  8. Turn off the heat and leave it covered. Let it sit for 10 minutes. Any rice left on the bottom will release during this time.
  9. Return to low heat. Add the cream of chicken soup, sour cream, milk, and cheese. Stir to combine.
  10. Add the sausage, and red pepper flakes. Stir and cook until heated through. Remove from heat and serve!

Set the sausage aside and reserve 1 tablespoon drippings. (Butter can be used if you don’t have drippings.)
  2. Add the drippings to the pot along with 2 tablespoons butter over medium heat. Add the diced onions, celery, and carrots and cook for 5 minutes. Add the garlic and cook for 1 minute.
  3. Add the flour and cook for 2 minutes. Add the chicken broth in splashes, and use a silicone spatula to “clean” the bottom of the pot to add more flavor the soup. Slowly stir in the heavy cream, hot sauce, soy sauce, and seasonings.
  4. Bring to a boil, then reduce to a simmer. Clean the potatoes and pat them dry. Cut into 1-inch cubes and add them to the soup. Simmer, uncovered, until the potatoes are fork tender, about 20-25 minutes. Add the sausage back and stir to combine.

Instructions

  1. Combine the farro, broth, and 1 cup of apple cider in a medium saucepan. Bring to a boil, then reduce to a simmer. Cook approximately 25 to 30 minutes, or until tender. The majority of the liquid will be absorbed, but there may be a little remaining. Remove from heat and set aside.
  2. Heat 1 tablespoon of olive oil over medium-high heat in a large frying pan or skillet. Add the sliced sausages. Crisp on each side, for approximately 2 to 3 minutes on each side. Transfer the sausage to a plate and set aside.
  3. Add the onion, mushrooms, apple, salt and pepper to the same skillet. Cook over medium-high heat for about 4 to 5 minutes, or until apples begin to soften and mushrooms release their liquid.
  4. Add the remaining 2 tablespoons of apple cider and vinegar to the skillet. Cook about 30 seconds, or until the vinegar evaporates. Reduce heat to medium-low heat. Add the cooked farro and any leftover liquid in the pot. Add the sausage to the pan. Cook approximately 1 to 2 minutes, until warmed through.
  5. Divide the farro among plates and top with walnuts. Enjoy!

  • 1 tablespoon olive oil
  • 1 medium onion (about 100 g/ 3.5 oz)
  • 6 garlic cloves
  • 1 large bell pepper
  • ¼ cup dry white wine
  • 1 medium tomato (about 5.5 oz/ 150 g)
  • 2 roasted red peppers from a jar (about 5.5 oz/ 150 g)
  • 2 teaspoons sweet smoked paprika (Note 3)
  • 1 large pinch of saffron
  • 1 ½ teaspoon fine sea salt
  • 2 cups short-grain rice (Arborio, Bomba)
  • 4 cups chicken stock (homemade or low-sodium)
  • 1 cup peas
  • small bunch of parsley
  • lemon wedges (to serve)

Instructions

  1. Saute chicken and chorizo: Cut the chicken into cubes and the sausage into rings. Heat 1 tablespoon olive oil. Cook both, stirring often, for about 5 minutes. Remove from the pan.   2. Saute vegetables: Finely chop the onions and garlic. Dice the fresh red bell pepper. Place them in the same skillet, add a pinch of salt, and cook slowly until the vegetables are softer, about 5 minutes.1 medium onion + 6 garlic cloves + 1 large bell pepper
  3. Deglaze with the white wine and stir for about 1 minute until the wine is mostly evaporated.¼ cup dry white wine
  4. Add ingredients: While the sofrito is cooking, dice the tomato and the roasted red peppers. Add them to the sofrito and cook for 5 minutes more.   5. Simmer paella: Add chicken stock, bring to a boil, and add the rice, chicken, and chorizo. Stir, cover tightly, and bring to a boil again. Cook on low heat for 20 minutes. Rotate the pan a couple of times during cooking to make sure that it cooks evenly and doesn’t get burned on one side.4 cups chicken stock + 2 cups short-grain rice
  6. Add the peas, nestle carefully into the rice without disturbing the bottom, and continue cooking for 10 minutes.1 cup peas
  7. Let sit: Remove from the heat and let sit, covered, for about 10 minutes. Sprinkle with a small bunch of parsley (chopped) and serve with lemon wedges .

  • 1 large yellow onion, (finely diced (approx 1 cup))
  • 5 stalks celery (finely diced)
  • 5 cloves garlic (minced)
  • 3 split chicken breasts ((bone in))
  • 3 bay leaves
  • 28 ounces diced tomatoes
  • 64 ounces chicken stock
  • 1/2 Tablespoon Cajun seasoning
  • 1 teaspoon cayenne pepper
  • 1 teaspoon hot sauce
  • 1 Tablespoon gumbo file ((see note))
  • 2 smoked sausages ((I use around 8 ounces total, but use as much as you want!))
  • 8 ounces frozen okra

Instructions

  1. Make the roux: Combine the 1 cup of flour and 1 cup of vegetable oil in a small saucepan. Heat over medium heat, stirring occasionally, for approximately 30 minutes. You want to turn it off when the mixture gets to the color of milk chocolate as it will continue to cook and darken. Ultimately you want it to be a dark chocolate brown color, but be careful that it does not burn and start turning black. (It helps to remove the roux from the pot and pour it into a bowl to get it away from the hot pot and help stop the cooking process). Keep an eye on the roux and if it is starting to brown too quickly, turn the heat down to medium low.
  2. Add 2 Tablespoons of vegetable or olive oil to a large pot. Heat over medium heat. Season both sides of the chicken with salt and pepper. Add the chicken to the oil in the pot and brown on both sides, approximately 5-7 minutes per side. Remove chicken and set aside.
  3. To the same pot, add the bell pepper, onion, and celery. Cook vegetables for 5 minutes until they begin to soften. Add the garlic and cook an additional 2 minutes.
  4. Add the chicken, still whole, back to the pot as well as the chicken stock. Turn up the heat to medium-high and cook until the chicken is cooked through.
  5. Remove the chicken and add the roux, bay leaves, tomatoes, and seasonings (including the file). (Be careful when adding the roux as it may bubble or splatter if it is still hot).
  6. Pull the chicken off of the bones and shred. Discard the bones and add the chicken back to the pot.
  7. Slice the sausage into coins and add to the pot. Reduce heat to low and cook for 1.5-2 hours.
  8. In the last half hour, add the frozen okra.
  9. Season to taste with salt, pepper, and hot sauce. Serve with rice and/or french bread.

  • 1/2 tsp dried oregano
  • 1/2 tsp dried marjoram
  • 1/4 tsp red chilli flakes
  • 1 tablespoon tomato paste
  • 200 ml chicken stock
  • 200 ml double cream
  • 6 leaves fresh basil (roughly torn)
  • 1 tablespoon fresh parsley (chopped)
  • 30 g grated Parmesan

Instructions

  1. Bring a pot of water to boil, salt it generously and cook the pasta according to the instructions on the package. Reserve a cup of water before draining.
  2. Meanwhile, heat the olive oil in a large, deep pan and fry the chorizo for 1-2 minutes over medium-high heat until slightly crispy.
  3. Add the diced chicken breast to the pan and continue to cook for 4-5 minutes until the chicken is mostly cooked through.
  4. Next, add the red onion and red pepper to the pan and cook for 2-3 minutes until softened. Stir in the garlic, oregano, marjoram, chilli flakes and tomato paste. Add the chicken stock and allow the sauce to get bubbling.
  5. Lower the heat and stir in the double cream. Allow it to bubble again for 1-2 minutes, then turn off the heat.
  6. Transfer the cooked pasta to the pan and toss it well. Add a splash of the reserved pasta water if it looks too dry.
  7. Stir in the fresh basil, parsley and grated Parmesan. Season to taste and serve immediately, with extra grated Parmesan on top if you like.
