  2. Cover and cook on low for 8 hours, or high for 4 hours.
  3. When chicken is cooked through, remove it and the bay leaves.
  4. Discard bay leaves, and shred chicken with 2 forks, then add back to crockpot.
  5. Add the cream cheese and canned evaporated milk, and stir well to combine.
  6. If adding slurry, whisk together 2 tbsp cornstarch with 2 tbsp water, and add this to the crockpot with the milk and cream cheese.
  7. Cover and cook on high for 15 minutes, until thick and creamy.
  8. Set to warm, and serve right from the crockpot!

  1. Place chicken in the bowl of your slow cooker, and add water. Cook on high 2 hours until the chicken is cooked through (the juices run clear and the fat has rendered out of the chicken).
  2. When the chicken is cooked, slice each breast against the grain.
  3. In a large bowl, mix together all of the spice mix ingredients. Set aside.
  4. Over medium high heat, preheat 2 Tablespoons of olive oil in a heavy bottomed pan just large enough to hold all of the chicken in a single layer. (see cooking note below to avoid your chicken drying out!)
  5. Add the chicken to the skillet and sprinkle the spice mixture evenly over the chicken.
  6. Allow the chicken to fry, without moving it, until crisp.
  7. Pour 1 Tablespoon more of oil over the chicken and flip the chicken, stirring gently to make sure that the chicken is well coated with the spice mix. If the chicken is starting to stick to the pan once flipped, add the remaining Tablespoon of oil and stir gently.
  8. Remove chicken from pan as soon as it is crisped to your liking.
  9. If serving with lemon tahini sauce, combine all sauce ingredients in a blender and blend until smooth.
  10. Serve immediately, with lemon tahini sauce, if desired. (See notes for serving suggestions.)

  1. Mix the ingredients for the marinade together in a container with a lid and add in the chopped chicken. Stir until the chicken is well coated in marinade.
  2. Seal the container and marinate in the refrigerator for at least 15 minutes (ideally 1 to 24 hours).
  3. While the chicken is marinating, you can prepare the chicken tikka masala sauce.

Make the Tikka Masala Sauce:

  1. Heat oil and butter together in a large skillet over medium-high heat. Add the chopped onion and sauté, stirring occasionally, until it begins to soften, about 5 minutes.
  2. Add in the minced garlic, grated ginger, garam masala, curry powder, paprika, kashmiri red chili powder and sea salt. Stir until everything is combined and continue cooking for 3 to 5 minutes to allow the spices to open up.
  3. Pour the tomato sauce and heavy cream into the skillet and stir everything together until well-combined.
  4. Remove the sauce from the heat. There is no need to heat the sauce for longer, as it will be cooking in the crock pot for many hours.
  5. Pour the tikka masala sauce into the bottom of the crock pot. Add the marinated chicken and stir until everything is well-combined.
  6. Secure the lid on the crock pot and cook on Low Heat for 6 to 8 hours or High heat for 4 hours.
  7. Once the chicken tikka masala has finished cooking, taste it for flavor and add more salt to taste. You can also stir in ¼ cup of fresh cilantro if you’d like.
  8. Serve Chicken Tikka Masala with steamed white rice (I do jasmine rice) and enjoy! You can also serve it with my Ginger Turmeric Aromatic Rice for a real wild ride. Chicken tikka masala is also traditionally served with naan bread.

  6. Add mushrooms and cook for 2 minutes.
  7. Add 2 cups of chicken broth and bring to a boil. Add more broth while cooking if needed.
  8. If using a slow cooker, skip down to slow cooker option.
  9. Return chicken to the skillet and cover.
  10. Simmer Chicken in skillet for about an hour.
  11. 10 minutes before serving make a slurry of 2 tablespoons of cold water and 2 tablespoons of corn starch and mix into skillet liquid stir and cook until thickened. (Optional)
  12. Remove from heat and serve.

Slow Cooker Option

  1. Place chicken in slow cooker and top with skillet contents.
  2. Add more broth if necessary.
  3. Cook on high for 2 to 3 hours or on low for 4 to 5 hours.
  4. In the final hour make a slurry of 2 tablespoons of cold water and 2 tablespoons of corn starch and mix into slower cooker, stir. (Optional)

  3. Remove chicken from slow cooker and shred using 2 forks, or shred it right in the slow cooker. The chicken will be so tender it will easily break apart.
  4. Add in uncooked pasta shells and spinach. Mix cream and cornstarch and pour into slow cooker. Mix it well.
  5. Put the lid back on. Turn the slow cooker to high, and cook for another 20-30 minutes.
  6. Stir in parmesan cheese just before serving! Enjoy!

  5. Take a bit of the chicken mixture and a little of the sauce and roll it in a tortilla. Place the tortilla back in the bottom of the slow cooker.
  6. Once all of the enchiladas have been assembled, cover them with the remaining enchilada sauce, squeeze over the lime juice, and add the cup of cheese on top.
  7. Return the lid to the slow cooker and heat on high for about 20 minutes, or until the cheese is melted.

StoveTop Instructions:

  1. Note: You’ll need 1 tablespoon of olive oil to make this on the stovetop. This is not in the recipe because the slow cooker instructions don’t call for it.
  2. In a large pot, heat the olive oil over medium-high heat. Add the chicken to the pot and cook for 10 minutes, stirring occasionally, until the chicken is lightly browned on all sides.
  3. Add the onion and garlic. Sauté for an additional 3 minutes or until the onion and garlic start to soften.
  4. Add the carrots, potatoes, celery, flour, parsley, pepper, rosemary, sage, thyme, salt, and bay leaf. Stir to combine.
  5. Important: For the stovetop, you’ll want to use 2 cups of chicken broth, not 1/2 cup. You need more liquid when cooking on the stove. Add the chicken broth. Cover the pot and bring the stew to a simmer. The mixture should start to bubble and will start to thicken after about 5 minutes.
  6. Cook the stew, covered, over medium heat for 15-20 minutes, stirring occasionally.
  7. Once the stew has cooked, stir in peas. Remove the bay leaf before serving.
