make sure the first 2 tablespoons of sugar are completely mixed in before adding the next 2.
  5. Keep whisking until the mixture forms very stiff peaks. If you’re using xanthan gum, it will whip a lot quicker so just whisk for as long as you can before it starts sticking to the mixers. You should be able to hold the bowl upside down for a few seconds without the mixture moving around.
  6. Spoon or pipe the mixture onto your lined baking tray and bake for 2 hours.
  7. After this time, turn off the oven completely and do not open the door. Keep it in there with the door closed for at least 4 hours before removing it (leaving it overnight is ideal). This will give it time to firm up and prevent excess cracks. Don’t worry too much about any cracks though- they can be covered up with the cream.
  8. Whip up your cream of choice and spoon or pipe it onto the pavlova just before serving.
  9. Top with fresh fruit of your choice and enjoy!

  3. Prepare a large pastry bag with a medium or large tip
  4. Sift together the almond flour, powdered sugar, and instant coffee or espresso powder and set aside.
  5. Using a standing mixer with a whisk attachment or a large bowl with a hand held mixer add the egg whites, granulated sugar, and kosher salt.
  6. Whip the egg whites on medium to medium high until they reach stiff peaks, about 6-8 minutes on a standing mixer. The egg whites should start to clump together in the whisk part of the mix. Once it clumps in add the vanilla and mix until combined.
  7. Now for the macaronage – the process of mixing together the egg whites and almond flour sugar mixture. Add the almond flour mixture to the egg whites and using a rubber spatula or large spoon start mixing together.
  8. At first it will look crumbly but eventually it comes together to a smooth mixture. Do not overmix the batter You want to mix the batter until it has a lava like consistency and runs off the spatula in a smooth (not watery) ribbon. See notes for more tips.
  9. Once the egg whites are mixed, add the almond meal/sugar and mix using a rubber spatula or spoon. You’re looking to beat some of the egg whites down so you do not need to be too gently, but do not over mix the batter. You want to mix the batter until it has a lava like consistency and runs off the spatula in a smooth (not watery) ribbon. See notes for more tips.
  10. Add the macaron batter to the prepared pastry bag and pipe 1.5 inch circles onto the prepared parchment, about 1-2 inches apart.
  11. Once you’ve piped the macarons tap the whole pan on a hard surface. Turn the pan 180 degrees and tap it again. You want to tap it pretty hard to bring up any air bubbles in the macaron batter.
  12. Take a toothpick or scribe and gently poke any visible air bubbles.
  13. Once the air bubbles have been popped place pan in the middle of the oven and turn down the heat to 300℉ and bake for 17-19 minutes. Let cool completely before removing the macarons from the baking mat. Repeat with remaining batter.
  14. Once cooled, match the macaron shells by size. If you want you can drizzle some melted chocolate along the top macaron shell.
  15. Then, fill the bottom shell with coffee buttercream and add the top shell. You can eat right away, or let mature in the fridge a few days until they get to the desired consistency.

Coffee Buttercream

  1. Mix in instant coffee to the hot water. Set aside.
  2. Cream butter in a standing mixer or hand held mixer 3-5 minutes
  3. Add powder sugar and mix another 3-5 minutes until light and fluffy.

Instructions Meringue Layers

  1. Preheat the oven to 275 °F. Line a half sheet pan with parchment paper.
  2. In a food processor, grind the nuts until fine. Toss in the flour. Pulse a few times to combine. Set the nuts aside.
  3. In a large mixer bowl or in the bowl of a stand mixer, whisk the egg whites on medium speed (#6-7) until soft peaks form. With the mixer running, gradually add the granulated sugar. Increase the speed to medium-high (#7-8) and continue whipping until stiff peaks are formed.
  4. Fold the ground nuts into the meringue in two batches.
  5. Scoop the batter into the prepared pan and spread to an even layer.
  6. Bake until lightly browned and firm to the touch, about 1 hour. Turn off the oven and leave the pans in the oven until completely cooled. The layer should be crisp, not spongy like a cake.
  7. The meringues can made made 1-2 days ahead and stored at room temperature, tightly wrapped.

Fillings

  1. Toast the hazelnuts in the oven until golden brown and fragrant. If the hazelnuts have skins, fold the warm nuts in a kitchen towel and rub back and forth to remove as much skin as possible. Remove 24 nuts and set them aside for garnish.
  2. Place the rest of the warm nuts in a food processor. Process for 4-5 minutes. At first it will look like a powder, then it will look like wet sand and eventually it will form a paste that looks like peanut butter. Stop the processor and scrap down the bowl whenever the mixture builds up on the sides. Add the confectioner’s sugar to the hazelnut paste and process until combined. Stop the processor and scrape down the bowl whenever the mixture builds up on the sides. Add the hazelnut oil and process until it becomes a smooth paste. The hazelnut paste can be made ahead and stored at room temperture for a day, refrigerated for as long as a week or frozen for up to 3 months.
  3. To prepare the reserved 24 hazelnuts for garnish, place a silicone baking mat or a sheet of parchment paper onto a half sheet pan. Have the hazelnuts set near the prepared pan. Lightly oil a dinner fork with oil or use baking spray to coat the tines of the fork.
  4. For the caramel, sprinkle the granulated sugar into a small sauce pan. Place the pan over medium-high heat. When the edges of the sugar begin to melt, reduce the heat to medium and begin stirring with a wooden spoon to prevent spots from burning. Continue cooking the sugar until it melts completely and cooks to a golden caramel color. Immediately remove the pan from the heat.
  5. Drop the hazelnuts into the the warm caramel. Use the greased fork to immediately lift a nut out of the caramel. Allow the excess caramel to drain back into the pan. Set the coated nut onto the parchment lined baking sheet. Continue with the remaining nuts, working quickly before the caramel in the pan begins to set. The nuts can be dipped several days ahead and stored in a covered container at room temperature.
  6. Make the ganache according to the recipe and set aside to cool to room temperature. You can make the ganache up to 3 days ahead and refrigerate. Bring it back to room temperature and to a spreadable consistency before assembling the Marjolaine.
  7. Make the Italian Meringue Buttercream according to the recipe. Add the hazelnut paste to the buttercream. Set aside at room temperature.
  8. Just before you’re ready to assemble the cake, make the chocolate whipped cream. The cream must be used as soon as it’s made so this should not be done ahead of time.

Assembly

  1. Use a serrated knife and a sawing motion to cut the meringue layer into fourths across the short side.
  2. Place a meringue layer onto a cardboard cake board or the back side of a baking tray. Spread ¼ of the ganache over the meringue layer. Spread ½ the chocolate cream over the ganache.
  3. Place the 2nd meringue layer over the chocolate cream. Spread ⅓ of the hazelnut buttercream onto the meringue.
  4. Top with the 3rd meringue layer. Spread ⅓ of the remaining ganache over the meringue layer. Spread the rest of the chocolate cream over the ganache.
  5. Place the final meringue layer with the smooth side up. Smooth ice the top and sides of the cake with buttercream. Place the cake into the refrigerator for at least 2 hours until the buttercream is set firm or set into the freezer for 30 minutes. The buttercream must be quite cold to glaze the cake.
  6. Set a cooling rack over a clean sheet pan. Use a long spatula to lift the chilled cake onto the rack.
  7. Warm the remaining ganache in the microwave in 10 second increments until it is pourable but not very hot. Don’t overheat the ganache or it will curdle. Starting from one end of the cake, drizzle the ganache over the top of the cake. Use a spatula to swipe 1x along the top of the cake and allow the ganache to flow over and completely cover the sides. Use a spatula to fill in in any bare spots. Allow the ganache to set completely before transferring the cake to a serving tray.
  8. Using the reserved buttercream, pipe 12 rosettes along each side of the cake. You want a pair of rosettes on each slice of cake. Place a candied hazelnut on each rosette. Pipe a border of buttercream around the bottom of the cake.
  9. Refrigerate until 1 hour before serving. The cake can be assembled up to a day in advance.

  3. Blend until smooth then allow to sit, undisturbed, for 5 minutes.
  4. With a small cup, skim off the bubbles and foam from the milk mixture.
  5. Slowly pour milk mixture into the prepared flanera.
  6. Place trivet inside Instant Pot. Add 2 cups water. Place flanera on trivet.
  7. Check the Instant Pot lid to ensure the gasket is in place and nothing is blocking the vent. Place lid on top and set lever to Sealing. Press the Manual button on the Instant Pot and set to high for 15 minutes. Allow to naturally release completely. The entire cook time should be around 35 minutes.
  8. Carefully remove flanera and set it on a potholder or hot pad for 30 minutes then place in the refrigerator. It will still be hot so you will want to put the hot pad into the refrigerator as well. (It may still be a little jiggly in the center.)
  9. Chill overnight.
  10. Run a butter knife vertically around the flan to remove it from the sides of the flanera. Use a plate and turn it upside down on top of the flanera. Carefully and slowly, flip everything over so that the flanera is on the top, upside down. Allow the pan to sit there for about one-half minute or so, tapping on it, if you like. Then slowly remove the pan. The sugar syrup will slide out as well so make sure you have a plate large enough to catch it.
  11. Serve immediately. Refrigerate any leftovers right away.

38. Choux Pastry

Choux Pastry is a practical addition to this collection, with a straightforward method and adaptable serving options.

With only 5 ingredients and 15 minute prep time, choux pastry (pâte à choux) is a simple pastry dough for making cream puffs, eclairs, and profiteroles!

Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter ((1 stick), see notes for using salted butter)
  • 1 cup all purpose flour, 125 grams (spooned and leveled )
  • 1 tsp sugar (optional)
  • ½ tsp salt
  • 4-5 large eggs
  • 1 egg
  • 1 tbsp water
  • or
  • Craquelin

Instructions Prep:

  1. Heat oven to 375℉
  2. Assemble a pastry bag with a medium sized round tip
  3. Line two baking sheets with slipmats or parchment paper. You can create circles on the mats or paper by dipping a round cookie cutter or small glass into flour  and placing it on the parchment or mat. This gives you an outline when you go to pipe your cream puffs and helps ensure they are the same size.
  4. Fit your standing mixer with a paddle attachment.

Making the Pate a Choux

  1. Combine the butter, sugar, salt and water in a heavy  bottomed saucepan over medium high heat.
  2. Once the butter is melted and it starts to boil, remove from heat and stir in the flour with a with a wooden spoon or heat proof spatula. When it is combined place back over heat.
  3. Stir the mixture constantly of medium high for about 4 minutes. You are trying to dry it out a bit and cook the flour.   It will start to pull away from the edges and a film will form on the bottom of the pan.
  4. Transfer the batter to a standing mixer and turn on low. Mix for about 2 minutes to cool it down.
  5. While still mixing on slow, add 4 eggs one at a time. Make sure to fully incorporate each egg before you add the next.
  6. Test the choux pastry batter to see if it’s the right consistency by touching it with your finger or a spatula. It should pull away in a string. If it doesn’t, mix up another egg and slowly add it to mixture one teaspoon at a time until it is the right consistency.
  7. Fill your pastry bag with batter and pipe onto the baking sheets.  You can either pipe one sheet and store the reminder of the pastry cream in the piping bag in the fridge until you’re ready to bake the second tray. Or, you can pipe out the second tray at the same time and store it with a lightly oiled plastic wrap in the fridge. I normally just keep it it in the piping bag and pipe right before I’m going to cook
  8. If using craquelin, place on top of each puff. If not, use water, or an egg wash of egg and water, and rub over the surface, patting down any pointed tips.
  9. Place in preheated oven and bake for 35-45 minutes. Do not open the oven while they are baking. That will release the steam and inhibit them rising to their full potential.
  10. Once they are golden brown you can remove from oven and let them cool and transfer to wire rack.
  11. Once they are cooled you can fill with your filling of choice and enjoy!

Ingredients

  • 1 Recipe White Chocolate Ganache Buttercream
  • 4 cups (600 grams/ 21 ounces) fresh or frozen sweet cherries
  • 1/3 cup (66 grams) granulated sugar
  • 1 1/2 tablespoons lemon juice
  • 1/4 cup (2 ounces) amaretto liquor or Disaronno liquor
  • 2 tablespoons cornstarch
  • 1/2 teaspoon table salt, or 1 1/4 tsp kosher salt
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon almond extract
  • 2 1/2 cups (300 grams) all purpose flour
  • 2 1/4 teaspoons baking powder
  • 1 teaspoon table salt, or 1 3/4 tsp kosher salt
  • One 3.4 ounce packet (96 grams) white chocolate instant pudding mix
  • 2 large eggs, at room temperature
  • 2 large egg whites, at room temperature
  • 12 tablespoons (6 ounces/ 170 grams) unsalted butter, at room temperature
  • 1 1/2 cups (300 grams) sugar
  • 1 1/2 cups (12 ounces/ 340 grams) whole milk, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon almond extract
  • 1/3 cup (2.6 ounces/ 76 grams) heavy whipping cream, cold
  • 6 tablespoons (3 ounces) amaretto liquor or Disaronno liquor
  • 1 ounce white chocolate (optional) to decorate with white chocolate shavings

Instructions

  1. Add the cherries, sugar, lemon juice, amaretto, cornstarch, and salt to a medium size (2 or 3-quart) saucepan and set the pan over medium-low heat.
  2. Cook, stirring frequently until the liquid starts to simmer.
  3. Once the sauce begins to boil, continue to cook, stirring constantly, until the sauce has thickened, about 2 minutes.
  4. Remove the pan from the heat and stir in the vanilla and almond extract if using. Pour into a jar or another airtight container. Let cool to room temperature, then refrigerate until completely cool, 2-3 hours.
  5. Preheat the oven to 350° F (176° C). Grease, flour, and line the bottoms of two 8-inch round cake pans with parchment paper. Here’s how to grease, flour, and line cake pans with parchment paper.
  6. Add the flour, baking powder, salt, and instant pudding mix to a bowl and stir with a wire whisk to combine.
  7. Add the 2 whole eggs and the 2 egg whites to a small bowl and use a fork to whisk them together. (Save the 2 remaining egg yolks in the refrigerator for another use.)
  8. Add the butter and sugar to a mixing bowl and beat with an electric mixer until the mixture is light and fluffy about 3-4 minutes. Scrape down the sides of the bowl.
  9. Add the eggs to the butter and sugar mixture in several additions, pouring them in bit by bit and beating one addition into the batter before adding more. Stop to scrape down the sides of the bowl from time to time. Beat in the vanilla and almond extracts.
  10. Add the milk in alternating additions with the flour mixture, mixing on low speed: 1/3 of the flour, 1/2 of the milk, 1/3 of the flour, the rest of the milk, and the rest of the flour. With each addition, beat on low speed just long enough for about 75% of it to be incorporated before adding the next addition. Be careful to not overbeat.
  11. Give the batter a final stir with a wooden spoon or rubber spatula to finish incorporating all the ingredients into a smooth batter.
  12. Add the heavy whipping cream to a separate bowl and beat with an electric mixer until medium peaks form (if you lift the beater from the cream, a peak will form with the tip falling over onto itself slightly).
  13. Scoop the whipped cream into the cake batter and very gently fold it into the batter. Stir gently, just until about 90% of it is incorporated. You should still be able to see a few white streaks.
  14. Divide the batter between the two prepared cake pans, smoothing the batter into an even layer in each pan. Bake the cakes in the center of the oven for 38-45 minutes. To know when the cakes are done, insert a toothpick in the center of the cakes and pull it out. If you don’t see any evidence of raw cake batter on the toothpick, the cakes are done.
  15. Set the cakes on a wire rack and let them cool in the pans for 5 minutes. Gently turn the cakes out onto the wire racks and allow them to cool completely.
  16. Once cool, gently flip the cakes over so the top of the cake is facing up. Brush each cake with 3 tablespoons of amaretto.
  17. The cakes are now ready to be assembled. Or, wrap them tightly and keep them at room temperature for up to 24 hours. Or, wrap them tightly and freeze them for up to 3 months. The cake layers can be easier to work with when slightly frozen, so you might consider freezing them for 1 hour before assembling; see note below.
  18. Lay one of the cake layers, top side up, on a plate or serving platter. Fill a pastry bag with buttercream and clip off the end so that you have an opening that’s about 1 inch in diameter. (You can also do the same thing using a zip-top bag).
  19. Pipe a ring of buttercream around the outside of the cake. Fill the center of the cake with 1 cup of cherry sauce, smoothing it out into an even layer that completely fills the ring of buttercream.
  20. Stack the other cake on top of the bottom cake, placing it bottom side up. Scoop a large mound of buttercream on top of the cake and use a cake spatula to smooth it over the top and over the sides of the cake.
  21. Top the cake with more of the cherry sauce, creating a little mound of cherry sauce in the center of the cake.
  22. Use a sharp knife to scrape a 1-ounce bar of white chocolate to create chocolate shavings. This can be easier if the chocolate is cold or frozen. Sprinkle the white chocolate shavings over the top of the cake.

Ingredients

  • 1 Cup Milk
  • 3.4 oz Instant Vanilla Pudding Mix (3.4 oz pkg. )
  • 1/4 Cup Powdered Sugar
  • 8 oz Cool Whip (8 oz container )
  • 3/4 Cup Water
  • 6 Tbs. Butter
  • 1/8 tsp Salt
  • 3/4 Cup Flour
  • 3 Large Eggs
  • 10 Oz. Chocolate of Your Choice
  • 3/4 Cup Heavy Cream

Instructions

  1. Start by making the vanilla filling first so it has plenty of time to set and chill while you make the éclair shells.
  2. In a small bowl or 4-cup measuring cup, beat the instant vanilla pudding mix and powdered sugar into 1 cup of milk until it begins to thicken.
  3. Beat in the container of cool whip.
  4. Cover the bowl with plastic wrap and put in the fridge.
  5. Now for the choux paste…In a medium pot over medium-high heat on the stovetop, bring the water, butter, and salt to a boil.
  6. Once boiling, add the flour all at once and quickly stir until the mixture comes together in a ball.
  7. Remove from the heat and let sit for 10 minutes to cool slightly.
  8. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  9. Crack the eggs into a small bowl or cup.
  10. Add the eggs to the cooked choux paste mixture in the pot one at a time, stirring quickly with addition to incorporate the eggs completely. (At first, the eggs will seem resistant to being mixed in but just keep going.  They’ll mix in.)
  11. Scoop the choux paste into a 16-inch disposable frosting bag.
  12. Cut off enough of the end of the bag to be able to pipe a strip of choux paste that is as big as a regular-sized hot dog.
  13. Pipe 3 1/2 long strips of choux paste onto the prepared baking sheet, leaving a little less than an inch between each one.  You should get all 20 eclairs on each pan.
  14. Bake in the preheated oven (400 degrees) for 18-20 minutes.  DO NOT open the oven door at any point during baking to check on them!!!  This will release the steam in the pastries, and they’ll go flat.
  15. The eclair shells should be golden brown.
  16. Cool on a wire rack.
  17. While the eclair shells are baking, make the ganache.
  18. Melt the chocolate in the microwave or in a melter pot with the heavy cream.
  19. Stir until completely smooth.
  20. Allow the ganache to cool until it becomes thick and pipeable while you fill the eclairs.
  21. To fill the eclairs use something long and thin like a chopstick, to carefully poke a small hole into one end of each eclair.  Wiggle the chopstick around a little bit to make room for the filling.
  22. Fill a disposable frosting bag fitted with a #10 tip with vanilla filling.
  23. Gently poke the tip in each hole and fill each eclair.
  24. Fill a disposable frosting bag fitted with your preferred tip with ganache.  Pipe a strip of ganache over the top of each eclair.
  25. Store the eclairs in a loosely covered container in the fridge.

41. Fruit Cheesecake Cookie Cups
