  • 3/4 cup Red Tamale Sauce
  • 5 cups Chicken Stock (or Broth)

Instructions Preparing Corn Husks

  1. Being careful not to rip the corn husks, wash with cool water and a brush to remove all debris and corn silks.
  2. Place in a large pan or dishpan or even in a clean sink. Fill with cool water to cover the husks. Place a large heavy dish or plate on top to ensure that the husks are all underwater. Leave them overnight.

Preparing Pork Roast

  1. Mix together salt, pepper and onion powder. Rub on all sides of pork roast.
  2. Place in Crock Pot on low and cook for 6-8 hours, or overnight, until fork tender.
  3. Remove and shred with a fork. Using a knife, cut the shreds a few times so that they aren’t too long and stringy.

Preparing Pork Filling

  1. Set aside 3/4 cup of Red Tamale Sauce to use later, for the masa dough.
  2. Place the shredded pork and the remainder of the Tamale Sauce in a sauce pan on medium-low heat. Cook until heated through, stirring occasionally to ensure that it doesn’t stick and burn. If there isn’t enough liquid, add a little bit of water or stock, 1/4 cup at a time. You don’t want to overdo it.
  3. Once heated, set aside.

Preparing Masa Dough

  1. Whisk together masa harina, baking powder and seasonings.
  2. Melt lard. You can melt it on the stovetop. I melted it in a glass measuring cup in the microwave for two minutes.
  3. Add lard and 3/4 cup Tamale Sauce to masa harina mixture. Mix well. It will look like wet sand like you would use to make sand castles.
  4. Add one cup of stock at a time and mix well until you have FOUR CUPS stock in the masa. Let sit for about 20 minutes for the liquid to soak into the masa harina. You are looking for the consistency of hummus or cake batter. Continue adding stock about 1/4 cup at a time, as necessary, to reach the right consistency for spreading easily.

Assembling the Tamales

  1. Separate and pat dry a few husks at a time. Inspect to ensure that you have the smooth side facing upwards. Turn it vertically and hold the skinnier end with your non-dominant hand. Spread about two tablespoons masa dough as shown in the photos above.
  2. Using a tamale spreader or the back of a spoon, spread about one tablespoon of the filling in a line close to the top.
  3. Fold the husk vertically, edge to edge. With your dominant hand, push the top back a little with the filling and curl toward you to form a tube. Fold over the skinnier end and place in a tray with seam side down. Repeat until you run out of one of the ingredients (husks, masa or filling).

Steaming the Tamales

  1. In a large stockpot, place a steamer basket and fill with water up to the basket. Stack the tamales straight up in the stock pot with the fold at the bottom.
  2. Cover and heat to boiling then reduce heat to low to keep the water steaming through the tamales. Check the water level every 10-15 minutes when using a steamer basket since the water level is already low. You don’t want the water to dry up. When replenishing water, move the tamales out of the way before pouring so you don’t get extra water inside the tamales. When removing the lid to check the tamales, try not to tilt it since this might add water to the inside of the tamales.
  3. Cook for 60 to 90 minutes. After about 60 minutes, pull out one of the tamales and remove it from the husk to check for doneness. If it comes clean from the husk, it’s done. If not, keep going for 15 minutes and try again. If still not quite done, you’ll need 15 minutes more.
  4. Remove from heat. Serve immediately. Allow to cool completely before storing in the refrigerator or freezer. When storing, leave them in the husks.

  3. Whisk the apple cider vinegar, Worcestershire sauce, and liquid smoke in a small bowl, Carefully pour over the pork roast in the slow cooker.
  4. Cook on low heat for 8 hours until tender. (I really don’t like this recipe as well when it’s cooked on high.)
  5. Remove the pork from the slow cooker and shred using two forks. Return the meat back to the slow cooker and turn to warm.
  6. You can serve this meat on buns, in quesadillas, in tacos, on a salad, or over tortilla chips.

For tacos

  1. Warm tortillas. Place meat, slaw, and whatever toppings you want in tortilla. Enjoy.

  1. In a small bowl, mix together the pork seasonings. Place the pork roast in a crock pot and coat with seasonings. Add the onion, garlic and orange juice in the bottom of the crock pot. Allow to cook for 4-5 hours on high or 7-8 hours on low.
  2. For the black beans, heat the oil in a large cast iron skillet. Add the onion and bell pepper to the hot pan and saute for 3-4 minutes, until soft. Add the garlic and saute 30-60 seconds. Add the black beans and spices and cook for 5-10 minutes. Using a potato masher, mash about ½ of the beans in the pan, then mix it all together. Taste and adjust seasoning, if necessary.
  3. For the rice, heat the oil in a large saucepan at medium-high heat. Add the onion and saute for 3-4 minutes, until soft. Add the rice and stir to coat with the oil. Add the chicken stock and increase the heat to high, allowing it to come to a boil. Reduce heat to a simmer and place the lid on the pan. Cook for about 15 minutes, until most of the liquid has absorbed. Turn off the heat and allow rice to sit with the lid on for an additional 5 minutes. Add the lime, cilantro and season with salt and pepper.
  4. Cook the plantains just before serving: Add the oil to a cast iron skillet. Place the plantains in the hot oil, sprinkle with salt, and cook for about 30 seconds on each side, until they start to caramelize. Remove from the heat and serve on top of the rice, black beans and pork.

  • 1 (15 ounce) can diced tomatoes
  • 4 cups chicken broth (or chicken stock)
  • 1 cup barbecue sauce (plus more to taste)
  • 2 tablespoon brown sugar
  • 2 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon cayenne pepper ((optional))

Instructions

  1. Season and sear the pork. Generously sprinkle salt and pepper over the entire surface of your pork shoulder, using your fingers to rub it into the pork. Meanwhile, add 1-2 tablespoons of olive oil to a large Dutch oven set over medium-high heat. Add the pork and sear on all sides, until lightly browned, but not charred.
  2. Cook the onion. Remove the pork to a clean plate and set aside. Add four tablespoons of butter to the same pot set over medium heat and add the diced onions. Cook, stirring frequently, for 4-5 minutes or until starting to soften. Stir in the minced garlic and cook for an additional minute.
  3. Add additional vegetables. Add the potatoes, corn, lima beans, diced tomatoes, and chicken broth. Thoroughly mix to combine. Return the pork back to the pot, nestling under the mixed vegetables so that it is completely submerged in broth.
  4. Cook. Bring to a low boil before reducing heat to a simmer. Cover and allow pork to simmer for at least 2-3 hours.
  5. Remove pork and shred. Remove the pork shoulder from the pot and set aside until cool enough to handle. Use two large forks (or your hands) and shred into chunks. Once all the pork has been shredded, return the pork AND the bone back to the pot (the bone still has flavor).
  6. Season. Add the barbecue sauce, brown sugar, Worcestershire sauce, salt, black pepper, and cayenne pepper (if using) and mix well to combine. Season with additional salt and pepper, to taste. Continue to simmer, uncovered, for an additional 15 minutes.
  7. Serve with your favorite cornbread recipe and coleslaw for a complete meal. Enjoy!

To Make the BBQ Pulled Pork Enchiladas

  1. Preheat the oven to 400 degrees F.
  2. Spray or lightly oil a casserole dish
  3. Add desired amount of pulled pork to 6 to 8 tortillas. Wrap them tightly and lay them close together in the casserole dish.
  4. Pour desired amount of barbecue sauce on top of the wrapped pulled pork (for me, this was about 6 ounces, but feel free to douse!)
  5. Sprinkle grated cheese on top and bake in the oven until tortillas begin turning brown and cheese is melted, about 15 to 20 minutes.
  6. Serve with your favorite toppings (sour cream, avocado, green onion) and favorite side dishes (beans and cauliflower rice!)

  2. Remove the meat from the marinade and set it on a plate or cutting board. Add the brown sugar, chili powder, cumin, onion powder, and garlic powder to a small bowl and stir to combine. Rub the spices over the meat to coat it completely, massaging the dry rub into the meat.
  3. TO SMOKE THE MEAT: Heat the smoker to 225 degrees Fahrenheit.Removethe meat from the marinade. Reserve the marinade in the refrigerator. Place the pork roast onto the smoker grates, close the lid, and smoke for about 6 hours, until a meat thermometer inserted into the thickest part of the shoulder registers 165 degrees. Remove the meat from the smoker and set it inside an aluminum roasting pan. Pour the reserved marinade into the pan and cover the pan with aluminum foil. Return the pork to the smoker and continue cooking for another 3-4 hours, until the meat is extremely tender and the internal temperature reaches 200 degrees Fahrenheit.
  4. TO COOK IN AN INSTANT POT: Set the pork roast in the bowl of an instant pot. If you have any leftover dry rub, sprinkle that into the pot. Pour the marinade around the roast. Cook on high pressure for 110 minutes with a natural release.
  5. TO COOK IN A SLOW COOKER: Place pork roast in the slow cooker. If you have any leftover dry rub, sprinkle that into the pot. Pour the marinade around the roast. Cook the roast on low for 8-10 hours or on high for 4-5 hours.
  6. TO COOK IN AN OVEN: Heat the oven to 325 degrees Fahrenheit. Set the pork roast in a large roasting pan or dutch oven. Pour the marinade around the meat and cover the pot with a lid or heavy-duty aluminum foil. Roast for 4-5 hours until the meat is very tender and falls apart easily.
  7. TO COOK IN A CAST IRON DUTCH OVEN OVER THE CAMPFIRE: Set a trivet inside a cast iron dutch oven and place the pork roast on the trivet. Pour the marinade into the pot and place the lid on the pot. Build a strong campfire and separate the fire into two parts – a small fire on one side producing new coals and a good bed of embers on the other side for cooking on. Nestle the dutch oven into the embers and using a shovel or tongs cover the lid of the Dutch oven with hot coals. The roast will take 3-5 hours to cook depending on how hot the embers are and how consistently you add hot embers around the pot to maintain the heat. The pork is done when it’s so tender it pulls easily away from the bone.
  8. Remove the meat from the pan and shred it. Drizzle a bit of the cooking liquid over the meat. Cut the lime in half and squeeze the juice over the shredded meat.
  9. Serve family style with warm corn tortillas, orange slices, crumbled queso fresco, and Pico de Gallo. (*See notes below)

  2. “BRAISE” THE PORK IN THE CROCKPOT: Place the pork shoulder into the crockpot. Rub dry spice mix into all sides of the pork. Then squeeze lime/ lemon on top. Cover and cook on low for 15 hours. The spice mixture will darken a lot and the meat will start to turn golden brown on the outside. The fat in the meat will render off, producing a lot of liquid at the bottom.
  3. SHRED THE MEAT: Remove the pork carefully from the crockpot to a large plate or bowl. Then using two forks, pull apart the meat into large shreds. Pour over ½- ¾ c of the cooking juices from the crockpot on top of the meat and stir around to evenly coat.
  4. CRISP THE MEAT (optional): You can do this one of two ways. (1) Carnitas for a crowd – Set oven to broil. Line a baking sheet with foil and spread out desired amount of meat on tray in an even layer. Broil for 5-7 minutes until you get the amount of crispy edges you want.   2. Cook on low heat for 6-8 hours or high for about 4 hours. Pork should be easily shreddable when done. 
  3. Use two forks to shred pork, adjust seasoning level if desired and simmer another half hour. 
  4. Preheat broiler and transfer shredded pork to a baking sheet, spread out in a medium-thin layer, leaving any juices in the crock-pot.
  5. Broil on low for about 5 minutes until it starts to get crisp but is not burnt or dried out. Remove pork and toss with reserved cooking liquid to moisten. 
  6. Stir in fresh cilantro and serve with taco fixings or over Mexican flavored rice. Taco fixing ideas: pickled red onions, queso fresco, salsa, cheese, lime, guacamole, tomato, lettuce, black olives or whatever else you prefer.
