Everything gets portioned into four containers, and just like that, we have real food ready for the whole week. No deciding what to cook at 6pm, no takeout temptation, just open the fridge and eat.

Ingredients

  • 2 chicken breasts
  • 1 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • salt and pepper
  • 1 medium cauliflower (cut into florets)
  • ¼ teaspoon garlic clove (minced)
  • 1 ½ tablespoons butter
  • ¼ cup Parmesan cheese (shredded)
  • salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions FOR THE CHICKEN:

  1. Cut the chicken breasts into thinner cut by placing chicken breast on a cutting board. Hold it flat with one hand. Using a sharp knife, slice the chicken breast horizontally into two even pieces*.
  2. Heat the oil in a medium skillet over medium-high heat. In a medium bowl, place the chicken with olive oil, oregano, paprika, onion powder, salt, and pepper. Toss everything together.
  3. Place seasoned chicken breast in the pan. Cook for about 5 minutes per side, turning once. Chicken will be ready when it gets the internal temperature of 165˚F. Transfer the chicken breasts to a plate.

FOR THE MASHED CAULIFLOWER

  1. Fill a large pot with about 2 cups of water, and bring it to a boil. Then, place a steamer basket in the bottom of the pot. Add the cauliflower florets to the steamer basket.
  2. Cover the pot, and steam until the cauliflower is fork-tender, about 6-8 minutes. Remove from the heat, uncover the pot and let the cauliflower cool for 3-5 minutes.
  3. Place the steamed cauliflower and garlic in a food processor or blender jar, and puree/blend until the cauliflower is completely smooth.
  4. Transfer to a bowl, add the butter, Parmesan, salt, and ground black pepper, and stir well to combine. Set aside.

FOR THE VEGGIES

  1. In the same skillet you seared chicken breast, heat oil and butter. Add onions, bell pepper and zucchini. Saute them until tender. It’s about 4-5 minutes. Season with garlic powder, salt and pepper. Mix to combine.

MEAL PREPPING:

  1. Place an even amount of chicken, veggies, and mashed cauliflower into 4 glass containers. Cover with the lid, and place in the fridge for up 4 days. Heat in the microwave for about 1½ – 2 minutes. The time depends on the power of your microwave.

  2. Mash the beans in a bowl until it forms a consistent paste.
  3. Get a food processor and add bell pepper, scallions, parsley, garlic cloves, cumin, salt, and chilli powder to it. Pulse it. Then, add oats and an egg. Pulse it again.
  4. Afterward, add in mashed red kidney beans and give it a pulse until one smooth texture.
  5. Divide the mixture into 4 patties. If the patties are too wet, add more oats. Keep them on a flat surface with parchment paper on it. Then, freeze for 2 hours.
  6. Heat up a skillet, lightly oil it, and cook these burgers patties for 7 minutes on each side.

Salad:

  1. Grate carrots and beets. Slice red onion, avocados, cucumber, and cherry tomatoes. Cut radishes in halves. Drain your green peas.

Servings:

  1. Divide vegetables equally into food containers. Top each bowl with black bean burger we‘ve just made and cover in Caesar dressing.

  6. In a large bowl, whisk milk, eggs, egg yolks and 1 1/2 tsp salt and pepper until smooth. Pour over the top of the bread mixture and press bread down to make sure it’s well coated in liquid. Sprinkle with remaining 1/4 cup gruyere, cover tightly with buttered foil, and let unbaked strata rest on the counter for at least 30 minutes while the oven preheats. If you’re planning on baking it the next day (and you toasted your bread!), store in the refrigerator overnight. Remove from refrigerator 30 minutes prior to baking.
  7. Preheat the oven to 350°F. Bake strata for 20 minutes, remove the foil, and continue baking until the custard is set and the top is browned, another 15 to 30 minutes depending on the depth of your pan. Then add the remaining eggplants on top to create the second layer.
  7. Take the pan to the oven and bake for 25 minutes. Remove the pan from the oven, sprinkle grated mozzarella on top and take back for another 10 minutes. During the last few minutes turn the broiler on to brown the top.

  2. Add 18 oz worth of chopped cauliflower to a bowl and cover with plastic wrap. Microwave for 7 minutes. Alternatively, you can boil or steam it instead.
  3. Meanwhile, heat a non-stick pan or skillet over medium heat. Stir together 1/2 tbsp olive oil, 1/2 tbsp unsalted butter, and 3 tbsp all-purpose flour for about 30 seconds.
  4. Add 1 cup chicken broth gradually and constantly (but gently) stir as you go to incorporate the flour. Add 1/4 cup whole milk and mix everything together. Season it with 1 tsp garlic powder, 1/4 tsp pepper, and 1/4 tsp salt, and allow the mixture to come to a boil. Once it does, turn off the heat and stir in 1 tbsp heavy cream.
  5. Wait for the cauliflower to finish cooking, then transfer it to a baking dish. Pour in the sauce and give everything a gentle toss to coat.
  6. Sprinkle 1/4 cup breadcrumbs and 1 oz shredded cheddar on top, and slide the baking dish into the preheated oven to cook for 15 minutes.
  7. Sprinkle 2 tbsp chopped parsley on top and serve.

Instructions

  1. Preheat the oven to 400F (200C). In a bowl, combine 1 tbsp olive oil, garlic, and ginger. Toss in the cauliflower to cover it with the mixture and spread it on one side of a large baking sheet.
  2. In another bowl, combine 1 tbsp olive oil with cumin and paprika. Cut sweet potatoes into cubes, cover them in the mixture of oil, and spread them on the other side of the baking sheet. Roast in the oven for 25-30 minutes and stir midway.
  3. Sprinkle salmon with salt and pepper. Add another tablespoon of olive oil to the frying pan, fry the salmon (skin up) for a minute and add soy sauce.
  4. Cook the salmon for around 1-2 minutes and flip the salmon, so it’s skin down. Then, cook for another 3-5 minutes until the salmon is fully cooked.
  5. Dice the beetroots and chop parsley. Divide salmon and vegetables between glass containers and top up with fresh parsley as well as lemon wedges.

  1. Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add turkey and garlic to pan. Cook for about 6-8 minutes, or until fully cooked, breaking up turkey with a spatula or back of a wooden spoon. Season with 1/2 teaspoon of the salt and a pinch of black pepper.
  2. Transfer turkey to a bowl or plate and wipe out pan. Heat remaining 1 tablespoon of olive oil in same pan over high heat. Add baby broccoli and rest of the garlic to pan. Stir and cook for about 2 minutes, until slightly brown. Carefully pour in 1/8 cup water into the pan and cover. Turn down heat to medium-high and cook for another 4-6 minutes, until broccoli is tender-crisp.
  3. Meanwhile, cook quinoa according to package instructions.
  4. Divide quinoa, turkey, and baby broccoli into 4 containers. Serve with spicy peanut vinaigrette. (I used about 1-2 tablespoons per bowl.)
  5. Store in the refrigerator, when ready to eat, heat in microwave until hot and drizzle with dressing.
