- After the chia seeds have sat in the apple for approx 20 mins and have begun to gel, drain the date, then add the dates, melted butter and vanilla to the food processor, blitz well until a smooth paste is formed.
- In a bowl place all the remaining dry ingredients, use a fork or whisk to mix them together so everything is well combined and semi-sifted.
- Add the wet ingredients from the food processor to the dry ingredients.

- Preheat the oven to 200 degrees F (93 degrees C). Line a large baking sheet with parchment paper.
- In a large bowl, using a hand mixer at medium speed, beat the egg whites and cream of tartar, until the egg whites get opaque and frothy.
- Add the salt (if using) and vanilla extract. Increase the speed to high and continue to beat until stiff peaks form.
- Gradually beat in Besti powdered sweetener.
- Carefully to avoid breaking down the egg whites, transfer the mixture into a piping bag (I used the this piping tip), which gives the look of classic meringues). Pipe cookies onto the lined baking sheet, spaced about an inch apart.
- Bake for 1-2 hours, until the keto meringue cookies are firm and release easily from the parchment paper (but don’t move them yet!), and before they turn brown. Time will vary depending on the size and thickness of your meringues.
- When they are done, turn off the oven and prop the door with a wooden spoon. Leave the meringues in the oven this way for at least one hour, until dry and crisp.

- Add the molasses and the egg and mix until combined.

- Note: For the best results, I recommend using an electric scale to weigh the ingredients for these cookies. Even 1 tablespoon (15-20g) of extra ingredients will change the texture of the cookies!
- Preheat your oven to 180°C (350°F). Line 1-2 baking sheets with parchment paper.
Preparing the almond shortbread cookies:
- Add all the ingredients to a bowl and mix until combined. The mixture will be more crumbly than regular cookie dough, but the mixture should ‘stick’ together if you pinch some between two fingers.
- Press the cookie dough together so it forms a rough ball. (note 2)
- On a sheet of parchment paper or clean work surface, roll out the cookie dough so it’s around 8mm (just over 1/4-inch) thick. Use a 5cm (2-inch) cookie cutter to cut circles out of the dough. Collect the remaining dough and repeat. (note 3 for alternative methods)
- Arrange the cookies on your prepared baking sheet with a little space between them. The cookies don’t spread much in the oven.
- Bake the cookies for 12-15 minutes or until lightly golden brown. Bake for less time if you prefer chewy cookies with crisp edges. Or bake for longer for cookies that a crisp throughout. Allow the cookies to completely cool on the baking sheet.
- Store the cookies in an airtight container at room temperature for 5 days, in the fridge for 2 weeks or up to 2 months in the freezer.
To decorate (optional):
- Melt the chocolate in a double boiler over medium heat then remove.
- Dip half of each cookie in the melted chocolate and place on a lined baking sheet. While the chocolate is still wet, sprinkle the pistachios and raspberries on top. Allow the chocolate to set at room temperature for 20 minutes. Enjoy or store as above!

- Transfer the cookies sheet to a cooling rack and let cool before removing (as they are fragile and will break if you try and remove them when hot).

- Form the dough into a ball and refrigerate for at least 30 minutes, or until ready to bake.
- Preheat the to 350 degrees F (177 degrees C). Line a cookie sheet with parchment paper (you may need to do this twice for all the cookies).
- Place the ball of dough between two large pieces of parchment paper. Roll out to 1/4 in (.6 cm) thickness. Use cookie cutters to cut out cookie shapes and transfer them to the parchment paper. When you’ve cut out all the shapes you can, re-form the remaining dough into a ball, roll it out again, and repeat, until you’ve used up all the dough.
- Bake the healthy gingerbread cookies for 10-15 minutes, until golden on the edges. Cool on the cookie sheet before handling or frosting.
- Optional step: If you want frosting, make my cream cheese frosting like this and pipe onto the cookies.

- With a rubber spatula, fold in the mini chocolate chips. Stir to evenly distribute.
- Use a 1-ounce cookie scoop to divide the dough (about 2 tablespoons of dough per cookie). Roll the scoops of cookie dough between clean hands until a smooth ball forms. Place the ball on the lined baking sheet, leaving about 1 inch between each cookie. Do not flatten.
- Place the cookies in the oven and bake for 9-11 minutes (9 was perfect for my oven, but I liked to underbake them slightly so that they are really soft). Allow cookies to cool on the pan for about 10 minutes so that they fully set (important if you are aiming to slightly underbake).

- Using a medium cookie scoop, scoop firmly-packed balls of coconut mixture onto the prepared baking sheet, making sure to space balls evenly apart. Cookies will inflate and enlarge just a bit as they bake.
- Bake for 12-16 mins, until golden around the edges and slightly golden on top. Mine took 14 mins for large ones. Place baking sheet onto a cooling rack and allow cookies to cool for 5-10 minutes, until firm. Using a heatproof spatula, transfer cookies directly onto the cooling rack to cool completely, about 30 mins-1 hour. Enjoy! Storing instructions below.
