- In a separate bowl, use an electric mixer on medium speed or hand whisk together eggs, cooled melted coconut oil (it needs to be cooled somewhat so it doesn’t cook the eggs!), maple syrup, juice, zest and vanilla.
- Pour the wet ingredients into the bowl with the dry ingredients and whisk until smooth.
- Dot the cranberries with this mixture and carefully spread it evenly over the cranberries. Be gentle, as the mixture is quite thick. I like to use an angled rubber spatula for this.
- Bake for 30-35 minutes, until when poked with a toothpick, no batter comes out. The edges will be golden brown.
- Cool in the pan on a wire rack for 15 minutes, then invert it onto a plate and remove the parchment paper.
- Cool completely, then serve. Best served at room temperature, but still delicious warm or straight out of the fridge!
- If desired you can drizzle the top of the cake with a basic powdered sugar glaze or healthier coconut butter glaze once it’s cooled.

(If the dough seems too sticky and the balls aren’t holding together, place the dough in the fridge for 10 minutes before rolling).
- Flatten each cookie gently with a fork. Bake at 350 degrees F for approximately 10 minutes.

- Prepare: Pre-soak the cashews for the filling (200g) in water for 4 hours or quick-soak in simmering water for 30 minutes, rinse, and drain. Line the base and sides of a 7.5 or 8-inch springform cake pan with parchment paper.
- Make the base: In a food processor, blitz the coconut, cashews, spices, pitted dates, and orange zest until roughly ground. Add the grated carrots, and coconut or almond flour and blitz again until combined.
- Press the crust into the base of the pan and smooth it down with a flat-bottomed glass or spoon – make sure it is compact. Refrigerate while you make the filling.
- Filling: Add the soaked cashews, cream cheese, yogurt, maple syrup, vanilla pod, cinnamon, nutmeg, and lemon juice to a high-speed blender. Blend on low speed first, then increase the speed to high and blend until completely smooth. Pour the filling into the pan and refrigerate for at least 8 hours (overnight is recommended) until set. Tip: I like to place the cheesecake in the freezer for 30 mins before decorating, you can do this while you make the garnish.
- Candied carrots: Thinly slice long strips of carrot using a vegetable peeler. Add the sugar and water to a saucepan and bring to a boil, reduce to a simmer and add in the carrot strips. Simmer for 2 minutes, then carefully use a slotted spoon to lift them into an ice water bath for about a minute. Roll the carrots up and secure them with a cocktail stick until ready to use.
- Garnish: Top with chopped walnuts, candied carrots, and fresh mint leaves.

Remove the nuts from the oven. Remove about 4 of the nuts from the baking sheet and finely chop them. Set aside.Turn the oven heat down to 300°F, and line an 8 1/2 x 4 1/2 -inch loaf pan with parchment paper.
- Blend nuts. Add the roasted macadamia nuts to a food processor and blend until the nuts have completely turned into “butter.” (This will look like many nut butters, only a bit thinner.)
- Start batter. Pour the macadamia nut butter into a large mixing bowl and add the honey, apple cider vinegar, coconut flour, baking soda and salt. Mix to blend and set aside.
- Separate eggs and whip whites. Separate the 5 whole eggs. Add the yolks to the macadamia batter and the whites to another, clean, large mixing bowl. Add the single egg white to this bowl as well. You should have added 5 yolks to the batter, and 6 whites to the clean bowl.Use a large spoon or an electric mixer with the beater attachment to blend the yolks into the batter. Set aside.Use an electric mixer to whip the whites just until stiff peaks form. Immediately fold them into the batter until they’re well incorporated.
- Bake. Very quickly pour the batter into the prepared loaf pan, sprinkle with the chopped macadamia nuts, and place in the preheated 300°F oven.Bake until the bread no longer jiggles, is golden, and has risen a bit above the top of the pan, about 45 minutes. (If the bread is golden before it seems to be solid, loosely cover it with foil and continue baking until it’s done.)
- Cool, slice and serve. Let it cool in the pan for at least 5 minutes. Then use the edges of the parchment to very gently lift it out, and onto a cooling rack. The bread might sink a little in the center while it’s cooling — mine is usually not too noticeable, just about ½-inch or so.
- Once it’s room temperature, slice and serve.

- 50g / ½ cup chopped pecan nuts (, see recipe notes for nut-free options*)
- 1 teaspoon vanilla extract
- OPTIONAL extra pecans and sea salt flakes for sprinkling
Instructions
- Add the cashew butter, maple syrup and salt to a bowl and mix together really well.
- Add the coconut flour, vanilla and pecan nuts to the cashew butter mixture and stir really well again until there is no dry flour showing at all. Be very thorough and make sure you scrape into the bottom of the bowl with the spatula. It gets pretty thick and hard to stir. That’s normal.
- Line a 1lb loaf pan (or other similar size container) with either cling wrap or parchment paper. Cling wrap I found is a tighter fit and makes it look neater when you turn it out. If you don’t have anything suitable you can make them in muffin cases instead.
- Pack the fudge mixture into the loaf pan and flatten out the top so it’s neat. Get a mug of water and dip a spatula in it then shake it off to remove any excess, before spreading the top of the fudge and you will find that it won’t stick all over the spatula and will make your job much easier. You can dip in the water every few spreads to keep the effect up.
- Once the top is level sprinkle some more pecans and some sea salt flakes on the top for decoration and press them really lightly with your fingers into the fudge so they stick.
- Put the whole pan in the freezer for about 30 minutes, then remove, lift out of the pan and cut into pieces. The fudge can be stored in the freezer or in the fridge after the initial set. If kept in the fridge it will stay quite soft but still firm enough to hold and bite into, whereas from the freezer, it will be harder but not completely solid. When it’s frozen it’s best just to leave it for a minute or two before eating. It’s great both ways so try both and see which you prefer. Or go 50/50!

To use a skillet, Use a very low heat settings and melt enough coconut oil in the frying pan to cover the bottom of the pan. For reference, I usually start with a Tablespoon for my small pan.
- Add a spoonful of batter on the griddle or in the skillet and spread the batter out into a thin round layer (see my tips above!).
- As the pancakes cook, add mix-ins (suggestions above) on top before you flip the pancakes.
- Once the bottom is golden brown (about 2-3 minutes), flip and continue to cook until the other side is golden brown (usually another 1-2 minutes).
- Top with desired toppings (see suggestions above) and enjoy!
