Instructions To sear the chicken
- Heat the pan on medium with the olive oil.
- Season and coat the chicken thighs with 2 tbsp of cajun seasoning, then add to the pan to sear (this should take several minutes).
- Once the chicken has browned, remove it from the pan and set aside.
To make the jambalaya
- Replenish the pan with 2 tbsp of olive oil then add the holy trinity – bell peppers, chopped celery and onions.
- Saute the holy trinity for 5-6 minutes until the onions are translucent and slightly golden.
- Pour in the chopped tomatoes, followed by the Seasoning – garlic powder, paprika, oregano, black pepper, thyme, bay leaves along with 2tbsp of cajun seasoning.

- Heat the oil in a stir-fry pan. Add the white parts of the scallions and garlic. Sauté over medium-low heat until just turning golden.
- Add the rice to the pan along with the broth (or water with bouillon cubes). Bring to a slow boil, then lower the heat, cover and simmer gently until the broth is absorbed, 30 to 35 minutes. If the rice isn’t done to your liking, add 1/2 cup additional water and cook until absorbed; repeat as needed.
- Meanwhile, combine the diced sweet potato in a saucepan with just enough water to cover. Bring to a slow boil, then lower the heat, cover, and simmer gently until just tender, about 10 minutes. Drain and rinse briefly under cool running water.
- Once the rice is done, add the cooked sweet potatoes, then stir in the ginger and curry powder. Turn the heat up to medium-high and cook, stirring, until the ingredients are well blended.
- Add the peas and cook, stirring frequently, another minute or two.
- Season with salt and pepper, stir in the cilantro, and serve. Pass around cashews and or hot seasoning for embellishing individual servings, if desired.

Instructions For the sauce:

- Stir until sugar is dissolved, about 3 minutes. Turn up heat to high and bring to a boil.
- Mix the cornstarch with 2 tablespoons of cold water until dissolved. Add the cornstarch mixture to the sauce and boil for 1-2 minutes or until sauce has thickened. Set sauce aside.
For the stir fry:
- Heat 1 tablespoon vegetable oil in a large pan over medium-high heat. Add the vegetables and season with salt and pepper to taste.
- Cook for 3-5 minutes or until vegetables have started to brown and soften. Add 2 tablespoons of water and cook, until water has evaporated. When your vegetables are crisp tender remove them from the pan and set aside.
- Wipe out the pan. Heat the remaining tablespoon of oil in the pan over high heat.
- Place the shrimp in the pan and season generously with salt and pepper. Cook for 2-3 minutes or until just cooked through (shrimp should be pink and opaque).
- Add the vegetables back to the pan. Pour the sauce over the top and cook for 1-2 minutes over medium high heat until warmed through.
- Garnish with sesame seeds and sliced green onions if desired.

- Combine the dry rice with the onions and stir well to ensure that every grain of rice is coated in the aromatic onions, spices and oil.
- Add the vegetable stock and salt and give it a quick stir.
- Turn the heat to low. Cover the saucepan with a tightfitting lid.
- Cook the rice until done and all the water has been absorbed. About 20-25 minutes.Top tip: To check if rice is done, take a few grains and gently press them between your fingers. The rice should be tender and easily break apart.

- 2 cups brown basmati rice
- 1 jalapeno sliced into 8 wedges (optional for extra spicy **)
- 2 tablespoons ghee (divided)
- 1 large onions (thinly sliced)
- 2 bay leaves
- 1½ teaspoon kosher salt
- 1 teaspoon saffron mixed in 1 tablespoon warm milk
- 4 boiled and shelled eggs (optional)
Instructions
- Rinse and drain the brown basmati rice thoroughly 2 times. Add 2 cups of warm water and soak the rice for 3 hours.
- Make Marinade by mixing garam masala, ginger, garlic, red chili powder, turmeric, mint leaves, half of the chopped cilantro, lemon juice, yogurt and salt. Add chicken and coat evenly with the marinade. Keep in the refrigerator for 2-3 hours
- After about 2-1/2 hours, turn Instant Pot to Saute(Hi) mode and add half of the ghee. Add thinly sliced onions, cook stirring frequently for 10 to 12 mins or until the onions are golden brown and caramelized. Take out half of the onion and keep it aside for garnishing the biryani.
- Add remaining to the Instant Pot with half of the caramelized onions already in the pot. For extra spicy Biryani add sliced jalapeno. Add bay leaves and marinated chicken. Mix well and deglaze the pot with the liquids from the marinade. The deglazing step is important and will help take out the browning of the pot from sautéing the onions. Note: If you have an air fryer you can use it or perfect golden fried onions.
- Drain the rice and gently pour over the chicken. Spread the rice evenly over the chicken. Add 1½ teaspoon of salt. Add 1 cup of water.
- Using a spatula, evenly spread the rice under water and gently push all the rice from the sides of the pot under the liquids.
- Close Instant Pot and turn pressure valve to sealing. Set to Manual mode for 10 mins.
- Allow Natural Pressure Release. Once the pin drops, open the Instant Pot and gently fluff the top layer of the rice, if it looks slightly uncooked, simply close the instant pot and leave the Instant Pot on the keep warm mode for another 10 minutes.
- Gently fluff and mix the rice with the chicken on the bottom of the pan.
- Garnish with the remaining caramelized onions, saffron and cilantro.
- Serve with Raita (Onions and tomatoes mixed in yogurt), hard boiled egg and lemon wedges.

Instructions
- Cook the brown rice on the stove top according to the package instructions. I like boiling the rice in chicken broth instead of water for added flavor. You will need 3 cups of rice – you can use leftover rice if you have some already made.
- While the rice is cooking, prepare the rest of the recipe.
- Preheat the oven to 400 degrees Fahrenheit and lightly spray a large 13” x 9” casserole dish or large baking dish with cooking spray (this makes for easy cleanup once the casserole is finished).
- Heat avocado oil in a large 12-inch skillet over medium-high heat. Add the chopped onion to the skillet and cook, stirring occasionally, until softened, about 5 minutes.
- Transfer the minced garlic and mushrooms to the skillet, cover, and cook until the mushrooms begin to soften, about 3 minutes.
- Add the remaining ingredients except for the spinach to the skillet (chopped chicken breasts, coconut milk, all-purpose flour, cider vinegar, liquid aminos (or soy sauce), and sea salt). Bring everything to a full boil.
- Once boiling, immediately add the spinach and cover the skillet. Cook for 1 to 2 minutes, just until the spinach stirs into the mixture easily. It’s completely fine if the chicken and spinach aren’t cooked all the way through at this point. We’re going to be baking the casserole in the oven, so the chicken will finish cooking then.

- At the end of cooking time, allow for a a 5-minute natural pressure release (NPR), then do a controlled quick release of the remaining pressure (see note 2). I like to use a wooden spoon to open the vent to protect my hand from any splatter.
- Remove the bay leaf and transfer the chicken breasts to a plate. Stir in the lemon juice. Pull apart the chicken into bite-sized pieces using two forks, then add it back to the soup. Season with salt and pepper to taste.
- Serve immediately garnished with fresh parsley, if desired. Store any leftovers in a sealed container in the refrigerator for up to 4 days. Can be frozen for up to 3 months.

- 1/2 teaspoon Cayenne or Red Chili powder (adjust to taste )

Instructions Sauté the veggies
- Heat a large skillet with oil. Add onions, peppers, and diced jalapeño. Sauté for about 4 minutes or until they start to brown slightly. Add the corn and saute for a couple more minutes. Add the black beans, fire-roasted tomatoes, lime juice, and then the spices. Stir to combine. Remove from heat. Taste and adjust salt.
- Add the cooked brown rice and mix well. Then add 1 cup of shredded cheddar cheese and mix it.
Preparing & Baking the casserole:
- Preheat oven to 400ºF. Grease the baking dish.
- Transfer the rice and veggies mixture to the baking dish. Sprinkle the remaining cheddar cheese and Mexican blend cheese on the top.
- Bake in the center of the oven for 12-15 minutes, until the cheese is bubbling.
- (optional) Leave a few minutes under broil if desired until lightly golden.
- Garnish with cilantro and sliced jalapeños. Cut into squares and serve!

This easy brown rice risotto with mushrooms turns the traditional risotto upside down! Using a “secret” ingredient to give regular brown rice a look and feel much like cooked arborio rice. I’m here to show you how to make risotto with brown rice for a simple weeknight meal.
Ingredients
- 1 cup of uncooked brown rice
- 1 cup + 2 Tablespoons of vegetable broth
- 8 ounces of sliced mushrooms
- 2 to 3 Tablespoons of olive oil
- Salt and pepper (to taste)
- 15 ounces of great northern or white beans (drained and rinsed)
- 2 Tablespoons of nutritional yeast
- 1 teaspoon of garlic powder
- Minced parsley (for garnish (optional))
Instructions
- Cook brown rice according to the package instructions. If you’re using brown rice in bulk, boil 2 cups of water per 1 cup of rice then let simmer with the lid on for 40 minutes.
- Heat vegetable broth over medium heat in a small saucepan.
- At the same time, combine beans, 1 Tablespoon of olive oil, 2 tablespoons of veggie stock, 2 Tablespoons of nutritional yeast, and salt in a food processor until smooth (like hummus). Set aside.
- In a large saucepan, heat mushrooms with 1 tablespoon of olive oil with salt and pepper until lightly browned, about 3 to 4 minutes.
- Once the mushrooms are cooked, reduce heat and add cooked brown rice. Then add the warmed vegetable stock and let simmer for 4 to 5 minutes. Once the time is up, add bean puree to the pan and thoroughly combine. (Note: you may not need to use the entire amount of puree, it is up to your discretion.) Add garlic powder and salt and pepper to taste.
- Once risotto is thickened to your liking, remove from heat, top with parsley if using and serve.
