  6. Place the filled silicone cups into the air fryer. Air fry at 300 degrees F for 9-13 minutes, or until the eggs are set.
  7. If you have a smaller air fryer, complete this recipe in two batches.
  8. Allow the egg bites to cool completely before removing them from the silicone cups.

  6. Cover the pan with lid (see Note D). I prefer see-through lids so I can keep an eye. Do not turn up the heat, keep it low. Cook undisturbed 4 to 6 minutes or until the edges look cooked but the top still appears wet (not runny).
  7. Next sprinkle parmesan cheese over one half of the omelette. Then distribute the prepared arugula filling on top of it.
  8. Fold the other half of the omelette over the filling. Cover the frying pan again, let it cook 1 more minute.
  9. Carefully slide your arugula omelette on to a plate, garnish with some chopped parsley or chives. Enjoy!

Instructions

  1. Preheat the oven to 300F
  2. Add 3 tbsp of olive oil to a pan over medium heat.
  3. Add onion, reduce the heat and cook until the onion is soft.
  4. Add spinach, lemon juice, and a pinch of salt. Increase the heat to medium-high and cook for 4-5 minutes. Continuously stir during this time.
  5. Now, transfer cooked spinach to a baking dish leaving behind all the excess liquid.
  6. Make 4 indentations and break an egg into each hollow.
  7. Pop in the oven and bake for 10-15 minutes or until the eggs are cooked to your liking.
  8. Garlic Yoghurt
  9. While baking the eggs, mix yogurt, minced garlic with a bit of salt in a bowl.
  10. Spiced Butter
  11. Melt butter in a small saucepan over low heat. Add crushed red pepper flakes, paprika and cook for 1-2 minutes until the butter starts to foam. Add chopped parsley and cook for another 30 seconds.

  • 3.5 ounces frozen acai purée (1 package, you can use 2 for even more acai flavor.)
  • 1 cup fresh fruit of choice (berries, pineapple, kiwi, and mango are all yummy.)
  • 1/2 cup yogurt (Greek yogurt or coconut yogurt are both great)
  • 1/2 cup granola

Instructions

  1. Place the acai smoothie base ingredients into a small food processor or large food processor fitted with the small bowl insert. You can also make this with a blender using a bit of milk or orange juice, plus the tamper to keep the mixture moving.
  2. For the food processor process, scrape down the sides and break up chunks as necessary until smooth.
  3. If you use a blender, add liquid as needed and blend at low speed until the mixture becomes smooth. Don’t increase the speed before it blends smoothly, so you don’t hurt the motor.
  4. Portion the acai smoothie base into 2 bowls, and divide the toppings evenly. Serve immediately.
  5. These smoothie bowls are infinitely customizable. Vary the toppings according to your preferences and what’s in season!

Instructions For The Hash:

  1. Heat oven to 400 degrees Fahrenheit.
  2. Thoroughly wash, scrub, and dry 1 large or 2 medium sweet potatoes. Peel the sweet potatoes with a vegetable peeler (optional).
  3. Dice the sweet potatoes into cubes. Try to make sure they are all relatively the same size to ensure that they cook evenly (yields 5 heaping cups). Place the diced sweet potatoes onto a large baking sheet.
  4. Drizzle the sweet potatoes with 2 Tbsp. olive oil, 1 tsp. each of garlic powder, onion powder, and smoked paprika, along with ¼ tsp. each kosher salt and pepper. Toss until completely coated.
  5. Place the baking sheet in the oven and roast for 10 minutes. Remove the pan and shake to prevent the sweet potatoes from sticking. Return the baking sheet to the oven and roast for another 20 minutes.After 20 minutes, remove the pan from the oven and set aside.
  6. Dice 1 bell pepper (any color).
  7. Roughly chop 2 heaping cups of kale, removing the tough membranes (can use spinach, Swiss chard, or any hearty greens of choice).
  8. Heat a large cast iron skillet (or heavy-bottomed skillet) to medium high. Add 1 Tbsp. olive oil. Once the oil is heated, add the diced bell peppers and sauté for 5-6 minutes, stirring occasionally.
  9. Add 1 lb. turkey sausage of choice, along with ¼ tsp. each kosher salt and pepper and cook for 10-12 minutes, stirring often to break the sausage apart into chunks as it cooks.Continue to sauté the sausage until it is no longer pink, or until it has reached a safe temperature of 165 degrees Fahrenheit (this can be tested using a food thermometer).Drain any excess fat (optional).
  10. Add the 2 packed cups of chopped kale and continue to sauté for another 2 minutes, stirring until the kale has wilted slightly and incorporated into the hash.
  11. Add the roasted sweet potatoes to the skillet and stir until completely combined.

For The Eggs:

  1. Heat a nonstick or well seasoned cast iron skillet to medium and add 1-2 tsp. of olive oil.
  2. Once the oil is heated, crack 2 eggs in the skillet and cook for 2 minutes, or just until the whites are almost set.
  3. Use a flat, wide spatula to flip each of the eggs over carefully. Cook for an additional 30 seconds on the second side. Sprinkle the eggs with a small amount of kosher salt and pepper. Remove from the heat and set on a small plate.Repeat with the remainder of the eggs.
  4. To Serve: Serve the sweet potato turkey hash in a bowl and top with over easy egg or egg prepared with method of choice (optional). Top with sliced avocadoes and pickled jalapenos (optional).

This salmon omelette is one of my favorite ways of using canned salmon. With its creamy-textured filling, a little kick from sriracha and the bright flavor from dill, this egg breakfast is a delightful way to start your day.

Ingredients

  • 3 large eggs
  • ⅛ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 teaspoons water
  • 2 teaspoons butter ((Note A))
  • 2 tablespoons cream cheese (cut into small pieces (Note B))
  • ½ teaspoon sriracha
  • 1 tablespoon green onion (thinly sliced, plus some extra for garnishing)
  • 1 tablespoon fresh dill (minced, plus some extra for garnishing)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon olive oil
  • 2 tablespoons red bell pepper (finely chopped (Note C))
  • ¼ cup canned salmon (boneless, skinless. Drained and flaked before measuring)

Instructions

  1. Whisk together the eggs, salt, ground black pepper, water in a bowl. Set aside.
  2. In another bowl, mix cream cheese, sriracha, green onion, dill, garlic powder, onion powder. Set this mixture aside too.
  3. Heat the olive oil in a non-stick frying pan over medium heat. Briefly cook bell pepper in it until slightly softened. Then add the canned salmon, cook just long enough to warm it up.
  4. Transfer this warm salmon and bell pepper into the bowl containing cream cheese mixture. Mix with spoon.
  5. Wipe the pan clean with paper towel, melt butter in it over low heat. Once melted, quickly add whisked eggs (whisk again right before adding). Then gently swirl the pan around so they spread out evenly.
  6. Cover the pan with a lid (see Note D). I prefer see-through lids so I can keep an eye. Oh and do not turn up the heat, keep it low. Cook undisturbed 4 to 6 minutes or until the edges look cooked but the top still appears wet (not runny).
  7. Next put the salmon mixture on one half of this omelette. Gently fold the other half over the filling. Cover the pan again, let it cook 1 more minute.
  8. Then carefully slide salmon omelette onto a plate, garnish with some sliced green onion, chopped dill and enjoy!

  2. Dice onions and place in a skillet over medium heat, and sauté onions with oil, ghee, or butter. If you haven’t precooked sausage or bacon, add it to the skillet until the meat is cooked through.
  3. Dice up sweet potatoes while the onions and sausage are cooking.
  4. Take out sausages and/or bacon once they are cooked and set aside.
  5. Add diced sweet potatoes to the skillet and cook, mixing every few minutes.Â
  6. Chop up cooked sausage (or bacon) and kale.
  7. When the sweet potatoes start to get soft, add in the cooked sausage and fresh kale (de-stemmed). Mix thoroughly.
  8. Crack eggs over the top of the hash.
  9. Sprinkle salt and pepper over the skillet and place in the hot oven for 10-15 minutes. The eggs will still look uncooked, even when they’re ready.
  10. Take it out of the oven and allow to cool for 10 minutes before serving.

  9. Reduce the oven temperature to 375 degrees Fahrenheit.
  10. Place a cast iron skillet on the stove top and heat to medium-high. Add 1 Tbsp. olive oil to the skillet.
  11. Once heated, add the minced garlic, onions, and bell peppers. Saute for 5-6 minutes, stirring often. Remove the skillet from the heat and set aside to cool.
  12. Add the roasted sweet potatoes to the cast iron skillet and stir them into the sauteed veggies.
  13. Crack 10 eggs into a bowl and add 1/3 cup heavy whipping cream, along with 1/4 tsp. each kosher salt and pepper. Stir until completely combined.
  14. Add the shredded cheese and chopped spinach to the egg mixture. Stir until combined. Pour the egg mixture over the top of the sweet potato vegetable mixture in the cast iron skillet. Shake the skillet until the eggs have settled into the pan evenly.
  15. Pop the cast iron skillet into the oven and bake for 24-25 minutes, or until the edges of the frittata are slightly golden brown and the center is no longer jiggly. Remove from the oven and allow to cool 5 minutes before serving.
  16. To Serve: Run a knife along the edges of the frittata and cut it into slices. Serve with fresh cilantro, avocado, and salsa or toppings of choice (optional).

Ingredients

  • 1/2 tbsp olive oil
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 white onion (chopped)
  • 1/2 cup baby spinach (chopped)
  • 1/2 cup broccoli (chopped)
  • 1 clove garlic (minced)
  • salt and black pepper to taste
  • 3 large eggs
  • 3 egg whites

Instructions

  1. Preheat the oven to 350F (180C). Grease the standard muffin pan with cooking spray.
  2. Heat up a skillet and add olive oil. Now, add red bell pepper, green bell pepper, and white onion. Cook for 7 minutes until peppers are soft.
  3. Add baby spinach, broccoli, and cook for another 2 minutes or so. Finally, add garlic and cook for another 30 seconds or so. Finally, season with salt and pepper.
  4. Whisk the eggs and egg whites, and stir in the vegetables. Then pour it into a muffin pan.
  5. Finally, bake for 15-20 minutes until muffins are firm to touch.
