Ingredients

  • 2 quarts (8 cups) chicken broth or shrimp or seafood stock
  • 2 stalks fresh lemongrass, outer layers removed, bruised and cut into thirds. ((see notes))
  • 5 kaffir lime leaves
  • 1 inch piece fresh galangal or ginger, sliced
  • 2 Thai red chiles (whole or sliced) ((see notes))
  • 6 tablespoons fish sauce
  • 6 tablespoons fresh lime juice
  • 2 teaspoons brown sugar
  • 1 – 2 tablespoons Thai red curry paste
  • 1 (15-ounces) can straw mushrooms
  • 1 pound large shrimp, peeled, deveined with tails on or off
  • A handful of fresh cilantro, roughly chopped

Instructions Infuse the Broth / Making Thai Broth

  1. In a large pot, bring the chicken broth or shrimp or seafood stock to a boil over medium-high heat. Add the lemongrass, Kaffir lime leaves, galangal or ginger and fresh chilies. Lower the heat and simmer covered, for about 20 minutes.

To Make the Soup

  1. Uncover the pot and stir in the fish sauce, lime juice, brown sugar and red curry paste into the broth. Stir and simmer for 5 minutes. Taste the soup and add additional curry paste for extra spiciness, additional fish sauce if you want the soup saltier, additional sugar if its a bit too sour for your taste or extra lime juice if you feel you need tartness.
  2. Since there’s only a few pieces of lemongrass and a few kaffir lime leaves, I don’t usually strain the broth but simply pick the lemongrass and leaves with kitchen tongs. It’s one less step and less dishes to clean! If preferred, strain the broth and return it to the pot.
  3. Stir in the mushrooms and shrimp and simmer until the shrimp is just cooked through, about 3-6 minutes.
  4. Turn the heat off, and add the fresh cilantro. Taste and adjust seasoning to your taste. Ladle soup into individual bowls and serve with additional fresh chiles and cilantro (optional)

If Making Broth with Whole Shrimp (Heads-on and Shells-on)

  1. Peel the shrimp or prawns. Place the heads and shells into a large pot. Reserve the meat. Add 7 cups of chicken broth + 1 cup of water. Add the lemongrass, Kaffir lime leaves, galangal or ginger and fresh chilies. Bring to a boil and then, lower the heat and simmer for about 10 – 12 minutes. Drain the broth and discard the solids. Return the broth to the pot and follow the rest of the recipe.

Spicy lemon garlic shrimp is a very refreshing appetizer, snack, side or main dish, but slightly different from chili garlic shrimp, steamed garlic shrimp with vermicelli noodles. It’s great for summer because it tastes a little spicy, sweet, sour and savory which can increase your appetite.

Ingredients

  • 2 pounds Shrimp ((Raw XL sized shrimp with shells on & easy to peel))
  • 1 Lemon ((Only use 4 teaspoons of lemon juice and slices lemon for decoration))
  • 2 cups Ice ((For the ice bath))
  • 8 cups Water (( 4 cups for boiling the shrimp and 4 cups for the ice bath))
  • 1 teaspoon Paprika
  • 1 teaspoon Chili pepper ((Red crushed chili pepper))
  • 1/4 teaspoon Salt
  • 1 tablespoon Sugar
  • 10 cloves Garlic
  • 1/2 bunch Cilantro ((Around 1 oz))
  • 2 tablespoons Vegetable oil
  • 2.5 tablespoons Soy sauce
  • 4 teaspoons Lemon juice
  • 1/2 cup Water

Instructions

  1. Peel, wash and mince 10 cloves of garlic.
  2. Wash and cut ½ bunch (Around 1 oz) of cilantro into pieces.
  3. Then, wash and cut a lemon into half and squeeze lemon juice into the container. (Just need 4 teaspoons of lemon juice in this recipe.)
  4. After that, cut the other half of the lemon into slices for decoration. (Will add them at the end.)
  5. The following step, peel off 2 pounds of raw XL sized shrimp shell. (I prefer to leave the tails on because it is easier to pick up and eat.) You can use already cooked and peeled shrimp if you want to skip some steps and faster.
  6. After peeling raw shrimp shells, put them on the plate.
  7. Pour 4 cups of water into the pot, turn on medium fire and let it boil.
  8. When the water is boiling, add the peeled raw shrimp from step 6 and let it cook until it changes orange red. (I usually wait until the water boils again and turn off the fire.)
  9. Next, drain the cooked shrimp.
  10. Put 2 cups of ice and 4 cups of water into a bowl.
  11. Add the cooked and boiled shrimp from step 9 into the ice bath for a couple minutes. Then, drain it again.
  12. Meanwhile, put 1 teaspoon of paprika, 1 teaspoon of crushed red chili pepper, ¼ teaspoon salt, 1 tablespoon of sugar and mix it well. (You can add more chili pepper if you want it spicy. This recipe is mildly hot.)
  13. Put the minced garlic from step 1 and the chopped cilantro from step 2 into the bowl.
  14. Pour 2 tablespoons of vegetable oil into a pan and turn on medium small fire. Let it heat up the oil around 375-400F. Or, you can dip a wooden chopstick to test it. When the oil is hot enough, you will see bubbles around it.
  15. Immediately, pour the hot oil over the garlic cilantro spices in the bowl. The oil needs to be hot enough, so when you pour the hot oil into the bowl of garlic cilantro and spices. The fragrance and aroma from the garlic and cilantro will bring out. (Be careful when pouring the hot oil.)
  16. Next, pour 2.5 tablespoons of soy sauce, 4 teaspoons of lemon juice from step 3 and ½ cup of water into the bowl.
  17. Mix the sauce well.
  18. Put the cooked and boiled shrimp from step 11 into the sauce mixture.
  19. Lastly, mix the shrimp and sauce. Add the sliced lemon from step 4 for decoration.

  1. Preheat oven to 475ºF.
  2. In a small bowl, combine all ingredients for the spice blend.
  3. In a large bowl, toss the strips of onion and peppers with 1 tablespoon oil, making sure the vegetables are all evenly coated with oil. Sprinkle 4 teaspoons of the spice blend over the vegetables (reserving about 2 3/4 teaspoons of the spice blend for the shrimp). Toss to coat until the spices are evenly distributed.
  4. Divide the vegetables onto two large, parchment-lined baking sheets, spreading the veggies out so they’re not piled on top of each other. Roast vegetables for 7-8 minutes.
  5. While the vegetables start roasting, in the large bowl you used for the veggies, toss the shrimp with the remaining 1 tablespoon oil, to coat. Sprinkle the shrimp with the remaining spice blend, and toss again to evenly distribute the spices.
  6. After the vegetables have roasted for 7-8 minutes, remove baking sheets from the oven. Stir the vegetables and push them toward the edges of the sheet pans, to make space in the center of each sheet pan to add shrimp. (Make sure the vegetables still have a little room to spread out instead of being piled up). Add a few shrimp to the center of each baking sheet, spreading them out a little.
  7. Return baking sheets to the oven and continue roasting for about 5 minutes more, until the shrimp are opaque and just cooked through (the exact amount of time can vary slightly depending on the size of your shrimp – see note). Check carefully to be sure the shrimp don’t overcook.
  8. Serve immediately with tortillas and desired toppings. (You may want to transfer the shrimp and veggies from the baking sheets to a large serving platter, so the shrimp don’t continue to cook on the hot baking sheets.)

  1. With kitchen shears, cut through shells along the backs of the shrimp lengthwise, just deep enough to expose veins. Remove veins with the tip of a pairing knife. (See recipe note #2 for other deveining options)
  2. In a medium bowl, prepare an ice bath for shrimp.
  3. To a medium pot add 2 quarts water, lemon wedges (squeeze juice out into pot as well as adding wedges), peppercorns, kosher salt and reserved cilantro stems; bring to boil over medium-high heat. Add shrimp and cover; remove from heat and let stand 3 minutes, until just cooked through. Transfer with slotted spoon to ice bath. Let shrimp stand in ice bath 3 minutes; remove and peel shrimp including tails.
  4. Meanwhile in a medium bowl combine tomatoes, cucumber, red onion, vegetable juice, Worcestershire sauce, lemon juice, ketchup, lime juice, water and hot sauce. Add cooked, peeled shrimp and stir to combine; cover and refrigerate for at least 30 minutes and up to 24 hours.
  5. When ready to serve, remove shrimp cocktail from refrigerator and let stand for 10 minutes at room temperature. Stir in avocado and cilantro; season to taste with salt and pepper. Serve in 4 individual cocktail glasses or goblets with tortilla chips and lime wedges if desired.

  3. Once it comes up to a boil, reduce the heat to about medium or medium-low, to maintain a lively simmer (not a full, hard, rolling boil). Continue cooking, covered but stirring occasionally and trying to keep the pasta mostly submerged, until the pasta is tender (which generally takes about 10-13 minutes, depending on your brand of pasta).
  4. Stir in shrimp and continue cooking, covered, until the shrimp are done (about 3 minutes for the 21/25 size we use). Do not overcook.
  5. Add parmesan cheese and cream cheese, stirring to melt the cream cheese and distribute the cheeses evenly.
  6. Remove from heat, discard bay leaves, and serve immediately, garnished with parsley and extra parmesan, if desired.
