  5. Preheat oven to 425°F. Line two large baking sheets with silicone baking mats. Set aside.Cut dough into 6 sections.
  6. Roll each section into a long rope. (About 20 inches long)Cut into 1 1/2 inch bite size pieces.
  7. Boil 9 cups of water with the baking soda.Drop 8-10 pretzel bites into the water at a time making sure not to over crowd. Cook for 20 seconds. Remove with a slotted spoon and place onto the prepared baking sheet. Make sure the bites aren’t touching.
  8. Combine the egg and water and whisk until combined.Brush egg wash over each pretzel bite.

  4. Add the shrimp to your skewers. Place the shrimp on the grill for a few minutes on each side. They cook fast so watch them closely as to not burn them. Garnish the shrimp with fresh cilantro and wedges of lime.

  3. Take a handful of potato mixture, shaping into a log shape or ball, and dip into flour, then egg and then breadcrumbs; repeat (yes, do it twice, it’s worth it!) I love these stainless steel trays for dipping.
  4. Place on a plate or tray (dusted with cornmeal or breadcrumbs) and refrigerate for about an hour.
  5. When ready to cook/eat, heat oil in a small pot, over medium high heat, so that the croquettes may be deep fried.
  6. Fry two or three at a time, depending on how many fit, carefully turning (with tongs) once, until evenly browned. Remove, and place on towel-lined plate to cool a little.
  7. Continue with the rest of the potato mixture until it is all finished. You can keep the first ones hot in the oven, until the rest are done. Serve hot, on their own with HP Sauce, or as a side.

  1. In a small sauce pan over medium heat, melt the butter. Stir in the hot sauce and honey. Simmer for 4 to 5 minutes. Set aside.
  2. Turn on the Broiler. Line the baking sheet with aluminum foil and place a cooking rack on top.
  3. When the cooking has been completed, do a 5 minute Natural Pressure Release. Then release any remaining pressure.
  4. Open the lid and carefully remove the wings (they will be hot and tender). Place the wings in a large mixing bowl. Pour half the buffalo sauce over the chicken wings and toss gently.
  5. Place the chicken wings on the prepared baking sheet.
  6. Broil chicken wings for about 3 minutes or until golden and then flip and broil the other side.

Instructions To a make the pastry a food processor:

  1. Add the flour salt and butter. Pulse until the butter is broken into small balls. With the processor running, very slowly drizzle in the water until it pulls away from the sides of the bowl and starts to form a ball. Stop the water immediately. You may not use all the water, you may need a little more.

To make the pastry by hand:

  1. Add the flour, salt and butter to a large bowl. Using your fingertips (or a pastry cutter) rub the butter and flour until it resembles breadcrumbs. Drizzle in the water and mix using a fork until the it starts to come together and holds together when pressed in your hand. You may not need all of the water, you may need a little more.
  2. Turn the dough out onto a floured surface. If the dough is too crumbly, add a little more water in tiny amounts. If too dry, do the same with flour. Roll the dough to a rectangle. Fold the edge furthest away from you to the center and fold the edge closest to you to the center so the edges meet. Turn 1/4 and roll out to a rectangle and fold the same way again. This step will make the dough light and flaky. Wrap the dough in plastic wrap and refrigerate for 30 minutes (for faster cooling, put in the freezer for up to 15 minutes).
  3. Preheat oven to 425°F/220°C. Line a baking sheet with parchment paper.
  4. While the pastry is chilling, add the sausage meat and sage to a mixing bowl and mix using your hands until well blended. Refrigerate until the dough is ready. Skip this step if not adding fresh sage.
  5. Dust a clean surface with flour and roll out the chilled pastry into a rectangle, 24 inches (60 cm) long and 5 inches (13 cm) wide with the longest side of the dough closest to you with the rectangle going from left to right.
  6. Shape the meat in a sausage shape down one side of the dough, about 1 inch (2/½ cm) thick, leaving a little pastry border. If the meat is sticking to your hands, rub a little oil on your hands. Brush beaten egg along the border (closest to the meat) then roll the other long edge to meet the egg washed egg over the meat, making sure to seal well and that the seam is on the bottom.

  2. Place one portion of the cream cheese mixture and spread it evenly making sure you get as close to the edge as you can.
  3. Layer it with a generous amount of cheese, sprinkle some red chili flakes (optional).
  4. Top it with an even layer of spinach leaves. Make sure they are in the centre and not so much around the edges (for ease of tortilla sticking)
  5. Starting from one side, roll the tortilla tight until you reach the opposite side. Apply some cream cheese to the end (if more is required) to act as glue and help the tortilla stick.
  6. Take a plastic wrap and place the tortilla seam-side down on it. Roll it so that the wrap covers the entire tortilla tightly. Tuck the sides inside. Repeat this procedure for the other rolls too.

  8. These pinwheels can be served Cold or warm (baked or air-fried). When ready to serve, get the rolls out of the fridge and unwrap. Slice each roll into 6-7 evenly sized about ½ inch pinwheels (pieces).

Instructions

  1. Preheat oven to 350 degrees F and get out a large rimmed baking sheet.
  2. Drain the chickpeas. Then rinse them really well with water and thoroughly drain again.
  3. Spread the chickpeas out on a clean, absorbent kitchen towel and gently roll and pat them dry using your hands. Some of the skins will start coming off. You can peel all of the chickpeas or simply remove the skins that come off naturally. (Removing all the skins does help with extra crispiness.)
  4. Transfer the dried chickpeas to the baking sheet and toss them with the olive oil and salt until coated. (DO NOT add other seasoning at this point – it can interfere with the crisping process, so wait to add until after baking.)
  5. Bake for a total of 40-50 minutes, stirring the chickpeas or shaking the pan every 10 minutes. A few chickpeas may pop – that’s normal. They should be golden brown and dry/crispy to the touch. Note: peeled chickpeas cook faster than unpeeled.
  6. Remove from oven and toss with seasonings while still warm. Then let cool 5-10 minutes – they will continue crisping as they cool.
  7. Serve as a snack or as a topping for salads!

  6. Air fry for 6-7 minutes at 360F, or until the egg filling just starts to puff up and the edges of the crusts are browned.
  7. Remove and let rest for 5 minutes to let the egg filling set.
  8. Repeat with remaining quiches.

  4. Place 1/2 tsp of olive oil in skillet over med-high heat. Once hot add chicken and quickly saute until cooked through. Set aside.
  5. Baste each side of the the baguette slices, place on foil lined pan and lightly toast each side under broiler.
  6. Top with chicken and shredded cheese then broil until cheese is melted.
  7. Serve with soup to make a meal.

  3. Add the cheese mixture to the dry ingredients, and knead with your hands until completely incorporated.
  4. Blend an egg into the dough mixture on high until well combined.
  5. Place the dough into the freezer to set for 30 minutes.
  6. Preheat the oven to 350 degrees.
  7. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  8. Add the meat, onions and peppers to the skillet, and season with salt and pepper to taste. Saute until the meat is cooked to your liking, and the vegetables are tender. Remove from the heat, and set aside.
  9. Form the chilled dough into eight equal sized balls.
  10. Flatten each dough ball, and place a tablespoon or so of the filling mixture into the center. Form the dough up and around the filling until it is completely covered.
  11. Bake the filled dough balls for 15-20 minutes until browned and completely cooked through.
  12. Brush the bread bites with the melted butter, and sprinkle with parsley flakes before serving.

  3. Pre-heat cooking pan at medium heat and add butter, minced garlic, parsley and chopped mushroom stems. Cook for 5 minutes.
  4. In a large bowl, add cream cheese, breadcrumbs, cooked mushrooms, Parmesan cheese, 3/4 cup mozzarella cheese and remaining seasonings and mix together well.
  5. Place each mushroom top on a baking sheet and stuff with a tablespoon or more of the mushroom filling. Top mushrooms with Panko breadcrumbs and 1/4 cup mozzarella cheese.
  6. Pre-heat oven to 400 degrees. Bake for 15 to 20 minutes. Allow to cool then serve.

  2. Prepare the vegetables for the skewers. For each red onion, first peel, then slice in half. Chop each half into thirds, as if you were cutting a pizza (6 total pieces from one onion). Seed and chop each bell pepper into approximately 1-inch by 1-inch pieces. Finally, chop the zucchini into rounds.
  3. Prepare the Garlic Herb Sauce- in a medium bowl whisk together the olive oil, minced garlic, parsley, cilantro, rosemary, salt, and pepper. Set aside.
  4. Skewer the vegetables by alternating between red onion, zucchini, and the different colored bell pepper. Brush skewers with a light layer of olive oil.
  5. Preheat grill to medium-high heat. Once the grill is hot, add skewers and grill for approximately 5-8 minutes per side, or until vegetables are just softening and browning around the edges.
  6. Remove from heat, brush with garlic herb sauce and drizzle with balsamic vinaigrette, if desired. Enjoy!
