- Let dough bulk ferment. This will take about 8-10 hours if your house is at 70 degrees. (So you could do this overnight while you sleep). Bulk ferment is complete when the dough has at least doubled, and is puffy and domed on the top. It should look pillowy and domed.
- Dust your work surface with flour, and grab underneath the dough to take it out of the bowl and onto the surface. Let rest for 15 minutes. Pat into a 3/4 inch inch high circle or rectangle. Dust the top of muffins with flour, and a vase or glass mouth that is about 4 inches wide. Cut out circles, and move them onto a parchment lined baking sheet dusted with cornmeal. They will stick if you do not do this.
- Cover pan with a very light towel, and let rise again for about 1 to 1 1/2 hours, until your english muffins are puffy. They will not rise a ton. It’s the puffiness you’re going for.
- Heat griddle or cast iron skillet to about 350 degrees F. Add a knob of butter, and place the english muffins on the surface, with room between each other to allow for their growth. At this point, check to see if the underside of the cheese is mid to dark golden brown. If it is, flip it over with a fork or tongs and cook on the other side for another 2 to 3 minutes. Towards the end of the cooking time, you may need to move some of the pieces on the outer edges of the pan into the middle to finish browning equally.
- When the halloumi is mid to dark golden brown on both sides, arrange on a small platter or medium sized plate with slices of bread, toast or pita bread and lemon or lime segments. Scatter over any fresh herbs and/or other spices/flavourings and serve immediately.
To grill/BBQ
- Pre-heat the grill or BBQ to a medium-high heat or 200C/390F. If you prefer to make kebabs and are using wooden skewers, soak them in water for at least 30 minutes to prevent burning while cooking.
- If cooking slices, slice the halloumi into roughly 2 to 3cm (or 1/2 to 1 inch) thick slices and brush all over with the olive oil. If cooking kebabs, cut into large chunks and carefully thread the halloumi onto the skewers, then brush carefully with oil. Pinch the sides of the cheese as you thread it on to minimise splitting (Add chunks of vegetables such as zucchini, peppers and mushrooms or even meatballs if you like).
- Place the cheese on the BBQ/grill and cook for 2 to 3 minutes without moving. Wait until any liquid has evaporated and the residue has gone golden to dark brown, then flip onto the other side with a fork/tongs and let cook for a further 2 to 3 minutes. If cooking kebabs, cook for 10 to 15 minutes, turning regularly to brown all sides.
- Serve immediately with bread/toast/pita bread, lemon and lime wedges and any other herbs/spices/flavours.
To air fry
- Preheat the air fryer to 200C/390F. Slice the halloumi into 1-2cm slices, into long 2-3cm thick fry shapes or 1-2cm cubes or ‘bites’.
- Brush the halloumi all over with olive oil. Then air fry in the air fryer basket for 5 to 7 minutes on each side or until mid to dark golden brown and crispy.
- Serve immediately with bread/toast/pita bread, lemon or lime wedges and any other spices/herbs/flavours. You might also like to serve some Greek yogurt and/or sweet chili sauce on the side for dipping.
To bake
- Pre-heat the oven to 200C/390F. Slice the halloumi into thick (around 1/2 inch) slices.
- Lay in a baking dish and drizzle with olive oil. Add pepper, paprika, dried herbs, or chili flakes if you like.
- Bake for around 15 minutes, turning half way through, or until golden brown and lightly crisp.
- Serve immediately with optional toasted bread, lemon or lime wedges and fresh herbs.

- Scoop a 1/4 cup of batter into the skillet to form pancake circles (they don’t have to be perfectly shaped). *I usually cook four at a time. Cook the pancakes until you notice tiny bubbles/holes form on the top and the edges are somewhat firm (about 1-2 minutes).
- Now flip your pancake and cook the other side about 1-2 minutes, until golden brown. Place cooked pancake on a baking sheet in the oven to keep warm.
- Repeat until all the batter is gone. Drizzle oil in the pan before placing fresh batter down. (*If the pan gets too hot, it could burn the batter fast. Take the pan off the heat and let it cool for a minute before starting. Make sure to reheat evenly before adding fresh batter).

- Alternatively, you can use a Stand Mixer to knead the dough.Attach the dough hook attachment to the stand mixer. In the bowl of a stand mixer, add flour, salt, yogurt, and yeast mixture. Beat the mixture on a low speed for 2-3 minutes, or until the flour is incorporated. Scrape the bowl occasionally.
- Add softened butter. Increase the speed to medium-high, and knead the dough for 4-5 minutes, or until it forms into a smooth dough ball, and starts to leave the sides of the bowl.
- Transfer the dough, onto a lightly greased work surface, and shape it into a ball.
Step 3: First Proofing
- Place the dough in a greased bowl and turn it once to grease the top.
- Cover the bowl with a kitchen towel, and place it in a warm place, or an oven with the oven light on for 1-2 hours or until it doubles in volume.Note: Keep the oven turned OFF.
- Alternatively, use Instant Pot to proof the dough.Place the dough in the greased inner pot, and turn it once to grease the top.
- Place the lid, and cover the pot. Turn ON YOGURT (normal) for 1 hour.Note: Use a glass lid that fits, to cover the inner pot.
Step 4: Divide The Dough
- Transfer the dough onto a work surface, and punch it down. Divide the dough into 8 equal pieces. Cover the pieces with a clean kitchen towel, while you work with a single piece.
- Take a piece of the dough ball, gather all the edges, and tuck them in the center. Turn the dough, seam side down, and roll it into a smooth ball.Note: If required, sprinkle some flour on the work surface.
- Place the rolled dough ball, seam side down, onto a baking sheet. Cover with a clean kitchen towel while you roll the rest of the balls.
Step 5: Second Proofing
- Cover the baking sheet with a kitchen towel, and place it in a warm place or an oven with the oven light ON for 10 minutes, or until the rolls have doubled in size.
Step 6: Shape The Naan Bread
- Place the dough ball on a rolling surface, and roll it into an oval shape, around 7-8 inches long and 3-4 inches wide. FOR GARLIC BUTTER NAAN / NIGELLA SEEDS TOPPING – please refer below.
- Place the rolled naan bread onto a baking sheet, and cover it with a clean kitchen towel. Repeat the process with the remaining dough.
Optional Toppings: Garlic Butter Naan | Seeds Toppings
- For Garlic Butter Naan: Apply some melted butter, sprinkle some chopped garlic, and fresh cilantro. Press it gently with the rolling pin and cook the naan.
- For Nigella Seeds Naan: Sprinkle some nigella seeds and fresh cilantro. Press it gently with the rolling pin and cook the naan.
Step 7: Cook The Naan Bread
- Heat the Tawa (Griddle). Start with the first rolled naan, then the second rolled naan, and so on.
- Apply some water to the bottom side of the naan and place the bottom side down on the Tawa. Cook naan over medium-low heat until lightly browned, around 2-3 minutes.
- Carefully turn it upside down and cook on the other side. Gently press the naan with a spatula for even cooking.Note: You can directly cook naan over the flame.

- Continue to cook until the other side is also well-colored and scone is cooked entirely.
- Remove from heat and cool in a kitchen towel for a few minutes before serving.
- Serve while warm with butter, jam and/or cream and some hot tea.

Ingredients
- 150g ground oats (1¼ cups approx)
- 250ml water (1 cup)
- Big pinch of sea salt
Instructions
- Either buy ground oats or grind them yourself. You can usually do this in a food processor, high powered blender or nut mill.
- Mix oats, water (with salt and pepper) together. Use a jug and a fork to ‘whisk’ these ingredients together until evenly combined and without lumps.
- Leave mixture to settle for a few minutes (it will thicken in this time) and stir/whisk again (see my video for demo). You need a batter mixture that is thick, yet easy to pour. If it is too thick then the oatcake wraps will likely crack. If it is too thin then it might do other weird stuff hahaha. The best way to learn this is by ‘feel’ and experience or trial & error. If your mixture is too thick, add a dash of water to thin. If it is too thin, then add a small amount of ground oats to it.
- Heat your cast iron skillet until it is piping hot. If you don’t have a cast iron skillet, please note that this usually works in a regular non-stick frying pan too.
- Pour about a quarter of your mixture onto the surface of the skillet (watch video for demo) and quickly smooth out with a flat-ish bottomed spoon.
- It will quickly change consistency with the heat, within a couple of minutes.
- Use a metal or heat-proof spatula (known as fish-slice in the UK) to gently tease the edges of the wrap. If it’s going right, then the whole wrap should lift up effortlessly. If there is any resistance then leave it another minute. Once you peek underneath and see it starting to tan ever so slightly you can flip it over and cook the other side for a minute or two.
- When done, pop onto a cooling rack between the layers of a lint-free tea towel (in the USA they are called dish drying cloths or something like that) or between layers or kitchen towel/paper. This important to help them soften if you want to roll them up. Leave them for 10 to 15 minutes and that should be enough time to soften enough so that you can roll them.
- Stuff with your favourite dip and salad ingredients and enjoy for lunch. Alternatively stuff with a bean recipe like this Spicy Black Beans One Pot and create enchiladas. Or simply roll and use as an accompaniment to soup.

- Dip each piece into the egg mixture, shake off the excess – you should have just enough batter for all four slices.
- Warm the pan over a medium heat. Griddle for 30 seconds and flip, fry for 30 more seconds. Cut into triangles.
- Pop on a plate or baking tray and into the oven to keep warm.
For the griddled apple slices
- Pop the apple slices into a bowl, add the cinnamon and honey and toss until well coated.
- Lay the slices onto the grill pan, fry for 60 seconds, then flip and cook for a further 30 seconds until just cooked.
To plate up
- Serve two triangles of French toast to each plate.

NOTE: You can also use a piece of parchment paper on top of the burger if you want so it doesn’t stick to the spatula. Or spray the spatula with some non-stick spray or grease with butter. 5. Season the burgers as you desire. Let them cook until the bottom side has turned brown and crispy, then flip over. This usually takes around 5 minutes. This will vary depending on how high your heat is. 6. After flipping, continue cooking for 3-5 minutes or until they reach your desired doneness. Add a piece of cheese and let it melt. 7. After you flip the burgers, butter the griddle and add your buns. Brown them until they reach the toastiness you like. 8. Put together your smash burgers and DEVOUR!

- Add the ricotta mixture to the flour mixture and stir gently until mostly combined. It’s actually good if the batter remains a little lumpy. Gently incorporate the egg whites. Allow the mixture to sit while you preheat a skillet.
- Heat a skillet over medium heat. It’s ready when a drop of water sizzles on the surface. Add a dab of butter or oil to the pan (I prefer butter). Place 1/4 cup dollops of batter onto the hot skillet. Cook until bubbles appear on the surface. Flip and continue to cook until heated throughout. Repeat with remaining batter.
- To keep cooked pancakes warm, place them on a cookie cooling rack in an oven set to the lowest temperature it will go.
- Serve warm with berries, bananas, and real maple syrup. (Or whatever toppings suit your fancy).

- Grill about 5 min. per side; perhaps longer if your filet is thicker. Salmon is cooked when it easily flakes. To be sure; use a meat thermometer; cooking to 145 degrees Fahrenheit.
- Transfer to serving platter and enjoy! Pairs well with grilled asparagus and rice or veggie skewers!

Instructions
- Place the chicken breasts in a 2-quart crock pot that has been lightly sprayed with non-stick cooking spray.
- In a small mixing bowl, whisk together the buffalo wing sauce, honey, brown sugar, soy sauce, salt, garlic powder, onion powder, smoked paprika, chili powder, cumin, and white pepper. Don’t add the cornstarch, water, or cream cheese yet.
- Pour half of the sauce over the chicken in the crockpot and cook on high for 3-4 hours.
- Remove the chicken from the crockpot and shred it. Return to the crockpot.
- Whisk the water and cornstarch together. Pour over the shredded chicken. Stir.
- Cube the cream cheese and add to the chicken.
- Cook on high for another 30-45 minutes.
- Stir in the remaining buffalo sauce and mix until well combined.
- Preheat your griddle to between 250 and 300 degrees.
- Top a tortilla with a 1/8 cup of hot buffalo chicken filling.
- Sprinkle with cheese and top with another tortilla.
- Brush the tortilla with olive oil and place it oil side down on the preheated griddle. Brush oil on the tortilla that is now on top.
- Cook until both sides are golden brown.
- Remove from griddle, quarter, and serve with sour cream, guac, and tomatoes.

- 0.5 lbs Brisket (short rib as alternative)
- 1/2 cup Mayonnaise
- 1/4 cup Ketchup
- 2 tbsp Mustard
- 1 tsp Franks Hot Sauce
- 1 Dill Pickle
Instructions Patties
- Setup your grinder with the coarse plate. Cool beef goes through the grinder better so make sure it is thoroughly cooled. Cut the sirloin and brisket into small enough strips for your grinder. Start grinding the meat alternating between sirloin and brisket pieces.
- I weigh my patties with a digital scale. I like to make sure everyone is getting the same size patty. Roll the ground beef into 1/4lbs balls and then slightly shape into a patty.
- Lightly salt both sides and store on a tray in the fridge.
Burger Sauce
- In a small bowl combine 1/2 cup mayonnaise, 1/4 ketchup, 2 tbsp yellow mustard, 1 tsp franks hot sauce, 1 dill pickle finely chopped. Mix all the ingredients together. Taste to your liking adding hot sauce or other favorite ingredients. Keep cool in the fridge.
Burger Grilling
- Light up your coals or gas grill 15 minutes before grilling time.
- I prep my buns during this time by cutting in half and buttering them.
- Put your griddle on the grill and allow to heat up. For a charcoal grill put the griddle above the coals for direct heat. One the griddle is hot, place the burgers on the grill and quickly smash them with your burger flipper. We want to get a thin patty. After flattening, push your thumb into the middle making a small indentation. This helps the patty to cook more evenly and not turn into a ball.
- The burgers cook very quickly. When the burgers turn brown on the edges and the tops are getting wet, quickly flip the burgers.
- With about a minute of grill time left, top the burgers with the cheese.
- Always use a meat thermometer to know when the burgers are done. It is not just for the taste but for your safety. I typically shoot for 145 Fahrenheit. The burgers are still be juicy because we are using an 80/20 fat ratio patty.
- Take the burgers off the grill and rest for 5-8 minutes. Resting allows all the juices/flavor soak back into the burger. During the burger rest, throw your buns on the hot grill with the buttered side down. We want to slightly toast these buns which makes them so much better
- Once the burgers have rested for the 5-8 minutes, take the toasted buns and apply the burger sauce. Then you can add your patty and any other toppings you desire.
- You are done. Enjoy and be proud of making your first burger fromscratch. You will be glad you did.
